24-hour recall is the dietary assessment method most frequently used to evaluate dietary intake; however, accuracy is an issue when using this method, especially in large-scale studies. The purpose of this study was to assess the validity of dietary intake estimation using one serving size. Estimates of energy and nutrients taken in over a 24-hr period based on actual intake amount (24HRAI) and based on estimates of one serving size (24HRSS) were compared. Data were analyzed using a paired t-test, Pearson's correlation coefficients, and a cross-classification method. In male subjects, intake levels of energy, fat, vitamin C, vitamin $B_1$, Zn, and total food measured using 24HRAI were significantly higher than those measured using 24HRSS. In female subjects, intake of carbohydrates, fiber, fat, vitamin A, vitamin C, vitamin B complexes, various minerals, and total food measured using 24HRAI were significantly lower than those measured using 24HRSS. Energy-adjusted Pearson's correlation coefficients revealed that intake of all nutrients showed a significant positive relationship between the two measurement methods in both males and females. Cross-classification analysis revealed that 50.5~67.6% of women and 40.3~71% of men were classified in the same quartile of intake of each nutrient when comparing data from 24HRAI and 24HRSS. We conclude that using one serving size in 24-hr recall analysis was valid and therefore may be used in studies to assess food consumption in the general adult population. Also, this method can be used to classify energy and nutrient intake into quartile, which is useful in examining the association between diet and chronic diseases.
The purpose of this study was to investigate children's nutrient intakes by school lunch. Evaluation of nutrient intakes by school lunch for three days was conducted with 86 children in urban and 64 children in rural of Jeonbuk area. The results of this study were as follows. 1) With respect to amounts of provided nutrients in school lunch, CPF (carbohydrate : protein : fat) energy ratio was 48.6 : 19.7 : 31.6 in urban and was 46.7 : 20.5 : 32.7 in rural. Compared to 1/3 RDA (RDA) of children for 10-12 years, folic acid and zinc were provided below 50 % of RDA. Protein, fat, phosphorus, vitamin $B_1$, vitamin $B_2$, niacin, vitamin C and vitamin E were provided above 125 % of RDA. There were no differences in amounts of provided nutrients-except calcium, vitamin A, vitamin $B_6$, folic acid and zinc-between urban and rural. 2) With respect to amounts of nutrient intakes, CPF energy ratio was 51.1 : 17.4 : 31.5 in urban and 47.5 : 19.7 : 32.7 in rural. Compared to RDA, folic and zinc were below 50 % of RDA. Iron and vitamin $B_6$ were below 75 % of RDA. Protein, fat, phosphorus and vitamin E were above 125 % of RDA. There were significant differences in nutrient intakes between urban and rural. The children in rural showed higher levels of nutrient intakes-energy, carbohydrate, protein, fat, calcium, phosphorus, iron, zinc, vitamins and folic acid-compared to those of children in urban. These results suggest that programs are needed for providing adequate nutrient intakes for children in school lunch and for improving nutrient intakes of children in urban.
The purpose of this study was to evaluate the concentration of vitamin B6 in 16 pregnant-infant pairs and 15 nonpregnant women and to investigate the relationships between vitamin B6 status of maternal-umbilical cord plasma and pregnancy outcomes. dietary intake was obtained from semiquantitative frequency questionnaire. The daily mean energy and protein intakes were higher than the recommended dietary allowance, while daily vitamin B6 was only 74% of RDA in pregnant and 73% of RDA in nonpregnant women. The main sources of vitamin B6 were vegetables and fruits in pregnant women, while cereal and starch in nonpregnant women. The plasma PLP and PL levels of pregnant women were 14.85nmol/l and 20.56nmol/l, significantly lower than those of nonpregnant women. the PLP/PL ratios of pregnant and nonpregnant women were 1.65 and 0.33, indicating that the levels of vitamin B6 was altered during pregnancy. The PLP and PL levels of umbilical cord plasma were 63.55nmol/l and 32.25nmol/l, respectively. The vitamin B6 levels of umbilical cord plasma were significantly higher than that of maternal plasm. This finding indicates that the uptake of vitamin B6 in the fetus may be due to an active placental transport mechanism. The PLP level of maternal plasma correlated positively with that of umbilical cord plasma, showing the PLP concentration of umbilical cord plasma is affected by maternal vitamin B6 status. The maternal plasma PL level showed a positive correlation to infant birth weight. The positive association has bee also found between plasma PL level of umbilical cord and Apgar 1 min score.
Vitamin B(sub)12(cobalamin) is an essential nutrient in human and it is particularly important during pregnancy. Nevertheless very few studies have reported, concerning vitamin B(sub)12 in relation with reproduction. This study was conducted to evaluate the vitamin B(sub)12 nutrition status of Korean pregnant women and to investigate the relationship between serum vitamin B(sub)12 levels of maternal-umbilical cord blood and pregnancy outcomes. Dietary vitamin B(sub)12 intakes of the pregnants were estimated by semiquantitative frequency questionnaire. Serum vitamin B(sub)12 levels in both maternal blood and umbilical cord blood of 30 pregnant women at delivery were measured by radioimmunoassay. Mean vitamin B(sub)12 intake was 3.3$\pm$1.4$\mu\textrm{g}$/d which was 125.8% of the Korean RDA(2.6$\mu\textrm{g}$) for vitamin B(sub)12 level of umbilical cord blood was 607.8$\pm$282.9pg/ml, more than two fold of maternal vitamin B(sub)12 level 268.6$\pm$97.8pg/ml. This finding indicates that fetal uptake of vitamin B(sub)12 in the fetus may be due to an active transport mchanism across the placenta. Umbilical cord blood vitamin B(sub)12 levels were highly correlated with maternal levels($r^2$=0.548, p<0.001), showing that fetal vitamin B(sub)12 level is affected by maternal status. However there was no significant correlation between the serum vitamin B(sub)12 levels in maternal-umbilical cord blood and the pregnancy outcomes except for the birth weight. Maternal-umbilical serum vitamin B(sub)12 levels were the highest in the group of birth weight 3.0-3.5kg, and the lowest in the group of birthweight below 3.0kg. This study was conducted to assess dietary intake and quality obtained by 24-hour recall method between Korean-Chinese in Yanbian, China(Korean-Chinese) and Koreans in Kuri, Korea(Koreans). The subjects consisted of 730 Korean-Chinese and 696 Koreans. Mean daily energy intake of Korean-Chinese was 1,788kcal and that of Korean was 1,844kcal. Proportions of energy intake from carbohydrate, fat, and protein were 62.6: 16.9: 14.2 for Korean-Chinese and 65.4: 16.3: 14.4 for Koreans. Nutrient intake levels of Koreans were higher than those of Korean-chinese in most nutrients. Calcium and vitamin $B_2$ intakes as percent of Korean RDA were less than 60% in Korean-Chinese. Koreans consumed calcium and vitamin A in the level less than 80% of Korean RDA. Iron intake level of Korean females was less than 75% of Korean RDA. Korean-Chinese consumed 90.4% of food from plant origin, and Koreans consumed 82.5% of food from plant origin. Mean dietary diversity score(DDS) of Korean-Chinese, $3.00{\pm}0.39$, was significantly lower than that of Koreans, $3.73{\pm}0.76(p<0.05)$. Mean dietary variety score(DVS) of Korean-Chinese, 13.6, was significantly lower than that of Koreans, 20.1(p<0.001). According to these results, some adults in the both Korean-Chinese and Koreans did not consume enough nutrients, especially calcium and vitamin $B_2$ intake for Korean-Chinese and calcium and vitamin A intake for Koreans. Dietary qualities of Korean-Chinese subjects and Korean females were not adequate. In the future, further research to promote dietary quality of Koreans including Korean-Chinese must consider the results of this study.
This study was conducted to investigate the validity of using a cameraphone for a dietary intake survey method. The subjects were 28 female college students. After eating a standard lunch meal which consisted of plain rice, seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi, the quantity of dietary intake, calorie intake & nutrients intake were analyzed by weighed method, diet record method and cameraphone method by dietitian with k without cameraphone analysis training. There were no significant differences in the quantity of 6 foods intake between weighted method and cameraphone method by dietitians with camera phone analysis training. However, the quantity of seaweed soup, bulgogi & cucumber salad intake analyzed by diet record method was significantly lower than the weighed method. And the quantity of seaweed soup, bulgogi, cucumber salad, roasted anchovy and kimchi intake analyzed by the cameraphone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. There were no significant differences in the calorie intake and nutrients intake between the weighted method and camera phone method by dietitians with camera-phone analysis training. However, protein, calcium, iron, phosphorous, Vitamin A, Vitamin $B_2$, Vitamin E and cholesterol intake analyzed by diet record method was significantly lower than the weighed method. And fat and Vitamin $B_2$ intake analyzed by the camera phone method by dietitians without cameraphone analysis training was significantly lower than the weighed method. Therefore, this study suggests that the use of the camerephone may be a valid and convenient method fur evaluating a dietary intake survey. However, systematic and standard education is necessary about the size and volume of dishes and angle of photo for more accurate results.

Objectives: According to preceding studies, many people with mental disability have unbalanced dietary habits or excessive intake of calories. Most of them are overweight or obese due to lack of self-control for food consumption, swallowing with inadequate chewing and physical inactivity. Therefore, this study aimed to assess the nutritional intake, including carotenoid, in mentally disabled people and find out a possible solution for nutritional improvement. Methods: People with intellectual disability (N=28), emotional disability (N=44) participated in this study. The disorder grades were from I to III and ages were between 20 and 65 years. Assessments included anthropometry, daily intake of nutrients, including carotenoid, ROMA III questionnaire for assessing bowel movement. Results: The average BMI of intellectually disabled people and emotionally disabled people was in the range of overweight and obesity respectively ($23.7{\pm}6.3kg/m^2$, $25.8{\pm}4.1kg/m^2$). Overall, the frequencies of vegetable and dairy product intakes were lower in this population. When compared with Recommended Nutrient Intake (RNI) from Dietary Reference Intakes for Koreans 2010, the intakes of vitamin $B_1$, vitamin $B_2$ and calcium were insufficient in both groups. Also, lycopene intakes of carotenoid were low, compared with traditional Korean diet of the non-disabled people from the second year 2008 of the 4th National Health and Nutrition Survey. In addition, emotionally disabled people also had lower intake of cryptoxanthin. Conclusions: The mentally disabled people in this study showed lower intakes of vitamin $B_1$, vitamin $B_2$, calcium and carotenoids. Based on these findings, we recommend that it is important to encourage mentally disabled people to consume sufficient amounts of such nutrients in order to promote nutritional status.
Seasonal variations of nutrient intake ware evaluated through a 3-day dietary records in 196 Korean adolescents(86 males, 108 females) aged 13 - 15 years and living in urban and rural areas of Chungnam. The seasonal differences of nutrient intake were tested by repealed measure ANOVA. Comparing nutrient intakes among flour seasons using repealed measure ANOVA, mean values of daily intakes were higher in winter and autumn for most nutrients, and were the lowest in summer in the urban areas and in spring in rural areas. Girls recieved the largest amount of nutrients, except Ca and vitamin $B_12$, in winter and the lowest amount in summer, while in boys significant differences were not observed among the four seasons for meet nutrients, except fats, Mg, and vitamin E. Interestingly, the seasonal differences for many nutrients were more evident in rural areas than in urban areas. Vitamin A intake in urban areas was higher in winter and spring, while in rural oreas, in summer. Mean values of daily intakes as a percent of the RDA throughout the year in boys and girls ware 82.2% and 84.2% for energy and 88.9% and 82.7% for protein, respectively. Ca and vitamin A intakes were as low as 32.4% and 24.2% of the RDA in boys and 39.7% and 30.6% in girls. Intakes of Fe, Zn, folic acid and vitamin B$_{12}$ ranged from 40 - 60% of the RDA. The nutrients which showed the largest seasonal difference in the percent of RDA were vitamin E in boys and vitamin C, vitamin E, and Fe in girls. The index of nutritional quality(INQ) for Fe was significantly lower in autumn in both genders. The INQ for vitamin C in girls of both areas was much higher in winter. Annual mean adequacy ratio(MAR), an index of overall nutritional quality, ranged from 0.57 - 0.69, which was higher in winter than in other seasons. Conclusively, nutrient intakes of Korean adolescents showed seasonal variations, particularly in girls and in rural area. Thus, seasonal variations should be considered in the assessing nutritional status, particularly ill the rural areas of Korea.a.
This study was carried out to investigate the dietary behaviors and nutrient intake of high school girls in Iksan and Seoul cities. The subjects consisted of 122 students in Iksan city, and 136 students in Seoul city. The proportion of subjects who eat meals irregularly was higher in Iksan ($94.8\%$) than in Seoul ($80.9\%$). The proportion of subjects who skip meals was also higher in Iksan ($61.5\%$) than in Seoul ($56.6\%$), and most of them ($69.7\%$) skipped breakfast, even thought they thought that it was the most important meal ($86.4\%$). The subjects tended to overeat at lunch ($41.9\%$) and dinner ($55.4\%$). The main reasons that the subjects skipped a meal were a lack of time (50.7%) and poor appetites ($23.7\%$). Most of the subjects ($57.4\%$) had tried to control their body weight by taking drugs ($40.5\%$), doing exercise ($34.5\%$), and controlling their diet ($25\%$). The average intake of nutrients and energy was significantly higher (P<0.05, p<0.01) in Iksan than in Seoul. The intake was below the RDA recommendations except for phosphorus in I ksan, but was above it except for calcium, iron, and vitamin B2, in Seoul. The indexes of nutritional quality (INQ) of calcium (0.5), iron (0.6), vitamin A (0.8), vitamin B2 (0.7), niacin (0.9), and vitamin C (0.9) were under 1.0 but those of protein (1.0), phosphorus (1.2) and thiamin (1.0) were over 1.0. The INQ of the other nutrients, except protein and vitamin C, was significantly higher in Seoul than in Iksan.
This experiment was designed to evaluate the effect of various dietary vitamin $B_6$ levels on conversion from linoleic acid to arachidonic acid in various tissues in growing chicks. Growing chicks were fed the purified diet containing 7% safflower oil with different levels of vitamin $B_6$ (0, 4, 8, 40, 80 mg per kg diet) for 14 days. Feed intake and weight gain in chicks fed the vitamin $B_6$-free diet were markedly depressed. Esterified and free cholesterol concentrations in serum were significantly higher, while the serum triglyceride concentration was significantly lover in chicks fed the vitamin $B_6$-free diet compared to that fed diets with vitamin $B_6$. The liver triglyceride content was also lower in chicks fed the vitamin $B_6$-free diet. The liver and serum cholesterol ester fractions in chicks fed the vitamin $B_6$-free diet showed higher rate of $C_{18:2n6}$ and lower rates of $C_{18:3n6}$, $C_{20:3n6}$ and $C_{20:4n6}$ as compared with vitamin $B_6$ fed groups. In serum phospholipid fraction of chicks fed the vitamin $B_6$-free diet, rates of $C_{20:3n6}$ and $C_{20:4n6}$ were markedly lower. As dietary vitamin $B_6$ level was increased, the rate of $C_{20:4n6}$ was slightly increased, although it was statistically not significant. The fatty acid compositions of adipose tissue showed almost the same pattern as those in liver and serum. This result suggests that the desaturation of $C_{18:2n6}$ to $C_{18:3n6}$, elongation to $C_{20:3n6}$ or both steps might be impaired by vitamin $B_6$ deficiency in growing chicks.

1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
