긴급제언 - 유럽연합의 토양포장 (Soil sealing in the European Union)

  • Every year in Europe, soils covering an area larger than the city of Berlin are lost to urban sprawl and transport infrastructure. Soil sealing causes an irreversible loss of the biological functions of soil. As water can neither infiltrate nor evaporate, water runoff increases, sometimes leading to catastrophic floods. Landscapes are fragmented and habitats become too small or too isolated to support certain species. In addition, the food production potential of land is lost forever. There is an urgent need to use this valuable resource more wisely, in order to secure its many vital services for future generations. The EU faces new territorial challenges.

충북지역 학교급식 영양(교)사의 친환경 농산물 사용실태와 인식 및 만족도 (Use, Perception and Satisfaction of Dietitians with Environment-Friendly Agricultural Products in School Food Service in Chungbuk Area)

  • This study aimed to investigate the use of environmentally friendly agricultural products (EFAPs) in Chungcheongbuk-do and the perception and satisfaction of school dietitians with EFAPs. The study survey was conducted from April to Jun 2018. Among 195 dietitians, 54.4% were nutrition teachers and 51.3% were working in elementary schools. Of the participants, 65% answered that the percentage of EFAPS in the total food cost was 10~30%. The most used EFAP food group was grains (64.6%), followed by vegetables (26.2%). The main reasons for using EFAPs were subsidies for EFAPs from local governments (85.1%) and students' health (52.3%). The average daily subsidy for EFAPs from the local governments was 201~500 won at 45.1%, and 200 won or less at 34.9%, which was based on one meal per student. In questions on satisfaction with using EFAPs, satisfaction with safety (3.93 out of 5 points) scored the highest, followed by nutrition (3.74), freshness (3.70), appearance (3.32), diversity (2.85), and price (2.78). Therefore, to expand the use of EFAPs in school food service, it is necessary to expand the provision of subsidies and increase EFAP production diversification.

학교급식 공동관리 영양사의 직무분석 - 경북지역을 중심으로 - (A Job Analysis in Common Managemant Dietitian of School Foodservice - Centering around Kyoung sang buk - do -)

  • The purpose of this research is to analysis the general job of 76 dietitian on common management of school food service in Kyoung-buk area. In this research we asked them some general aspects, and made use of three variants(job performing time, the degree of major recognition, and the degree of difficulty) each question after classifying their jobs into 13 standard jobs. Statistical data analysis was completed using SPSS package program. The results of this survey showed the following : 1. The types of common management are as in the following : of the whole 76, 37 on the rotative trip to one single school, 8 to two schools, 1 to three schools, 28 on the trip to one single school plus central food production and 1 on the trip to two schools plus central food production. 2. The average job performing time in his or her school is 2813 minutes(8.52 hours) per week. 3. The factor of the evaluation and study of school foodservice has the highest level in every variant, but there were no standard job which needed the high-level difficulty and the longer job performing time as it needed the low degree of major recognition.

Analysis on the Types of Benefits of Gardens in Urban Areas: Comparison of Korea and Overseas Cases

  • Background and objective: Recently, there has been an increasing need for relaxation and familiarity with nature in residential and living spaces faced daily by urban residents, leading to a growing social interest in urban gardens. The aim of this study was to determine how gardens in a city provide physical and social benefits, comparing cases in Korea and overseas. Methods: We used the keywords "garden" and "city" for Korea, and "urban," "garden," and "green" for overseas. We then determined the Korean and overseas research trends in urban gardens by analyzing 63 Korean and 90 overseas articles deemed suitable for this study. Results: As to the types of urban gardens, the most significant type was community gardens, both in Korea and overseas (30.2% and 48.6%, respectively), followed by rooftop gardens in Korea (22.2%) and kitchen gardens overseas (22.2%). Due to the narrow and complex urban structure in Korea, people focus on using rooftop, wall, and alley spaces, and tend to arrange container-type flexible gardens. Overseas there has been a focus on promoting health and reducing food inequality through allotment and kitchen gardens, and a tendency to use a larger area as a fixed form than Korea. In addition, it was found that gardens in urban areas had a positive effect on urban biodiversity. Conclusion: To sum up, gardens in Korea are close to living spaces, and gardens overseas influence the ecosystem with an emphasis on food production. Therefore, creating urban gardens is a method of urban regeneration with a high utility that goes beyond mere food production, both in Korea and overseas, providing comprehensive benefits for the environment (37.73%) and society (62.27%). As such, continuous research on this area of study is needed to create policy guidelines for Korea.

농촌지역 관광지개발에 있어 관광권 설정에 관한 연구 -전남 회남로를 사례로- (A Study on Development of Touristic Subregions in Rural Area - Case Study in the Haenahm County, Chonnam -)

  • This study was carried out in the Haenahm county as a part of project, the'89 Comprehensive Planning of Rural Area. In order to increase household income of rural area and to meet increasing tourism demand in urban area, several tourism development directions and strategies were suggested in terms of resources, services, and transportation. The major results of this study are summarized as follows ; 1) Core tourism market has to be maintained by inforcement of unique image of the Haenahm county, such as the southern extremeity of Korean peninsula and tourism resources rich land. 2) New tourism products need to be introduced to attract fringe market of this area by use of natural and cultural resources in the Haenahm county, such as terrain, climate, provincial park, music, dance and artifacts. 3) image of this county as a touristic resort would be escalated by development of high quality andclusterized accommodation in urbanized area of the Haenahm county 4) Development of private lodging, production of local brand by native food, beverage and artifacts, introduction of festival by folk song and folk dance would be helpful to stabilize a seasonal fluctuating demand level of ourismandlocalresidentsincome. 5) Diversification of tourism product needs to be provided for tourists in order to increase chances for enjoyment in the destination and to be involved in socially comfortable atmosphere. 6) Package tour by diversification of touristic subregions in this county and linkage system with touristic regions of other counties would helpful to lead visitors to stay long, resulting in increased expenditure.

발효유제품의 유단백질 기능성 연구 동향 (Functional Properties of Milk Protein in Fermented Milk Products)

  • An understanding functional properties and molecular interactions of milk proteins was critical to improve qualities of fermented dairy products including yogurts and cheeses. Extensive rearrangements of casein particles were important factors to enhance whey separation in yogurt gel network. The use of high hydrostatic pressure treated whey protein as an ingredient of low fat processed cheese food resulted in the production of low fat processed cheese food with acceptable firmness and enhanced meltabilities. Milk protein-based nano particles produced by self-association of proteins could be better nutrient delivery vehicle than micro particle since particle size reduction in nano particles could lead to increased residence time and surface area available in GI tract.

Artificial rearing of the olive fruit fly Bactrocera oleae (Rossi) (Diptera: Tephritidae) for use in the Sterile Insect Technique: improvements of the egg collection system

  • One major constraint in the development and implementation of a successful and cost-effective area-wide integrated pest management (AW-IPM) programme with a SIT component for Bactrocera oleae (Diptera: Tephritidae) is the ability to produce a large number of high quality mass-reared individuals. The aim of this study was to develop a more efficient and practical egg collection system in an attempt to improve the mass-rearing of this species. The following basic parameters were examined: egg production per female, egg hatch, pupal recovery, pupal weight, adult emergence and percentage of fliers. Three different strains (Israel wild-type, France wild-type, and Greece laboratory) were tested and each strain was evaluated for six generations. Female flies of the Israel strain produced significantly more eggs per female than the other two strains, but egg hatch was significantly lower. Egg hatch of the France wild type and the Greece laboratory strain was similar. For all other parameters, there was no significant difference between strains; however, there was a significant generational effect for all parameters observed. As a result of this study, a protocol was developed for the mass-rearing of this species that included the use of large adult holding cages that could house up to 96,000 flies per cage. The newly developed method of egg collection using a flat wax panel as one of the sides of an adult holding cage proved to be cost-effective, efficient, making colony growth easier for industrial mass-rearing.

제주지역 조릿대의 사초생산성 및 사료가치평가 (Evaluation of Forage Production and Feed Value of Sasa borealis in the Jeju Area)

  • 본 연구는 제주조릿대의 사초생산성과 사료가치평가를 진행하여 조릿대의 활용도를 높임과 동시에 현재 한라산에서 발생하고 있는 조릿대로 인한 식물종 다양성 감소문제를 완화하는데 도움이 되고자 실시하였다. 조릿대의 사초생산성은 실험결과 5월과 6월기간에 비교적 우수한 재생력을 보였으나, 예취가 반복 될수록 재생능력이 감소하여 생산성이 떨어지는 경향을 나타내었다. 조릿대의 일반성분 분석결과 조단백질은 가을철 함량보다 봄철에서 비교적 높은 함량을 보였으며 6월에서 $8.64{\pm}0.20%$로 다른 기간에 비해 비교적 높은 함량을 나타내었으며 가장 낮은 NDF, ADF의 함량은 6월에서 각각 $77.90{\pm}0.25%$, $42.33{\pm}0.49%$로 나타나 섬유소 함량이 매우 높은 것으로 판단된다. 조릿대는 NDF와 ADF의 함량은 높으나, 볏짚에 비해 조단백질 함량은 비교적 높은 것으로 판단되며 가축의 특성에 맞추어 급여한다면 이용성이 있을 것으로 여겨진다. 조릿대를 사료원으로 이용하기 위해서는 섬유소 분해능력이 좋은 흑염소 같은 가축 또는, 조릿대에 대한 기호성이 우수하고, 소화율이 비교적 우수한 말에게 급여하는 것이 효율적일 것으로 여겨진다. 조릿대의 사료화를 위해서는 보다 다양한 축종을 대상으로 추가 연구가 진행되어야 할것으로 판단된다.

Various Types and Manufacturing Techniques of Nano and Micro Capsules for Nanofood

  • Nano and micro capsulation (NM capsulation) involve the incorporation for nanofood materials, enzymes, cells or other materials in small capsules. Since Kim D. M. (2001) showed that a new type of food called firstly the name of nanofood, which means nanotechnology for food, and the encapsulated materials can be protected from moisture, heat or other extreme conditions, thus enhancing their stability and maintaining viability applications for this nanofood technique have increased in the food. NM capsules for nanofood is also utilized to mask odours or tastes. Various techniques are employed to form the capsules, including spray drying, spray chilling or spray cooling, extrusion coating, fluidized bed coating, liposome entrapment, coacervation, inclusion complexation, centrifugal extrusion and rotational suspension separation. Each of these techniques is discussed in this review. A wide variety of nanofood is NM capsulated - flavouring agents, acids, bases, artificial sweeteners, colourants, preservatives, leavening agents, antioxidants, agents with undesirable flavours, odours and nutrients, among others. The use of NM capsulation for sweeteners such as aspartame and flavors in chewing gum is well known. Fats, starches, dextrins, alginates, protein and lipid materials can be employed as encapsulating materials. Various methods exist to release the ingredients from the capsules. Release can be site-specific, stage-specific or signaled by changes in pH, temperature, irradiation or osmotic shock. NM capsulation for the nanofood, the most common method is by solvent-activated release. The addition of water to dry beverages or cake mixes is an example. Liposomes have been applied in cheese-making, and its use in the preparation of nanofood emulsions such as spreads, margarine and mayonnaise is a developing area. Most recent developments include the NM capsulation for nanofood in the areas of controlled release, carrier materials, preparation methods and sweetener immobilization. New markets are being developed and current research is underway to reduce the high production costs and lack of food-grade materials.
