The purpose of this study was to evaluate the nutritional status of elderly women living in residential homes by estimating nutrients and food intakes. Food consumption survey was conducted by 3-day 24hr recall method with 99 elderly women aged 65 to 90 years from three residential homes in Seoul, Choonchun and Chunan and 46 free-living elderly women aged 65 to 88 years from Chunan as control group. Food intake data was converted into nutrient intake using computer aided nutritional analysis program. Mean energy intake and percentage of recommended daily allowance (RDA) of residential home residents were 1696㎉ and 101% of RDA while those of control were estimated as 1939㎉ and 119% of RDA. On average, absolute amount of nutrient intakes of residential home residents were slightly higher than control group. Subjects in control group showed significantly lower carbohydrate and vitamin A intake, while vitamin C intake was higher. However, nutrient intake quality determined by INQ (Index of nutritional quality) was significantly higher among control subjects in most nutrients except vitamin A than residential home residents. Intakes of calcium, vitamin A and riboflavin of all subjects in this study were less than 75% RDA meaning that nutritional status of calcium, vitamin A and riboflavin was insufficient and could possibly result in nutritional deficient. Some food groups such as milk or other dairy products must be strongly suggested to improve nutritional status of elderly women in this study. According to the results of this study, meal plans of residential homes are quite adequate in quantity of micronutrients, but need to be improved in both quantity and quality of micronutrients.
The concentrations of L-ascorbic acid (AsA, ascorbate, vitamin C) and its biosynthetic and metabolically-related enzymes such as L-galactono-1,4-lactone dehydrogenase (GLDase), ascorbate peroxidase (APX), and ascorbate oxidase (ASO) were investigated in suspension cultures of Scutellaria baicalensis. Cells growing from 4 days after subculture (DAS) to 9 DAS and from 16 DAS to 19 DAS showed a diauxic growth, and then growth rapidly decreased with further culturing. The AsA content slowly increased to 19 DAS, reached a maximum at 21 DAS (ca $120\;{\mu}g/g$ dry cell wt), and then rapidly decreased with further culturing. GLDase and ASO activity were well correlated with the cell growth curve, showing a maximum at 19 DAS, whereas APX activity showed a good correlation with the changes in AsA content, showing a maximum at 21 DAS. The total ascorbate contents (reduced form, AsA, and oxidized form, dehydroascorbate, DHA) were markedly enhanced at 10 DAS when L-galactose and L-galactono-1,4-lactone (25 mM) were added to SH medium supplemented with 20 g/l sucrose at 9 DAS, by 5.5 and 6.8 times, respectively. DHA composed more than 90% of the total ascorbate contents in suspension cultures of S. baicalensis, even though the ratio of reduced to oxidized form slightly varied with cell growth stage. The results indicate that L-galactose and L-galactono-1,4-lactone are effective precursors of AsA in cell cultures of S. baicalensis, and that in vitro cultured cells provide suitable biomaterials for the study of biosynthesis and metabolism of AsA.

The canned fruit flesh of orange (Onju, Citrus unshi Marc.) was stored at $5^{\circ}C,\;15^{\circ}C,\;and{\;}30^{\circ}C$ for 4 months and the contents of sugar, organic acids and vitamin C of stored orange were investigated. The contents of reducing sugar of orange stored for 4 months slightly increased from 4.91% to $5.39{\sim}7.95%$ and decreased as the temperature rised. The sugar was composed of $6.63{\sim}18.09%$ sucrose, $3.86{\sim}9.12%$ glucose and $3.59{\sim}9.51%$ fructose. The content of sucrose used in manufacturing process was the highest and decreased as the temperature rised and as the storage period prolonged, whereas the contents of glucose and fructose increased as the storage period prolonged. The content of citric acid in the sample was the highest $(50.41{\sim}90.15\;mg%)$ among the-citric, malic, maleic, ${\alpha}-ketoglutaric$ and oxalic acids. The organic acids decreased as the temperature rised after storage for 4 months. The content of vitamin C was $8.28{\sim}14.29\;mg%$ and decreased most pronouncedly at $30^{\circ}C$ after storage. The color of the samples did not change significantly, but the degree of transparency, L was $20.41{\sim}23.01$ after storing the sample.
This research was conducted to examine the usability of Dangui (Angelica gigas Nakai, Root) and Seungumcho (Angelica gigas Nakai, Leaf) as functional food in aspects of their functional components and nitrite scavenging ability. Analysis of proximate composition showed that Dangui contains more moisture, crude lipid and crude protein than Seungumcho. On the other hand, Seungumcho contains more than twice mont of crude ash and crude fiber than Dangui. Dangui showed higher contents in phosphorus, iron, magnesium, and Seungumcho showed higher contents in copper, calcium, sodium, potassium compare to each other. Substances such as calcium, magnesium and iron that showed high contents in Dangui and Seungumcho are the most important inorganic substances. Total dietary fiber(TDF) of Dangui, sum of IDF and SDF, was 24.2%, and Seungumcho showed 28.18%. vitamin C contents of a 29.690.33 mg/100g appeared only in Seunggumcho. Total phenol contents of Dangui was 0.100${\pm}$002% and that of Seungumcho 0.0900${\pm}$008%. Nnitrite Scavenging ability of both water soluble and methanol soluble extracts were more than 90% at pH 1.2, and it decreased as pH level adjusted to pH 4.2, pH and 6.0.

This experiment was carried out to select the desirable welsh onion (Allium fistulosum L.) varieties for the year-round cultivation in water culture. Ten varieties were tested, of which five were Korean's and the other five were Japanese's. The germination percentage and germinative energy of most varieties we.e more than 90 percent. The fastest germination speed were 'Geumjanguedaepa', 'Gujopa' and 'Fuyune'. The best growth of the varieties were 'Geumjanguedaepa' and 'Tokyokuro' in spring, 'Geumjanguedaepa', 'Gujopa', 'Saesaeksisilpa' and 'Tokyokuro' in summer, 'Geumjanguedaepa', 'Gujopa' and 'Tokyokuro' in fall, and 'Geumjanguedaepa', 'Midorigawa' and 'Tokyokuro' in winter cultivation. Suitable varieties of growth fur all seasons were 'Geurnjanguedaepa' and 'Tokyokuro', though 'Gujopa' was good in summer and fall. In the view of nutritional content, nitrate content was significantly lower in 'Geumjanguedaepa', 'Tokyokuro' and 'Fuyune' than that in'Saesaeksisilpa' and 'Starziam'. Vitamin C content was higher in 'Aqua Green', 'Midorigawa' and 'Seoulbaekpa' than that of the others. Pyruvic acid content was the highest in 'Geumjanguedaepa' and 'Suckchanguedaepa'. Based on the above results, 'Geumjanguedaepa', 'Gujopa' and 'Tokyokuro' were selected as the most desirable young welsh onion varieties for the year-round water culture.
Chitosan is known to be a good biocompatible natural polymer. Polyethyleneglycol monomethacrylates(PEGM) were grafted onto chitosan and their reaction conditions and properties of the graft polymers obtained were estimated. Using ceric ammonium nitrate(CAN) as the initiator, the optimum condition for graft polymerization was determined amount of the initiator and monomer concentrations and reaction time. Grafting yields such as total conversion, the percentage of grafting and the efficiency of grafting were calculated and examined the optimum reaction condition for high grafting yields. The percentage of grafting and total conversion were maximum at condition that the concentration of initiator was $4{\sim}5{\times}10^{-3}M$, the concentration of monomer was 0.5~0.6M, the reaction time was 2~3 hours and the reaction temperature was about $40^{\circ}C$. Thermal characteristics, solubility for chitosan solvents and inherent viscosity of synthesized graft copolymers were investigated. In high initiator concentration, characteristics of chitosan were greatly diminshed. In case of inherent viscosities, chitosan-g-PE-90 was 2.81 dl/g, chitosan-g-PE-200, 3.01dl/g and chitosan-g-PE-350, 4.93dl/g. And a tendency of viscosity increase depending on the length of ethylene oxide residue was confirmed. Degree of swelling, tensile strength, elongation of membrane prepared from graft copolymers were determined. Properties of graft copolymers were affected by percentage of grafting and length of ethylene oxides residue in polyethylene glycol monomethacrylates. Tensile strength, elongation and degree of swelling of graft copolymers were remarkably improved than chitosan. As percentage of grafting increased, the amount of drug permeation was also increased.

This study investigated the effect of heat treatment conditions on the quality and antioxidant activities of Korean traditional actinidia (Actinidia arguta) cultivars puree. Heat treatment on actinidia puree was conducted at $70{\sim}90^{\circ}C$ for 1 min to 5 mins, while a control sample of the actinidia puree was prepared without heat treatment. In all the samples, except for the sample treated at $90^{\circ}C$ for 5 mins, pH and Brix degree was not dramatically changed. Pulp content decreased with increasing temperature and time. L and the a value of color increased with increasing temperature and time. However, the b value showed a reverse tendency with L and the a value. Viscosity and gumminess increased as heat temperature and time increased, though cohesiveness was not significantly changed depending on temperature and time. Coliform and yeast were not detected on all samples and the number of aerobic bacteria and mold decreased as temperature and time increased. Vitamin C and total phenolic content of the puree was not changed for 1, 3, and 5 mins at $70^{\circ}C$ and for 1 and 3 mins at $80^{\circ}C$, but significantly decreased with increasing time at $90^{\circ}C$. Furthermore, the antioxidant activities of the puree, such as DPPH radical scavenging activity, ABTS radical scavenging activity, and FRAP (ferric reducing antioxidant power) showed a similar tendency with total phenolic content.
This study was conducted to evaluate nutritional status with the analysis of the factors which might influence on the prevalent condition of nutrients-intake. 373 persons who are above 60 years old in Chung-Gu, Seoul were surveyed from March 15 to March 30 in 1985. Results were as follows ; 1. General Characteristics 1) Male respondents among the entire respondents comprised 54.3% and female respondents comprised 45.7%. As for age, male and female respondents comprised 55.0% and 37.2% respectively. 2) As for the educational level of the respondents, illiteracy was 49.9% which was the highest. and those who graduated elementary school was 28.1% which was the second highest. And as for the comparison of the education of the male and female respondents, the educational level of male respondents was much higher than that of female respondents. 3) As for the final occupation of the respondents, those who were engaged in commerce comprised 30.8% which was the highest rate, and who were engaged in agriculture comprised 20.1% which was the second highest rate. And those who were engaged in labor comprised 12.3%. 2. The State of Nutrients-intake The energy of the male respondents was 61.4% of RDA and the protein was nothing but 66.8% of RDA. Except vitamin A, vitamin $B_1$ and niacin, calcium, iron, vitamin $B_2$, vitamin C were lower than RDA (the range: $67.5%{\sim}97.3%$). The energy of the female respondents was 70.0% of RDA and the protein was 58.8% which were lower than RDA. Except vitamin A and vitamin $B_1$, calcium, iron, vitamin $B_2$ vitamin C, niacin were lower than RDA (the range: $68.2%{\sim}98.9%$). 3. The various factors related to nutrients-intake 1) The composition of family and the food environment those who were living with their spouses comprised 44.8% which was the highest rate, and those who were living with their son's family comprised 33.5% which was the second highest rate and those who were living with their doughter's family comprised only 4.6%. Those who were living alone comprised 16.4%. The correlation with nutrient intake didn't show a clear relation. 2) Socio-economic state Those who said that they lacked in living expense comprised 32.7% and those who said that they lacked in pocket-money comprised 23.9%, The female respondents outnumbered the male respondents in lacking living expense or pocket-money. In the correlation with socio-economic, there was no striking relation with education level. However, it was shown that little relation in energy, fat in male and also fat and iron in female. The living expense and the satisfaction in pocket-money had also little relation with energy fat and vitamin C in male. 3) Nutrition knowledge and food habit (a) The state of nutrition knowledge and food habit In nutrition knowledge, those who scored less than 60 points were 32.9%, and those who scored more than 90 points were 21.0%. In food habit, those who scored less than 60 points were 26.5% and those who scored more than 80 points were 45%. (b) The corelation with nutrition knowledge and food habit In case of female respondents, nutrition knowledge had a little relation with the intake of cabohydrate, iron, and vitamin C. And we couldn't see a distinct phenomenon in food habit.
Three types of Korean strawberries, Gardian cultivated in vinyl house, Gardian cultivated on the field and Bogyo, at early variety, on the field were harvested after $10{\sim}34$ days from falling of flowers to investigate the chemical changes of fruits during maturing. The initial pH range after 10 days from falling of flowers was $4.13{\sim}4.28$, which was decreased to $3.40{\sim}3.49$ with maturing. The total acid was steadily increased for 26 days and then decreased thereafter. Vitamin C, not detected until 14 days, was gradually increased to $15.83{\sim}24.90mg%$ in 34 days. Reducing sugar content was increased for 24 days and then decreased, while total sugar, glucose and fructose were generally increased during maturing. Xylose was detected a little. For minerals, potassium was measured the highest value, followed by magnessium, and sodium. A trace amount of manganese, zinc and copper were detected. The strawberries had the content range of $6.00{\sim}24.60mg%$ of methyl alcohol and $6.00{\sim}24.40mg%$ of ethyl alcohol.
Physicochemical properties and microbiological quality chanties were investigated on mixed fruit and vegetable juices (apple, carrot and cucumber) stored at 4$^{\circ}C$ without pasteurization(NT), with light piasteurization (LP; 66$^{\circ}C$, 10 sec) and with full pasteurization(FP; 90$^{\circ}C$, 60 sec). Effects of ultrafiltration (UF) on the changes during storage were also examined. pH, viscosity, a-value and b-value remained relatively constant and all samples revealed Newtonian characterisitics. Total acidity and turbidity tended to increase slightly; however, total vitamin C content and L-value slowly decreased during storage up to about 2 months. During the first 4 weeks storage, soluble solids content slowly increased and then decreased. Mold and Yeast and Bacteria were not detected in LP, UP and UF treated samples during storage studied; however, E. coli were detected after 24 days storage. No distinctive storage effects were found among samples prepared; however, ultrafiltration had a considerable effect on the color and soluble solids content of mixed fruit and vegetable juice.
