Effect of Combination of Chitosan Coating and Gamma Irradiation on the Foodborne Pathogen Reduction and Nutritional Properties of Chicken Egg (키토산 코팅 및 감마선 조사에 의한 계란에 오염된 위해 미생물 제어 및 영양학적 특성 평가)

  • The effect of combination of chitosan coating and gamma irradiation on Escherichia coli inactivation and nutritional properties of shell egg was investigated. The E. coli inoculated on shell egg was not detected by 2 kGy of gamma irradiation at day 0 and/or chitosan coating (1%, pH 5.0) after 3 days of storage. There was no E. coli detected thereafter. In the contents of moisture, crude fat, crude protein, ash, retinol, phospholipid, and minerals, no difference was found by treatment combination. However, the contents of cholesterol and carotenoids were reduced by irradiation of 2 kGy (P<0.05). Results suggest that the combination of gamma irradiation (2 kGy) and chitosan coating (1%) can be a good method to improve the safety and prolonged shelf-life of egg because of effective pathogen inactivation without significant adverse changes in nutritional quality.

  • Climate change affects all components of the global environment system and, in turn, all components mutually interact and affect climate change through non-linear feedback processes. It is thus necessary to study the interaction between the climate and the environment, in order to comprehensively understand and predict climate and environment change. However, current relevant systems are limited to particular areas and do not sufficiently support the mutual linking of research studies. Therefore, this study develops prototype a GIS based integrated DB management system for supporting the climate and environment data storage, management and distribution. The integrated DB management system was developed using VB.NET languages and ArcObjects component. First, considering the demands of climate environment experts, the study areas are selected and the methods of data management and utilization were defined. In addition, a location-based GIS DB was created in order to aid in understanding climate change through visual representation. Finally, the integrated DB management system provides an efficient data management and distribution data and it creates synergistic effect on climate and environment study. It also contributes significantly to the comprehensive diagnosis and prediction of climate change and environment systems.

A Study on the Compression and Major Pattern Extraction Method of Origin-Destination Data with Principal Component Analysis (주성분분석을 이용한 기종점 데이터의 압축 및 주요 패턴 도출에 관한 연구)

  • Origin-destination data have been collected and utilized for demand analysis and service design in various fields such as public transportation and traffic operation. As the utilization of big data becomes important, there are increasing needs to store raw origin-destination data for big data analysis. However, it is not practical to store and analyze the raw data for a long period of time since the size of the data increases by the power of the number of the collection points. To overcome this storage limitation and long-period pattern analysis, this study proposes a methodology for compression and origin-destination data analysis with the compressed data. The proposed methodology is applied to public transit data of Sejong and Seoul. We first measure the reconstruction error and the data size for each truncated matrix. Then, to determine a range of principal components for removing random data, we measure the level of the regularity based on covariance coefficients of the demand data reconstructed with each range of principal components. Based on the distribution of the covariance coefficients, we found the range of principal components that covers the regular demand. The ranges are determined as 1~60 and 1~80 for Sejong and Seoul respectively.

Analysis of Food Safety Content in 'Food and Nutrition' Units of Technology and Home Economics Textbooks of the 2015 Revised Curriculum (2015 개정 중학교 기술·가정 교과서 '식생활 단원'의 식품안전 내용 분석)

  • This study aimed at analyzing the food safety units of technology and home economics textbooks, as 'safety' emerged as a key concept in the 2015 revised curriculum. From each textbook, the main text, auxiliary elements(including tables, figures, etc.), and related activities were analyzed. According to the results, first, the main texts emphasized the importance of food selection(3.08 pages), food safety hazards(2.93 pages), safe storage and management of food(2.63 pages), and meal preparation with safety and hygiene(0.98 pages). Secondly, when the auxiliary elements were examined, the food safety content was most often presented in the form of tables/illustrations/pictures, followed by supplementary learning materials, activities, captions, end-of-chapter summaries, the chapter introduction and review quiz, and unit introduction. Thirdly, most activities were individual activities rather than small group or collective activities and were focused on investigation, evaluation, craft, application, implementation, inference and judgment, utilization, and proposition. In conclusion, it is recommended for textbooks to evenly distribute the content in the main texts and auxiliary elements, and include more group activities when developing textbooks in the future.

Some Properties of the Crude Pretenses from Fish for Application in Seafood Fermentation Industry (어류 단백질분해 조효소의 이용을 위한 몇가지 성질)

  • Properties as related to the utilization of the crude proteases extracted from the muscle and viscera of fish (2 dark fleshed lish; anchovy, Engraulis japonica, and gizzard-shad, Clupanoda punctatus; 2 white fleshed fish; seabass, Lateolabrax japonicus, and sole, Pleuronichthys cornutus) were studied. Proteolytic activity of the muscle protease was slightly inhibited with the increase of sodium chloride concentration and it was apparent against the yellowtail myofibrillar protein than casein substrate. Proteolytic activities of the seabass and sole visceral crude protease were inhibited to 50 to $60\%\;by\;25\%$ of sodium chloride, but those of anchovy and gizzard-shad viscera crude enzymes were not influenced by sodium chloride. The vacuum freeze-dried crude protease and glycerol-mixed crude pretense of gizzard-shad and seabass muscles were almost lost their activities on the 16th week of storage, while those from the viscera of the fish were relatively stable. Degradation of the yellowtail myofibrillar protein by the anchovy muscle and viscera crude pretenses rapidly proceeded in the beginning of the reaction and the degraded products were mainly distributed in the range of 6 to 15 kDa electrophoretically.

Perceptions and Practices of Employees Regarding Email Records Management in Universities: A Case Study of D University (대학의 이메일 기록관리 실태와 조직구성원들의 인식: D대학을 사례로)

  • With the increasing number of business email, there is a growing need to manage email records. Before the development of email records management measures, this study aimed to investigate the status of email records management in universities and determine employees' perceptions of email records management. Surveys and interviews were conducted with professors, staff, and assistants who use groupware accounts at D University, and their overall perceptions of email records management and the status of email record management, such as email production, deletion, archival, and backup of university members were gathered. A total of 185 people responded to the survey, and 12 of them were interviewed. According to the analysis, the public utilization of email was frequent, and the management of emails, such as backup and retention, was not performed well compared to deletion and storage. In addition, email is still perceived as private, and users recognize the need for email records management, but they still perceive that they are responsible for records management. The results of this study will be useful in setting the policy for email records management of universities and will help provide email record management awareness.

Current Status and Perspectives of Quality Improvement in Sesame (참깨 품질 연구의 현황과 문제점 및 전망)

  • Sesame(Sesamum indicum L.) is probably the most ancient oilseed crop known in the world. The seed of sesame is used in a variety of ways as food. The whole seed may be eaten raw, either roasted or parched, or fed to birds and stock. Sesame oil is used as a salad or cooking oil, in shortening, margarine and in the manufacture of soap. Minor uses are as a fixative in the perfume industry and formerly as a carrier for fatsoluble substances in pharmaceuticals such as penicillin. One of the minor constituents of sesame oil, sesamin, is used for its synergistic effect in pyrethrin insecticides, in addition of a small quantity of this substance markedly increases the effectiveness of fly sprays. The meal remaining after oil extraction can be used as and animal feed-stuff or as manure. In general sesame meal is considered to be equal to cottonseed or soybean meal as a protein supplement for livestock and poultry. It is especially high in certain amino-acids such as methionine, which is low in soybean meal, and thus can be combined with it or similar meal to form a more balanced ration. An attempt to summarize the literature review on quality improvement of sesame was made to discuss the accomplishments of the past and perspectives in the future. The reviews on quality improvement of sesame were mainly discussed in connection with the cultural practices and genetic informations in current status. The emphasis focussed on environmental variation of quality in cultural practices, such as harvest time, variety by location, climatic condition, fertilizer application, and growth regulator treatment. On the genetic variation of quality, it was discussed on variety background, mutation breeding, correlations, and inheritance of quality related characteristics. It also was discussed on relationship between quality and plant traits, storage condition or period, and seed coat color. Moreover, current research status were reviewed on some minor elements such as sesamin, oxalic acid, and trypsin inhibitor. As a results of the review, the lack of an effort to quality improvement in each utilization area was indicated as a problem area. More active efforts for the improvement of quality were also insufficient to incorporate the available genes for quality in breeding method or collection and analysis of breeding materials. Therefore, researches in the future would be recommended to emphasize on these problem areas.

Scenario Analysis, Technology Assessment, and Policy Review for Achieving Carbon Neutrality in the Energy Sector (에너지 부문의 탄소중립 달성을 위한 국내외 시나리오 분석 및 기술, 정책현황 고찰)

  • Countries worldwide are striving to find new sources of sustainable energy without carbon emission due to the increasing impact of global warming. With the advancement of the fourth industrial revolution on a global scale, there has been a substantial rise in energy demand. Simultaneously, there is a growing emphasis on utilizing energy sources with minimal or zero carbon content to ensure a stable power supply while reducing greenhouse gas emissions. In this comprehensive overview, a comparative analysis of carbon reduction policies of government was conducted. Based on international carbon neutrality scenarios and the presence of remaining thermal power generation, it can be categorized into two types: "Rapid" and "Safety". For the domestic scenario, the projected power demand and current greenhouse gas emissions in alignment with "The 10th Basic Plan for Electricity Supply and Demand" was examined. Considering all these factors, an overview of the current status of carbon neutrality technologies by focusing on the energy sector, encompassing transitions, hydrogen, transportation and carbon capture, utilization, and storage (CCUS) was offered followed by summarization of key technological trends and government-driven policies. Furthermore, the central aspects of the domestic carbon reduction strategy were proposed by taking account of current mega trends in the energy sector which are highlighted in international scenario analyses.

Analysis of mechanical properties of secondary concrete products using CO2 captured material (이산화탄소 고정 탄산화물을 적용한 콘크리트 2차 제품의 기초 특성 분석)

  • In this study, the applicability of CCMs (Carbondioxide conversion capture materials) manufactured by reacting carbon dioxide gas with DG (Desulfurization gypsum) as a cement substitute for secondary concrete products were evaluated and the basic physical properties of CCMs-mixed mortar and concrete specimens were measured to derive the optimal mixing ratio. The main chemical oxides of CCMs were CaO and SO3, and the main crystalline phases were CaSO4·2H2O, Ca(OH)2, CaCO3, and CaSO4. In addition, by the results of particle size analysis and heavy metal measurement, the applicability of CCMs as a cement substitute for secondary concrete products was confirmed. As a result of measuring the strength behavior using mortar and concrete specimens with CCMs, the compressive and flexural strength decreased as the mix ratio of CCMs increased, but requirements by the standards for interlocking blocks and retaining wall blocks, which are target products in this study, were satisfied up to the optimal mixing ratio of 10 wt.% substitution. Therefore, its applicability as a cement substitute for secondary concrete products was confirmed.

Analysis of Overseas Data Management Systems for High Level Radioactive Waste Disposal (고준위방사성폐기물 처분 관련 자료 관리 해외사례 분석)

  • The vast volumes of data that are generated during site characterization and associated research for the disposal of high-level radioactive waste require effective data management to properly chronicle and archive this information. The Swedish Nuclear Fuel and Waste Management Company, SKB, established the SICADA database for site selection, evaluation, analysis, and modeling. The German Federal Company for Radioactive Waste Disposal, BGE, established ArbeitsDB, a database and document management system, and the ELO data system to manage data collected according to the Repository Site Selection Act. The U.K. Nuclear Waste Services established the Data Management System to manage any research and survey data pertaining to nuclear waste storage and disposal. The U.S. Department of Energy and Office of Civilian Radioactive Waste Management established the Technical Data Management System for data management and subsequent licensing procedures during site characterization surveys. The presented cases undertaken by these national agencies highlight the importance of data quality management and the scalability of data utilization to ensure effective data management. Korea should also pursue the establishment of both a data management concept for radioactive waste disposal that considers data quality management and scalability from a long-term perspective and an associated data management system.
