Standardization for Analysis Method of Total Polyphenol in Complex of Picao Preto (피카오프레토 등 복합물 중 총 폴리페놀 분석법 표준화)

  • As generic health functional food items have been expanded, this research project has been conducted to prepare a scientific and systematic standardized analytical method of relevant food item and examine the suitability of the method for health/functional foods on sale. Total polyphenol was necessary for development and verification of standardized analytical method. The method exhibited high linearity in the tannic acid calibration curve ($r^2$ > 0.999) over concentrations of $5-50{\mu}g/mL$. The limits of detection and quantitation for tannic acid were $5{\mu}g/mL$ and $15{\mu}g/mL$, respectively, while tannic acid recovery was 102.3-112.4% with standard deviations of 0.8-3.2%. To verify the accuracy of the analytical method, the labeled amounts of purchased health functional foods were monitored. The recovery for tannic acid was 105.6% of the labeled amounts. Thus, the new method was suitable for all cases.

Enhancement of Membrane Durability in PEMFC by Fucoidan and Tannic Acid (후코이단과 탄닌산에 의한 PEMFC 고분자막의 내구성 향상)

  • In order to improve the durability of the PEMFC(Proton Exchange Membrane Fuel Cells) polymer membrane, a radical scavenger and a support are used. In this study, the durability of membranes containing fucoidan extracted from seaweeds and tannic acid serving as a crosslinking agent is evaluated to improve chemical and physical durability. Physical durability is evaluated by measuring tensile strength, and chemical durability is measured by Fenton experiment. Membrane and electrode assembly (MEA) is prepared and mechanical and chemical durability are measured through accelerated durability evaluation in the cell. The tensile strength measurement showed that fucoidan and tannic acid can improve the mechanical durability of the membrane by improving the strain rate and yield strength. It is shown in Fenton experiment that fucoidan acts as a radical scavenger. As a result of the accelerated durability test in the unit cell, fucoidan improved both chemical and mechanical durability, increasing the accelerated durability evaluation time by 38.1% compared to the additive-free membrane. When tannic acid is added, the durability of the polymer membrane is improved by 13.9% by improving the mechanical durability.

Optimization of Tannase Production by Aureobasidium pullulans DBS66

  • Tannase production by Aureobasidium pullulans DBS66 was optimized. The organism produced maximum tannase in the presence of 1% tannic acid after 36 h. Maximum gallic acid accumulation was observed within 36 h and tannic acid in the fermented broth was completely degraded after 42 h of growth. Glucose had a stimulatory effect on tannase synthesis at 0.1% (w/v) concentration. The organism showed maximum tannase production with $(NH_4)_2HPO_4$ as nitrogen source. Shaking speed of 120 rpm and 50-ml broth volume have been found to be suitable for maximum tannase production.

Effect of Tannic Substances from Acorn (Quercus acutissima Carruthers) on the Storage Quality of Rice Wine (도토리의 탄닌 성분이 약주의 저장성에 미치는 영향)

  • Rice wines, Yakju-type, were brewed with typical raw materials plus powdered acorns, and storage qualities of the fermented wines were examined. Initial optical densities of the acorn added-rice wines were shown around 0.116 at 660 nm and then decreased to $0.06{\sim}0.075$ after 10 days storage at $4^{\circ}C$. Organic acid contents in the acorn added-rice wines were lower than that of the control: the contents were lactic, succinic, citric, malic, oxalic and fumaric acid in order; and gallic acid, a kind of tannic substances was 0.39 mg%. Peroxide values of the acorn added-rice wines were not markedly changed for 9 days, remaining as low as $2{\sim}3\;meq\;kg^{-1}$ lard of lard, but that of the control was increased to $265\;meq\;kg^{-1}$ lard. As the results of clarity, acidity and antioxidation, the acorn added-rice wines appeared to be preservable, owing to tannic substances extracted from acorn powder.

Distribution of Organic Acids in Traditional and Modified Fermented Foods (재래식과 개량식 발효식품의 유기산 분포)

  • The contents of organic acids in traditional and modified fermented foods were compared, and propionic acid produced during fermentation was investigated. Organic acids in traditional and modified soy sauces were lactic acid, acetic acid, citric acid, formic acid, succinic acid and oxalic acid while propionic acid was found in traditional soy sauces only. Similarly, lactic acid, acetic acid, citric acid, oxalic acid, formic acid, succinic acid and propionic acid were found in traditional and modified soy paste. The organic acids in traditional and modified kochujang were citric acid, acetic acid, formic acid, lactic acid, malic acid, oxalic acid and succinic acid while propionic acid was not found in modified kochujang. The major organic acid in persimmon and commercial (fermented) vinegars was acetic acid. Propionic acid was uniquely found in persimmon vinegars. Also, content of tannic acid in persimmon vinegars was 366.9 ∼ 909.8 mg%.

The effects of dietary photosensitizers on auto-oxidation of gallic and tannic acids (갈산과 타닌산의 자동산화에 미치는 식품 감광성분의 영향)

  • Polyphenols are chemically unstable, and their bioactivities are reduced through oxidation. Photosensitizers (PS) induce photo-oxidation in various food systems. In this study, effects of dietary PS such as riboflavin (Rb), erythrosin B (EB), and zinc protoporphyrin on the auto-oxidation of polyphenols, gallic acid (GA) and tannic acid (TA) were evaluated under a fluorescent light. The formation of oxidation products from GA and TA increased in a PS concentration- and irradiation time-dependent manner. In addition, Rb and EB induced significant reduction in the polyphenols contents and ABTS radical scavenging activity of GA and TA under light. PS significantly enhanced the amount of reactive oxygen species generated from GA and TA. Therefore, the interaction of polyphenols with PS under light results in acceleration of polyphenol oxidation. This phenomenon should be carefully considered during food processing and storage.

Investigation of Acids on the Germanium Analysis by HG-ICP-AES (HG-ICP-AES를 이용한 Germanium 분석에 있어서 보조산에 대한 연구)

  • The present work is aimed to evaluate the conditions of the hydride generation (HG) for germanium analysis by inductively coupled plasma (ICP)-atomic emission spectrometry (AES). Twelve different kinds of acids were used such as phosphoric, hydrochloric, nitric, sulfuric, perchloric, boric, tartaric, malic, oxalic, tannic, citric, and acetic acid. It was found that phosphoric acid yielded the maximum efficiency of hydride generation. Also, efficient hydride generation was obtined with the buffer solutions containing phosphate ions over a wide range of pH. In addition, in the presence of phosphoric acid the interference caused by metals was suppressed in the hydride generation of germanium. As the concentrations of a reducing agent and a stabilizing increased the hydride generation efficiency and the acid concentration proviaing the maximum intensity were increased. By using an analytical method developed in this study, the contents of germanium in water and rock samples were determined. The detection limit of germanium in the presence of phosphoric acid was $0.03{\mu}g/L$.

Antimicrobial Finishing of Cotton Fabrics Using Gallnut Extracts (오배자 추출 물질을 이용한 면직물의 항균가공)

  • As a natural antimicrobial agent, gallnut extract was examined. The extract was separated and analyzed by LC/MS to assign the components, gallic acid, digallic acid, trigallic acid, mono-galloyl glucose, penta-galloyl glucose, etc. Minimum inhibitory concentration of gallnut extract was about 10ppm. Cotton fabrics treated with 10% owf of gallnut extracts had antimicrobial activity showing the reduction of bacteria 99.9% for both Staphylococcus aureus and Klebsiella pneumoniae.
