  • The effects of different night temperatures and NO$_3$$^{[-10]}$ : NH$_4$$^{+}$ ratios in nutrient solution on the growth and quality of Chinese white cabbage(B. chinensis L. var. chinensis) and Chinese flat cabbage(B. chinensis L. var. rosularis) were studied. The results were summarized as follows. 1. Fresh weight was increased higher in night temperature 15$^{\circ}C$ than 5, 1$0^{\circ}C$, but content of vitamin C and dry weight ratio were increased as night temperature was lower. 2, The growth of Chinese white cabbage and Chinese flat cabbage was bad extremely in NO$_3$$^{[-10]}$ : NH$_4$$^{+}$(0 : 8), and the others were little different 3. In nutrient solution, the higher NO$_3$$^{[-10]}$ -N concentration was, the more content of vitamin C, and the higher NH$_4$$^{+}$-N concentration was, the more dry weight ratio.ratio.

A Study on Nutritional Attitude, Food Behavior and Nutritional Status according to Nutrition Knowledge of Korean Middle School Students (서울과 경기지역 남녀 중학생의 영양지식에 따른 영양태도, 식행동 및 영양섭취 상태에 관한 연구)

  • The purpose of this study was to investigate nutrient intake and food behavior according to the nutrition knowledge of middle school students residing in Seoul and Kyunggi-do, Korea. Anthropometric measurements and questionnaires, including 24-hr recall of dietary intake, were collected from 543 male and female middle school students. They were assigned to one of five groups according to their nutrition knowledge : very high group (VHG ; 90 - 100 score), high group (HG ; 80 - 90 score), normal group (NG ; 70 - 80 score), low group (LG ; 60 - 70 score) and very low group (VLG ; < 60 score), and comparisons were made. The mean age of the subjects was 13.7 years old. The mean height, weight, and BMI of male and female students were 161.9 cm, 52.6 kg and 20.2 kg/$m^2$, 157.0 cm, 50.4 kg, and 20.4 kg/$m^2$ respectively. Female students skip breakfast and dinner more frequently than male students do. Male students skipp lunch and eat fast foods more frequently than females do. Protein, calcium, vitamin B$_1$, vitamin B$_2$, niacin, vitamin C, fat, and animal protein intakes in females are shown to be related to their nutrition knowledge. Calcium, protein, animal protein, vitamin B$_2$and niacin intakes are significantly lower in the VLG than in the others. However, vitamin B$_1$and vitamin C intakes are significantly lower both in VHG and VLG. Fat intake in VHG is lowest. Nutrition knowledge of male students is correlated with mothers knowledge, nutrition attitude and nutritional status. On the other hand, in female students, nutrient consumption was lowest in subjects whose nutrition knowledge was highest and lowest. Therefore, nutrient consumption is affected by nutrition knowledge. However, in female students, possibly due to wrong information on diet or prejudice and outlook, nutrient consumption was low even when they scored high in nutrition knowledge. In conclusion, nutrition knowledge of male students is affected by the mothers nutritional knowledge and attitude. Therefore, nutrition education for mothers is very important. In male students, as their nutrition knowledge is low, their nutrient consumption is affect. These results indicate nutrition education and correct information for body image, balanced diet, regularity of meals and food selection for middle school students are required at both school and home.

Assessment of Dietary Intake of Preschool Children in Busan : Assessment Based on Food Group Intake (부산지역 학령전 아동의 식생활평가 : 식품군 식품섭취 상태평가)

  • To assess diet quality by food group intake and to investigate the interrelationship of age, dietary diversity score(DDS), dietary variety score(DVS), dietary frequency score(DFS), food group intake and nutrient intake with food group intake, a dietary survey was conducted with 176 preschool children aged 1 to 6 in Busan using a 24-hr recall method. Food group intake was assessed by food number consumed and intake frequency by six food groups(grain, meat, vegetable, fruit, dairy, sweets group). The mean food numbers consumed and intake frequencies by six feed group were 3.1 and 4.0 in the grain group, 3.6 and 4.0 in the meat group, 3.5 and 4.1 in the vegetable group, 1.0 and 1.1 in the fruit group, 1.3 and 1.5 in the dairy group, 1.4 and 1.4 in the sweets group respectively. As age increased, the intake frequency of the grain group(p<0.05) increased but that of the dairy group(p<0.05) decreased significantly. The DVS and DFS didn't show significant correlations with intake frequency of the dairy group. The grain group intake had significant positive correlations with intakes of the meat, vegetable, and fruit groups. The vegetable group intake had signigicant positive correlations with intakes of the grain and meat groups. The dairy group intake had significant positive correlation with sweets group intake but negative correlations with intakes of the grain and vegetable groups. As the intake frequency of the meat group increased, the NAR(nutrient adequacy ratios) of all nutrients and NAR(mean adequacy ratio) increased significantly. NARs of provein iron, vitamin B$_1$, niacin had the highest correlation with the meat group intake and those of protein, calcium, phosphorous, and vitamin B$_2$ had the highest correlation with the dairy group intake. NARs of vitamin A and vitamin C had the highest correlation with intake of the vegetable and fruit groups respectively. Association of Bone Mineral Density and Blood Pressure, Calcium Intake among Adult Women in Seoul.Kyunggi Area - Based on 2011 KNHANES - (서울.경기지역 성인여성의 골밀도와 혈압, 칼슘섭취의 상관성 연구 -2011년 국민건강영양조사를 중심으로-)

  • This study was carried out to investigate bone mineral density (BMD), blood pressure, calcium, sodium intake and related biochemical variables, and to analyze the relationship between BMD, and blood pressure, physical characteristics, nutrient intakes of Korean adult women. The study subjects were 30~80years old, 513 women living in Seoul and Kyunggi area who participated in 2011 KNHANES. The study subjects were divided into three BMD groups; normal, n = 259 (50.4%), osteopenia, n = 169 (32.9%), and osteoporosis, n = 85 (16.7%). Average height and weight and fat free mass decreased with a decrease in BMD. Average BMD of normal, osteopenia, osteoporosis were 0.87, 0.79, $0.70g/cm^2$, and T-score were 0.42, -0.66, -1.62, respectively. Higher systolic blood pressure, alkaline phosphatase, and triglyceride were significantly associated with a decrease in the BMD. The rates of hypertension were significantly increased from normal to osteoporosis. i.e. 18.5% in normal, 34.3% in osteopenia and 63.5% in osteoporosis. Average nutrientintakes such as protein, fat, calcium, phosphorus, iron, sodium, potassium, vitamin A, vitamin B, vitamin B2, and vitamin C were significantly lower in subjects with lower BMD.n. Average calcium intake of normal, osteopernia and osteoporosis were 528.50, 416.96, 389.56 mg, respectively. There were significant negative correlations between calcium, phosphorus and age, systolic blood pressure, triglyceride. Also, there were negative correlation systolic blood pressure (incomplete sentence). In this study, we found low BMD according to low calcium intake increase the risk of osteoporosis and hypertension rather than sodium intake, also calcium intake decreased with increase age. Therefore, in order to prevent osteoporosis and hypertension, subjects need to be educated regarding the importance of calcium nutrients in diet.

Prevalence of Metabolic Syndrome and Nutrient Intakes of Obese Middle School Students in Korea - Focused on Namwon city, Jeonbuk - (일부 비만 중학생의 대사증후군 유병율과 영양소 섭취 실태 연구 - 전북 남원시를 중심으로 -)

  • This study was carried out for the prevalence of metabolic syndrome in obese middle school students. The subjects were 104 obese adolescents of 4 middle schools in Namwon city, Jeonbuk. Average age of the subjects was 12.2 years old, BMI of mild obesity group, moderate obesity group and severe obesity group were 24.6kg/m2, 27.5kg/m2, and 31.8 kg/m2, respectively. Prevalence of metabolic syndrome in obese students was 2.9%. And the person who has more than 2 out of 5 symptoms was 22.1%, and more than 1 was 39.4%. The prevalence of each symptoms were abdomen obesity(46.2%), hyper triglyceride(23.1%), high blood pressure(20.2%), high HDLcholesterol(2.9%), but the hyper glycemia had not been found. Nutrient intakes of 3 groups were not significantly different, energy was 1817.9kcal, carbohydrate was 265.7g, protein was 72.2g, and fat was 51.9g. Nutrient adequacy ratio(NAR) of protein, phosphorus, iron, vitamin A, vitamin B1, vitamin B1, niacin, vitamin C was proper, except calcium. Seventy point two percent of the obese students knew 'obesity is a disease', and 49.0% of the subjects didn't know the complication of the obesity. Only 27.9% of the obese adolescents took nutrition education class, but 51.9% of them thought nutrition education was necessary. We suggest that the nation enforce the policy for early detection and treatment of obesity for adolescents. Obese students and their parents should take nutrition education.

Comparative Analysis and Evaluation of Dietary Intakes of Koreans by Age Groups: (1) Nutrient Intakes (서울 및 근교에 거주하는 한국인의 연령별 식생활 비교 및 평가: (1) 영양소 섭취 비교)

  • It is necessary to compare the dietary characteristics among different age groups because different nutritional problems require different dietary applications. This study was performed to identify the nutritional characteristics of Korean diet among different age groups. The study subjects consisted of preschool children(PC), elementary school children(EC), high school students(HS), college students(CS), and adults over 30 years old living in Seoul and the surrounding areas. The subjects over 30 years old were classified to 30-49 years, 50-69 years, and over 70 years. A dietary survey was conducted using 24-hour recall method and data were collected from 2392 subjects. Energy intake was as much as 1771kcal for PC, 2139kcal for EC, 2475kcal for HS, 2276kcal for CS, 1860kcal for 30-49 years, 1715kcal for 50-69 years, 1326kcal for over 70 years. The subjects of PC, EC, HS, and CS groups got about 25% of energy from fat, but the subjects in 30-49 years, 16%, those in 50-69 years, 15%, and those over 70 years, 13%. The energy consumption from protein was about 15% in each age group. Percent of energy intake as Korean RDA was greater than 100% for PC, EC, HS, and male CS groups. The percent intake for RDA of calcium, iron, vitamin A, and vitamin B$_2$was low in most age group. Iron intake was inadequate in female of PC and CS groups, and subjects in 30-49 years and over 70 years. Mean adequacy ratio(MAR) was 0.9 in PC, and decreased with increase of age. Therefore MAR did not reach to 0.7 among subjects over 70 years. Index of nutritional quality(INQ) for calcium, iron, vitamin A, and vitamin B was below 1 in most age groups. From these results, major nutritional problems of each age group were overall inadequate intakes of calcium and iron, excess consumption of protein and fat for PC, EC, HS, and CS groups, and inadequate nutrients intake of subjects over 70 years old. Comparative Assessments of Dietary Intake of Korean-Chinese and Koreans (중국 연변 조선족 성인과 한국 구리지역 성인의 영양소 및 식품섭취 비교 평가)

  • This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.

A Long Term Observation of Total Cholesterol, Blood Pressure, BMI and Blood Glucose Concerned with Dietary Intake (장기간 관찰에 의한 식생활과 혈청 총 콜레스테롤, 혈압, 체질량지수 및 혈당과의 관련성 연구)

  • To establish a basic cohort which can survey the nutrient and food intake related to the health status of the middle and old-aged vertically, a longitudinal survey of 110 adults over forty years old was conducted three times in Chon-ju city over 5 years (1994-1999), and the influences of health status by changes in their nutrient and food intake were examined in this study. The results were as follows ; The number of subjects was 110(43 man, 67 women), 10.0% in their forties, 28.2% in their fifties, 45.4% in their sixties 6.4% over seventy, and their average age was 61.4. There were decrease of height about 1cm , increase of body fat % and few changes of BMI during the testing period. As the subjects were aging, the percentage of anemia increased, but averages of blood pressure and blood glucose(men : 91.8mg/㎗, women : 90.3mg/㎗) were constant. Total cholesterol increased from 196.7mg/㎗ to 212.6mg/㎗(P 0.05) over five years, and the numerical values for women were higher than that of men. In many cases, lack of nutrient intake was shown, as compared with the Recommended Dietary allowance(RDA) especially calcium and vitamin A(71.7%, 64.9% of RDA). Grains intake showed a tendency to decrease(P 0.01). On the contrary, fruit intake showed a tendency to increase(P 0.001). On whole meal, plant foods were 85.1% and animal foods were 14.9%. As dietary factors influencing health status were investigated, blood glucose was influenced by vitamin B$_2$, potatoes and triglyceride, DBP and SBP were affected by vitamin B$_1$, vitamin C, legumes, fishes, triglyceride and age. Total cholesterol was under the influence of triglyceride, milk, seeds and fat. BMI was influenced by iron, SBP, animal food, and age.

A Study on Food Service for School Children -Provided by Dong Duck Elementary School in Daegu- (학교급식(學校給食)에 관(關)한 조사연구(調査硏究) -대구 동덕국민학교를 중심(中心)으로-)

  • This study concerns the nutritional status of food in a lunch-box and the school lunch program provided for Dong Duck Elementary School Pupils in Daegu. Two hundred andsix pupils were randomly selected as a sample. The nutrients contained in a lunch-box and school lunch menu were analyzed according to the Food Composition Table. Nutrients and cost of the Dong Duck Elementary School Lunch were compared to the average nutrient contents of food in a lunch-box of o pupil. In addition, comparisons between the Recommended Daily Allowances of nutrients for Korean children aged from 9 to 11 (4th, 5th, and 6th grade) and that of the contained nutrients in the average lunch-box were conducted. The average nutrients contained in the lunch-box compared with the Recommended Daily Allowances are: Calorie 77.41% (542.60ca1), Protein 73.60% (16.93gr), Fat 33.95% (3.95gr), Calcium 27.85% (111.39mg), Ferret 80.30% (2.65mg), Vitamin A 10.09% (100.93 I.U.), Vitamin Bl 70.27% (0.27mg), Vitamin B2 88.37% (0.38mg), Vitamin C 15.40% (3.45mg). All of the nutrients in the lunch-box fall far below the Recommended Daily Allowances for the 9-11 age group. The average nutrients of staple food in the lunch-box compared with the side-dishes were found to contain Calorie 90.80%, Protein 50.32%, Fat 58.27%, Calcium 37.07 %, Ferret 53.96%, Vitamin A 0.0028%, Vitamin B1 78.11%, Vitamin B2 21.09%. The nutrients of food contained in the Dong Duck Elementary School Lunch Program compared with the Recommended Daily Allowances were: 1. The Protein, Fat, Ferret, Vitamin B1 and Vitamin B2 content was generally satisfactory. 2. Calcuim, Vitamin A and Vitamin C were lower than the Recommended Daily Allowances. 3. The Calorie content was generally lower for the 9-11 age group. The per pupil cost of the lunch-box was 41.87 won which includes the cost of staple food 16.92 won and side-dishes 24.95 won, whereas the school lune Provided by Dong Duck Elementary School Costs 35 won per pupil. Questionnaires were sent to four hundred parents (through their children) to find out their attitude toward the school lunch program. 390(97.50%) of them were returned and 7 of them dia not answer at all. Therefore, these were eliminated from the samlpe. Among 185 parents whose children were eating the school lunch; 172 parents (92.97% ) would pay 40 won for the proposed new school lunch program whereas only 13 parents (7.03%) did not want it. Among 198 parents whose children were not having the school lunch, 58 parents (29.29%) would agree to have the lunch for their children at the cost of 35 won with the proposed new school lunch program equivalent to 40 won. 126 parents (63.63%) could not agree to have their children being the school lunch because of their financial difficulty (74 parents 58.72%). The rest of parents (52 parents 41.28%) raised other reasons which were minor problems. Among the tatal of 383 parents, 309 parents (80.68%) would agree to gave school lunch for their children if the cost of the proposed new school lunch program would be 35 won to 40 won and if minor problems concerning the school lunch program are solved. Sixty parents (15.66% ) raised questions about the school lunch program concerning sanitary problems, taste of bread, and the quantity of lunch. Among 383 parents, 358 parents answered and 25 parents did not. When school officer asked if the parents would help during the school lunch hour, 101 parents indicated they could not help at all, but 177 parents, replied they could help. Among 177 parents, 40 parents of them could share their time from one or two hours everyday except Saturday and 107 parents could serve 1 to 3 days per week. Through this study, it is evident that further investigation should be done of the school lunch program which can be provided 35 won with the proposed new school lunch program. The parents participation in the school lunch program would be improved the understanding between school and parents as well as insure better nutrition and sanitation for the children.

Microbiological, Nutritional, and Rheological Quality Changes in Frozen Potatoes during Storage (냉동감자의 저장 중 미생물학적, 영양학적 및 물성 품질 특성의 변화)

  • This study evaluated the microbial, nutritional, and rheological changes in potatoes, during storage at room, low, and freezing temperatures for 6 months. No significant changes in total aerobic plate counts were observed for any of the samples in the assessment of microbiological quality changes. For the 4 types of frozen potatoes, yeasts and molds were not found until 24 weeks. The sugar contents of the potatoes stored at room and low temperature ($10^{\circ}C$) increased during the first 4 weeks of storage, but then decreased rapidly thereafter; while those in the frozen potatoes did not change significantly throughout the 48 weeks. The vitamin C, B1, and B2 contents of the potatoes stored at room and low temperature had decreased significantly after 4 weeks of storage, however, the levels in the frozen potatoes did not change rapidly. The weight, volume, and hardness of the frozen potatoes changed much less as compared to the potatoes stored at room and low temperature over the 48 weeks of storage. Finally, the cohesiveness of all the samples, except for the frozen mashed potatoes, did not change during storage.
