Stability of the Fat Ingredients of Deep Fried Instant Noodles, Biscuits, and Cookies (라면, 비스킷, 및 쿠키속의 유지성분(油脂成分)의 안전성(安定性)에 관한 연구(硏究))

  • Deep fried instant noodles, biscuits, and cookies were prepared, using the same beef tallow as their fat ingredient. In addition to wheat flour and beef tallow, the common and major ingredients, the deep fried instant noodle contained 1.5% salt before frying, the biscuits 20.0% sucrose and 10.0% nonfat milk solid before baking, and the cookies 20.0% sucrose before baking. The three products and a portion of beef tallow, which was to be used as control, were stored in an incubator at $47.0{\pm}1.5^{\circ}C$. The peroxide value and the free fatty acid value of the control and the extracted fat were determined regularly during the storage period. The fat incorporated in the biscuits exhibited far greater stability to rancidity development than that of the control with regard to both peroxide value and free fatty acid value development. However, the fat incorporated in the deep fried instant noodles and the cookies showed much poorer stability than that of the control. Factors like a deep frying process and/or the presence of a significant amount of salt in the deep fried instant noodles appeared to promote the rancidity development of the fat incorporated in the product. On the other hand, Maillard type browning reaction products in the biscuits seemed to retard effectively the rancidity development of the fat incorporated in the product.

Effects of the Substances Extracted from Dried Mushroom(Lentinus edodes) by Several Organic Solvents on the Stability of Fat (건조(乾燥)표고버섯의 각종(各種) 용매추출물(溶媒抽出物)의 항산화작용(抗酸化作用)의 효과(效果))

  • Mushroom, Lentinus edodes which had been dried at $50^{\circ}C$ for 20 hours were extracted with small amount of ethanol, methanol, chloroform and petroleum ether, respectively. The extracts were then dissolved in edible soybean oil, and the resulting substrates and a portion of the soybean oil (control) were placed in an incubator $(37.0{\pm}1.0^{\circ}C)$ for eight weeks. Peroxide values and TBA values of control and the substrates were determined regularly during the storage period. The results of the present study were as follows: 1. The moisture contents of the mushroom which was 84.88% on wet basis at the time of harvest were reduced to 15.12% after drying. 2. Extracts obtained from alcohols were effective in retarding the POV development. 3. There was not much difference among the TBA values after 14 days, but significant difference of the TBA values in control and the substrates extracts were observed in longer storage period TBA values of substrate containing ethanol and methanol in the later stage period were smaller than that of the substrates containing petroleum ether and chloroform. 4. In view of the POV and TBA value development, ethanol and methanol were more effective solvents for the extraction of antioxidant compounds in the dried mushroom than chloroform and petroleum ether.

The effect of four different temperatures on the growth of Aedes albopictus larva (네 가지 다른 온도가 흰줄숲모기(Aedes albopictus) 유충 생장에 미치는 영향)

  • We investigated to know the growth patterns of Aedes albopictus larva at the four different temperature conditions. Each of 120 individuals was placed into a $20m{\ell}$ vial and 12 sets (a set of 10 vials) were separated into 12 water tanks ($17{\times}24{\times}18cm^3$). Each water tank was composed of 3 the $1^{st}$ instar, 3 the $2^{nd}$ instar, 2 the $3^{rd}$ instar, and 2 the $4^{th}$ instar. Three sets of water tanks were placed under the four different incubator temperatures ($17^{\circ}C$, $21^{\circ}C$, $24^{\circ}C$, $28^{\circ}C$). We found that the eclosion rates were $20.00{\pm}5.77%$ at $21^{\circ}C$ and $3.33{\pm}3.33%$ at other temperatures. For the mosquito larva mortality rate, $1^{st}$ instar was $19.24{\pm}3.65%$, $2^{nd}$ instar was $16.48{\pm}3.25%$, $3^{rd}$ instar was $23.54{\pm}5.06%$, and $4^{th}$ instar was $40.74{\pm}7.08%$. The lowest mortality rate in growth stages according to temperature was $13.33{\pm}6.67%$ at $17^{\circ}C$ in $1^{st}$ instar larva, $7.41{\pm}7.41%$ at $21^{\circ}C$ at $2^{nd}$ instar larva, $10.74{\pm}6.43%$ at $24^{\circ}C$ in $3^{rd}$ instar larva, and $20.37{\pm}5.46%$ at $28^{\circ}C$ in $4^{th}$ instar larva. The survival period of mosquitoes in underwater were $26.33{\pm}0.67days$ at $17^{\circ}C$, $23.33{\pm}1.33days$ at $21^{\circ}C$, $20.00{\pm}2.52days$ at $24^{\circ}C$, and $11.67{\pm}1.20days$ at $28^{\circ}C$. From our results the most effective temperature to the normal growth of mosquito larva was $21^{\circ}C$, and the highest mortality rate was shown at the $4^{th}$ instar stage of larva growth. Our results would provide the basic data for the mosquito larva's growth pattern.

Effect of Sucrose Concentration on Survival After Frozen-thawed of Bovine IVF Blastocysts in Ethylene Glycol Based Freezing Medium for Slow-Cooling (소 체외수정란의 Slow Freezing을 위해서 Ethylene Glycol 동결보호제에 Sucrose 첨가 농도에 의한 동결효율)

  • The present study was undertaken to investigate the post-thawed survivability of bovine embryo depending on different dose of ethylene glycol and sucrose. Ovaries were collected at local slaughterhouse and the cumulus-oocyte-complexes aspirated from ovaries were in vitro matured, fertilized and cultured at 39°C in an atmosphere of 5% CO2 incubator. For conventional slow-freezing, d 7 or 8 expanded blastocysts were collected. Embryos were equilibrated in 1.5 M and 1.8 M ethylene glycol(EG) with 0.1 M and 0.3 M sucrose in Dulbecco's phosphate-buffered saline(D-PBS) supplemented with 0.5% bovine serum albumin. Embryos were then loaded individually into 0.25ml-straw and placed directly into cooling chamber of programmable freezer precooled to 󰠏7°C, after 2 min, the straw was seeded, maintained at 󰠏7°C for 8 min, and then cooled to 󰠏35°C at 0.3°C/min, plunged and stored in liquid nitrogen for at least 3 days. For thawing, the straw containing embryos were warmed in air for 10 sec and exposed to 37°C water for 20 sec. Straws were then removed from 37°C water. Rates of blastocyst survive and hatching were evaluated at 24 to 72 h post-warming. No difference of the survivability was shown between 1.5 M and 1.8 M EG (71 and 70%, respectively). Addition of 0.1 M sucrose to 1.5 M and 1.8 M ethylene glycol in the freezing solution did not differ significantly embryo survival (74 and 77%, respectively), whereas survival rates was higher(89%) in freezing solution contained 0.3M sucrose to 1.8M EG compared with 0.3M sucrose to 1.5M EG group(71%). However, there was no difference in the overall total cell number between the two groups (122±1.8 vs 131±1.4, respectively). In conclusion, the results suggest that 0.3 M sucrose in 1.8 M EG may be optimal condition for freezing and thawing methods with in vitro produced embryos and may be applied to on-farm conditions for embryo transfer.

Study on Overcoming Interference Factor by Automatic Synthesizer in Endotoxin Test (내독소 검사에서 자동합성장치에 따른 간섭요인 극복에 대한 연구)

  • Purpose : Samsung medical ceter shall find a cause of the interference factor and suggest a solution for it. Materials and Methods : A sample of $^{18}F$-FDG, radioactive pharmaceuticals produced by TRACERlab MX and FASTlab synthesizer. Gel-clot method uses Positive control tube and single test tube. Kinetic chromogenic method uses ENDOSAFE-PTS produced by Charles River. Results : According to Gel clot method of Endotoxin Tests at FASTlab, both turbidity and viscosity increased at 40-fold dilution and Gel clot was detected. In case of TRACERlab MX, Gel clot was detected in most of samples but intermittently not in a few of them. When using ENDOSAFE-PTS, sample CV (Coefficient of Variation) of FASTlab is 0% at all dilution rates whereas spike CV is 0% at 1-fold dilution, 0~35% at 10-fold, 3.6~12.9% at 20-fold, 5.2~7.1% at 30-fold, 1.1~17.4% at 40-fold, spike recovery; 0% at one-fold, 25 ~ 58% at 10-fold, 50 ~ 86% at 20-fold, 70~92% at 30-fold, and 75~120% at 40-fold. Sample CV of TRACERlab MX, is 0% at all dilution rates whereas spike CV is 1.4~4.8% at one-fold dilution, 0.6~19.9% at 10-fold, spike recovery; 35~72% at one-fold dilution and 77~107% at 10-fold. Conclusion : Gel clot does not seem to occur probably to H3PO4 which engages in bonding with Mg2+ion contributing gelation inside PCT. Dilution which is identical to reducing the amount of H3PO4, could remove interfering effects accordingly. Spike recovery was obtained within 70~150% - recommended values of supplier - at 40-fold dilution even in kinetic chromogenic method.

Changes in the microorganisms and quality characteristics of sauerkraut by salt concentration based on the storage period (저장기간에 따른 소금 농도별 sauerkraut의 미생물 및 품질 특성 변화)

  • This study investigated the optimal quality characteristics of sauerkraut made by adding 0.5, 1.0, 1.5, 2.0, and 2.5% (w/w) sea salt to cabbage according to the storage period. The results showed that the pH and salinity of 0.5-2.5% sauerkraut decreased, while its total acidity increased during storage. After 20 d of storage, 1.5% or less sauerkraut showed low yellowness, but high brightness and hardness. Moreover, the lactic acid bacteria in 0.5-2.5% sauerkraut maintained at least 7.06 log CFU/mL until 28 d of storage, suggesting that the lower the salt concentration, the higher were the amount of lactic acid bacteria. The coliform group was not detected after 4 d of storage. In conclusion, the quality characteristics of sauerkraut with a salt concentration of 1.5% or less were excellent until 20 d of storage at 4℃. This study provides valuable data for the safe and high-quality assessment of low-salt sauerkraut in the future.

Comparison of In Vitro Lipid Deposition and Change of Optical Characteristics on Daily Disposable Lenses (1-day) and 3-days Lenses Over 3 days (3-days lenses와 daily disposable lenses(1-day)의 착용 시간 별 지방 침착량 및 광학적 특성 변화의 비교)

  • The study aimed to investigate in vitro lipid deposition of oleic acid, oleic acid methyl ester and cholesterol on a daily disposable (1-day lenses) and 3-days lenses over 3 days and changes of optical characteristics is also investigated. Artificial tear solutions were prepared to simulate actual tear compositions. Two types of contact lenses (1-day lenses (Senofilcon A) and 3-days lenses (silicone tripolymer)) were soaked in the artificial tear solutions within an incubator at 37 ℃ with 150 rpm for 8, 16, 24 hours. Lipid deposition (oleic acid, oleic acid methyl ester and cholesterol) were measured using high performance liquid chromatography (HPLC) instrument. In addition, measurements of oxygen transmissibility, light transmittance and observation of lens surface were conducted. The amount of lipid deposition on the 1-day lenses were 127.55 ㎍/lens for Day 1, 302.96 ㎍/lens, for Day 2, and 353.30 ㎍/lens for Day 3. The 3-days lenses were 46.22 ㎍/lens for Day 1, 66.07 ㎍/lens for Day 2, and 67.45 ㎍/lens for Day 3. Oxygen transmissibility were 81×10-9(cm/sec)(ml O2/ml×mmHg)(Baseline) and 48×10-9(cm/sec)(ml O2/ml×mmHg) (Day 3) for the 1-day lenses, it were 13.23×10-9(cm/sec)(ml O2/ml×mmHg)(Baseline) and 9.6×10-9(cm/sec)(ml O2/ml×mmHg) (Day 3) for the 3-days lenses. Transmittance of each lenses were 97.21% (Baseline) and 94.25% (Day 3) for the 1-day lenses, 97.65% (Baseline) and 95.15% (Day 3) for the 3-days lenses. Observation of surface deposition indicated greatest deposition for the 3-days lenses type on Day 3. Lipid deposition for both lens types increased by day and was greater for the 1-day lenses type. Surface deposition appeared to differ as it was greatest for the 3 days lens type, which may suggest other deposits such as protein may be present.

Inhibitory Effect of Metal Surface on the Antimicrobial Resistance Microorganism (금속표면이 항생제 내성균주의 생육억제에 미치는 영향)

  • Background: The aim of this study was to comparatively evaluate the bactericidal effects of copper, brass (copper 78%, tin 22%), and stainless steel against methicillin-resistant Staphylococcus aureus (MRSA), vancomycin-resistant Enterococcus faecium (VREFM), and multidrug-resistant Pseudomonas aeruginosa (MRPA). Methods: The isolates (MRSA, VREFM, MRPA) used in this study were mixed wild type 3 strains isolated from patients treated at Uijeongbu St. Mary's Hospital in 2017. These strains showed patterns of multidrug resistance. The lyophilized strains were inoculated into and incubated for 24 hr in tryptic soy broth at $35^{\circ}C$. The initial bacterial inoculum concentration was adjusted to $10^5CFU/mL$. A 100-mL bacterial suspension was incubated in containers made of brass (copper 78%, tin 22%), copper (above 99% purity), and stainless steel at $35^{\circ}C$. Viable counts of bacteria strains were measured for 9 days. Results: In this study, the bactericidal effects of copper and brass on MRSA, VREFM, and MRPA were verified. The bactericidal effect of stainless steel was much weaker than those of copper and brass. The bactericidal effect was stronger on MRPA than on MRSA or VREFM. Conclusion: To prevent cross infection of multidrug resistant bacteria in hospitals, further studies of longer duration are needed for testing of copper materials on objects such as door knobs, faucets, and bed rails.

Mediating Effect of Opportunity Recognition Among Entrepreneurial Alertness, Mentoring, & Number of Mentoring on New Ventures' Performance (기업가적 기민성과 멘토링 및 멘토링 횟수와 기업성과 관계에서 기회인지의 매개효과 영향)

  • The Korean government is currently expanding the business startup incubator support program and funds for new ventures with innovative technology in order to spread the second venture boom. However, despite the fact that entrepreneurial education and mentoring that entrepreneurs should have are important parts for the sustainable growth of the startup, some companies selected for government support programs are reluctant to participate in programs such as entrepreneurship education and mentoring for the sole purpose of funding commercialization. This research addressed the effects of entrepreneurial alertness with opportunity awareness as its medium and the small business mentoring service along with the number of times the mentoring has taken place, on the corporate performances. The results of empirical research are as follow: the first one is that scanning-search and evaluation-judgment can influence a company's performance (financial, non-financial) through opportunity recognition, with the exception of association-connection, which is a sub-factor of entrepreneurial alertness. Secondly, it was found to affect a company's financial and non-financial performance through opportunity recognition for financing mentoring, technical support mentoring, and management support mentoring. Thirdly, it was found that the number of mentoring also affects the financial and non-financial performance of a company through opportunity recognition. The implications of this study are that it should be revisited that program managers consider rooms that do not violate the startup founder's strategic decision-making opportunities when designing and operating the program as entrepreneurial alertness sub-factor association-connection does not affect corporate performance through opportunity recognition. This study also emphasizes the need for customized mentoring to meet the outcome goals of each startup, as it has been empirically clarified that the mentoring provided to the startup by the government's support is important. The contribution of this research is that entrepreneurial alertness and opportunity recognition that are treated as important components in research for entrepreneurship, and the factors of mentoring and mentoring frequency that are recognized as important elements in the practical aspect of startup business are clarified theoretically and empirically as an influential factor in corporate performance. And this study also provide a rationale for the startup business support agency supplying mentoring.
