In this study, the electron donating ability(EDA) and total polyphenol content of herbal wine were examined. The herbal wine was obtained from extract concentration to evaluate its functional properties. The herbal wine were screened for their potential antioxidant activities using test such as electron donating ability(EDA) and total polyphenol content. The electron donating ability(EDA) were $21.81{\pm}0.56$ in herbal wine 15% and $40.45{\pm}1.60$ in herbal wine 35%. As the extract concentration was increased the electron donating ability(EDA) were significantly increased(p<0.05). The total polyphenol contents were measures $113.89{\pm}1.79{\mu}g\;GAE/m{\ell}$ in herbal wine 15%, $274.24{\pm}0.71{\mu}g\;GAE/m{\ell}$ in herbal wine 35%. As the extract concentration was increased the total polyphenol contents were significantly increased(p<0.05). Also, the total polyphenol contents were measures $61.75{\mu}g\;GAE/m{\ell}$ in herbal wine, the higher.

Total polyphenol contents of Jeolpyun containing 8% S. glauca (Bunge) Bunge powder were the highest with a value of 2,280±0.00 ㎍ GAE/mL. It was observed that total polyphenol content exhibited a significant relation with concentrations at p<0.05. The electron-donating ability of Jeolpyun containing 8% S. glauca (Bunge) Bunge extract was the highest with a value of 83.93±0.69%. The electron-donating abilities revealed significant differences between concentrations (p<0.05). The superoxide radical scavenging ability of the blank was 0.01523±0.00068 and Jeolpyun containing 6% S. glauca (Bunge) Bunge powder was the highest with a value of 0.00977±0.00842. The hydrogen peroxide decomposing ability of Jeolpyun containing 0% S. glauca (Bunge) Bunge powder was -0.00377±0.0049; 8% S. glauca (Bunge) Bunge powder revealed the highest decomposing ability of -0.0476±0.0234. Hydrogen peroxide decomposing abilities revealed significant differences between concentrations (p<0.05). Jeolpyun containing S. glauca (Bunge) Bunge powder and extract demonstrated improved antioxidative activities.

Total sugar, crude protein, crude lipid, ash, total polyphenol, extract and betaine contents of various Lycii fructus species (Cheongyang jaerae, Myungan, Bulro, Cheongdae, Jangmyung, Cheongwoon, Cheongyang NO.6, and Cheongyang NO.7) were investigated according to harvest time at intervals of one momth from mid August to mid November. In Cheongyang NO.6, average content of total sugar and extract were the highest, 28.91% and 62.31%, respectively. In Cheongyang NO.7, crude protein (3.24%), total polyphenol (2.13%), betaine(10.77 mg/g) were the highest and crude lipid (6.82%) was the higest in Cheongdae species, and ash (5.83%) was the highest in Cheongwoon species. At the most of the species (except Cheongyang jaerae, Myungan) crude protein, crude lipid, ash and betaine contents were increased, and total sugar, total polyphenol and extract contents were decreased according to harvest time was lated. Also, a relationship among the components of Lycii fructus was found out. ; excract contents (r = 0.81) were increased as total sugar contents were increased, while crude protein (r = -0.88), crude lipid (r = -0.82), ash contents (r = -0.81) were decreased as that And betaine contents (r = 0.90) were increased as total polyphenol contents were increased.
This study purposed to look for its uses by analyzing useful substances in kenaf (Hibiscus cannabin us L.) leaves based on the total polyphenol and flavonoid contents in the leaves, DPPH radical scavenging activity of leaf extract, SOD activity, etc. by different growth stage and variety. According to the results of experiment, the total polyphenol content was highest in Everglade-41 (27.9 mg/g dw.), the total flavonoid content was highest in Tainung-2 (42.3 mg/g dw.), and SOD activity was highest in Dowling (96.1 %). However, DPPH radical scavenging activity was similar among the three varieties.

The results on the useful functional compounds of kenaf (Hibiscus cannabinus L.) leaves cultivated in reclaimed lands and the biological activity effects of extracts were as follows. On 98 days after sowing (DAS) Tainung-2 showed the highest total chlorophyll content (1.68 mg/g), and on 141 DAS Dowling showed higher chlorophyll content (1.50 mg/g) than the other two did. In all cultivars the total chlorophyll content was higher on 141 DAS than on 98 DAS. Total polyphenol and total flavonoid contents were the highest in Tainung-2 (30.50 mg/g and 57.03 mg/g, respectively), and total polyphenol and total flavonoid contents (30.50 mg/g and 57.03 mg/g, respectively) were the highest in 30% ethanol extraction. Ascorbic acid contents were higher on 141 DAS than on 98 DAS in three cultivars. SOD activities of kenaf leaf extract were generally over 90%. DPPH radical scavenging activity of Tainung-2 was higher than others.
Antioxidative activities of Methanol and Ethanol extract of branch, bark, leaves, fruits, wood of Hovenia dulcis THUNBER var. koreana Nakai were analyzed for total poly phenol, flavonoid, antioxidant capacity and DPPH free radical scavanging activitiy. The most total polyphenol and flavonoid contents measerd extract from bark and fruits. Extract from fruits and bark show hight on antioxidant capacity and DPPH free radical scavanging activitiy. There was a good correlation between total polyphenol or flavonoid contents and antioxidant activity.

This study was conducted to investigate the effects of the polyphenol fraction isolated from pear on the reduction of fat accumulation in rats fed on high fat diet for 5 weeks, which was examined by analyzing the lipid composition in serum, liver and feces biochemically. It was shown that the levels of total lipid and total cholesterol in serum were remarkably reduced in polyphenol fraction supplemented group as compared with the control group. The levels of total lipid and triglyceride were also significantly lower in polyphenol group than control group. The contents of total lipid, total cholesterol and triglyceride in feces were tended to be slightly increased in polyphenol group compared to control group. The total protein and albumin of polyphenol groups were lower compared to those of control group, which were not significant.
