Effect of Amount of Probiotics and Yeast as Starter on Quality Characteristics of Sourdough Bread (Probiotics와 Saccharomyces cerevisiae 를 이용한 starter 사용량이 발효빵의 품질에 미치는 영향)

  • The principal objective of this study was to provide the basic information on the sourdough bread made with probiotics and yeast(Saccharomyces cerevisiae) and to establish an optimum formula for the development of sourdough bread with high physiological, textural and sensory quality characteristics. The following mixing ratios of probiotics and yeast were used: Test 1, probiotics: yeast = 1.5 : 0.1; Test 2, 0.30 : 0.02; Test 3, 0.15 : 0.01(g/g). Fermentatioin using sourdough resulted in increase in number of probiotics in sourdough by 244~642 times but reduced pH in sourdough. Contributions by yeast in pH in sourdough were not as high as probiotics after the first fermentation of 15 hrs period of the dough. Among the three groups, bread volume, crumb firmness, crumb thickness, crumb elongation, compression force value, and specific volume of bread of bread were not significantly different. However, in sensory evaluation, flavor, taste, overall acceptance in sourdough produced by Test 2 markedly improved(p<0.05). These results show that Test 2 bread had improved sourdough properties, compared to Test 1 bread and Test 3 bread.

Studies on the Sik-hae Fermentation Made by Flat-fish (가자미 식해(食醯)에 관한 연구)

  • Sik-hae is a traditional Korean fermented fish product which is made from flat-fish, garlic, salt, red pepper and millet. The changes in chemical composition, pH, acidity and the contents of Amino-N, VBN, TMA and organic acids were investigated during the fermentation of Sik-hae. The changes in the microflora, enzyme activity and the sensory quality including textural characteristics were also evaluated. The changes in the contents of crude protein, crude fat and moisture during Sik-hae fermentation were negligible. The pH of the product tended to decrease in the course of fermentation and it showed the minimum value of 4.5 after 7 days of fermentation. On the other hand the acidity continued to increase up to 2300mg % by 4 weeks of fermentation. Lactic acid was the major organic acid. The content of Amino-N in sik-hae gradually increased up to 673.6mg % by 2 weeks of fermentation, and then slightly decreased. The content of VBN increased rapidly during the first 2 weeks of fermentation, while little changes in TMA content was observed. The number of proteolytic bacteria increased slightly for the first 2 weeks and then rapidly decreased. The number of yeast and acid forming bacteria increased rapidly from the 4th day to the 14th day of fermentation and then decreased. Both lipase and protease activities showed the maximum at the 11th day of fermentation. The texture softening of the fish occurred after 1 week of fermentation and the adhesiveness appeared after 2 weeks of fermentation. Summarizing these results, the optimum fermentation time for Sik-hae from flat fish were 2 weeks at 2$0^{\circ}C$ and the quality of the product could be kept for up to 4 weeks in refrigerator.

A Cognitive Study on the Usability of Cross-referencing link ad Multiple hierarchies (교차적 연결과 다계층구조의 유용성에 관한 인지적 연구 : 사이버쇼핑몰의 커스터머 인터페이스를 중심으로)

  • The focus of this study is on the elements of structure design that facilitate u user interaction with applications within cyberspace Structure design entails decisions regarding the optimal classification and hierarchical organization of information into s successively higher units. i.e .. the grouping of highly related information in the form of nodes of a site and the subsequent connection of nodes that are inter-related. The decisions are based on the designer's subjective classification framework. which is not always compatible with that of the user. We propose that the ensuing cognitive dissonance can be reduced via the employment of multiple hierarchies and cross-referencing links. Multiple hierarchies represent a single information space in terms of a number of single hierarchies. each of which represent a different perspective Cross-referencing refers to the inter-connection between the constituent hierarchies by providing a link to the alternate hierarchy for information that is most likely to be categorized in diverse manners by users with differing perspectives. In this study we conducted two empirical studies to gauge the effectiveness of multiple hierarchies and Cross-referencing links in the domain of cyber shopping malls. In the first phase. an experiment was conducted to determine how subjects classified given products with respect to two different perspectives for categorization. Experimental cyber malls were developed based on the results from the first phase to test the effectiveness of multiple hierarchies and cross-referencing links. Results show that the ease of navigation was higher for cyber malls that had implemented cross-referencing links are of greater value when used in conjunction with single hierarchical designs rather than multiple hierarchies. Users satisfaction with and ease of navigation was higher for cyber malls that had not implemented multiple hierarchies. This paper concludes with discussion of these results and their implications for designers of cyber malls.

A Study on the Heating and Cooling Energy Load Analysis of the KNU Plant Factory (KNU 식물공장의 냉난방 에너지 부하 해석에 관한 연구)

  • The heating and cooling energy load of the KNU plant factory was analyzed using the DesignBuilder. Indoor temperature set-point, LED supplemental lighting schedule, LED heat gain, and type of double skin window were selected as simulation parameters. For the cases without LED supplemental lighting, the proper growth temperature of lettuce $20^{\circ}C$ was selected as indoor temperature set-point together with $15^{\circ}C$ and $25^{\circ}C$. The annual heating and cooling loads which are required to maintain a constant indoor temperature were calculated for all the given temperatures. The cooling load was highest for $15^{\circ}C$ and heating load was highest for $25^{\circ}C$. For the cases with LED supplemental lighting, the heating load was decreased and the cooling load was 6 times higher than the case without LED. In addition, night time lighting schedule gave better result as compared to day time lighting schedule. To investigate the effect of window type on annual energy load, 5 different double skin window types were selected. As the U-value of double skin window decreases, the heating load decreases and the cooling load increases. To optimize the total energy consumption in the plant factory, it is required to set a proper indoor temperature for the selected plantation crop, to select a suitable window type depending on LED heat gain, and to apply passive and active energy saving technology.

The Effect of Online WOM of Menu Product Consumers on Product Perception Risk and WOM Effect

  • Purpose: This study examined marketing value as online word-of-mouth media in the foodservice industry, and it did research on online word-of-mouth (e-WOM) communication marketing schemes using mass communication in the industry. The study is also intended to investigate the impact of electronic word-of-mouth (e-WOM) information and communication on product awareness risks, benefits, and word-of-mouth (WOM) impacts on restaurant consumers. Research design, data, and methodology: The analysis was conducted on a valid questionnaire of 425 menu product consumers. The survey was conducted for two months in March 2019. The collected data was analyzed using SPSS and hierarchical regression analysis was applied. Results: It did empirical research on the reciprocal casual relations to online and the existing word-of-mouth communication that have to be preceded to understand characteristics of online word-of-mouth communication for the purpose of this study. The result is summarized as follows. First, the online word-of-mouth (e-WOM) effect on product recognition risk shows the statistically significant effect of information sender characteristics, information recipient characteristics, and online word-of-mouth (e-WOM) communication on product recognition risk. Second, the influence of online word-of-mouth (e-WOM) on product risk benefits shows that the information sender characteristics, the information receiver characteristics, and online communications have a statistically significant effect on product risk benefits. Third, online word of mouth risk recognition had a statistically significant effect on word of mouth acceptance. Fourth, online risk benefit had a statistically significant positive effect on word of mouth (WOM) effect. Conclusions: The communication between online word of mouth (e-WOM) sender and recipient had a positive influence on the product evaluation and attitude change in the foodservice industry, and the word-of-mouth (WOM) effect affected financial and non-financial performance. The results mentioned above indicated that the communication between the sender of the information and the receiver of the information had a positive effect on the product evaluation and attitude change of the menu consumer, and the word-of-mouth (WOM) result affected the financial. Therefore, the online word-of-mouth (e-WOM) effect has a positive effect on the word-of-mouth (WOM) effect of menu products when performed simultaneously and positively between the information sender and the information receiver.

Initial Risk Assessment of Acetanilide with Respect to Ecological Integrity (아세트아닐리드의 초기 환경위해성 평가)

  • Acetanilide may be released into the environment through air and wastewater from its production and use sites as an intermediate in the synthesis of pharmaceuticals and dyes. Acetanilide is biodegraded rapidly under aerobic conditions and decomposed by indirect photolysis in the presence of OH radicals. An estimated bioconcentration factor of 4.5 suggests that bioaccumulation in aquatic organisms is low. Ecotoxicological data on acetanilide exist on acute toxicity to fishes of 4 species only. According to the EUSES system, the lowest PNEC (Predicted no effect concentration) in fishes is 0.01 mg/1 and PEC (Predicted environmental concentration) for surface water on a regional scale is 9.1$\times$10$\^$-5/mg/l as the worst case. RCR (Risk characterization ratio) of acetanilide for surface water on a regional scale was estimated as 9.1$\times$10-3, which is safe enough for fishes, RCR on a local basis slightly exceeds the value 1 in water and sediment; that is, 1.3 and 1.6, respectively, which suggests the existence of ecotoxicological risk at the vicinity of the manufacturing site. For the refinement of environmental risk assessment on acetanilide, more data should be collected regarding prolonged fish toxicity, acute toxicity toward daphnia and algae. It is, therefore, recommended that acetanilide should be a candidate for further work to supplement the lacking data until it is proved to be safe in the ecotoxicological aspects.

Study of Pyrolysis Behavior of Alberta Oil Sand by Continuous Operation of Fluidized-Bed Reactor (Alberta 오일샌드의 유동층 열분해 연속실험을 통한 열분해 특성 파악)

  • In this study, fluidized-bed pyrolysis has been conducted in order to recover the bitumen contained in the oil sand. Canada Alberta oil sand contains 11.9% of bitumen and the bitumen-derived heavy oil produced in fluidizedbed tends to be upgraded relative to the bitumen. The continuous operation has been performed using $N_2$ as a fluidization gas at 1 atm and $500^{\circ}C$ in a reactor of 170 cm height. The results showed 87.76% of bitumen conversion, where liquid products are 74.45% and gas products are 13.31%. $H_2$, $O_2$, CO, $CO_2$, $CH_4$, and NO and $C_1{\sim}C_4$ hydrocarbons in the gas products were analyzed by on-line gas analyzer and gas chromatography, respectively. The pyrolysis oil was analyzed by using proximate analysis, heavy metal analysis, SIMDIS, asphaltenes, and heating value. By SIMDIS analysis, naphtha was 11.50%, middle distillation was 44.83% and heavy oil was 43.66%. It was obvious that the pyrolysis oil was upgraded compared with bitumens.

A Case Study on the Service Programs at the Presidential Library and Museum (대통령 기록관의 서비스 프로그램 사례 연구)

  • Presidential records which have produced during a presidency as a national center are the evidence of the presidency and main historical records. We have the responsibility to establish fundamental systems to produce such main historical records and to manage such main historical records which could help people and history to judge the presidency based upon the evidence of their activities. The historical appraisal could be achieved not by memory but by evidence. A draft of a proposed law on the management of presidential records which includes the establishment of presidential libraries for the presidential records Mecca is being moored at the National Assembly now. The presidential library is to be considered as a multi-functional national institution which is carrying out the role as an Archives, Museums and Center for the education. In addition, it is imperative for a presidential library to provide user-oriented services to enrich the usability and the value of records, recognizing the change of administration paradigm from a supplier-oriented system to a customer-oriented system. This dissertation, in order to develop presidential library service programs focusing on customers rather than the convenience of administration, reviewed programs of the U.S. presidential libraries as a developed case and proposes guidelines and applicable samples for the development of the Korean presidential library service programs.

Reproductive Ecology of the Freshwater Bivalve, Unio douglasiae (Unionidae) in Lake Uiam (의암호 말조개, Unio douglasiae (Unionidae) 의 번식생태)

  • The reproductive ecology of freshwater bivalve, Unio douglasiae in Lake Uiam were examined from March 2014 to February 2015. The gonads distributed in reticular connective tissue, the dioecious clams take an internal fertilization and fertilized eggs are stored in the foster-sack in the gills, then the hatched juveniles are released outside after an ovoviviparous process. The gonad index (GI) began to increase in April, reached the maximum value in July and to decrease in August. The reproductive cycle of U. douglasiae can be divided into five successive stages: multiplicative stage (November to January), growing stage (February to March), mature stage (February to May), spawning stage (April to September), recovery stage (August to December). The spawning periods were from April to September, and the main spawning occurred between April and July. The shell length at 50% group maturity was estimated to be 29.4 mm.

Kinetic analysis of 64Cu-NODAGA-gluco-E[c(RGDfK)]2 for a tumor angiogenesis PET tracer

  • Molecular imaging with the radiolabeled RGD peptides for ${\alpha}_v{\beta}_3$ integrin has been an increasing interest for tumor diagnosis and the treatment monitoring. Recently, $^{64}Cu$-NODAGA-gluco-E[c(RGDfK)]$_2$ was developed for quantification of ${\alpha}_v{\beta}_3$ integrin and its biological properties was elucidated. To better understand the molecular process in vivo, we performed the kinetic analysis for the $^{64}Cu$-NODAGA-gluco-E[c(RGDfK)]$_2$. After preparation of a radiotracer, dynamic PET images were obtained in the U87MG xenograft mice for 60 min (n = 6). Binding potential values were estimated from the 3-tissue compartment model, reference Logan and simplified reference tissue model. In the early time frame (0-20 min), the liver, kidney, intestine, urinary bladder and tumor were visualized but these uptakes were diminished as time went by. The tumors showed a good contrast at 40 min after administration. $^{64}Cu$-NODAGA-gluco-E[c(RGDfK)]$_2$ showed the 2-fold uptake in the tumor compared with that in the muscle. The parametric maps for binding values also provide the higher tumor-to-background contrast than the static images. A binding value obtained from the 3-tissue compartment model was comparable to other modeling methods. From these results, we conclude that $^{64}Cu$-NODAGA-gluco-E[c(RGDfK)]$_2$ may be a promising PET radiotracer for the evaluation of angiogenesis.
