궁중음식 인식성향에 따른 궁중음식 메뉴개발 방향성에 대한 조사 (Measures to Improve Culinary Trends in Korean Court Food Based on the Perception of Korean Royal Court Cuisine)

  • Purpose: This study assesses Korean royal court cuisine as perceived by culinary professionals and students for the development of Korean dining. Methods: It was observed in a survey that Korean royal cuisine could be grouped into four classes represented by the following factors: popularity, standardization, tradition, and haute-cuisine. Results: From the analysis of the survey results, it was determined that the people surveyed could be grouped into the following three categories: those who prefer standardization/pursuit of haute-cuisine, traditionalists/popularizers, and those who are indifferent. The survey also assessed whether the ten most popular Korean dishes served to foreigners had variations in royal court cuisine and which food ingredients and combinations of dishes would be the most appropriate. It was determined that control over the sweetness when cooking Bulgogi was needed. For food usually consumed for invigoration, especially for the broth of soup dishes in summer, women preferred clear meat broth with soup than men. When preparing Japchae, it was found that control over the ratio between glass noodles and vegetables and control over the sweetness were needed with respect to the main dishes. Conclusion: The indicator 'education on Korean royal court cuisine culture' showed relatively low satisfaction compared to its high importance, implying that further improvement in these development measures is especially required.

외식업체 한우 이용 실태조사를 통한 저지방 부위 한우 이용 메뉴 개발 (Hanwoo Usage Survey and Menu Development using Lean Cut Hanwoo for Restaurants)

  • The purpose of this study was to analyze Hanwoo usage in restaurants and to develop menus of lean cut Hanwoo. Restaurant served customers Hanwoo menus, with the exception of broiled or roasted meat, mainly to provide various menus to customers (4.14), due to customer needs (3.87) and utilizing stocks (3.59). On the other hand, the reason for not providing Hanwoo menus, with the exception of broiled or roasted meat was manpower shortage (3.63), lack of popularity (3.58), low profit (3.29), preservation of Hanwoos' original flavors (3.28) and complex cooking methods (3.22). Concomitantly, the restaurant owners' intentions to apply new menus with lean cut Hanwoo was 73.4%, showing an interest in developing new menus and recipes using lean cut Hanwoo suitable to the changing owner awareness of customer health and trends. This study has established a standard for developing cooking methods and developed menus according to classified recipes for lean cut Hanwoo, based on the survey of restaurants' current status of using Hanwoo and the owners' opinions. 20 menus using lean cut Hanwoo (rump or shank) were developed by $1^{st}$ and $2^{nd}$ cooking experiments, and in-depth interview of experts-groups. Of these, 12 menus suitable for the restaurant were finally selected based on the results of consumer's evaluation using JARS. Structured recipe flow diagram and recipe instructions were developed for future semi-processed or processing foods. Diverse recipe methods using lean cut Hanwoo were obtained from the study, however aggressive public relations work is required for promoting the developed menus.

Relationship between sensory attributes and volatile compounds of polish dry-cured loin

  • Objective: The aim of this work was to determine the relationship between objective sensory descriptors and volatile flavour compound composition of Polish traditional dry-cured loin. Methods: The volatile compounds were investigated by using solid phase microextraction (SPME) and gas chromatography-mass spectrometry (GC-MS). For sensory assessment, the quantitative descriptive analysis (QDA) method was used. Results: A total of 50 volatile compounds were found and assigned to 17 chemical families. Most of the detected volatile compounds derived from smoking, lipid oxidative reactions and seasoning (46.8%, 21.7%, and 18.9%, respectively). The dominant compounds were: aromatic hydrocarbon (toluene); alkanes (hexane, heptane, and 2,2,4-trimethylpentane); aldehyde (hexanal); alcohol (2-furanmethanol); ketone (3-hydroxy-2-butanone); phenol (guaiacol); and terpenes (eucalyptol, cymene, ${\gamma}-terpinen$, and limonene). Correlation analysis showed that some compounds derived from smoking were positively correlated with the intensity of cured meat odour and flavour and negatively with the intensity of dried meat odour and flavour, while terpenes were strongly correlated with odour and flavour of added spices. Conclusion: The analysed dry-cured loins were characterized by specific and unique sensory profile. Odour and flavour of studied loins was mainly determined by volatile compounds originating from smoking, seasoning and lipid oxidation. Obtained results suggest that smoking process is a crucial stage during Polish traditional dry-cured loins production.

스님들을 대상으로 한 사찰음식의 대중화에 대한 인식도 조사 분석 (Awareness analysis for popularization of temple food in monks)

  • 최근 성인병 예방 등에 효과가 있는 건강식으로 알려진 사찰음식 대중화에 대한 스님들의 인식도를 알아보고자 대구경북 및 부산경남 지역의 사찰에 거주하는 스님들을 대상으로 조사한 결과이다. 대체로 스님들은 사찰음식을 건강식 (42.2%)으로 인식하고 있으며, 사찰음식이 대중화될 경우에 성인병 예방 등 인체 건강증진에 기여 (74.7%)할 것이라고 생각하고 있었다. 그러나 사찰음식의 대중화를 위한 조리방식은 옛날의 '전통방식 그대로 (45.9%)'가 가장 좋으며, 앞으로 '영양가 보완 (36.7%)' 부분에서 다소 개선이 이루어져야 한다고 생각하고 있었다. 또한 사찰음식의 대중화를 위해 사용금지 재료인 육류와 오신채를 사용해야 하는가에 대해서는 '필요 없다'가 각각 68.8%와 57.8%로 가장 높게 나타나 났으며, 오신채의 사용에 대해서는 성별과 함께 기거하는 스님 수에 따라 의견의 차이가 있었다 (p <0.01). 이러한 결과를 종합해 볼 때, 스님들도 사찰음식의 대중화에는 크게 동감하지만 오신채와 육류사용 금지와 옛날 전통 조리 방식은 고수하는 것으로 나타났다.

Comparisons of Beef Fatty Acid and Amino Acid Characteristics between Jeju Black Cattle, Hanwoo, and Wagyu Breeds

  • Jeju black cattle are known as one of Korea's traditional cattle. However, Hanwoo is more well-known to Korean meat consumers as representative beef cattle. Despite the popularity of these two breeds, comparison of the nutritional characteristics between Jeju black cattle and Hanwoo have not been studied. Here, we compared the fatty acid and amino acid characteristics between two Korean traditional cattle and Wagyu breeds. A total of 62 cattle were used in this study. The Jeju black cattle beef had significantly higher unsaturated fatty acids than Hanwoo (p<0.05). Savory fatty acids, including oleic acid were also higher than in Hanwoo cattle (p<0.05). The negative flavor fatty acids, such as palmitic acid were significantly lower than in Hanwoo (p<0.001). On the other hand, linoleic acid which imparts a negative flavor was higher than Hanwoo (p<0.05). Amino acids, including alanine and glutamine, usually representative of the umami taste were present in significantly higher proportions in Jeju black cattle (p<0.05). In addition, bitter tasting amino acids, including valine, leucine, isoleucine, and methionine were lower in Jeju black cattle beef than in Hanwoo (p<0.05, p<0.001, p<0.001, and p<0.001 each). Taken together, our results suggest that Jeju black cattle beef had higher savory flavor and umami taste which affected consumers preference for the meat.

Optimizing the Combination of Smoking and Boiling on Quality of Korean Traditional Boiled Loin (M. longissimus dorsi)

  • The combined effects of smoking and boiling on the proximate composition, technological quality traits, shear force, and sensory characteristics of the Korean traditional boiled loin were studied. Cooking loss, processing loss, and shear force were lower in the smoked/ boiled samples than those in the control (without smoking treatment) (p<0.05). The results showed that the boiled loin samples between the control and treatment did not differ significantly in protein, fat, or ash contents, or pH values (p>0.05). The treated samples had higher score for overall acceptability than the control (p<0.05). Thus, these results show that the Korean traditional boiled loin treated with smoking for 60 min before boiling had improved physicochemical properties and sensory characteristics.

돔배기용 상어육의 이화학적 성분 비교 (Physicochemical Comparison of Two Different Shark Meats Used for Preparation of Dombaeki)

  • 경북 영천 특산물인 상어 '돔배기'의 고품질화 연구의 일환으로 먼저 영천에서 '돔배기' 원료로 널리 사용되고 있는 귀상어 및 청새리상어육의 이화학적 품질특성을 측정하여 비교한 결과는 다음과 같다. 청새리상어육의 수분 함량이 귀상어육보다 낮은 대신 조단백질, 조지방 및 회분의 함량은 다소 높았으나 건물중으로 환산하면 큰 차이가 없었다. 상어육의 주된 아미노산은 leucine(715.47 mg%), lysine (589.62 mg%), arginine(514.24 mg%), proline(382.64 mg%), isoleucine(326.29 mg%), valine(302.32 mg%), phenylalanine (283.32 mg%), glutamic acid(265.74 mg%), asparagine (256.64 mg%) 및 alanine(239.74 mg%)로서 전체 총 아미노산의 40% 차지하고 있었으며, 귀상어육은 proline(119.58 mg%)을 제외하고 주된 아미노산 및 필수아미노산의 함량은 청새리상어육보다 낮았다. 상어육의 주된 지방산 조성을 보면 palmitic, stearic, oleic, arachidonic 및 docosahexaenoic acids로서 귀상어육은 포화지방산 및 불포화지방산 비율이 거의 유사하였으나 청새리상어육은 불포화지방산 함량이 다소 높았으며, 아울러 DHA 함량이 귀상어육보다 높았다. 상어 지질류는 인지질 함량(약 65%)이 가장 높게 나타났으며, 그 다음으로 스테롤, 중성지방, 유리지방산 순으로 낮았고, 인지질은 레시틴 및 세팔린이 대부분 차지하고 있었으며, 주된 지방산은 myristic, palmitoleic, stearic 및 docosaheaenoic acids 이었고 그 함량은 상어 종류에 따라 큰 차이가 없었다. 마지막으로 청새리상어육은 귀상어육보다 총휘발염기성질소 함량과 pH가 다소 높았으나 색상이 밝고 연하였다.

Historical Details about the Meat Consumption and Taeniases in Joseon Period of Korea

  • Previous paleoparasitological studies of Joseon specimens established that the prevalence of Taenia infection was not much different from that of the early 20th century Korean population. As many of taeniases originally diagnosed as Taenia saginata in South Korea were revealed to be actually Taenia asiatica, which share a common intermediate host with T. solium (the pig), Joseon people must have ingested raw pork frequently. However, the current examination of extant Joseon documents revealed that the population ate significant amounts of beef even if the beef ban was enforced; and pork was not consumed as much as we thought. Considering the meat consumption pattern at that time, Joseon people should have been infected by T. saginata more frequently than T. asiatica. This may suggest a low prevalence of T. saginata metacestodes in cattle compared to that of T. asiatica metacestodes in pigs, possibly due to the traditional way of rearing pigs (using human feces). This letter gives us a chance to reconsider the existing preconception about parasitic infections in Korean history though we are still hard to accurately estimate the historical patterns of taeniases at this stage.

Characterization of an Amylase-sensitive Bacteriocin DF01 Produced by Lactobacillus brevis DF01 Isolated from Dongchimi, Korean Fermented Vegetable

  • A DF01 strain that inhibits tyramine-producing Lactobacillus curvatus KFRI 166 was isolated from Dongchimi, a traditional Korean fermented vegetable, and identified as Lactobacillus brevis by biochemical analysis and reverse transcriptase sequencing of 16S rRNA. The antimicrobial compound produced by L. brevis DF01 was secreted at a maximum level of 640 AU/mL in late exponential phase in MRS broth, and its activity remained constant during stationary phase. The activity of bacteriocin DF01 was totally inactivated by $\alpha$-chymotrypsin, pronase E, proteinase K, trypsin, and $\alpha$-amylase, but not by catalase, which indicates the compound was glycoprotein in nature. The activity was not affected by pH changes ranging from 2 to 12 or heat treatment (60, 80, and $100^{\circ}C$ for 30 min), but was reduced after autoclaving. Bacteriocin DF01 had bacteriolytic activity and a molecular weight of approximately 8.2 kDa, as shown by tricine-SDS-PAGE analysis. Therefore, bacteriocin DF01 can be used in the manufacture of fermented meat products due to its inhibition of tyramine-producing L. curvatus and non-inhibition of L. sake, which is used as a starter culture for meat fermentation.

해수어를 활용한 연제품의 제조 및 물리화학적 특성 (Physicochemical Properties of Fish-meat Gels Prepared from Farmed-fish)

  • 연제품 제조에 이용되는 어육원료는 저가의 연육이 국내에서 일부 생산되고 있으며 대부분은 동남아산 또는 북아메리카산 등의 수입산에 의존하고 있다. 본 연구에서는 연제품용 어육 원료의 안정적인 수급과 고품질 연제품 개발을 위한 방안으로 우리나라에서 주로 양식되고 있는 어종의 고급 연육 및 연제품 소재로서의 가능성을 검토하였다. 양식어종인 광어(Paralichthys olivaceus), 도미(Pagrus major), 조피볼락(Sebastes schlegeli), 숭어(Mugil cephalus), 도다리(Pleuronichthys cornutus)를 원료로 하여 전통 수세법으로 연육을 제조하였다. 연육의 품질과 등급은 수분함량, 백색도, 겔 강도, 불순물의 함량 등에 의해 결정되어진다. 따라서 이들 해수어 유래 연육의 겔 형성능 및 품질은 겔 강도, 텍스쳐 실험, 백색도, 수분유출정도 및 SDS-page pattern 측정을 통해 검토하였다. 또한 이들 결과는 명태연육(FA급과 RA급)의 겔 특성과 비교하였다. 겔 특성을 검토하기 위해 미리 준비한 5 종류의 해수어 유래 연육에 2% NaCl를 첨가하여 소금갈이를 한 후 전체 수분함량이 84%가 되도록 졸 형태로 제조하였다. 졸 형태의 연육을 polyvinylidene chloride 필름에 20-25 cm 길이로 충진한 후 90℃에서 20분간 가열하여 소시지 형태의 어육 겔을 제조하였다. 연육을 이용한 어육 겔의 제조에 의해 연육의 겔 강도와 백도는 증가하였다. 해수어 유래 연육의 겔 특성을 비교한 결과 광어와 도미가 가장 높은 겔 강도와 파단 강도를 나타내었으며, 수분 이수율은 광어에서 가장 낮게 나타났다. 전체적으로 해수어 유래 연육은 RA급 명태연육에 비해 높은 겔 형성능을 나타내었으며, 광어와 도미는 FA급 명태연육과 비슷한 정도의 겔 특성을 나타내었다. 이상의 결과로부터 광어와 도미를 이용한 고품질 연제품의 개발 가능성을 확인할 수 있었다.
