Volatile Sulfur Compounds, Proximate Components, Minerals, Vitamin C Content and Sensory Characteristics of the Juices of Kale and Broccoli Leaves (케일 및 브로콜리잎즙의 함황 향기성분, 일반성분, 무기질, Vitamin C 함량 및 관능적 특성)

  • To utilize the leaves of broccoli, the shape of which was similar with that of kale leaves, as a vegetable juice, the extracts from two types of vegetable leaves were subjected to the analyses of proximate com ponents, volatile sulfur compounds, vitamin C and minerals. The sensory evaluation of the juices, prepared from kale and broccoli leaves, were performed by duo trio test and scoring test. Among eight varieties of broccoli, four varieties('Pilgrim', 'Greenbelt', 'Salinas' and 'Shasta')were not significantly different from kale(p<0.05), based on the duo trio sensory test. Sulfur and nitrogen compounds present in the dichloromethane extracts of kale and broccoli leaves 'Pilgrim' were identified as 3 butenyl, allyl, butyl and 4 methylsulfinylbutyl isothiocyanate(sulforaphane), 4,5 epithiovalero, 4,5 epithio 3 hydroxyvalero, benzenepropane, 3 hydroxy 4 propene, 4 methylthio butane, 3 hydroxy 3 phenylpropane, 5 methy lsulfinylpentane, 4 methoxyphenyl 3 hydroxypropane nitrile and dimethyl trisulfide by GC/MSD analysis. Proximate components were observed to be relatively similar between kale and broccoli leaves. Vitamin C and sugar content were higher in broccoli leaves(125∼180mg% and 8∼12°Brix) than in kale(101mg% and 7oBrix). In mineral analysis by AA and ICP Mass, 'Pilgrim' showed a higher content of K, Fe, Mn, Zn and Se. In separate experiment, sensory scores of bitter taste and astringent taste were lower and scores of over all taste and over all acceptability, higher in broccoli('1243') juice than those in kale juice.

  • Organic compounds, such as aldehydes, amines, amides, sulfur compounds of polymers, have been added to cyanide Zinc electroplating bath to achieve in improvement of the brightness and of the current efficiency. It was found that the addition of only one compound o these organic compounds in the bath were unsuitable to be used for brightener, but mixure of aldehyde and reaction products obtained from epoxides and amines and/or amides were suitable for brightener in cyanide zinc electroprating baths.

  • In order to explain the positive catalytic action of copper compound for the rate of leaching of zinc sulfide minerals, the electrode and redox potentials of both synthetic and natural sulfides were measured at various conditions of temperatures and pressures. The potentials of Chalcopyrite and copper sulfide were considerably higher than that of zinc sulfide, whereas lead sulfide and Galena had slightly lower potentials than that of zinc sulfide. At elevated temperatures and pressures, the same tendency was obtained. By means of comparing the calculated and measured values of potentials for sulfides, it was suggested that the electrode potentials in acid solution were generated by oxidation of sulfur ion. As a result, it was concluded that the catalytic action of copper compound in the leaching of synthetic zinc sulfide should be arised from the galvanic action between sulfides keeping intimate contact one another in which copper sulfide worked as cathodic and zinc sulfide as anodic part analogous to the metal corrosion under galvanic action.

  • The effects of mechanical alloying conditions on the formation of Mn-sulfide powders were analyzed. Impeller rotating speed, lubricant coating and added amounts of process control agent(stearic acid) were selected as a process control factor. MnS compounds are synthesized in 3 hours by mechanical alloying at the alternative milling condition. Discontinuous rotating speed of 1200rpm for 4 minutes and 1000rpm for 1 minute shows more effects on the compound formation of MnS. After coating of lubricant on the wall, elementary Mn and sulfur were partially remained by mechanical alloying. The friction effects of the wall and grinding media on the powders are significantly important to form the compound of MnS.

  • Various silanes, amino silane, vinyl silane, sulfur silane (TESPD), and ZS (TESPD/zinc soap complex), are added into chlorinated isobutylene-isoprene copolymer (CIIR)/soft clay/carbon black (CB) and CIIR/hard clay/CB compounds and they are investigated with respect to the vulcanization characteristics, the processability, and the mechanical properties. Comparing hard clay and soft clay filled compounds, hard clay (Suprex) filled system shows a higher die C tear than the soft clay (GK) filled one. The other properties (Mooney, extrusion torque/pressure, torque rise ($M_H-M_L$), modulus at 300%) are close to each other. Among various silanes, the ZS treated hard clay (Suprex) compound shows the highest mechanical property following hard clay(S)/vinyl silane(V) and soft clay(GK)/vinyl silane(V) compounds. The TESPD and the ZS effectively helps a formation of a strong 3-dimensional network structure between silica and CIIR via coupling reaction due to bifunctional nature of TESPD. In addition to that, the ZS added compounds show both a better processability and mechanical properties compared to the S2 ones at low concentration due to improved compatibility between zinc soap and CIIR matrix. Only the ZS added compound shows both improved processabilities (Mooney, Extrusion torque-& pressure) and improved mechanical properties (degree of crosslinking, elongation modulus, tear, and fatigue to failure counts) on both CIIR/hard clay/CB and CIIR/soft clay/CB compounds.

Compositional Characteristics and Origin of Polycyclic Aromatic Hydrocarbons[PAHs] of Crude Oils and Petroleum Products (원유와 석유제품 중의 다환방향족탄화수소류[PAHs] 분포특성과 발생원)

  • Compositional characteristics and origin of polycyclic aromatic hydrocarbons(PAHs), which should be strongly regulated for environmental protection in the crude oils and petroleum products, have been investigated by gas chromatography-mass spectrometry(GC/MS). In the crude oils analyzed, two-rings compound(naphthalene) of PAHs was detected around $72.3\sim93.5%$, but five- or six-rings compound of PAHs was not detected. In the crude oils analyzed, the molecular ratio indices of Phe/Ant(phenanthrene/anthracene)>15, Fla/Pyr(fluoranthene/pyrene)<1, BaA/Chr(benzo (a)anthracene/chrysene)$\leq0.4$ could be effectively applied, and we found that the origin of PAHs was petrogenic sources. Total PAHs concentrations in the crude oils were increased with increasing API gravity and with decreasing sulfur contents of the analyzed crude oils. Five- or six-rings compound of PAHs were not included in ail petroleum products except bunker-C. Furthermore, the molecular ratio indices of Phe/Ant(phenanthrene/anthracene) vs. Fla/Pyr(fluoranthene/pyrene) could be effectively applied as the standard for the PAHs contamination criterion at the other Korean areas.

  • Kinetic studies on solvolytic reactions of 1-and 2-naphthalene sulfonyl chlorides in ethanol-water mixtures have been carried out by means of conductometry at several temperatures. The rate constant for 2-naphthyl compound was larger than that for 1-naphthyl compound. This was contrary to the prediction of MO theory and could be rationalized as due to the peri-hydrogen effect in the transition state for 1-naphthyl compound. Based on m values of Winstein plots and n values of Kivinen pacolots it was concluded that the solvolytic displacement of the two naphthalene sulfonyl chlorides in ethanol-water mixtures proceed via $S_N2$ process.

Quality Characteristics of Onions Applied with Methylsulfonylmethane (MSM) during Cultivation (양파 재배 중 식이유황 methylsulfonlymethane 처리가 양파의 품질 특성에 미치는 영향)

  • Two types of onions cultivated with different methods of sulfur application (designated as S-1 and S-2) were examined for their physicochemical and sensory properties, and then compared with onions without sulfur application as a control. During cultivation, dietary sulfur methylsulfonylmethane (MSM) was sprayed on the leaves twice starting at 2 months before harvest, with one month intervals for S-1. For S-2, the MSM was applied once onto surface soils before sowing, and then once again on the leaves at 2 months before harvest. Thiosulfinate, a major sulfur-containing compound in onions, increased in the order of control, S-1, and S-2, without noticeable differences in the strength of spicy hot taste and flavor. The S-2 onions demonstrated a total reducing capacity three times higher than control and S-1 did. It indicates that the application of sulfur would positively affect the quality of onions under the condition where sufficient time is given for soil mineralization.

  • N-Methylidene-2,6-diethylaniline (III) was prepared by the reaction of 2,6-diethylaniline (II) with an excess paraformaldehyde. The protons of N=$CH_2$in the compound III exhibited a second order NMR spectrum. The compound III reacted with bifunctional chlorocarbonylsulfenyl chloride(IV) to give N-(chloromethyl)-N-(2,6-diethylphenyl)-carbamoylsulfenyl chloride(V). The reaction of the compound V with various alcohols resulted in the formation of Alkyl N-(chloromethyl)-N-(2,6-diethylphenyl)-carbamoylsulfenate esters(VI${\sim}$XVI) in 71${\sim}$95% yields. The compound VI${\sim}$XVI decomposed gradually, but the thermal rearrangement of S-O bonding to S=O bonding was not found. The nucleophilic attack of an excess alcohol to the compound Ⅴ was made on both divalent sulfur and ${\alpha}$-carbon of N-chloromethyl group. The corresponding substituted products(XVII, XVIII) had considerable stability.
