한국산 적포도주의 색도 변화에 관한 연구 (II) (Study on the Color Characteristics of Korean Red)

  • 국내산 포도품종을 이용하여 5가지 포도주 G(거봉100%), M(머루100%), C(캠벨100%), GM(거봉70%+캠벨30%), GC(거봉70%+캠벨30%)를 제조하여, 발효 과정 및 저장 중 포도주의 색도 변화를 분석하였다. 각 포도주의 총 페놀함량은 G는 712.6 mg/L, M은 3,472.9 mg/L, C는 2,209.4 mg/L, GM은 2,019.4 mg/L, GC는 1,184.5 mg/L이었으며, 각품종별 유의적인 차이를 보였다(p<0.001). 총 페놀함량과 L, a, b value간에는 상관관계를 보이지 않은 반면, hue와 intensity는 총 페놀함량과 상관관계를 보였다. 총 페놀함량, hue, intensity는 각 포도 품종간 유의적인 차이를 보였다(p<0.01, p<0.001). Hue는 총 페놀함량과 음의 상관관계$(r^2=0.8660,\;p<0.0001)$를, intensity는 양의 상관관계$(r^2=0.8304,\;p<0.0001)$를 가졌다. 이상의 결과로, 적포도주의 총 페놀함량은 다음과 같은 간단한 방정식에 의해 구할 수 있을 것이다. $$Y_{Total\;phenolic\;content(mg/L)}=3319.3-X_{Hue}/2208.36,$$ $$Y_{Total\;phenolic\;content(mg/L)}=1230.97-X_{intensity}/98.93$$

Antioxidant Activity and Total Phenolic Content of Triphala churna

  • Triphala churna is a widely used herbal formulation that contains equal proportion of dried fruit powder of Emblica officinalis, Terminalia chebula and Terminalia belirica. In the Indian system of medicine, it is used in cleaning wounds, urinary disorders, diabetes mellitus, leprosy, constipation, eyesight promotion, piles, and as a rejuvenator. In the present study, the methanolic extract of 5 commercial Triphala was evaluated for antioxidant activity by 1,1-diphenyl-2-picryl-hydrazyl free radical scavenging method, total phenolic content by Folin-Ciocalteu method and gallic acid equivalents (GAE) by high performance thin layer chromatographic (HPTLC) method. All extracts exhibited antioxidant activity significantly. The $IC_{50}$ of the extracts ranged between $7.16\;to\;12.96\;{\mu}g/ml$. The total phenolic content of the extracts was found to be 195.3-296.4 mg of GAE/gm of GAE/gm dw. The HPTLC chromatographic data reveal that the content of GAE present in the extract was found to be $7.17-4.11\;{\mu}g/ml$. The study reveals that out of the churnas analysed, C was found to exhibit the most potent antioxidant activity. A clear correlation between $IC_{50}$ and content of GAE nor the total phenolic content could be observed. The study reveals that the consumption of Triphala would exert several beneficial effects by virtue of its antioxidant activity.

토양함수량의 조절에 의한 Glycine max. 인공군업의 성장과 총질소량의 변동에 관하여 (On the Growth and Total Nitrogen Changes of Glycine max. Artificial Plant Communities, Grown in Sandy Loam Soil withe a Controlled Moisture Content)

  • Dry matter production, leaf area growth and total nitrogen changes were studied in Glycine max. soybean communities, which were grown in sandy loam soils controlled to provide various moisture levels, i.e., 5-7%(level 1), 8-10%(level 2), 11-13%(level 3), 14-15%(lev디 4), 17-20%(level 5) and 22-24%(level 6). A summary of the results is shown. The maximum dry matter production of leaves, stems and nodules and the maximum leaf area per unit area were at level 5, but the maximum of root dry matter production was at level 4. Total nitrogen content of the soybean plant decreased with growth, but each level of soil moisture content also showed a little difference. Water content of the plant decreased with plant age and soil water deficiency, especially in roots and nodules. Nodule formation increased in proportion to soil moisture content. total nitrogen content of the soil on which the soybeans grew, increased from 0.23% before sowing to 0.30% at 100 days after sowing. It seems that soil water content acts as a linear factor in the elongation or dry weight increase of shoots and roots until increasing to level 5. Considering the pattern of plant growth through analysis of the shoot and root dry weight ratio, or the photosynthetic organ and non-photosynthetic organ dry weight ratio, the asymptote of plant growth at a high soil water content exceeded that at a low soil water content.

추출용매에 따른 아사이 베리의 생리활성 (Physiological Activity of Acai Berry (Euterpe oleracea Mart.) Extracted with Different Solvents)

  • This study was conducted to investigate the physiological activity of acai berry (Euterpe oleracea Mart.) extracts from three different solvents (water, methanol, and ethanol). We measured total polyphenol and total flavonoid content, DPPH radical scavenging activity, nitrite scavenging activity, metal chelating effect, and reducing power. The extraction yield from water, methanol, and ethanol was 17.10, 9.50, and 37.51%, respectively. The highest total polyphenol content (10.54 mg/100 g) and total flavonoid contents (1.88 mg/100 g) was observed in water extract. DPPH radical scavenging activity was the highest in both water extract (72.03%) and methanol extract (74.79%) at levels of 5 mg/mL, which was similar to that of BHT (78.90%). Water extract yielded the highest metal chelating effect (92.54%) and reducing power (1.09) at levels of 5 mg/mL. Taken together, these findings suggest that extracts of acai berry can be used as functional food materials with antioxidative and nitrite scavenging activities.

훈연공정을 첨가하여 제조한 발아콩 청국장의 맛 성분 변화 (Changes in Taste Component of Cheonggukjang prepared with Germinated Soybeans by the Addition of Smoking Process)

  • The aim of this study was to investigate the changes in the taste components of cheonggukjang made with germinated soybeans, which is produced by the addition of a smoking process. The total organic acid content of smoked cheonggukjang made with germinated soybeans (SCGS) was four times higher than that of non-smoked cheonggukjang made with non-germinated soybeans (NCNS). The total organic acid content of SCGS was lower than that of non-smoked cheonggukjang made with germinated soybeans (NCGS). The total free sugar content of NCGS and SCGS was approximately three times higher than that of NCNS. The total free amino acid content of NCGS was significantly decreased compared with that of NCNS, whereas the total free amino acid content of SCGS was 1.2 times higher than that of NCGS. The essential amino acid content of SCGS was significantly increased compared with that of NCGS. The ratio of glutamic acid to the total free amino acid in NCNS and SCGS was 19.6%. Similarly, the ratio of glutamic acid to the total free amino acid in NCGS was 19.1%. There were no significant differences in the total fatty acid content of NCNS, NCGS, and SCGS. The sensory evaluation of appearance, aroma, taste, and overall quality of SCGS was significantly increased compared with that of NCNS and NCGS. These results suggest that smoked cheonggukjang made with germinated soybeans could be utilized for the development of a novel fermented food.

인삼 지상부의 채취시기에 따른 사포닌조성 비교 (Changes of Saponin Contents of Leaves, Stems and Flower-buds of Panax ginseng C. A. Meyer by Harvesting Days)

  • The parts of leaves, flowers and stems in ginseng were obtained for analyzing the component of saponin on 15th April, 25th April, 5th May, 25th May, which were considered as ginseng foliation stage. The total saponin content of the leaves were 97.29, 66.42, 67.61, 36.24 mg/g, respectively, in which the content of Re, $Rb_1$ and Rd were more than 2/3 amount of total saponin. Especially, the saponin content of leaves decreased according to the sequential collection days, in which the similar results were observed from the flowers and stems of ginseng. The total saponin content of the flowers and stems were 141.09,143.84,139.25,133.47 and 13.32, 9.85, 8.00, 4.65 mg/g, respectively. Among them, the content of Re, Rd and $Rb_2$ in flowers were more than 2/3 while the content of Re, $Rg_1$ and Rd in stems showed more than 9/10 amount of total saponin. The total saponin content of individual leaf were 19.46, 28.56, 58.82 and 169.24 mg/plant, 2.53, 2.76, 5.20 and 12.32 mg/plant in stems, and 14.11, 30.21, 37.60 and 73.41 mg/plant in flowers. Therefore, the total saponin content of aboveground parts in ginseng were leaves > flowers > stems.

A Comparison of Phenolic Components in Cinnamon Medicines

  • As a result of comparing the phenolic components of cinnamon medicines, the total phenolic component content of Cinnamomi Cortex in China was about 2.65 times higher than that of Cinnamomi Cortex in Vietnam. In addition, the total phenolic component content of Vietnamese Cinnamomi Cortex Spissus was about 1.80 times higher than that of Chinese Cinnamomi Cortex Spissus. Meanwhile, Vietnamese Cinnamomi Ramulus showed a content about 3.29 times higher than that of Chinese Cinnamomi Ramulus. Cinnamaldehyde, the main component of cinnamon medicines, showed the same tendency as the total phenolic component content. In terms of the average content of the total phenolic components, Cinnamomi Cortex showed the highest content at 23964 ㎍/g, followed by Cinnamomi Cortex Spissus at 17489 ㎍/g and Cinnamomi Ramulus at 5435.8 ㎍/g. These results showed that Cinnamomi Cortex and Cinnamomi Cortex Spissus with stem bark as usage sites had about 3.22 to 4.41 times higher content of phenolic components than Cinnamomi Ramulus with young branches as usage sites.

돈육의 저온 저장중 지질함량의 변화 (Changes of Lipid Content of Pork Portions Low Temperature Storage.)

  • The experiment was carried out to investigate the change of pH, total lipid, neutral lipid and phospholipid of pork portions which are picnic shoulder, loin, ham, boston butt and bacon belly during storage at 4$^{\circ}C$ weeks. The results obtained were as follows, 1. pH of butt, ham, bacon, picnic and loin stored at 4$^{\circ}C$ for 2 days were 6.3, 5.9, 5.8, 5.6 and 5.2 respectively. And then pH of pork portions increased gradually during storage period. 2. Total lipid content of the pork portions were 2.13% in ham, 2.78% in loin 4.55% in picnic, 5.74% in butt and 7.11% in bacon. During storage period, total lipid content decreased slightly. 3. In case of neutral lipid, the content in bacon, butt, picnic, loin and ham were 6.68%, 5.32%, 4.22%, 2.53%, and 1.88% respectively. During storage period, neutral lipid content decreased slightly. 4. Phospholipid content showed little differences among the portions. And then phospholipid content decreased significantly during storage period.

Comparison of Total Protein, DNA, and RNA Contents by Corpus Luteum in Various Stages of Estrous Cycle and Pregnancy

  • This study was conducted to measure the total protein, DNA, and RNA contents of corpus luteum(CL) in various stages of estrous cycle and pregnancy. CLs were collected from a local slaughterhouse and stages of the estrous cycle of CL were classified as CL1~2, days 1 to 10; CL3(with/without central cavity), days 11 to 17; CL4, days 18 to 20 by method of Ireland et. al(1980) and stages of the pregnancy of CL were classified as P1~3, months 11~3: P4~6, months 4~6; P7~9, months 7~9 of pregnancy. CL3 with/without central cavity(CC) was identified as described by Kastelic et. al.(1990)-CL with CC, more than 2mm in diameter; CL without CC, less than 2mm in diameter. In total protein content, CL3 with CC was significantly lower than P7~9(p<.05). The total DNA content was lower in CL3 with CC than CL3 without CC and CL4(p<.05). In protein : DNA ratio, CL3 with CC was significantly lower than CL4(p<.05), CL3 without CC was significantly lower than P7~9(p<.05), CL4 was significantly lower than CL3 with CC, P1~3 and P7~9(p<.05). No differences were observed in RNA content, protein:RNA ratio, RNA/DNA of CLs in stages of estrous cycle and pregnancy.

황색종 담배의 재배방법이 엽중 화학성분에 미치는 영향 (Influences of Cultural Practices on Chemical Composition in Flue - cured Tobacco Leaves.)

  • These studies were conducted to investigate the changes of starch, sugar and nicotine content in relation to maturity and cultural conditions and correlation between growth characteristics and chemical components in order to improve the leaf quality. The results were summarized as follows; 1. Nicotine content, total nitrogen content and the ratio of total nitrogen to nicotine of the green leaf were increased with heavier fertilizer, wider planting space and lower topping, whereas starch, total sugar and the ratio of sugar to nicotine were decreased. 2. Starch content, sugar content and the ratio of total sugar to nicotine(T-S/Nic) in the cured leaf were decreased with milder planting space, less application of MH and delaying harvesting date. 3. It was estimated that 58.1% of starch of the harvested leaf was converted into sugar of the cured leaf, and also they were significantly correlated each other.
