Freshness of Paprika Packed with PLA Films (개발 PLA 필름으로 포장한 파프리카의 신선도)

  • This research was conducted to compare the quality of paprika ($Capsicum$ $annuum$ L.) packed with PLA film and OPP/PE film pouches during storage at $6^{\circ}C$. Weight loss of paprika fruit was higher in OPP/PE film pouches, mold decay was shown in OPP/PE pouches after 6 days, but was not yet shown in PLA pouches. Hardness decreased in all packages. Soluble solid content was highest in PLA1 film pouch, vitamin C content was also highest in PLA2. Mold decay was not shown in PLA pouches after 9 day, but shown at calyx of paprika fruit in OPP/PE pouches. Off-flavor was strong in the OPP/PE pouches when the pouches were opened, decay was also serious in the same pouches after 15 days and thus quality was inadequate for sale in market.

Fermentation Characteristics and Antioxidative Effect of Red Mustard Leaf Kimchi (적갓김치의 발효특성 및 항산화성)

  • Fermentative and antioxidative characteristics of red mustard leaf (RML) kimchi, a traditional, fermented Korean vegetable food, were investigated. For the study, RML kimchi was made of RML, with green onion, red pepper, garlic, ginger, and sugar, and fermented at 15$^{\circ}C$. The pH was decreased and total acidity was increased during fermentation. The contents of reducing sugar, total vitamin C, and total Phenol content were 2.36%, 65 mg%, and 59 mg% at the initial stage. Although the content of reducing sugar decreased gradually during fermentation, however, the quantity of ascorbic acid decreased with the tendency of slightly increased at 6 days, and the amount of total phenol was increased. CIE L*, a*, b*values were increased until 6 days of the fermentation. In order to determine the antioxidative activity of RML kimchi itself, the model systems of RML kimchi were made with cooked beef. TBA values of RML kimchi which was fermented for 6 days showed the lowest level in model systems. Water, n-hexane, methanol extracts of RML kimchi had a considerable antioxidative activity with the inhibition of formation of peroxide during the autoxidation of linoleic acid mixtures in aqueous model systems.

Quality of Strawberry Packed with PLA Films (PLA 필름으로 포장한 딸기의 품질)

  • Effect of several PLA films on strawberry packaging was investigated. Three types of PLA film (non-perforated PLA1, perforated films of PLA2 and PLA3) were used for packing strawberry and the fruit quality was measured during 6 day storage at 10. For comparison, two types of OPP/PE film (non-perforated OPP1 and perforated OPP2) were used for strawberry packaging. Weight loss of all the treatments was below 0.12% after 6 day, seeming to be in tolerable range. PLA3 package showed the best retention in fruit firmness, PLA2 and PLA3 packages the least changes in acidity, and PLA2 package gave the least changes of soluble solid content and vitamin C content. There have been no differences in surface color among packages. Perforated PLA films could be effective for use as packaging of strawberry.

Comparative Chemical Compositions of Four Kinds of Tochukaso (동충하초 품종별 영양성분 비교)

  • Nutritional compositions of three Tochukaso species (Paecilomyces tenuipes hosted by Larva and pupa, Cordyceps militaris, C. sinensis) were compared. Fruiting body and host fractions were separately analyzed. Fruiting body fraction of P. tenuipes (36.6%) hosted by larva was higher than that hosted by pupa (10.2%), an indication that the quality of the former is superior to the latter. Carbohydrate content of C. sinensis (39.6%) was $2.5{\sim}7$ times higher than those of others, probably due to the presence of polysaccharides. Protein and crude lipid contents of C. sinensis and C. militaris were 25.8 and 10.3%, and 75.1 and 3.9%, respectively. C. sinensis showed the lowest Ca content and $30{\sim}75$ times higher Fe content among the samples tested. Vitamin A content of C. militaris was 308.9 IU/100g, two fold higher than those of the other species. Saturated fatty acid content was the highest in P. tenuipes (pupa, 27.7%), whereas unsaturated fatty acid was the highest in P. tenuipes (larva, 83.3%). Aspartic acid, glutamic acid, and glycine were abundant in all species. Cordycepin content of C. militaris was $20{\sim}50$ times higher than those of the other species.

Effects on Quality of Strawberry Fruit by Dipping of Calcium Solution and MA Packaging (칼슘처리와 MA포장이 딸기의 품질에 미치는 영향)

  • The strawberry was dipped into $1\%\;CaCl_2$ solution at $20^{\circ}C\;and\;45^{\circ}C$ for 15min. respectively, and then packaged with or without PE film (thickness: 0.011mm) before putting into the cold storage at $5^{\circ}C$. The results showed the lowest rate of rot incidence and the highest firmness with higher Vitamin C content and the best superficial appearance in the treatment of $CaCl_2$ dipping at $45^{\circ}C$ with packaging. It also showed lower pH and higher titratable acidity in the treatment However, no significant difference of SSC was found among various treatments. The results suggested that the combination of postharvest calcium dipping and packaging could result in more effective preservation for strawberry compared with the individual treatment.

The Correlation and Comparison of Quality Characters of Several Tomato Cultivars Grown by Hydroponics (수경재배한 토마토의 품종별 품질특성 비교 및 품질특성간 상관관계)

  • This study was conducted to compare the quality characters of 15 different tomato cultivars ('Dotearang Dia', 'Super Dotearang', 'Super sunroad', 'Hoyong', 'Mirokku', 'Baccuhs', 'Mascara', 'Poseidon', 'Radido', 'Madison', 'Rapsodie', 'Solomon', 'Amaral', 'Picasso', 'Tymaxx') and find out the correlation among the quality characters in order to get basic informations for exporting tomato. The $a^*/b^*$ value of fruit surface showed from 2.8 to 4.8, but there was no significant difference in fruit surface color value, such as $a^*$, $b^*$ and $a^*/b^*$ among the cultivars. The respiration and ethylene production rate also were not shown any significantly difference among cultivars. The firmness of fruit was higher in 'Picasso', 'Tymaxx' and 'Madison' cultivars. The contents of soluble solids was higher in 'Hoyong' and 'Dotearang Dia' cultivars. The vitamin C content was higher in 'Super Sunroad' and 'Dotearang Dia' cultivars. The titratable acidity was higher in 'Hoyong' cultivars. The sugar/acid ratio that depended on soluble contents was lower in 'Amaral', 'Picasso', 'Tymaxx' cultivars that showed lower soluble contents. Conclusionally, The firmness that was one of the most important quality character in exporting tomato was higher in European cultivars, but soluble solide and vitamin C content were higher in Japanese cultivars. The significant correlation coefficient values were determined (more than p = 0.05) between $a^*/b^*$ and other quality characters. The results suggested that surface color was the most suitable character represented tomato qualities. The high coefficient value (r = 0801) between $a^*/b^*$ and the contents of soluble solids. The firmness and the contents of soluble solids that is the most important factor for exporting showed significant negative correlation (r = -0.611).

Effects of High Pressure on Quality Stability of Fresh Fruit Puree and Vegetable Extracts During Storage (고압처리가 신선 과채음료의 저장기간 중 품질 안정성에 미치는 영향)

  • Pressure, used as a minimal processing technology in the food industry, is a valuable tool ensuring microbiologically safe, shelf-stable fruit and vegetable production. Pressure could be used to deliver a greater variety of minimally processed products, as demanded by today's consumers. Weevaluated the effect of <400 MPa pressure, applied during chilling, on fresh fruit purees (strawberry, kiwi, aloe, and pomegranate) and vegetable extracts (from carrot and spinach) during cold storage (<$10^{\circ}C$) for 15-20 days. Samples were prepared in a processing facility in which total plate counts of falling and floating bacteria were controlled at $1{\times}100-10^1$ CFU/plate and $1{\times}10^2-10^3$ $CFU/m^3$ under conditions of $21-25^{\circ}C$ and 55-60% relative humidity. The aerobic plate counts of raw materials were less than $1{\times}10^3$ CFU/g. Evaluation parameters included microbiological safety, vitamin content, and sensory qualities. Although the overall quality of non-treated samples deteriorated with storage time at $10^{\circ}C$, samples pressurized at 250-350 MPa at $5-7^{\circ}C$ for 10 min showed less change, with no significant difference in microbiological safety, vitamin content, or sensory quality. The use of pressure extended the shelf-life during storage at $10^{\circ}C$.

Effects of Rice Bran Extracts on Oxidative Stability of Corn Oil (옥수수유의 산화안정성에 대한 미강 추출물의 효과)

  • Rice bran contains high amounts of fiber and various phytochemicals, including vitamin E, ${\gamma}$-oryzanol, and phenolic acids. The oxidative stabilities of corn oil added with three rice bran extracts from two rice cultivars (Dasan 1 and Ilpum) were evaluated. The three rice bran extracts were unsaponifiable matter of rice bran (USM), methanolic extract of rice bran oil (MEO), and methanolic extract of defatted rice bran (MEDR). Each sample was stored at $50^{\circ}C$ for 24 days. Oxidation of these samples was determined every 3 days by measuring the peroxide value (POV) and conjugated diene value (CDV). Vitamin E content was analyzed on day 0 and day 24. The results show that the POV and CDV values of samples increased gradually during the storage period. The order of oxidative stability was shown as BHT> MEDR> MEO> USM> control, regardless of cultivars. In the case of vitamin E, ${\alpha}$-T, ${\gamma}$-T, ${\alpha}$-T3, and ${\gamma}$-T3 contents decreased by 89%, 31%, 83%, and 32% after storage for 24 days, respectively. In conclusion, MEDR showed higher oxidative stability and may have potential as a source of natural antioxidants in the oil industry.

Simultaneous Determination of B Group Vitamins in Supplemented Food Products by High Performance Liquid Chromatography-Diode Array Detection

  • A simple HPLC-DAD method was developed and validated to determine B group vitamin content (thiamine, riboflavin, nicotinamide, pantothenic acid, pyridoxine and folic acid) in supplemented food samples, i.e., infant formula, cereal, low-calorie food, a multi-vitamin pill and a vitamin drink. In this study, the most significant advantages were simultaneous determination of the six B group vitamins in various food matrices and a small number of sample treatment steps that required only an organic solvent, acetonitrile. Moreover, this method prevents reduction of column durability, because the mobile phase does not contain ion-pairing reagents. Analytes were separated on a Develosil RPAQUEOUS $C_{30}$ (4.6 mm ${\times}$ 250 mm, 5 ${\mu}M$ particle size) column with a gradient elution of acetonitrile and 20 mM phosphate buffer (pH 3.0) at a flow rate between 0.8 and 1.0 mL/min. Detection was performed at 275 nm, except for that of pantothenic acid (205 nm). The calibration curves for all six vitamins showed good linearity with correlation coefficients ($r^2$) higher than 0.995. The developed method was validated with respect to linearity, intra- and inter-day accuracy and precision, limit of quantification (LOQ), recovery and stability. The method showed good precision and accuracy, with intra- and inter-assay coefficients of variation less than 15% at all concentrations. The recovery was carried out according to the standard addition procedure, with yields ranging from 89.8 to 104.4%. This method was successfully applied to the determination of vitamin B groups in supplemented food products.

Physicochemical Composition of Capsosiphon fulvescens (매생이의 이화학적 성분)

  • This study was conducted to investigate the major chemical components of dried Capsosiphon fulvescens. The proximate compositions of C. fulvescens as dry matter basis were the moisture content 6.27%, 27.66% of crude protein, 1.68% of crude fat, 10.69% of crude ash, and 53.70% of carbohydrate, respectively. Analysing total amino acids, 17 kinds of components isolated from C. fulvescens. The essential amino acid contained in C. fulvescens accounted for 42.33% of total amino acid, while the non-essential amino acid accounted for 57.67%. Fatty acids were of 13.34% of saturated fatty acids, 21.69% of monounsaturated fatty acids and 64.97% of polyunsaturated fatty acids. Linoleic acid, oleic acid, palmitic acid and linolenic acid were the major fatty acids among 14 fatty acids detected in dried C. fulvescens. Oxalic acid was the major organic acids. The contents of vitamin A and vitamin E were 0.021 mg% and 0.001 mg%, respectively. The mineral contents of dried C. fulvescens were greater in order of Mg
