Effects of various monosodium glutamate(MSG_ concentration (0-400mg%) on the quality of Korean cabbage kimchi during fermentation at 2$0^{\circ}C$ were investigated. The growth of lactic acid bacteria titratable acidity pH content of thiamine ascorbic acid $\beta$-carotene and sensory evaluation were observed in the presencve of MSG. Titratable acidity was increased in the kimchi contained MSG during the fermentation.l Wheeas the changes of pH in the kimchi contained MSG were similar to those in control, Maximum growth of lactic acid bacteria was observed after 49 hour of fermentation in kimchi contained with 200mg MSG. The might be due to the fact that MSG was given optimum pH for acid bacteria growth because of its buffering action. Therefore the periods of kimchi fermentation were reduced by addition of MSG, MSG also affected on the stability of ascorbic acid thiamine and $\beta$-carotene. According of MSG. MSG also affected on the stability of ascorbic acid thiamine and $\beta$-carotene. According to sensory evaluation MSG reduced sour taste in kimchi which increased edible periods.
This study was conducted to determine the optimum conditions for the preparation of traditional Korean whole cabbage Kimchi with salted shrimp. Sensory, physical and chemical characteristics of Kimchi with various salted shrimp level(1.8, 3.6%), fermentation time(12, 24, 36 hrs) and storage period(1, 4, 7 days) were measured. As the fermentation time and storage day were extended, pH of Kimchis decreased but titratable acidity of Kimchis increased. The more salted shrimp in Kimchi resulted in the higher titratable acidity. The longer fermentation time and the longer storage resulted in the more citric, malic and succinic acid, and the less lactic and acetic acid in Kimchi. The optimum conditions for the preparation of Korean whole cabbage Kimchi were 3.6% salted shrimp level, 12 hours fermentation time and 84 hours(3.5 days) storage period.
Irradiated red pepper powder (IRPP) was tested for its ability to retard fermentation and to maintain a high quality of Kimchi by the reduction of the initial microbial load. Kimchi containing IRPP at the doses of 0, 5, 10, 15, or 20 kGy was prepared. Quality indices for Kimchi in this study were pH, titratable acidity, reducing sugar content, total microbial count, lactic acid bacterial load, and sensory evaluation. Based on the pH and titratable acidity, the Kimchi with IRPP showed a retarded fermentation until 15 days. The number of the total aerobes and lactic acid bacteria of the Kimchi with IRPP were lower by about 1 log CFU/mL compared to control at day 0, however, the counts increased to 8.5 log CFU/mL after 10 days, which was similar to the control group. Kimchi that was fermented with 5 kGy IRPP was better than control and other treatments in odor and color, whereas the control scored highest in taste. Addition of IRPP showed a limited retardation of Kimchi fermentation without other quality deterioration.

To estimate the effect of NaCl concentration in brine solution on quality of kimchi, chinese cabbage was brined At 5%, 8%, 10% or 15% NaCl. Titratable acidity, pH, mechanical texture and sensory quality of kimchi were measured during fermentation at 10'C. The salinity of kimchi brined at 15% NaCl was 2.49%, and the rates of pH decrease, titratable acidity acidity increase and mechanical texture decrease during fermentation were lower than those of kimchi brined at 5∼10% NaCl. Furthermore, sensory characteristics such as crispness, salty taste, sourness and overall quality of kimchi brined at 15% NaCl were in good estimation.

This study was carried out investigate the effect of sepiae as on the kimchi ferentation. Quality indices were pH, titratable acidity, reducing sugar content, microbial counts, and redness kimchi juice. Sepiae as retarded the decreasing rate of pH and the increasing rate of titratable acidity in kimchi during fermentation at 1$0^{\circ}C$, and the effect was more conspicouous at 1.5% than at 0.5%. Kimchi added with 1.5% sepiae as maintained a similar pH and titratable acidity after 5 days. Microbial counts of total and lactic bacteria were higher in sepiae os added kimchi than control control. Regardless of the of sepoae os, the redness of kimchi juice was gradually increased during storage.
This study was measured weight loss, total ascorbic acids, titratable acidity and soluble solids contents to investigate the effect of EPS(expended polystyrene foam) box. double wall corrugated paperboard box and LDPE film pouches during storage at 25$^{\circ}C$. The rate of weight loss was 5.7% in corrugated paperboard box after 10 days. but those of 20LD, 40LD film and EPS box were 1.0, 0.8, and 0.9%, respectively. Total ascorbic acid content and titratable acidity of EPS box was 15.0% and 24.4% higher than that in corrugated paperboard box, but the obvious differents were not observed among the LDPE film pouches and EPS box. The titratable acidity was decrease during storage, but total soluble solids content was slightly increase. Overall appearences of LDPE pouches and EPS box were boner than those of corrugated paperboard box.
Changes in pH, titratable acidity, reducing sugar, nitrogen compound and mineral of black bean chungkugjang(BBC)added with kiwi and radish during fermentation were investigated. During fermentation of BBC, pH was increased, while titratable acidity was decreased. The changes in pH and titratable acidity of all chungkugjangs other than BBC were very rapid after 24 hrs of fermentation. Reducing sugar content was highest in BBC and was increased by 24 hrs of fermentation and decreased thereafter. Amino-type nitrogen increased rapidly after 24 hrs of fermentation. The addition of kiwi and radish increased the content of amino-type nitrogen in BBC by enhancing proteolysis of black bean, being as much as in soybean chungkugjang. At 72 hrs of fermentation BBC was found to be lower in ammonia type nitrogen than soybean chungkugjang. Mineral content, in general, was higher in BBC than in soybean chungkugjang, showing highest in potassium followed by phosphorus, magnesium and calcium.
This study was carried out to investigate the effect of safflower powder on the characteristics of kimchi. Quality indexes were pH, titratable acidity, reducing sugar content, microbial counts, and sensory evaluation. Safflower powder enhanced the decrease in pH and increase in titratable acidity during fermentation at l0$^{\circ}C$, and the changes were more conspicuous until 15 days. Stabilized levels in pH was attained, but steady increase in titratable acidity was shown after that time. Microbial loads of total and lactic acid bacteria showed a faster stationary phase for kimchi samples with safflower powder than control. Control was better scores in sensory evaluation, but there were no significant differences in aroma and taste except sample with 3% safflower powder.

Xanthan gum (XG) was investigated for use as a thickening and stabilizing agent in kimchi during fermentation at 10$\^{C}$. The mixing ratios of XG to salted Chinese cabbage were 0.1, 0.3 and 0.5%. Quality characteristics of kimchi such as pH, titratable acidity, reducing sugar content and microbial loads were measured. pH and reducing sugar content showed abrupt decreases after 5 day lag time until 20 days, while titratable acidity steadily increased during fermentation. The addition with 0.5% XG retarded the change rates of pH and titratable acidity showing the slowest change. Kimchi samples added with 0.1% and 0.3% XG maintained a higher reducing sugar content during the whole fermentation period of 30 days. Microbial loads showed an abrupt increase from 5 to 10 days, and maintained a nearly same load thereafter. Kimchi sample added with 0.3% XG showed better scores in color, aroma and taste.
A polymerase chain reaction-denaturing gradient gel electrophoresis (PCR-DGGE) technique followed by sequencing of the 16S rDNA fragments eluted from the bands of interest on denaturing gradient gels was used to monitor changes in the bacterial microflora of two commercial kimchi, salted cabbage, and ingredient mix samples during 30 days of fermentation at $4^{\circ}C$ and $10^{\circ}C$. Leuconostoc (Lc.) was the dominant lactic acid bacteria (LAB) over Lactobacillus (Lb.) species at $4^{\circ}C$. Weissella confusa was detected in the ingredient mix and also in kimchi samples throughout fermentation in both samples at $4^{\circ}C$ and $10^{\circ}C$. Lc. gelidum was detected as the dominant LAB at $4^{\circ}C$ in both samples. The temperature affected the LAB profile of kimchi by varing the pH, which was primarily caused by the temperature-dependent competition among different LAB species in kimchi. At $4^{\circ}C$, the sample variations in pH and titratable acidity were more conspicuous owing to the delayed growth of LAB. Temperature affected only initial decreases in pH and initial increases in viable cell counts, but affected both the initial increases and final values of titratable acidity. The initial microflora in the kimchi sample was probably determined by the microflora of the ingredient mix, not by that of the salted cabbage. The microbial distributions in the samples used in this study resembled across the different kimchi samples and the different fermentation temperatures as the numbers of LAB increased and titratable acidity decreased.
