Determination of vitamin $B_2$ by the lumiflavin fluorometric method and FMN, FAD, FR by the paper chromatography in the feces and urine (Lumiflavin 형광법(螢光法)에 의한 Rat 분뇨중(糞尿中)의 vitamin $B_2$와 FMN, FAD, FR의 정량(定量))

  • After ablactation, wistar strain white male rats, weighing 270g and 340g, were fed with a diet of CLEA for three months. The whole daily excretion of each feces and urine were collected, and extracted with water($80^{\circ}C$ hot water). The combined extraction were filtered and the $B_2$ was determined with the parts of the filterates by the lumiflavin fluorometric method, and the FMN, FAD and FR with the rest of the filterates by paper chromatography. The following results were obtained; 1. $B_2$ contents in the feces were $27.52{\gamma}$ per 100 grams per body weight, and $83.93{\gamma}$ per each rat per day. 2. $B_2$ contents in the urine were $18.47{\gamma}$ per 100 grams per body weight, and $56.33{\gamma}$ per each rat per day. The total daily excretion of $B_2$ contents in the feces were 1. 5 times as much as in the urine. 3. Among the total daily $B_2$ excretion of one white wistar strain rat in the feces were the following ; FAD, 81.0% ; FMN, 14.9% ; FR, 3.3%. Therefore the order of the contents were FAD>FMN>FR.

Study of Food Intakes and Eating Patterns among Preschool Children in Daegu Area - Nutrient Intakes and Dietary Habits Associated with Body Weight Status - (대구지역 유아들의 식사 및 식생활 형태 조사 - 비만도에 따른 영양소섭취 수준 및 식태도 조사 -)

  • This study was conducted to investigate the body weight status (by WLI: Weight-Length Index) and dietary habits and to assess the nutritional status among preschool children in the Daegu area. Dietary habits including dietary attitude and behavior were investigated using questionnaire answered by mothers of 680 subjects aged 4 to 6 years old (508 completed). Also, dietary intake survey using 24-hour recall method was performed by mothers of the children. According to WLI, the underweight, normal, overweight and obesity level of subjects were 9.1, 62.0, 19.5, and 9.4%, respectively. As well, the number of girls was higher than boys in underweight, overweight, and obese group. There were significantly different on overeating, eating fast, and preferring eating-out by body weight status, and overweight group got higher score than underweight or normal-weight group (p < 0.01, p < 0.001). As well, there was significantly different on not moving around during mealtime by body weight status, and underweight group have lower score than obese group (p < 0.001). From the 24-hour recall survey, it was found that intakes of all the nutrients were higher than the %KDRI except energy, calcium and folate. The energy intake of underweight group of 4~5-year old (1338.2 kcal) and 6-year old was lower than Koreans %DRI for those age group. Folate and dietary fiber intakes of obese group were significantly lower than underweight (p < 0.01, p < 0.05). For 4~5-year old, vitamin $B_6$ intakes of obese group were significantly higher than obese group (p < 0.05). For 6-year old, obese group showed that intake of vitamin $B_1$ was significantly higher than the other three groups, and intake of vitamin $B_1$ of overweight group was significantly higher than the other three groups. Taken together, these results indicate that there were significant differences in the nutrient intake level and dietary habits of preschool children by body weight status in Daegu area. Therefore, parents (family) and caregivers should be aware of the prevalence of obesity and nutritional status of preschool children, and start nutrition education as soon as possible.

The Effects of Smoking and Alcohol Drinking on Nutritional Status and Eating Habits in Adult Males (일부 남자성인의 흡연과 음주에 따른 영양소섭취상태, 식습관 및 혈액성상)

  • The purpose of this study was to investigate the effects of smoking and/or alcohol drinking on the nutrient intake, nutritional status, and eating habits of adult males. The subjects were 157 male adults aged 20-49 living in Daejon. Interviews with questionaire on smoking and alcohol drinking habits and eating habits, anthropometric measurement, biochemical blood test, and dietary assessment by one-day 24 hour recall and two-day diet record were carried out. The subjects were divided into four groups : control (non-smoking and non-drinking), drinking only, smoking only, and the both(drinking and smoking). The average numbers of smoked cigarettes were 17.8/d and 19.1/d in the smoking only group and the both group, respectively. The frequency of alcohol drinking was 8.3 times/month and 11.6 times/month in the drinking only group and the both group, respectively. Height was significantly higher(P 0.05) in the drinking only group than in the none and smoking only groups, while the other anthropometric indices were not different among the four groups. There were positive correlations between smoking and drinking or coffee intake. Alcohol drinking increased eating-out frequency and the intakes of energy, protein, dietary fiber, vitamin A, B$_1$,$ B_6,$ Fe and P, while smoking decreased snack frequency and intakes of energy, protein and vitamin $ B_6,$. Blood pressure was not changed in the smoking only and drinking only groups compared to the none group, while systolic blood pressure was elevated in both group(P 0.05). Alcohol drinking significantly elevated(P 0.05) serum total cholesterol and LDL-cholestrol level, while smoking did not change the serum lipid and cholesterol levels. Hemoglobin nd MCHC levels were significantly elevated(P 0.05) by smoking. From these data, it is suggested that both smoking and drinking have influence on some eating habits and nutrient intakes, and especially alcohol drinking can induce hypercholesterolemia.

Effects of Feeding Methods (Feed vs. Water) of Vitamin E on Growth Performance and Meat Quality of Broilers

  • This research was conducted to compare the effects of vitamin E (VE) when supplemented in either feed or water on the performance and meat quality of broilers. For a six-week feeding trial, a total of 330 broiler chicks were allotted to five treatments. The treatments were 1) 0 ppm VE, 2) 10 ppm VE in feed, 3) 20 ppm VE in feed, 4) 5 ppm VE in water and 5) 10 ppm VE in water. During the starter phase (0-3 weeks) chicks on non-supplemented groups grew slower (p<0.05) than the supplemented ones and the same trend was followed during the finisher (4-6 weeks) and overall period (0-6 weeks). The feed intake was significantly higher in feed supplemented groups as compared with water-supplemented groups and at higher levels as compared with lower levels of supplementation. The nutrient digestibility studies conducted after 15 and 35 days on the feeding trial showed that the digestibility of all nutrients was significantly (p<0.05) higher in supplemented groups than the non-supplemented one. The dressing percentage was higher in supplemented groups, when fed in feed and at higher levels when compared with their respective counterparts. Similar trends were noticed with respect to bone resistance. The calcium and phosphorus contents in tibia were also significantly (p<0.05) higher in supplemented, feed fed groups at higher levels than other groups. The TBARS values measured after 5 and 10 days of storage, which reflect the degree of oxidation, showed significantly lower levels in supplemented diets. The plasma and muscle vitamin E levels also showed a positive linear correlation with the levels supplemented both in feed and water. Overall it can be inferred that supplementation of VE was beneficial and there was not much difference observed when fed either in feed or water at the levels measured in the present study.

Effects of zinc, vitamin and selenium additives for improving meat quality on the growth performance, carcass characteristics and economic efficiency of holstein steers (아연, 비타민과 셀레늄의 첨가가 홀스타인 거세우의 발육, 도체특성 및 경제성에 미치는 영향)

  • This study was conducted to investigate the effect of different additives on the growth performance, feed efficiency and carcass characteristics in Holstein steers during 18month fattening periods. Twenty four Holstein steers, 5months of age and 176.6kg, were randomly allocated to 3 experimental groups 8 animals each for 18-months feeding trial. The groups were control (not additive), T1 (fed zinc, Vitamin C) and T2 (fed zinc, Vitamin C, Vitamin B6 and Selenium). According to feeding additives, final weight was not significantly different among the treatment groups, tended to be high at T2 group (827kg) compared to the other groups. Average daily gain was not different among the treatment groups during the experimental periods, but T2 group was significantly greater than T1 group in growing stage (p<0.05). The feed additives had no effects on DMI during experimental periods. Feed conversion ratio of T1 group in growing stage was significantly higher than those of other groups (p<0.05), average feed conversion ratio was tend to be decreased at T2 group rather compared with other groups. In the results of yield traits, carcass weight were relatively higher in T2 group than other groups (p<0.05). Rib-eye area, back fat thickness and yield index were similar between groups. In quality traits, marbling, meat color, fat color, texture and maturity were not significantly different among the groups. In economic efficiency, income was highest at T2 group as 91~393 thousand won among 3 groups.

Effects of Addition of Citron Peel Powder on the Proximate Composition, Minerals, Vitamin A, C content and Fatty Acid Composition of Emulsion-type Sausage (유자과피 분말 첨가가 유화형 소시지의 일반 성분, 무기물, 비타민 A, C 함량 및 지방산 조성에 미치는 영향)

  • This study was carried out to investigate the effects of addition of citron peel powder(OJ 0/0, 0.60/0, 0.9 %) on proximate composition, minerals, vitamin A, C content and fatty acid composition of emulsion-type sausages. The moisture content of sausage containing 0.3% citron peel powder were significantly(P< 0.05) higher compared to those for control. The crude fat content of sausage containing citron peel powder were significantly( P< 0.05) lower compared to those for control. The crude ash content of sausage containing 0.9% citron peel powder were significantly(P< 0.05) higher compared to those for control. The minerals, vitamin A and C content of sausage containing citron peel powder were significantly(P < 0.05) higher compared to those for control. The palmitic acid(CI6: 0) and linoleic acid(CI8: 2) content of sausage containing citron peel powder were higher compared to those for control, but the palmitoleic acid(CI6: I) content of sausage containing 0.9% citron peel powder were lower. The total saturated fatty acid content of sausage containing 0.3% citron peel powder were significantly(P < 0.05) lower compared to those for control.

  • Purpose: The objective of the present study was to evaluate nutrient and food group intakes in Korean adults according to energy intake from eating-out. Methods: This study was a cross-sectional study based on the 2013~2014 Korea National Health and Nutritional Examination Survey, and study subjects were 5,186 males (2,151) and females (3,035) aged 19~64 years. Energy intake from eating-out was analyzed using the 24-hour dietary recall method, and groups were classified by quartile according to energy intake from eating-out. Results: Subjects who had more energy intake from eating-out tended to be younger, highly educated, have a higher income, and have higher alcohol consumption. Total energy intake and fat intake density of the highest quartile group of energy intake from eating-out were higher than those of the other groups. However, fiber, vitamin $B_1$, calcium, phosphorus, potassium, and iron intake density levels were significantly lower in the highest quartile group of energy intake from eating-out. The highest quartile group of energy intake from eating-out consumed significantly more meat and beverages compared to the other groups. In addition, regarding diet quality (Index of nutritional quality), significantly lower vitamin $B_1$, calcium, phosphorus, and iron levels were observed in the highest quartile group of energy intake from eating-out compared to those in the other groups. Conclusion: In conclusion, in Korean adults, consumption of eating-out decreased dietary quality, including vitamin $B_1$, calcium, phosphorus, and iron levels. Further studies are needed to confirm these findings.

Comparison of Mineral and Vitamin Intakes According to the Stage of Change in Fruit and Vegetable Intake for Elementary School Students in Chungnam Province (충남지역 초등학생의 채소와 과일 섭취 행동 변화 단계에 따른 비타민과 무기질 섭취상태 비교)

  • The purpose of this study was to compare the mineral and vitamin intake according to the stage of change in fruit and vegetable intake. The subjects consisted of 256 students, 122 males and 134 females, who are fourth, fifth and sixth grade in an elementary school located in Yeongi-Gun, Chungnam province. The dietary intake wasexamined by 24 hr dietary recall for 1 day and by food record for 2 days from April 19 to May 01, 2007. Stage of change of intake of fruits and vegetables of the students was categorized into three groups: precontemplation, contemplation and preparation, and action. The subjects at the stage of action took kimchi and vegetables more frequently, and also took more vitamin C as well. But the subjects at other two stages did not show any difference in the intake of any food group and nutrients. Percentage of the male subjects who took less than EAR did not show any significant difference by stage of change in all the nutrients. However, there was gradual decrease in the percentage of female taking less than EAR of vitamin C and vitamin B2. The result concludes that vitamin C intake significantly increase gradually as the stages of behavioral change of fruit and vegetable intake proceed although almost all vitamins and minerals tended to increase.

Diet Qualities by Sex and Age of Adults Over Thirty Years Old in Jeon-ju Area (전주지역 30세이상 성인의 성별, 연령에 따른 식사의 길)

  • This study was performed to assess diet qualities by sexes and ages of adults over thirty years old in Jeon-ju area. Diet survey with one day 24-recall method was used done for 382 subjects(129 males & 253 females). Survey sample was divided into six groups by sex and age groups: male 30-49, male 50-64, male 50-64, male 65-79, female 30-49, female 50-64 and female 65-79 years. Diet quality was assessed by NAR(Nutrient Adequacy Ratio), MAR(Mean Adequacy Ratio), INQ(Index of nutrition quality), KDDS(Koreans Dietary Diversity Score), Meal Balance, DVS(Dietary Variety Score), DQI(Diet Quality Index). The 5-point DQI assessed the important dietary guidelines for Koreans. The averages of energy, protein, P, vitamin B$_1$, vitamin B$_2$, niacin and vitamin C intakes were higher than 70% of RDA. The averages intakes of Ca and vitamin A were very lower than RDA all groups. The averages of MAR were 0.78, 0.81, 0.83 in male 30-49, 50-64, 64-79 years, 0.73, 0.77, 0.71 and in female 30-49, 50-64, 65-79 years, respectively. The averages of MAR in female 30-49 years and female 65-79 years were significantly lower than the averages MAR of male 65-79 years. The averages of Sugars and Beverages intakes were significantly higher in male 30-49 years than others. Animal food intake ratio(% total food intake) in the male 65-79 years(16%) was significantly higher than male 30-49 years(11%). The averages of Nutrition intakes were higher in male compared to female. The subjects who consumed all of the major five food groups were 5% in male 30-49, 17.8% in male 50-64, 25.0% in male 65-79 years, 18.9% in female 30-49, 23.7% in female 50-64, 11.5% in female 65-79 years. The averages of KDDS were 3.5, 3.9, 3.9, 3.8, 3.8, 3.5, respectively. The averages of Meal Balance were 8.6, 9.1, 9.1, 8.3, 8.4, 7.8, respectively. The averages of DVS 20.1, 19.9, 19.9, 20.5, 19.0, 17.2, respectively. The averages of DQI were 1.7, 2.2, 2.1, 2.0, 2.1, 1.7, respectively. 81.8% of the subjects had KDDS scores of 2 to 4 and 87.3% of the subjects has Meal Balance scores 4 to 10. In contrast, 89.8% of the subjects had DQI scores of 0 to 3. In view of these facts there are few who observed the five dietary guidelines for Koreans. There findings suggest that dietary qualities were associated with nutrient intake the relation factors may vary by sex and age of adults over thirty years old in Jeon-ju area. Common problems were lack of Ca, vitamin A and dairy products intakes. Therefore adults over thirty years old in Jeon-ju area need the important nutrient management such as Ca, vitamin A. Effects of Feeding Methods (Water vs. Feed) of Vitamin Con Growth Performance and Carcass Characteristics in Broiler Chickens

  • This experiment was conducted to compare the effects of vitamin C supplemented in either feed or water on the performance and carcass characteristics of broilers during the hot season. For a 6 week feeding trial, a total of 330 broiler chicks (Ross, 4 d old, average 57 g BW) were alloted to five treatments. The treatments of vitamin C (VC) supplementation were 1) 0 ppm VC, 2) 10 ppm VC in feed, 3) 20 ppm VC in feed, 4) 5 ppm VC in water and 5) 10 ppm VC in water. During the starter phase (0-3 week), chicks on non-supplemented group grew slower (p<0.01) than the supplemented ones, and a similar trend was also noted during finisher stage and the overall stage. Feed intake was significantly (p<0.05) higher in supplemented groups and higher when fed in feed as compared with water during all stages. But feed conversion efficiency was significantly improved in non-supplemented groups compared to supplemented ones in finisher and overall stage. The digestibility of gross energy and ether extract was significantly (p<0.05) higher during starter phase in supplemented, given in feed, and at higher levels as compared with non-supplemented, given in water, and at lower levels, respectively. The bone resistance was significantly (p<0.05) higher in supplemented, supplied in feed groups as compared with their counterparts. Except breast meat, the dressing percentage and abdominal fat were also higher in supplemented group and the dressing percentage was significantly (p<0.05) higher in VC supplemented in feed as to water, but no effect of supplementation was noticed on meat color when compared between the methods of feeding (feed vs. water). The levels of VC in plasma and liver increased linearly, as the level of supplementation both in feed and water increased and it was significantly (p<0.05) higher in feed group as compared with water group. It can be concluded that, retention and availability of vitamin C in feed was higher than those in water, and supplementation of VC during summer was beneficial for poultry.
