한국차도(韓國茶道)의 구조적(構造的) 특성(特性) (A Study on the Structural Characteristics of Teaism of Korea)

  • In order to Characterizing the tea-culture of Korea, historical records for tea-culture of Korea, Japan and China were reviewed. The results were summarized as follows. 1. As for the type of tea through the history of Korea, it could be characterized as Cake-tea(餠茶) in Sam Kook dynasty, Iump-tea(硏膏茶) in Koryo dynasty and leaf tea(葉茶) in Chosun dynasty. Those were affected by Chinese and Japanese tea-culture. 2. Fashiono of tea-culture in Korea were unigue, imitative and reconstitutive. 3. It was concluded that the tea-culture in Korea might be established by the 'cult of tree' (樹木崇拜信仰) of Hwa Rang in Shilla dynasty.

2011년 남부지방 차나무 저온 피해 조사 (A Survey Low Temperature Damage of Tea Tree at South Korea in 2011)

  • 수분부족과 지속적인 저온현상으로 우리나라 주요 차 생산 지역에 막대한 피해를 입혔는데, 이번 동해는 체내 수분부족으로 잎이 건조되어 퇴색된 녹색을 띄다가 고사하는 청고현상이 먼저 발견되었고, 대부분의 차(茶)재배지역에 피해를 입혔다. 이기간 동안 평균기온은 $0.2^{\circ}C$로 전년대비 $-2.7^{\circ}C$ 낮았고 2011년 01월과 02월의 최저기온의 평균기온은 $-5.6^{\circ}C$로 전년대비 $-4.5^{\circ}C$ 낮았으며, 가장 낮은 기온이 관측된 날은 01월 18일 06시 55분으로 $-11.8^{\circ}C$로 관측되었으며 전년 최저기온 보다 $-5.5^{\circ}C$ 낮게 관측되었다. 2010년 12월부터 2011년 02월까지 월동기간 동안 강우량은 104mm 밖에 되지 않아 전년보다 306mm 적게 내렸다. 색도 측정에서는 모든 지역에서 2012년에 비해 2011년도에서 L, a, b값 모두 높게 나왔고 수분함량 또한 2012년보다 2011년 잎의 수분함량이 낮게 나타났으며, Trypan blue분석에서는 저온 스트레스를 받지 않는 정상 차나무 잎에서는 세포사멸 현상이 거의 관찰되지 않았으나 저온 스트레스를 받은 청고피해 잎은 부분 세포사멸이 되어 부분 염색이 일어났으며, 적고피해 잎에서는 대부분 세포사멸이 일어나 대부분 염색이 되는 것을 확인할 수 있었다.

아산 지역특산물과 설화를 활용한 Food Tourism 제품 개발 (Study on the Development of Food Tourism Products Based on the Local Food and Folktale)

  • This study aimed to develop unique, local "food tourism" products by finding specialized items that combine tourist attractions, such as folklore or hot springs. Traditional ingredients were analyzed with ancient texts for the methods of research. A brand image was made possible utilizing hot spring lore and other regional stories. The tofu products were produced using local specialty beans. Products, such as tofu residue cake and willow bean tea, were made with the tofu residue. After the products were completed, the sensory test began at the local tourist attraction. Asan City's food tourism product willow tofu was made with beans that were given as compensation for building the Onyang temporary palace according to the Annals of the Joseon Dynasty and the willow tree that appears in Sunshin Lee's anecdotes. After the preference test between normal tofu and willow-extract tofu was conducted to measure the product potential of willow tofu, among the sample extracts, 0.04% of the willow extract showed a significant preference. The hot spring tofu-residue cake was baked using tofu residue and vegetable olive oil to substitute for animal oil, such as butter, or margarine. After the sensory test targeting the adults was conducted, both products displayed significant product potential with average scores above 5.0. Willow tree bark, which has antioxidation and anti-inflammatory effects without a bitter taste or strong smell, was proven to bean appropriate ingredient for leached tea. The nutty flavor of leached tea was enhanced by roasted green kernel black beans and willow tree bark. The sensory test showed that the leached tea and tofu received a high preference rating on both color and flavor.

Grapefruit seed extract와 7종의 Essential oil 및 혼합 Essential oil의 항균 활성 (Antibacterial activity of grapefruit seed extract and seven kinds of essential and blended essential oils)

  • 본 배경 : 질염은 항생제를 복용하는 방식으로 치료를 하고 있으며, 이러한 항생제의 지속적인 치료는 내성을 유발할 수 있다. 연구 방법 : Lactic acid bacteria 2종에 에센셜 오일을 이용한 항균 활성을 보고자 한다. SE(Grapefruit Seed Extract), eucalyptus, tea tree, clove bud oil, cinnamon oil, lemongrass oil, thyme oil, ginger oil을 일정 비율로 넣어 배양 후, 병원성 미생물- E. coli, C. albicans와 Lactic acid bacteria은 균주에 맞는 배지를 사용하여 균 수를 측정하였다. 결과 : Essential oil 7종과 GSE가 병원성 미생물에 억제 효과가 있으며, 병원성균(E. coli, C. albicans)에 대한 Grapefruit seed extract(GSE)의 억제농도를 확인하였다, 병원성균은 억제하고 Lactic acid bacteria는 억제하지 않는 배합비도 확인하였다(GSE 농도가 200ppm에서 Eucalyptus globulus(EG) oil 50㎕와 Melaleuca alternifolia oil(Tea tree oil, TTO) 50㎕(pH 5.0, 5.5, 6.0)). 결론 : 본 실험에서 Essential oil은 다양한 항균 활성 가지고 있어 항생제 대안으로도 생각할 수 있으며, 장기 항생제 치료환자에 대한 보조 항균제로서도 유용할 것으로 생각된다.

Function of Blending Essential Oil in the Development of Anti-Dandruff Products

  • Purpose: In this paper, we show our blending ratio of 10 types of Essential Oils that survives beneficial bacteria and kills harmful bacteria in the scalp, and we investigate the possibility of application of our blending ratio to the development of anti-dandruff products and the possibility of being used as a raw material for clinical beauty and customized cosmetics. Methods: The scalp microorganisms used in our study were M. furfur, S. epidermidis, E. coli, and P. nitroreducens. There are a total of 10 Essential Oils such as True Lavender, Lime, Roman chamomile, Rosemary camphor, Cedarwood, Geranium, Clove, Tea tree, Palmalosa, and Peppermint. The antibacterial test of the blended Essential Oil was carried out according to the test method of the standardized evaluation methodology of "Food and Food Additives Code". Since M. furfur is related to the growth of sebum in the scalp, in this study we used the fnLNB and the fnLNA with 20 ㎖ of whole fat cow milk added. Results: The blending ratio of EO, which inhibits dandruff-causing bacteria such as M. furfur, S. epidermidis, E. coli, and does not inhibit P. nitroreducens showing dominant growth in a healthy scalp, was B8(Clove 0.2%, Roman chamomile 0.5%, Tea tree 0.3%), B9(Geranium 0.1%, Palmarosa 0.1%, Roman chamomile 0.5%, Tea tree 0.3%), B10(Clove 0.1%, Geranium 0.1%, Palmarosa 0.1%, Roman chamomile 0.5%, Tea tree 0.2%). Conclusion: It is thought that the blending ratio of BEO obtained as a result of this study can provide a basis for use as an alternative to antibiotics in developing anti-dandruff drugs and emerge as a new alternative to solve scalp microbial imbalance. In order for EO to be used as a useful raw material for anti-dandruff preparation, researches on 1) Standardization (the effects of products differ according to the types, regions, climate, extraction methods, etc.), 2) Antimicrobial effects, 3) Safety, etc., must be established.

Physiological and Pharmacological Activites of Nutraceutical Tea by Leaves and Flowers of Domestic Camellia(Camellia japonica)

  • This project was conducted to development several camellia tea mixed herb teas having any physiological effects. Leaves of tea tree contain many compounds, such as polysaccharides, volatile oils, vitamins, minerals, purines, alkaloids(eg. caffeine) and polyphenols(catechins and flavonoids). Although all three tea types(green, oolonr and black) have antibacterial and free radical capturing(antioxidizing) activities, the efficacy decreases substantially the darker the variety of tea is. This is due to lower contents of anti-oxidizing polyphenols remaining in the leaves. Unlike tea tree(Camellia sinensis), the biochemical features and effects of camellia(Camellia japonica) are not well known. Fresh mature leaf of sasanqua camellia(C. sasanqua), roasted young leaf tea(C. japonica) and fresh mature leaf and bark of camellia had high antibacterial activity against P. vulgaris and B. subtilis. In antifungal activity bioassay, young leaf roasted teas of camellia and sasanqua camellia had high activity against C. albicans and T. beigelil. Plant extracts from Camelia japonica had higher inhibitory activity against fungi than against bacteria. In cytotoxic effect against human acute myelogenous leukaemia cell extracts including fresh leaf(200$\mu\textrm{g}$/m1), bark(230$\mu\textrm{g}$/ml) and flower tea (320$\mu\textrm{g}$/m1)inhibited growth of AML cells.(중략)

기능성 샴푸첨가제 개발을 위한 티트리 오일 향의 뇌파 반응 (EEG response of tea tree oil fragrance for the development of functional shampoo additives)

  • 본 연구는 기능성 샴푸첨가제 개발을 위한 티트리 오일 향의 뇌파 반응에 관한 연구를 수행한 결과를 나타내고 있다. 실험 대상자의 경우 (1) 티트리 오일 향 흡입 전보다 흡입 후에 좌뇌에서 측정된 알파파는 소폭 감소하는 경향을 나타내었다. (2) 육체적 긴장과 스트레스 변화 결과에서는 측정 대상자의 모두 향 흡입 전보다 흡입 후에 좌뇌 우뇌 모두 감소하는 경향을 나타내어다. 또한, (3) 정신적 산만과 스트레스 변화 결과에서도 측정 대상자 모두 향기 흡입 전보다 향 흡입 후에 대체로 감소하는 경향을 나타내어 티트리 향기 흡입 요법은 육체적 긴장과 스트레스 완화뿐만 아니라, 정신적 안정과 스트레스 완화에 효능이 있음을 확인하였다. 이러한 결과로서, 티트리 오일을 포함하는 기능성 샴푸첨가제를 제조하고, 기능성 샴푸첨가제에 대하여 향 흡입 전후에 대하여 실험 대상자의 알파파를 측정하였다. 그 결과, (4) 알파파의 강도 변화의 결과에서는 기능성 샴푸첨가제 향 흡입 전보다 흡입 후에 우뇌 및 좌뇌에서 측정된 알파파는 뚜렷이 감소하는 경향을 나타내었다. (5) 육체적 긴장과 스트레스 변화 결과에서는 측정 대상자의 모두 향 흡입 전보다 흡입 후에 좌뇌 우뇌 모두 감소하는 경향을 나타내어, 기능성 샴푸첨가제의 요법은 육체적 긴장과 스트레스 완화에 긍정적 효과를 주는 것으로 확인하였다. 또한, (6) 정신적 산만과 스트레스 변화 결과에서도 측정 대상자 모두 향기 흡입 전보다 향 흡입 후에 대체로 감소하는 경향을 나타내어 티트리 오일을 포함한 기능성 샴푸첨가제의 사용은 육체적 긴장과 스트레스 완화뿐만 아니라, 정신적 안정과 스트레스 완화에 효능이 있음을 확인하였다. 또한, 기능성 샴푸첨가제를 이용한 두피 진정효과가 나타난 사실도 관찰되었다.

티트리 오일을 이용한 구강함수가 화학요법을 받는 암 환자의 구강상태와 불편감 및 구강세균집락에 미치는 효과 (The Effects of Teatree Oil Gargling on Oral Cavity Micro-Organism Growth and Perceived Discomfort of Patient Receiving Chemotherapy)

  • Purpose: The study is to investigate the effects of tea tree oil gargling on oral cavity micro-organism growth and on the perceived discomfort of patients receiving chemotherapy. Methods: A nonequivalent control group non-synchronized design was used to determine the effects of tea tree oil gargling on oral cavity for 20 second after using it for one week, twice a day. The sample consisted of two groups of patients receiving chemotherapy : 19 patients in experimental and 20 patients in control group. The instruments used in the study were Oral Assessment Guide(OAG), a measure of perceived symptoms on oral cavity, and a test of oral mucosal micro-organism culture. The data were analyzed using chi-square test, repeated measure of ANOVA, and Pearson correlation coefficient. Results: There was no significant difference between the two groups in micro-organism culture test of oral mucosa. The experimental group showed a lower number and fewer kinds of micro-organisms than the control group. Conclusion: It is considered that use of tea tree oil is effective in infection control of the oral cavity.

마테차를 이용한 직물의 염색성 (Dyeing Properties of Yerba Mate Tea on the Fabrics)

  • The yerba mate that grows in the subtropical forests of South America is an evergreen tree within the Aquifoliaceae family. The yerba mate (Ilex paraguariensis) tea is habitually used as a drink in Argentina, Paraguay, Uruguay, and Southern Brazil. A wild mate tree needs about 25 years to fully grow to 15 a height of meters; however, they only grow to a height of 3-5 meters when cultivated. The leaves are 7-11 cm long and 3-5cm wide with a serrated margin. Yerba mate tea-based beverages are made from the leaves and stems of the mate tree. It is known that they contain a rich content of antioxidants and polyphenol, vitamins, amino acids, minerals and colorants. Dyeing properties of a mate plant in the silk, wool, linen and cotton fabrics were investigated. Constituents of colorant of mate tea are chlorophyll and carotinoid; in addition, it has more minerals such as (Fe, Ca, Mn, Mg, Na, K, Zn, and Cu) than green tea. Mate tea colorants showed good affinity to silk and wool fabrics. It was found that the optimum condition for dyeing was 30 minutes for dyeing time, 7 for pH of dyebath, and at a dyeing temperature of $80^{\circ}C$. The maximum absorbance wavelength (${\lambda}_{max}$) of silk and wool fabrics dyed with mate tea were at 420-440nm; however, that of linen and cotton fabrics were at 400nm. K/S values of fabrics dyed under optimum conditions were 1.979 for silk fabrics, 1.541 for wool fabrics, 0.551 for linens and 0.465 for cotton fabrics. Munsell hue values of dyed fabrics measured 3.1Y-6.4GY for silk, 1.4Y-8.3Y for wool, 5.5Y-3.7GY for linen, and 5.3Y-1.3GY for cotton. All dyed fabrics showed hues in-between greenish yellow and greenyellow. Colorfastness to rubbing, perspiration and dry-cleaning of dyed fabrics with mate tea were very good; however, the grades of colorfastness to washing of dyed linen and cotton fabrics were poor, and colorfastness to light were poor.

Chemical Variability of Leaf Cuticular Waxes According to Leaf Position in Tea Tree

  • Cuticular waxes on tea (Camellia sinensis L.) loaves consisted mainly of alkanes, fatty acids, primary alcohols, triterpenes, and a group of unknown compounds, dominated by primary alcohols and triterpenes. Tea tree accessions used in this study were M-1, M-2, Sakimidori, and Yabukita. For all accessions, the alkane, fatty acid, and primary alcohol constituents consisted of a homologues series, and the major constituents of primary alcohol class were the C28 and C30 homologues. Triterpenes consisted of friedelin, $\beta-amyrin$, and three unidentified ones and friedelin was the most abundant. Leaf area and the total amounts of cuticular waxes per leaf increased with lower leaf position from the apical bud in Yabukita variety. With different leaf position, total wax amount per unit leaf area on the youngest leaves of P1 (the uppermost leaf position) showed the largest amount $(12.80{\mu}g/cm^2)$, and on mature loaves of P2 to P6 ranged from 7.08 to $7.77{\mu}g/cm^2$, and then on the oldest loaves of P7 (the lowest leaf position) remained at an increased level $(17.53{\mu}g/cm^2)$. During leaf development (lower leaf position), the amount of primary alcohols decreased from P1 to P6 and increased at P7, whereas that of triterpenes increased from P1 to P7. The percentage of each wax class in the total wax amount occurred a decrease in primary alcohol and an increase in triterpene, with leaf age.
