Changes in the contents of sugars and soluble solids and flavor rate of cooked kernels of three sweet com hybrids (Great Bell, Danok 1, and Golden Cross Bantam) and a super sweet corn hybrid (Crisp Super Sweet 720) were observed from 15 days after silking (DAS) to 27 or 33 DAS in 1985 and 1986 to determine the optimum harvest time. Sucrose content in all hybrids and fructose and glucose contents of Crisp Super Sweet 720 increased from 15 DAS to 21 or 24 DAS and then decreased. However, in the three sweet corn hybrids both fructose and glucose contents were highest at 15 DAS and then continuously decreased with maturity. At harvest time the major sugar component was sucrose and the highest total sugar content of Crisp Super Sweet 720 was 2-3 times higher than that of three sweet corn hybrids. Soluble solids were continuously increased with maturity in three sweet com varieties, but that of Crisp Super Sweet 720 increased up to 24 DAS, maintained the level through 30 DAS and then decreased. At harvest time soluble solids of three sweet com varieties were much higher than that of Crisp Super Sweet 720. The optimum harvest time seems to be about 27 DAS considering flavor rate and marketing conditions although the total sugar content was lower than those of earlier harvests. Soluble solids but not total sugars were positively correlated with the flavor of cooke6 com harvested at different growth stages in the same variety. Total sugars were not correlated with soluble solids or negatively correlated depending on hybrids.

This study was investigated the herbage productivity and nutrient contents of corn (Suweon 19 and Kwanganok) and sweet sorghum (Ramiki sorgo and Silage sorgo) at the stage of maturity (10-DBS, silking, milky and dough stages) to identify the utility value of sweet sorghum as a substituting crop for corn. The silage materials (dough stage) were chopped and were storaged for 90 days in polyethlene bag with O.lmm thickness. Chemical composition, nitrogen content and in vitm dry matter digestibility were evaluated. Also, daily intake and palatability were checked in the feeding trial with four male sheep in average weight about 57kg. Both fresh and dry matter yield of corn and sweet sorghum were increased as the maturity processed (P< 0.05), and sweet sorghum showed higher total yield potential than corn. Crude protein content of the cultivars was decreased as the maturity was processed (P< 0.05). Neutral detergent fiber (NDF) content of the cultivars, in general, showed highest at silking stage, followed by 10 days before silking (10-DBS), and milky and dough stages (Pi0.05) in order. Acid detergent fiber (ADF) content was increased as the maturity processed, and it showed the highest value at milk stage. However, the contents of ADF in sorghum plant was decreased during the late maturity. Crude protein content of the silage was not significantly different among cultivars used, while NDF content was highest in Ramiki sorgo, followed by Silage sorgo, Kwanganok and Suweon 19. In v i m DM digestibility of the silage was highest in Kwanganok, followed by Suweon 19, Silage sorgo and Ramiki sorgo. Total N content of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok. DM intake of the silage was highest in Ramiki sorgo, followed by Suweon 19, Silage sorgo and Kwanganok and it was closely related to the palatability value.
Objective: Apart from various climatic differences, corn harvest stage and varieties are two major factors that can influence the yield and quality of corn silage in the tropics. A study was conducted to determine the optimum harvest stage of four corn varieties for silage production in Malaysia. Methods: Corn was harvested at four growth stages; silking, milk, dough, and dent stages from four varieties; Sweet Corn hybrid 926, Suwan, breeding test line (BTL) 1 and BTL 2. Using a split plot design, the treatments were then analysed based on the plant growth performance, yield, nutritive and feeding values followed by a financial feasibility study for potential commercialization. Results: Significant differences and interactions were detected across the parameters suggesting varying responses among the varieties towards the harvest stages. Sweet Corn was best harvested early in the dough stage due to high dry matter (DM) yield, digestible nutrient, and energy content with low fibre portion. Suwan was recommended to be harvested at the dent stage when it gave the highest DM yield with optimum digestible nutrient and energy content with low acid detergent fibre. BTL 1 and BTL 2 varieties can either be harvested at dough or dent stages as the crude protein, crude fibre, DM yield, DM content, digestible nutrient and energy were not significantly different at either stage. Further financial analysis showed that only Sweet Corn production was not financially feasible while Suwan had the best financial appraisal values among the grain varieties. Conclusion: In conclusion, only the grain varieties tested had the potential for silage making according to their optimum harvest stage but Suwan is highly recommended for commercialization as it was the most profitable.
This study investigated the quality changes in whole super sweet corn during thermal processing to extend its shelf-life. To minimize the reduction of unique texture of whole sweet corn after the sterilization, the alcohol sanitation applied and the cold point of a whole corn ear was determined using a computer simulation. The cold point was located between the corn kernel and the cob. The microorganisms on the surface of sweet corn were reduced by more than 1 log CFU/g after alcohol sanitation, then the whole corn was treated to satisfy the degree of sterilization ($F_{121.1}=4$). The quality of sterilized sweet corn was compared with the control that was treated with steaming. The quality changes of sterilized sweet corn during storage were monitored for 9 months at $25^{\circ}C$. The hardness was maintained within 30% of its initial value. The minimum of hardness was $464.50{\pm}103.35g$ and maximum of hardness was $514.50{\pm}81.83g$. The differences in the sugar content among the samples were found, but the sugar content of corn kernel remained within 30% of the control, ranging from $28.83{\pm}1.05$ to $34.36{\pm}0.42%$. The yellowness was higher than that of control by 5%. The maximum value of yellowness was $34.36{\pm}0.42$. The general bacteria and molds and yeasts in corn kernel stored at $25^{\circ}C$ were not detected after 9 months of storage at $25^{\circ}C$. Therefore, in this study, we have demonstrated that the thermal sterilized method extends the shelf-life of whole sweet corn with minimizing its quality changes over 6 months in room temperature.
This study was conducted to determine the proper time of corn marketing by cultivating time movement and cultural practice system establish. The rate of development of corn from planting to anther is a function of temperature rather than of photosynthesis. The major yield components of sweet corn for yield increase are more ear heavier grain weight, greater of kernels and heavier 100 grain weight. Early sowing has show yield decrease because yield capacity decreased with the shorting of vegetative growth and it was relatively susceptible to maize black streaked dwarf virus.
A study was carried out to establish the detection method of irradiated corn, potato, and sweet potato starches. The samples were packed in polyethylene bags and irradiated with 1, 3, 5, 7, 10, and 15 kGy using a Co-60 irradiator. The maximum viscosity of irradiated and unirradiated corn, potato, and sweet potato starches reduced by increase of irradiation dose levels and showed significant differences which clearly showed the effect of irradia-tion dose levels (p<0.05). Regression expressions and coefficients (p<0.000) or corn, potato, and sweet potato starches were y=-38.538x+718.23(r2=0.9761), y=669.97e-0.1372x (r2=0.9820) and y=-42.544x+730.26(r2=0.9939), respectively. Nor-malized parameter A,B and C values showed a dose dependent relationship and were a better parameter for detecting the irradiated starches than that of the maximum viscosity itself.
This study was perfomed to search for how properties of the starch viscosity appear in different qualities, when acetic acid is added. For this study, corn starch which belongs to A-type. Potato starch to B-type. and sweet potato starch to C-type were chosen as an experimental material. which was added to acetic acid controlled as pH 4.0, 4.5, and 5.0 at the time of before and after heating. After that, the viscosity properties of each starch was analyzed using Amylogram and Brookfield viscometer. As a result. the viscosity was shown high in an order of potato. sweet potato, and corn starch. According to addition of acetic acid. tile viscosity appeared to be low. The viscosity differences of before and after heating when the acid is added were shown as follows : Amylogram shows that the lower the pH is. the lower the viscosity is when the acid is added before-heating. In case the acid is added before-heating, gelatinization temperature, consistency and setback was increased. but breakdown decreased. In case the acid is added after-heating, the viscosity goes down at soon as it is added meanwhile consistency and setback was decreased. but breakdown increased. Such properties of the viscosity show a conspicuous variation in an order of potato. sweet Potato. and corn starch. Brookrield viscometer shows that the lower the apparent viscosity is. the lower pH is at the time of before-heating when the acid is added. In case of after-heating, when the acid is added. the apparent viscosity shows a higher inclination than that of before-heating in corn starch and sweet potato starch.
This study was carried out to compare the productivity and to evaluate the stability for the introduced sweet corn hybrids; Sunnychocolat, 7168Y and Gammiok as a check hybrids. The used materials were planted at Anseong and Daejeon by randomized block design with 3 replications on 21 April, 2013. In productivity of the used hybrid corns, plant and ear height showed comparatively stable as a 183.5 cm to 226.5 cm and 45.8 cm to 80.9 cm, respectively. In yield per 10a, number of ears was higher in Sunnychocolat than check, while Gammiok was very poor in kernel setting length and marketability. Beside, stability of the used hybrids also showed highly in the introduced hybrids than check in the ratio of ear to plant height, tolerance to environmental stress and low lodging. As results above, we thought that these introduced hybrids will be well adapted in domestic cultivation and growth habit as like other hybrid corns.
This paper is intented to present a information of various aspects of quality related characteristics and standards for grades in maize. Maize is world's one of the three most popular cereal crops and a primary energy supplement and can contribute up to 30, 60, and 98% of the dairy diet's protein, net energy, and starch, respectively. Maize is also processed into industrial goods by wet or dry milling. Sweet corn is a leader among vegetable crops and its production for fresh or processing markets is a major industry in many countries. Over the years, the combined efforts of breeders and geneticists, biochemists, food scientists, and others have helped bring us to the point where we understand issues related to sweet corn quality. Traditional criteria for selecting corn hybrids have been based primarily on agronomic factors, including grain production, disease resistance, drought tolerance, and storage characteristics. Little emphasis has been placed on the quality and nutritional values of corn. Although there is widespread interest for value-enhanced corns have increased tremendously in the last five years, there is limited information available on the production and comparing the quality attributes of specialty grains with those of normal yellow dent corn. Most countries have developed national maize standards, aiming to provide a framework for trade, both internal and external. Where trading involves direct choice and price negotiation in front of the commodity, grading standards are rarely employed; quality is assessed visually and is influenced by end-use, and the price is determined more by local rather than national factors. The use of an agreed standard will provide an unambiguous description of the quality of the consignment and assist in the formation of a legally-binding contract. Standards can also be seen to protect consumers rights through setting limits to the amount of unsuitable or noxious material.
To find out the optimum storage temperature and duration, changes in the content of sugars and soluble solids and flavor rate of two sweet corn hybrids (Great Bell and Golden Cross Bantam) and a super sweet corn (Crisp Super Sweet 720) were observed after storing at -20, 0, 5, 10, 15, 20, and 25$^{\circ}C$ for 1,3,5, and 7 days. At the temperatures below 10$^{\circ}C$, contents of soluble solids and total sugars and flavor rate were not changed significantly, but at the temperatures higher than 15$^{\circ}C$ they decreased as storage temperatures increased and duration extended. Storage duration conserving flavor seems to be 7 days at temperatures below 10$^{\circ}C$, 3 days at 15$^{\circ}C$, and 1-2 days at 25$^{\circ}C$. When corn was frozen, flavor rate was a little low compared with corn stored at 0$^{\circ}C$ although sugar content was higher. Both soluble solids and total sugar contents were positively correlated with flavor rate of cooked corn.
