Regional Innovation Systems of the California Wine Cluster: the Case of Napa and Sonoma (미국 캘리포니아의 와인생산 클러스터에 관한 연구: 나파.소노마 지역을 사례로)

  • Spanish missionaries started to grow vine grapes and make wines in California 230 years ago. Earlier pioneers of the land started to do the same works for commercial purposes 130 years ago. Now California became one of the most important wine making places of the world. The quality of California wines in fact have been acknowledged as the best in the world by being ranked on the top in international wine tasting competition, such as Paris Tasting. A large wine cluster, consisted of grape growing, wine making, wine tours, and research and education, has been created in the area centered by Napa and Sonoma, California. In this context, this paper examines the process of formulating the cluster, factors contributing the success, articulates core actors, and draws policy and theoretical implications. It concludes that innovative actors, such as winery founders, local universities, and business organizations, have played key roles in establishing the California wine cluster.

A Study on Relationship between Smoking Habits, Eating Habits and Lifes Satisfaction of the High School Male Students (고등학교 남학생들의 흡연 정도가 식습관, 음주습관 및 생활만족도에 미치는 영향)

  • The purpose of this study was to examine the relationship between the smoking and eating habits of high school students. We also presented the basic data for the effective smoking cessation and smoking prevention programs, and proper nutrition education programs. We surveyed 304 high school male students in Sokcho city. The results were as follows ; a total of 23.7% of the subjects were smokers, the smokers spent more pocket money than the non-smokers and they also spent more time on the internet or smartphone. The smokers had lower awareness of the dangers of smoking than that of non-smokers. They started drinking alcohol earlier than the non-smokers. Their water intake was higher and they preferred consumption of high-protein foods like fried chicken, but were not inclined to vegetables and sour tasting foods. These results imply that smoking habits of the subjects affected their eating and drinking habits. A matter of concern was the low intake of vegetables and sour tasting foods, which could lead to a deficiency of nutrients such as vitamins, minerals and dietary fibers. The smokers were less satisfied with their school life than the non-smokers. There was a negative correlation with the degree of awareness of the dangers that smoking can cause. Conversely, the amount of smoking and drinking habits were positively correlated. To reach a healthy adulthood, it is crucial to quit smoking and participate in smoking prevention education along with nutrition education and abstinence education for the adolescents.

Processing and Quality of Natural-tasting Steamed Fish Paste Containing Unwashed Pufferfish Lagocephalus wheeleri Surimi (복어(Lagocephalus wheeleri) 수리미를 첨가한 어묵의 제조 및 품질특성)

  • To develop natural-tasting fish paste from the pufferfish Lagocephalus wheeleri, steamed pufferfish paste (SPP) was prepared and its optimal processing conditions, quality metrics, and shelf-life characteristics were examined. SPP was produced by thawing golden threadfin Nemipterus virgatus surimi (FA grade), then adding 10% unwashed pufferfish surimi (PS), 1.5% salt, 8.0% wheat starch, 0.25% calcium carbonate, 0.25% sugar, 0.75% sorbitol, 0.25% polyphosphate, and 12.0% pufferfish hot-water extract (Brix 10°). The meat was ground with a Stephan mixer, molded at low temperature (18℃, 10 h), vacuum packed in a laminated plastic film bag, heat treated with hot water (95℃, 50 min), and cooled. As the amount of PS added increased, the whiteness, gel strength, and shear strength of the SPP decreased slightly. However, the SPP folding test showed no deterioration in the texture. In the sensory evaluation, the SPP received a higher rating for taste, smell, and overall taste than commercial Japanese pufferfish Kamaboko. The total amino acid content of the SPP was 10,262.6 mg/100 g; the major amino acids were aspartic acid, glutamic acid, alanine, valine, leucine, lysine, and arginine. The free amino acid content was 133.0 mg/100 g; the major amino acids were taurine, glutamic acid, glycine, alanine, cystine, and lysine.

Research on the Correlation of the Surface Tension and Sensory Quality of Bitter Substances (쓴 맛 물질의 표면 장력과 쓴 맛의 상관 관계)

  • The correlation between the bitter taste and the surface tension was found for bitter tasting, aqueous solutions. By the Szyszkowski's equation, the surface tension (STR) and taste curves (JND) were derived more clearly using the Techplot program. The specific capillary activity (log b values) for bitter tasting solutions are negatively correlated to the recognition threshold. It was shown that a more bitter substances has greater capillary activity. The correlation between the recognition threshold $(log\;C_{1})$ and the substance specific constant (a and b values) of sensory (JND) and surface tension values indicates good agreement. This means that the model of surface area adsorption in the solution/air system can apply also for the sensory model microvillus membrane in the mouth.

Changes in Tasting Constituents (Tannin, Free Sugar, Total Nitrogen ) of Green Tea by Leaching Condition (침출조건에 따른 녹차의 성분(Tannin, Free Sugar, Total Nitrogen) 함량변화)

  • Optimum leaching conditions of Korean green tea were determined by examining the relationship between sensory evaluation and tasting constituents of green tea infusion at various leaching conditions. Total nitrogen, total reducing sugar and tannin contents of green tea were $4.70{\sim}5.02%$, $16.5{\sim}18.0%$ and $10.3{\sim}12.7%$, respectively. They increased with the increased of leaching temperature and time. The sensory score was significantly correlated with the tannin contents of green tea in fusion in the range of $15{\sim}30\;mg/g$.(r=-0.9061). Optimum leaching conditions of green tea were $0.5{\sim}1.0$ min at $55^{\circ}C$, 0.5 min at $70{\sim}85^{\circ}C$ in high grade parched green tea, $1.0{\sim}2.0$ min at $55^{\circ}C$ and $0.5{\sim}1.0$ min at $70^{\circ}C$ in medium one.

An Exploratory Empirical Study on Shopping Choice in Retail Channels by the Selective Characteristics of Foods (상품 선택 특성에 따른 쇼핑채널 선택에 관한 연구: 식품 MD를 중심으로)

  • The purpose of this study is to obtain the implications for establishing a marketing strategy for retailers by analyzing whether the consumer's preference for products (food) is influenced by on-line, off-line, and omni-channel preferences. The research model consisted of the effects of consumers' food selection characteristics on business preference and omni channel preference. The results of analysis based on 477 questionnaires are summarized as follows. First, food purchasing characteristics that utilize the seven characteristics of (1) freshness of food, (2) taste, (3) quality and safety, (4) tasting, (5) food function and information, (6) country of origin, and (7) brand loyalty, has various effects on types of business preference, omni-channel preference. The adopted hypotheses were selected in order of brand loyalty (5 times), freshness (3 times), tasting (3 times), and origin (1 time). The selective attributes on foods are: (1) what kind of brand, (2) how good the freshness is, (3) tasting. (4) The country of origin is to be compressed. Actually consumers seem to utilize only the core selective factors that are appropriate to the characteristics of the distribution channel rather than all of them in the shopping of the food, and there is three characteristics on Convenience Store and only one or two factors in the other types of business. Second, in the analysis of the omni-channel preference analysis, food selection characteristics has been shown to have a limited effect, which is attributed to the fact that the consumer has not yet understood the concept of omni channel. Third, the results of this study suggest that there is a need to reflect the selection characteristics of foods that have diverse influences by business type in the marketing strategies. Because consumers make reasonable consumption to use both on-line and off-line simultaneously, consumers who use Omni Channel focus on quality and safety of food, identify products through tasting, pursue brands that can trust anywhere. Customers who pursue rationality will have a high preference for using Omni Channel. Product choice characteristic has significant effect on omni-channel preference. For a few years, omni-channel strategy of retailers meets with a difficulty. This study make a first attempt to study omni-channel preference changing retailing paradigm.

  • Cultural analysis is closely related to 'Space' which we live in. This means that the shape of the space is not formed accidentally but is a cultural result from how we live. The approach through cultural analysis of space provides a good standard in order to understand, people's values and lifestyles. Today the purpose of sightseeing has changed from just visiting some famous places to experiencing unique culture of other countries. Especially the demand of the sightseers which makes you experience culture through tasting food has been increasing. Yet there are some Korean restaurants that don't show enough Korean culture accurately. The purpose of this study is to research the figural characteristics in Korean interior design with the method of cultural analysis and how they are expressed in the Korean restaurants. In addition, I'd like to suggest that Korean figural characteristics are not old fashioned but are modern things that have grate potential to be reinterpreted.

  • This study was surveyed by 430 subjects about the recognition degree and the preference for cooking method in western food. 1. The recognition degree about the western food was higher in men than women. 2. The preference for fish cooking mehtod was high in men than women in baking method in oven. 3. The preference for meat cooking method was higher in men than women in baking method in oven. 4. The content to be improved in western food was 67.6% in $\ulcorner$Proper taste in Korean$\lrcorner$. Wastern cook should be improved properly in Korean tasting.

A Study on Quality Characteristics of Jeungpyeon with Added Rubus coreanus Miquel (복분자 증편의 품질특성에 관한 연구)

  • This study sought to develop a healthier type of jeungpyeon, or Korean rice cake, by adding Korean black raspberry powder (Rubus coreanus). The moisture content, color, volume, symmetry, uniformity, texture, and sensory quality characteristics were evaluated in order to determine the optimal amount of raspberry powder to add to rice flour in order to get the best-tasting, healthiest food. We substituted 0.5%, 1.0%, 1.5% and 2.0% of rice flour with Rubus coreanus powder and mixed 3%, 6%, 9% and 12% Rubus coreanus concentrate with water to make dough. The result was stored for up to 48 hours at $20^{\circ}C$, and then evaluated. Jeungpyun with Rubus coreanus powder and Rubus coreanus concentrate had the right flavor, color, fermentation, and taste, compared to the other groups. Consequently, in overall acceptability, the highly rated Rubus coreanus powder-PW(1.5%) and Rubus coreanus concentrate - BA (6%) will be the most desirable.
