This study was to investigate consumer recognition of food safety and food additives. The results of this study are as follows: 1. When shopping for food, the food safety was rated as foremost concern for the respondents and the details checked most often were manufacture date, packing condition and axpiration date, respectively. When asked their opinion about harmful factors in relation to food safety, the most important consideration was food additives. The highest rating for credibility regarding the sources of information on food was given to scientists in university and institute, lowest one was given to food manufacturer. 2. Government regulation on the use of food additives was known to exist, but control of the uses of food additive was considered inadequate by 60% of the respondents. These results showed significant differences for age (p<0.05), for education level (p<.01) and for income (p<.05) respectively. 3. 47.9% of the respondents indicated that they were willing to purchase the additive free foods, although it was expensive. More than 70% made an effort to eat food with less food additive and were concerned about possible effects of food additives on health, showing significant differences for age (p<0.05), for education level (p<0.05) and for income (p<0.05). 4. Labeling for food additive found on food package was shown to be unsatisfactory, showing significant difference only for income (p<0.05) and more information about food was needed by over 91.3% of the respondents, showing significant difference for education level (p<0.05). 5. Although approximately 80% of the respondents were concerned about artificial preservative, artificial flavor, artificial color and artificial sweetener, the concern about artificial preservative was the highest. Primary causes that respondents felt fear toward food additives were the unknown harms and cancer, and primary sources that respondents got information on food were televison and radio, respectively. From these results, it was shown that consumer considered food safety important and they felt a great deal of concern about food additives.
In this study, monitoring of food additives as an artificial sweeteners on favorite dairy products of children, which are deal at supermarket, was performed. We analyzed aspartame, acesulfame-K, sodium saccharin, and sucralose from total 206 dairy products which are fermented milk, ice-creams and others. Aspartame was detected from 3 cases of fermented milk. Sucralose was detected from 10 cases of processed milk and 2 cases of fermented milk. The detected concentration was followed [average (minimum~maximum)]: aspartame 34.6 mg/kg (2.9~97.9 mg/kg), sucralose 29.8 mg/kg (5.5~67.7 mg/kg). The level of intakes of detected sweeteners were evaluated by comparisons with the acceptable daily intake (ADI) data established by the joint FAO/WHO expert committee on food additives. The estimated daily intake (EDI) of aspartame and sucralose per day were 0.37 mg/day, 0.20~0.32 mg/day. The intake levels were 0.05~0.8%, which were all within safe levels.
This study added stevia leaf powder at ratios of 0.5, 1.0, 1.5, and 2.0 percent to Omija-pyun (Schisandra chinensis Jelly) as a natural low-calorie sweetener instead of sugar which is added to Omija-pyun in considerable amounts to evaluate quality characteristics and antioxidant activities compared to the control group with the addition of sugar. Moisture content of Omija-pyun expanded by increasing the measurement of stevia leaf powder (p<0.001), pH (p<0.01) and sugar content (p<0.001) decreased. L-values and b-values revealed a tendency to increase by adding more stevia leaf powder, but a-value revealed a tendency to decrease (p<0.001). Hardness (p<0.001) and chewiness (p<0.05) decreased by adding more stevia leaf powder. Based on the consumer preference evaluation, Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of color and flavor (p<0.001). The control group and Omija-pyun with the addition of 0.5 percent stevia leaf powder was the most preferable in terms of taste and texture (p<0.001). There were significant differences in the organoleptic properties except hardness between the samples by quantitative descriptive analysis. The control group revealed the highest preference in terms of redness and transparency, and redness and transparency tended to decrease by adding more stevia leaf powder (p<0.001). Organoleptic properties on bitterness and sourness were enhanced by adding more stevia leaf powder in the principal component analysis (PCA). Regarding antioxidant properties, total phenol compounds and flavonoid contents of Omija-pyun increased by adding more stevia leaf powder, and DPPH radical scavenging capacity also increased (p<0.001). Based on results, it is preferable to serve Omija-pyun with the addition of 1.0 percent stevia leaf powder instead of sugar within the context of quality and antioxidant activity.
This study was designed to determine whether acute fructose or sucrose administration at different levels (0.05 g/kg, 0.1 g/kg or 0.4 g/kg body weight) might affect oral glucose tolerance test (OGTT) in normal and type 2 diabetic rats. In OGTT, there were no significant differences in glucose responses between acute fructose- and sucrose-administered groups. However, in normal rats, the AUCs of the blood glucose response for the fructose-administered groups tended to be lower than those of the control and sucrose-administered groups. The AUCs of the lower levels fructose- or sucrose-administered groups tended to be smaller than those of higher levels fructose- or sucrose-administered groups. In type 2 diabetic rats, only the AUC of the lowest level of fructose-administered (0.05 g/kg body weight) group was slightly smaller than that of the control group. The AUCs of fructose-administered groups tended to be smaller than those of the sucrose-administered groups, and the AUCs of lower levels fructose-administered groups tended to be smaller than those fed higher levels of fructose. We concluded from this experiment that fructose has tendency to be more effective in blood glucose regulation than sucrose, and moreover, that smaller amount of fructose is preferred to larger amount. Specifically, our experiments indicated that the fructose level of 0.05 g/kg body weight as dietary supplement was the most effective amount for blood glucose regulation from the pool of 0.05 g/kg, 0.1 g/kg and 0.4 g/kg body weights. Therefore, our results suggest the use of fructose as the substitute sweetener for sucrose, which may be beneficial for blood glucose regulation.
Due to the increasing incidence of diabetes, obesity and hypertensive, stevia has been placed great attentions as the sweetener to substitute sucrose in the world. Stevia was introduced to Korea in 1970's, but it has not been an attractive crop in that time. However, recently it has more attention for the natural food sweet additives. Because stevia have many problems for cultivation especially cultivar, seed germination, fertility, uniformity and glycoside quality, the sport mutation was attempted to in vitro plants for the improvement of some characteristics. The young in vitro plants was nursed on MS medium supplemented with $1mg\;l^{-1}\;GA_3$. Shoots of 10 cm height were irradiated with 0~200 Gy of gamma ray and the every node was separated and inoculated on MS basic medium. The lethality, number and length of shoot, numbers of node and branch were investigated for the evaluation of radiosensitivity. The optimum dose of gamma ray seemed to be around 80 Gy for the sport mutation induction in stevia. The lower node was more sensitive than higher node to radiation.
고감미 다수성 계통인 자가수정 스테비아의 hypocotyl 절편체를 이용하여 대량증식방법 개발에 대한 결과는 다음과 같다. 선발된 자가수정개체는 초장이 72.0~120.7 cm로 분포되어 있었고, 분지수는 4.9~56.6개로 분포되어 있었다. HPLC 분석을 통하여 rebaudioside-A(RA)성분이 평균함량 55.2%이상 함유된 자가수정 개체를 선발하였다. 스테비아의 hypocotyl 절편체를 이용하여 MS배지에 1.5 mg/L BA와 0.5 mg/L Kinetin를 혼용 첨가하였을 때 가장 많은 식물체가 재분화되었다. 이는 1개의 절편체가 30개의 식물체 재분화 효율을 나타내었다. 재분화된 신초로부터 발근배지는 0.1 mg/L IBA가 첨가된 배지에서 가장효과가 좋았다. 발근된 신초는 기외 이식 후 순화과정을 통하여 정상적인 식물체로 생육하였다. 본 연구에서 구명된 대량번식방법은 Rebaudioside A 생산성 향상에 효과적으로 이용될 것으로 판단된다.
Objectives: The incidence of inflammatory bowel disease (IBD) is increasing globally, and excessive added sugar consumption has been identified as one of the contributing factors. In the context of IBD, it is essential to explore functional sweeteners that can improve metabolic health and minimize the risk of IBD-related symptoms. This review article aims to shed light on the effects of natural mono- and di-saccharides as alternative sweeteners, specifically focusing on potential benefits for IBD. Methods: A comprehensive literature review was performed using PubMed and Google Scholar databases with articles published after the year 2000. The search terms 'IBD', 'added sugar', 'sweeteners', 'mono-saccharide', and 'di-saccharide' were combined to retrieve relevant articles. A total of 21 manuscripts, aligning with the objectives of the study, were selected. Papers focusing on artificial or high-intensity sweeteners were excluded to ensure relevant literature selection. Results: Multiple studies have emphasized the association between the high consumption of added sugars such as simple sugars and the increased risk of developing IBD. This is suggested to be attributed to the induction of pro-inflammatory cytokine productions and dysbiosis of the gut microbiota. Consequently, there is a growing demand for safe and functional sweeteners, in particular mono- and di-saccharides, that can serve as alternatives for IBD patients. Those functional sweeteners regulate inflammation, oxidative stress, and Intestinal barrier protection, and restore microbiome profiles in various IBD models including cells, animals, and humans. Conclusions: Understanding these mechanisms resolves the link between how sugar consumption and IBD, and highlights the beneficial effects of natural alternative sweeteners on IBD when they were administered by itself or as a replacement for simple sugar. Further, exploration of this relationship leads us to recognize the necessity of natural alternative sweeteners in dietary planning. This knowledge could potentially lead to more effective dietary strategies for individuals with IBD.
To produce super sweet corn sikhye, substituted for sweetener, the ratio of rice and super sweet corn was adjusted and processed with complex enzymes during saccharification, and their physicochemical and sensory properties were analyzed. The soluble solid content of the control and Corn-5 showed significantly high content at 13.50 °Brix, and the reducing sugar content of Corn-5 showed the highest content at 9.45%. The control showed the lowest free sugar content among all the experimental groups, excluding maltose content. In the enzyme-treated corn sikhye group, as the amount of super sweet corn increased, the content of sucrose decreased and the contents of glucose and fructose increased. The content of ascorbic acid and polyphenol compounds increased as the amount of super sweet corn increased. DPPH and ABTS radical scavenging abilities increased with increasing ratio of super sweet corn and enzyme treatment compared to the control. In the case of sensory evaluation, Corn-3, which substituted 30% of super sweet corn for rice and treated with enzymes, showed higher evaluations in taste, sweetness, and overall preference than those of the control.
본 연구는 전통 음청류인 수정과의 세계화 일환으로 대체당을 사용하여 관능성이 탁월한 기능성 수정과 음료를 개발한 후, 개발된 수정과 음료의 항산화 및 산화적 DNA 손상억제 효능을 살펴보고자 하였다. 고콜레스테롤식이 공급으로 고콜레스테롤혈증이 유발된 10주령의 ApoE KO 마우스를 대조군인 설탕물 섭취군(Control), 설탕 첨가 수정과 음료 섭취군(Sucrose), 스티비아 첨가 수정과 음료 섭취군(Stevia), scFOS 첨가 수정과 음료 섭취군(scSFO), 그리고 양성대조군으로 시판 수정과를 섭취시킨 군(Positive control)으로 나누어 실험 식이를 6주간 공급한 후, 혈장 TRAP, 혈장 및 간의 TBARS, 백혈구, 간세포 및 비장세포의 내재적 또는 산화적 스트레스로 인한 DNA 손상 정도를 측정하였다. 모든 군에서 체중 증가량, 식이 섭취량, 조직 무게는 유의적 차이가 없었다. 간 TBARS 농도는 설탕물을 섭취한 대조군에 비해 설탕의 농도를 달리하여 제조한 수정과 음료군인 sucrose군, stevia 첨가군, 그리고 scFOS 첨가군의 TBARS 농도가 유의적으로 감소하여 수정과의 지질과산화 억제 효과를 확인할 수 있었다. 설탕을 줄이는 대신 stevia를 첨가하여 제조한 기능성 수정과 섭취군에서 설탕물만을 섭취한 대조군에 비해 간, 비장세포의 내재적(endogenous) 또는 $H_2O_2$로 유도된 산화적 DNA 손상에 대한 억제 효과가 있는 것으로 나타났다. 백혈구의 DNA 손상의 경우 stevia군에서 대조군에 비해 감소하는 경향을 보여주었으나 통계적 유의성은 없었다. 시판 수정과의 경우 간세포의 내재적 DNA 손상만을 억제하는 효능이 있는 것으로 나타났으며, 설탕만으로 제조한 수정과나 scFOS가 첨가된 수정과 섭취군의 경우 내재적 또는 $H_2O_2$로 유도된 산화적 DNA 손상이 대조군에 비해 감소하는 경향을 보여주었으나 유의성은 없었다. 이상 본 연구의 결과, 고콜레스테롤혈증이 유발된 ApoE KO 마우스에서 수정과의 보충 섭취는 간 지질과산화를 개선시키고 stevia 첨가 수정과의 경우 간 및 비장에서 DNA 손상 억제효과가 있음을 확인할 수 있었다. 본 연구 결과가 수정과의 세계화에 기여할 수 있기를 기대하며, 향후 본 연구를 기반으로 한 분자생물학적 수준의 기전 연구가 필요하다고 사료된다.
