Effect of Thymol and Linalool Fumigation on Postharvest Diseases of Table Grapes

  • Several postharvest diseases of table grapes (Vitis vinifera) occur during storage, and gray mold rot is a particularly severe disease because the causal agent, Botrytis cinerea, grows at temperatures as low as $0^{\circ}C$. Other postharvest diseases, such as those caused by Penicillium spp. and Aspergillus spp., also often lead to deterioration in the quality of table grapes after harvest. The use of plant essential oils such as thymol and linalool, to reduce postharvest diseases in several kinds of fruits, including table grapes and oranges, has received much attention in European countries. However, to the best of our knowledge there has been no report of the use of thymol fumigation to control gray mold in table grapes in Korea. Thymol ($30{\mu}g/mL$) and linalool ($120{\mu}g/mL$) significantly inhibited mycelial growth and conidia germination of B. cinerea. The occurrence rate of gray mold rot of B. cinerea and other unknown fungi was significantly reduced by fumigation with $30{\mu}g/mL$ thymol in several table grape cultivars, such as Campbell early, Muscat Bailey A, Sheridan, and Geobong. In this study, fumigation with $30{\mu}g/mL$ thymol, had no influence on the sugar content and hardness of grapes, but reduced fungal infection significantly. This suggests that $30{\mu}g/mL$ thymol could be utilized to reduce deterioration of grapes due to gray mold and other fungal infections during long-term storage.

  • 본 연구는 수확 후 포도의 저장온도와 포장방법이 품질변화에 어떠한 영향을 미치는지를 알아보고자 실시하였다. $25^{\circ}C$ 상온에 14일 간 저장하면서 품질변화를 조사한 결과 대조구 보다는 20LD, 20CE에 포장한 포도의 품질이 잘 유지되고 있는 것으로 나타났다. 이상의 결과에서 포도를 상온 유통시 기존방법과 같이 골판지 상자만을 사용하는 것보다 내포장재를 사용하는 것이 더 신선도 유지에 좋은 것으로 나타났다.

전해산성수에 의한 저장기체살균이 포도의 품질특성과 부패균 생육에 미치는 영향 (Effect of Atmosphere Sterilization Using Acidic Electrolyzed Water on Storage Quality and Microbial Growth in Grapes)

  • 산성 전해수를 이용하여 포도(Vitis labrusca L.)의 저장 안정성을 향상 시킬수 있는 방법을 개발하기 위하여, Campbell Early와 Sheridan 포도를 저장고 내부기체를 산성 전해수에 통과시켜 살균시키는 $0^{\circ}C$ 조건에서 저장하면서 환경기체의 살균처리가 포도의 품질특성과 미생물 생육에 미치는 영향을 조사하였다. 저장환경기체의 살균처리는 포도 품종에 따른 차이가 없이 객관적 품질특성인 가용성 고형물, 적정산도, 가용성 탄닌, 안토시아닌, 에탄올 및 아세트 알데하이드 등의 함량 변화와 관능적 품질특성인 color, aroma, texture, juiciness 및 sweetness등에 거의 영향을 미치지 않는 것으로 나타났다. 반면에 저장기체의 살균처리는 포도 품종에 약간 의존적이긴 하지만 곰팡이를 포함하는 미생물의 생육을 억제하는 효과를 보였다. 이러한 결과로 볼 때 산성 전해수에 의한 저장환경기체의 살균처리는 포도의 품질에는 해가 없으면서 부패를 억제시켜 저장 안정성을 향상시킬 수 있는 방법으로 판단된다.

기체충진 포장조건에 따른 신선편이 캠벨 포도의 저장 중 품질변화 (Storage Quality of Ready-to-Eat Campbell Table Grapes as Affected by Active Modified Atmosphere Packaging)

  • 신선편이 포도 상품의 유통, 판매 중 부패억제 및 품질유지를 위한 환경기체조절포장기법의 활용 가능성을 확인하고자 살균소독, 세척, 절단 과정을 거친 캠벨 포도 시료에 대해 다양한 기체 충진 조건을 적용하여 플라스틱 포장용기에 밀봉한 후 $5^{\circ}C$에 저장하면서 품질변화를 살펴보았다. 고이산화탄소 조건에서 포도의 호흡률은 일반 대기조성에서의 호흡률과 크게 다르지 않았으나, 고산소 조건에서는 산소 소모율이 2배 정도 증가하는 비정상적인 호기호흡이 일어났다. 저온저장 중 포장 내부의 기체조성은 초기 기체충진 조건에 관계없이 $O_2$가 모두 소비되고 고농도의 $CO_2$가 축적되었으나, PE 포장구에서는 약 13% 이상의 $O_2$가 유지되었다. 포도의 품질인자 가운데 생체중량은 대조구인 통기 포장구에서만 1.0% 이상 감소하였고 고산소 처리구에서 가장 낮은 중량감소를 나타내었으며, 과육의 pH, 산도, 가용성 고형분 함량 및 경도, 과피 표면색, 폴리페놀 함량, PPO 활성에서는 기체충진 조건에 의한 유의적 차이를 구분할 수 없었다. 한편 고이산화탄소 처리구에서는 약 $10^1-10^2$ CFU/g 수준의 가장 낮은 미생물 균수를 나타내었으나 저장말기에 이취가 강하게 발생하였고, 고산소 처리구에서는 상대적으로 이취가 적고, 고유의 포도향이 유지되면서 관능검사 평가점수가 다소 높게 나타났다. 결론적으로 적정 농도의 고이산화탄소와 고산소를 병용한 환경기체조절포장은 신선편이 포도의 저장유통 중 품질유지에 효과적임을 확인할 수 있었지만, 최적의 포장조건을 찾기 위해서는 향후 추가적인 연구가 필요하다고 판단된다.

$SO^2$ 발생 패드처리가 포도 과실의 저장성에 미치는 영향 (Influence of $SO^2$ generating pad treatment on storage of grape berries)

  • The occurrence of grape berry shattering and decay is influenced by the pre- and/or postharvest infection of decay organisms and pest. Postharvest infection is associated with physical damage due to rough handling. To control quality loss during storage of table grapes, the effects of slow releasing $SO^2$ pad on storability of 'Rosario Bianco' (Vitis vinifera) and 'Campbell Early' (Vitis labruscana) grapes were examined, respectively. The $SO^2$ concentration in package of tables grapes reached to at about 40 $ug{\cdot}L^{-1}$ after 40 days of treatment and remained more than 80 days above 15 $ug{\cdot}L^{-1}$. Decay was found in untreated 'Rosario Bianco' and 'Campbell Early' grapes at each for 44 and 85 days after storage, but not in $SO^2$ pad treated grapes. The storage potential of grape berries at $0^{\circ}C$ increased 2~3 times depending on cultivar by $SO^2$ pad treatment. The application of $SO^2$ pad is confirmed to be effective on the increase of market potential with minimizing quality loss such as berry shattering and decay.

시장 출하 '거봉' 및 '캠벨얼리' 포도의 등급과 품질 조사 (Comparison of 'Kyoho' and 'Campbell Early' Table Grape Fruit Quality in Wholesale Market)

  • A significant difference in table grape quality was found between harvest seasons, producers and cultivars. In general, 'Kyoho' grapes showed much greater difference in fruit quality than 'Campbell Early'. The ratio of 'Campbell Early' grapes with poor quality (below quality standard within grades), was higher in fruit harvested early in the season, mainly because of immature fruit harvest. In 'Kyoho', poor quality of fruit seemed to be derived from the deviation of cultural practice between producers. Major factors responsible for poor quality in both cultivars includes harvest of unripe cluster, poor sorting and grading, berry abscission, and poor coloration. It is recommended to introduce a new quality standards considering the market condition in 'Kyoho' or a fresh-cut technology of grape berries for niche market.

Effect of essential oils and linalool on berry quality during simulated marketing of 'Shine Muscat' grapes

  • 'Shine Muscat' (Vitis labruscana Bailey x Vitis vinifera L.) grapes recently have been greatly favored in Korea, and as of 2022, account for 38.6% of the total grape market in Korea. However, there is a lack of research on post-harvest quality control appropriate to the unique characteristics of 'Shine Muscat'. In order to continuously increase domestic demand and exports in the future, it is essential to establish proper postharvest techniques. Essential oils have remarkable potential as biologically active and environmentally friendly antiseptics for the fruit industry. The objective of this study is to evaluate the effects of essential oils and aroma constituent treatment on fruit quality attributes of 'Shine Muscat' grapes in order to extend fruit quality during a simulated export period. A cluster of 'Shine Muscat' grapes was placed in a newly developed paper box container, and treated with rosemary essential oil, thyme essential oil, and linalool, along with an untreated control. The results showed no significant effect on fruit quality indices, such as cluster weight loss, berry firmness, soluble solids content, titratable acidity, sugar acid ratio, and color change, but showed a positive effect on the alleviation of berry shatter compared to the untreated control. In addition, rosemary oil treatment reduced the proportion of unhealthy berries. Therefore, the results indicated that the newly developed packaging container along with certain essential oil treatment could be applied as a promising packaging material for table grape export.

포도 품종간 송이 부위별 생리적 특성과 수확 후 냉각과 유통성 관계 (Physiological properties of grape cluster portions between cultivars and the effect of postharvest cooling on the marketability)

  • Rapid loss of grape berry quality after harvest occurs due to poor postharvest management. Understanding physiological properties between cultivars is required to develop practical technologies to control fast quality deterioration of tables grapes. Physiological characteristics of whole cluster, rachis and berries were examined to find their effects on postharvest behaviour of table grapes. 'Tamnara' showed high respiration rate and browning of rachis compared to 'Campbell Early'. Weight loss of rachis of 'Cheongsoo' was highest of three cultivars. Berry decay in 'Cheongsoo' begins at the connection portion between peduncle and berry, and berry decay of 'Cheongsoo' was the most severe among three cultivars. Precooling at $0^{\circ}C$ showed better results than cooling at $10^{\circ}C$ regardless of cultivars but cooling effect decreased when simulated marketing period increased up to 10 days. Plastic film wrapping was effective on reducing decay in general but not at higher marketing temperature. For successful commercialization of newly developed grapes, the inhibition technology of rachis browning in 'Tamnara' is required and decay control in 'Cheongsoo' through establishment of cold chain system is recommended.

Phylogenetic and Morphological Characterization of Cladosporium perangustum Associated with Flyspeck on Shine Muscat Grapes in South Korea

  • The Shine Muscat is a table grape, popular in South Korea for its unique mango-flavor taste. Flyspeck is a disease that is characterized by small, black, and circular specks on the grape cuticle was first observed in several commercial orchards in Sangju, South Korea, in August 2019. Here we identified the causal agent of flyspeck based on an advanced diagnosis approach, comprised of both morphological and molecular analyses. Morphological characteristics of the cultures isolated from grape flyspeck were identical to the fungus Cladosporium perangustum. The concatenated sequences of ITS, ACT, and EF1-α were used for molecular phylogenetic analysis, BLAST searches along with Bayesian inference-based phylogeny, confirmed that the causal agent of grape flyspeck is C. perangustum. The cultured fungal isolates also produced flyspeck symptoms on healthy fruits in pathogenicity tests. To the best of my knowledge, this is the first documented evidence of any Cladosporium sp. producing flyspeck symptoms on any plant.

칠레산 수입포도 '레드글로브' 품종에 발생한 부패병 병원균의 동정 (Identification of Pathogens Causing Grape Rot on 'Red Glove' Variety Imported from Chile)

  • 수확 후 부패는 큰 경제적 손실과 포도의 품질을 낮추는 요인이다. 또한 이는 포도 수출의 중요한 제한 요인 중 하나이다. 본 연구에서는 칠레로부터 수입한 '레드글러브' 품종의 부패병과 원인 병원균을 동정하였다. 포도 수입항 근처의 저장창고로부터 부패병이 발생한 포도를 수집하였다. 수입포도 '레드글러브' 품종에서 melting decay, 잿빛곰팡이병, 푸른곰팡이병의 3가지 부패병이 관찰되었다. 전형적인 melting deay로부터 분리한 세균은 16S rDNA의 염기서열과 지방산 프로필을 기초로 Gluconobacter cerinus로 동정하였다. 건전한 포도에 접종에 의해 분리균은 melting decay의 특징인 포도 알 표피의 열과와 괴저를 유도하였다. 잿빛곰팡이병과 푸른곰팡이병 병징을 보이는 포도로부터 Botrytis cinerea와 Penicillium expansum을 분리하였다. 이 2가지 균류는 형태적 특징과 beta-tubulin 유전자의 염기서열을 기초로 동정하였다. 이들은 한국에서 가장 많이 생산되는 '캠벨얼리' 품종에서 강한 병원성을 보여 주었다.
