숙성기간에 따른 멸치액젓의 성분변화 (Changes of Components in Salt-Fermented Anchovy, Engraulis Japonicus Sauce during Fermentation)

  • 재래식방법으로 멸치액젓 숙성 중에 성분변화를 실험하기 위하여 동부산수협의 숙성탱크로부터 $1.5{\~}3$개월 간격으로 원액만을 직접 채취하여 성분변화를 조사하였다. 멸치육의 가수분해도는 숙성 12개월까지는 $67.8{\%}$로 큰 폭으로 증가하였으나, 그 이후에는 분해속도가 둔화되어 숙성 18개월 후에는 $74.6{\%}$이었다. 수분함량과 pH는 숙성기간에 따라서 약간씩 감소하는 반면, 조단백질함량과 VBN 함량은 증가하였으며, 회분함량과 염분함량은 큰 변화가 없었다. 총질소 및 아미노산성질소함량은 숙성기간에 비례하여 증가하였으며, 총질소함량이 아미 노산성 질소함량보다 증가속도가 더 컸다. 액젓 중의 ATP 관련물질은 $ATP{\~}IMP$는 극미량, HxR은 약간 검출되었고, 거의 대부분 ($80.1{\~}92.7{\%}$)이 Hx과 요산이었다. ATP 관련물질 총량의 증가는 주로 요산량의 증가에 의한 것이며, 숙성기간에 따라서 일정하게 증가하였다. 숙성 11.5개월 전까지는 HxR+Hx 함량이 요산량보다 높다가, 그 이후에는 요산량이 HxR+Hx 함량보다 높게 나타났으며, HxR+Hx 함량과 요잔량이 교차하는 숙성 11.5개월 부근은 가수분해도 $66.9{\%}$, 가용파율 $74.6{\%}$로 나타나 높은 분해율을 보이는 지점이었고, 수분함량도 현행 품질기준인 $68{\%}$ 이하로, 관능적인 맛과 냄새면에서도 좋은 것으로 나타났다. 색도는 숙성기간에 따라서 $a값, {\Delta}E값 및A453값$은 증가하였고, L값 및 b값은 감소하였다. 멸치육의 총아미노산함량은 24,155 mg/100g로 나타났으며, 조성은 aspartic acid가 $14.6{\%}$로 가장 높았고, 다음이 $cystine(11.6{\%}),\;lysine(9.1{\%}),\;glutamic acid (8.9{\%}),\;valime\;(7.7{\%}),\;alanine\;(6.8{\%}),\;leucine\;(6.5{\%})$ 등의 순이었다. 18개월간 숙성시킨 멸치액젓의 유리아미노산 총량은 9,070.2mg/100ml로 원료육 총아미노산함량의 약 $38{\%}$정도였으며, 조성비는 glutamic acid가 $20.5{\%}$로 가장 많았고, 다음이 $leucine\;(14.2{\%}),\;alanine\;(14.0{\%}),\;lysine\;(12.2{\%}),\;isoleucine\;(8.0{\%}),\;valine\;(7.9{\%})$ 등의 순으로 나타나, 원료육의 아미노산 조성과는 차이를 보였다.

A Review on Floating Photovoltaic Technology (FPVT)

  • A novel energy production system which has fascinated a wide consideration because of its several benefits that are called floating photovoltaic technology (FPVT). The FPVT system that helps to minimize the evaporation of water as well as an increase in energy production. For the research purposes, both electrical and mechanical structure requires studying of these systems for the development of FPVT power plants. From different points of views, numerous researches have been directed on FPVT systems that have evaluated these systems. The present research article give a logical investigation and up to date review that shows the different features and components of FPVT systems as an energy production system is offered. This articles reviewing the FPVT that gets the attention of the scientists who have the investigational stage and involuntary inspection of FPVT systems in addition to influence of implementing these systems on the water surface. Also, a comprehensive comparison has been constructed that shows the cons and pros of various types of solar systems that could be installed in various locations. In this review, it has been found that solar energy on the roof of a dwelling house generally has a power of 5 to 20 kW, while the inhabitants of commercial buildings generally have a power of 100 kW or more. The average power capacity of a floating solar panel is 11% more of the average capacity of a solar panel installed on the ground. Studies show that 40% of the water in open reservoirs is lost through evaporation. By covering only 30% of the water surface, evaporation can be reduced by 49%. The global solar panel market exceeds 100 GW and the capacity of 104 GW will bring the annual growth rate to 6%. In 2018, the world's total photovoltaic capacity reached 512 GW, an increase of 27% compared to the total capacity and about 55% of the renewable resources newly created that come from photovoltaic systems. It has been also predicted by this review that in 2025 the Solar technology including the FPVT system will increase by 7.38% that is 485.4 GW more of today installed power worldwide.

Evaluation of adenosine triphosphate testing for on-farm cleanliness monitoring compared to microbiological testing in an empty pig farrowing unit

  • Careful cleaning and disinfection of pigpens is essential to prevent disease spread and avoid the resultant economic losses. Hygiene in pigpens is generally evaluated by visual monitoring supplemented with bacteriological monitoring, which includes counting the total aerobic bacteria (TAB) and/or fecal indicator bacteria (FIB). However, these methods present drawbacks such as time and labor requirements. As adenosine triphosphate (ATP) is ubiquitous in all living organisms including microorganisms, this study aimed to directly compare the results of microbial assessment and ATP quantification, and to suggest possible detailed application methods of the ATP test for hygiene evaluation in pigpens of a farrowing unit. Before and after standard cleaning procedures, samples were collected from the floor corner, floor center, and feeding trough of four pigpens at different time points. No FIB were detected and both the TAB and ATP levels were significantly decreased in the floor center area after cleaning. FIB were continuously detected after cleaning and disinfection of the floor corners, and there was no significant ATP level reduction. The feeding trough did not show any significant difference in these values before and after cleaning, indicating insufficient cleaning of this area. The levels of TAB and ATP after cleaning were significantly correlated and the average ATP value was significantly lower in the absence of FIB than in their presence. In the absence of standard references, a more thorough hygiene management could be achieved evenly by supplementing cleaning or disinfection based on the lowest ATP results obtained at the cleanest test site, which in the present study was the floor center. Overall, these results indicate that the on-farm ATP test can be used to determine the cleanliness status, in addition to visual inspection, as an alternative to laboratory culture-based testing for the presence of microorganisms.

Evaluation of Several Screening Approaches for Detection of Cervical Lesions in Rural Shandong, China

  • Purpose: The study was designed to: (1) investigate the prevalence of high-risk human papillomavirus (HR-HPV) infection and cervical neoplasia; and (2) evaluate clinical performance of visual inspection with acetic acid/ Lugol's iodine (VIA /VILI), Pap smear, high-risk human papillomavirus (HR-HPV) DNA test for detecting cervical intraepithelial neoplasia grade 2 or worse (CIN2+) and (3) explore appropriate screening approach in rural areas of Shandong Province. Materials and Methods: A total of 3,763 eligible women from Yiyuan County in Yimeng mountainous areas of rural Shandong, China, were enrolled and underwent Pap smear, HR-HPV DNA testing by Hybrid Capture 2 (HC2), and VIA /VILI tests. Women positive in any test were referred to colposcopy and biopsy as indicated. Results: The prevalence of HR-HPV infection among all enrolled women was 11.1% and that in healthy women was 9.9%. In total 33 cases of CIN1, 16 cases of CIN2, 6 cases of CIN3 but none of cervical cancer were detected and the crude prevalence of CIN2+ was 0.58%. For detecting CIN2+, the sensitivity of HR-HPV DNA testing, VIA/VILI, Pap smear was 90.9%, 77.3%, 81.8%, respectively. Pap smear had the best specificity of 98.2%, followed by HR-HPV DNA testing with specificity of 89.4%, VIA/VILI had the lowest specificity of 81.2%. Colposcopy referral rate of HR-HPV DNA testing, VIA/VILI, Pap smear was 11.1%, 18.5%, 2.3%, respectively. Conclusions: Our results suggest that HR-HPV DNA testing alone might be appropriate for primary cervical cancer screening in rural low-resource areas of Shandong Province, China.

밴댕이 액젓의 숙성 중 성분변화 (Changes of Components in Salt-Fermented Big Eyed Herring, Harengula zunasi Sauce during Fermentation)

  • 밴댕이 액젓을 재래식의 방법으로 18개월 동안 숙성시키면서 $2\~3$개월 간격으로 성분변화에 대하여 조사하였다. 밴댕이육의 가 수분해도는 숙성 5개월까지는 $51.8\%$로 큰 폭으로 증가하였으나, 그 이후에는 분해속도가 둔화되어 숙성 18개월 후에는 $71.5\%$이었다. 총질소 및 아미노태 질소 함량은 숙성기간에 비례하여 증가하였으며, 숙성기간에 따른 총질소함량의 증가속도에 비하여 아미노태 질소함량의 증가 속도가 더 빠른 것으로 나타났다. 숙성 6개월 이후 액젓중의 ATP 관련물질은 거의 대부분 ($81.7\sim90.1\%$)이 Hx와 요산이었고, ATP 관련물질 총량은 숙성기간에 따라 일정하게 증가하였다. HxR+Hx 함량과 요산량이 교차하는 숙성 13개월 부근은 가수분해도 $66.6\%$로 높은 분해율을 보이는 지점으로서 경제적인 출하 시점인 것으로 판단되었다. 18개월간 숙성시킨 밴댕이 액젓의 유리아미노산 총량은 8,090.5mg/100mL으로 원료육 총 아미노산 함량 (21,538mg/100g)의 약 $38\%$ 정도였으며, 주요 아미노산은 glutamic acid ($20.0\%$), aspartic acid ($10.4\%$), alanine ($9.9\%$), lysine ($9.4\%$), threonine ($6.2\%$) 등의 순이었다.

탠덤 매스 검사(Tandem Mass Spectrometry)를 이용한 선천성 대사이상 선별검사 10년간의 분석 (10-year Analysis of Inherited Metabolic Diseases Diagnosed with Tandem Mass Spectrometry)

  • Purpose: From the early 1990's, use of Tandem mass spectrometry in neonatal screening test, made early stage detection of disorders that was not detectable by the previous methods of inspection. This research aims to evaluate the frequency of positive results in national neonatal screening test by Tandem mass spectrometry and its usefulness. Methods: A designated organization for inherited metabolic disorder executed neonatal screening test on newborns using Tandem mass spectrometry from January 2006 to December 2015, followed by the investigation of these data by the Planned Population Federation of Korea (PPFK), and this research analyzed those inspected data from the PPFK. Results: Among total childbirth of 4,590,606, from January 2006 to December 2015, 3,445,238 were selected for MS/MS and conduction rate was 75.1%. 261 out of the selected 3,445,238 were confirmed patients and for last decade, detection rate of total metabolic disorder was 1/13,205. In 261 confirmed patients, 120 had an amino acid metabolic disorder and its detection rate was 1/28,710 and 110 had an organic acid metabolic disorder and detection rate was 1/31,320. Also, 31 had a fatty acid metabolic disorder and detection rate was 1/13,205. Conclusion: Inherited metabolic disorder is very rare. Until now, it was difficult to precisely grasp an understanding on the national incidence of inherited metabolic disorder, due to lack of overall data and inconsistent and incomplete long-term result analysis. However, this research attempted to comprehensively approach the domestic incidence, by analyzing previous 10 years of data.

  • In the present study, we investigated the quality, sensory characteristics and commercialization potential of a rice collet snack made with the addition of dried shrimp. “Mild” and “spicy” snack products were produced with an edible oil coating and mixed seasoning powder coating, respectively. The approximate composition of the mild and spicy snacks, respectively, were 2.44% and 2.24% for moisture, 8.52% and 8.64% for crude protein, 18.36% and 26.54% for crude lipids, 1.28% and 1.38% for ash, 1.1% and 1.2% for salt, and 0.61 and 0.62 for pH. The L (lightness), a (redness), b (yellowness), and ⊿E (color difference) values were higher for the mild snack than the spicy snack. The mild and spicy snack had values of 7,776.4 and 7,655.8 mg/100 g for total amino acids, and 221.6 and 253.5 mg/100 g for total free amino acids, respectively. The TBA (thiobarbituric acid) value did not differ significantly between the two types of snack. The hardness value of the spicy snack was higher than that of the mild snack, but there were no significant differences in flavor between the two products. The sensory evaluation score of the spicy snack was slightly higher than that of the mild snack. Organoleptic inspection indicated that both snacks had a favorable, unique taste.

Influence of Transgenic Corn on the In vitro Rumen Microbial Fermentation

  • In this study, the comparative effects of transgenic corn (Mon 810 and Event 176) and isogenic corn (DK729) were investigated for their influence on in vitro rumen fermentation. This study consisted of three treatments with 0.25 g rice straw, 0.25 g of corn (Mon810/Event176/DK 729) mixed with 30 ml rumen fluid-basal medium in a serum bottle. They were prepared in oxygen free conditions and incubated at $39^{\circ}C$ in a shaking incubator. The influence of transgenic corn on the number of bacterial population, F. succinogenes (cellulolytic) and S. bovis (amylolytic), was quantified using RT-PCR. Fermentative parameters were measured at 0, 2, 4, 8, 12 and 24 h and substrate digestibility was measured at 12 and 24 h. No significant differences were observed in digestibility of dry matter, NDF, ADF at 12 and 24 h for both transgenic and isogenic form of corns (p>0.05) as well as in fermentative parameters. Fluid pH remained unaffected by hybrid trait and decreased with VFA accumulation as incubation time progressed. No influence of corn trait itself was seen on concentration of total VFA, acetic, propionic, butyric and valeric acids. There were no significant differences (p<0.05) in total gas production, composition of gas (methane and hydrogen) at all times of sampling, as well as in NH3-N production. Bacterial quantification using RT-PCR showed that the population number was not affected by transgenic corn. From this study it is concluded that transgenic corn (Mon810 and Event 176) had no adverse effects on rumen fermentation and digestibility compared to isogenic corn. However, regular monitoring of these transgenic feeds is needed by present day researchers to enable consumers with the option to select their preferred food source for animal or human consumption.

국외에서 출항한 국내 입항 선박에서 검출된 한국 미분포 편승자 해충에 대한 보고 (Report on the Hitchhiker Insect Pests Detected from the Foreign Vessels Entering into Korea)

  • 2018년 6월 1일부터 9월 17일까지 109일 동안, 총 112개 국외 발 국내 입항 선박을 대상으로 편승자 해충(hitchhiker insect pests)에 대한 모니터링을 실시하였다. 그 결과, 총 336개체의 편승자 해충을 확보하였으며, 이를 통합 분류학적 종동정 방법(integrative identification method)을 이용하여 9목 47과 159종으로 동정하였다. 이 중 총 3목 9과 14종의 한국 미분포종(not-distributed species)이 확인되어 보고하며, 검출된 미분포종에 대해서 침입종(invasive species) 내지 침입 가능종(invasive likelihood species)에 대한 위험성 평가를 위한 data sheet를 제공하였다. 또한, 미기록(unrecorded species), 미보고종(unreported species) 내지 신기록종(new recorded species)과 용어의 혼동을 피하기 위하여 본 연구에서는 미분포종(not-distributed species)을 제안하여 사용하였다.

탕침 온도에 따른 닭고기의 저장성 및 품질 변화 (Effect of the Scalding Temperature at Slaughtering Process on Meat Quality and Storage Properties of Chicken)

  • 도계과정에서 탕침 온도를 저온(53-55$^{\circ}C$), 중온(59-61$^{\circ}C$), 고온(65-67$^{\circ}C$)으로 변화시켰을 때 닭고기의 육질에 미치는 영향과 저장 특성을 구명하고자 실시하였다. 탕침 온도가 높을수록 피부의 황색도(b$^{*}$ )는 감소하는 경향을 나타냈으며, 물리적 변화에서 보수력은 저온(67.043%)에서 고온(69.26%)으로 온도가 높아질수록 증가하는 경향을 나타냈다. 전단력은 저온(1.70kg/0.5inch$^2$)보다 고온 (2.54kg/0.5 inch$^2$)으로 높아질수록 유의적으로(p<0.05) 증가하였다. 저장 3일에 저온 탕침 처리 닭고기의 지방산패도(TBARS) 값은 저온 0.25, 중온 0.24, 고온 0.27mg MA/kg으로 중, 저온에서는 비슷한 경향을 나타났으나 고온에서는 약간 증가한 것으로 나타났다. 총세균수는 저온에서 4.99, 중온 4.88, 고온 4.05 log CFU/mL를 나타나 탕침 온도가 높아질수록 감소하는 경향을 나타내었으나 유의적인 차이는 없었다(p<0.05). 도체 조사에서 깃털의 출현율은 탕침 온도가 높아지면서 큰 것(1cm 이상)은 중온(59-61$^{\circ}C$)부터 현저히 감소하는 경향을 나타냈으나 중온과 고온에서는 차이가 거의 없었다. 외상은 탕침 온도가 61$^{\circ}C$ 이하인 저온, 중온에서는 0.6cm를 나타냈으나 고온처리에서는 7 cm로 급격히 증가하여서 고온처리에 따른 피부의 손상이 심한 것으로 나타났다. 이상의 결과는 탕침 온도가 너무 낮을 경우는 육색 및 물리적 특성은 양호하나 미생물이 증가하고, 깃털이 잘 뽑히지 않는 단점이 있으며, 고온일 경우는 황색도(b$^{*}$ )가 낮아지는 경향을 나타내며, 도체에서 깃털은 잘 뽑혔으나 표피 손상으로 근육의 노출이 많았다.
