Characterization and Volatile Flavor Components in Glutinous Rice Wines Prepared with Different Yeasts of Nuruks (누룩에서 분리한 효모를 이용한 찹쌀발효주의 이화학적 특성 및 휘발성 향기성분)

  • In order to investigate the effect of different yeasts (La Parisienne (LP), Y18-2, Y54-3, Y90-2, Y90-9 and Y272-7) from nuruks on the quality of Glutinous rice wines, physicochemical properties and volatile flavor components were evaluated. Glutinous rice wines prepared with different yeasts were analyzed for ethanol, pH, total acid, amino acid, soluble solid, coloring degree, UV absorbance, reducing sugar, organic acid, free sugar and volatile compounds. After fermentation for 17 days, the ethanol contents ranged from 13.40 to 14.50%, while the total acid levels were from 0.33 to 0.44%. The amino acid contents in six samples ranged from 0.13 to 0.18%, while soluble solid contents ranged from 12.1 to $14.7^{\circ}Bx$. The glutinous rice wine prepared with LP showed the highest level of coloring degree, soluble solid and reducing sugar among six samples. Organic acid contents of the glutinous rice wine prepared with LP had the highest levels of lactic acid and acetic acid, while the glutinous rice wine prepared with Y90-9 had the highest level of succinic acid. In all glutinous rice wines tested, the most abundant free sugars were glucose followed by maltose. Volatile flavor components in the glutinous rice wines were identified by using GC-MSD. Nineteen esters, ten alcohols, eight acids, one aldehyde and one miscellaneous compound were identified in the glutinous rice wines. Using relative peak area, it was found that other than ethyl alcohol, hexadecanoic acid ethyl ester was the major component, predominantly found in the range of 2.73-10.41%. Phenylethyl alcohol, isoamyl alcohol, ethyl oleate, ethyl linoleate and tetradecanoic acid ethyl ester were some of the major volatile components present through the fermentation, respectively. Overall, it was shown that different yeast strains from nuruks greatly affected chemical and volatile characteristics of the glutinous rice wines.

  • Biosurfactant have a low toxicity, good biodegradable, various structure. It can be used for a broad range of purposes in a large variety of different applications. Sorbitol mono alkyl ester synthesized by the Porcine Pancreatic lipase catalyzes transesterification reaction between a sugar alcohol and plant oils. We are examined the surface tension, emusion stability and critical micelle concentration were evaluated. Consequently It has a good properties of biosurfactant.

Effects of Selenium Supplying Methods on the Growth and Se Uptake of Hydroponically Grown Tomato Plants (Selenium공급방법이 수경재배 토마토의 생장과 Se 흡수에 미치는 영향)

  • This study was conducted to clarify the effects of supplying methods of selenium on the growth and Se uptake of hydroponically grown tomato plants. Tomato seeds (Lycopersicum esculentum Mill. cv. Momotaro T-93, Daki Seed Co.) were sown in plug tray with fifty holes, and raised for sixty days. Tomato seedlings transplanted to coco fiber slabs were supplied with the nutrient solutions adjusted to EC $2.3dS{\cdot}m^{-1}$ and pH $5.8\~6.2$ recommended by the Japanese Horticultural Experiment Station. Selenium forms used were inorganic $SeO_2$ (here in after referred to Se) and organic selenium chlenium with sugar fatty acid ester (here in after referred to chelated-Se). 10 ppm selenium solutions were treated to tomato plants with foliar applications, drenching, and foliar application plus drenching. Growth characteristics in terms of plant height, number of leaves, leaf area and chlorophyll content were significantly increased in the plot of foliar application ot Se, and in the plot of foliar application plus drenching of chelated-Se than other plots, respectively. Transported contents of selenium into the tomato fruits were highest as 0.302 ppm in the plot of foliar application plus drenching of chelated-Se. Also, it had tended to be higher in the plot of foliar application plus drenching than in the plots of foliar application or drenching in both of Se and chelated-Se. Foliar application and drenching of organic chelated-Se were effective to produce the functional tomato fruits.

Physicochemical Properties and Volatile Compounds in Jeonju Moju (전주 모주의 이화학적 특성 및 휘발성 화합물 성분)

  • The principal objective of this study was to evaluate the physicochemical properties and volatile compound contents of Moju acquired from 12 restaurants in Jeonju. The alcohol contents were lower than 2.1%, and the pH values ranged from 3.85 to 4.38. Total acidity, $^{\circ}Bx$, and UV absorbance values differed among the samples according to the type of side materials added. Reducing sugar contents were found to be substantially superior to other commercial takju variants. Malic and lactic acid contents were higher than the contents of other organic acids, and the free sugar contents were as follows: maltose>glucose>fructose. Overall, the high b (yellowness) and cP values were attributable to the turbid yellow and heavy condition of the samples. The volatile compound contents of Moju were analyzed via GC and GC/MSD. 30 components were identified, including 3 alcohols, 12 esters, 7 hydrocarbons, and 4 aldehydes. Among the alcohol compounds, benzeneethanol levels were higher than the levels of isoamyl alcohol. Ethyl caprate, ethyl palmitate, and ethyl linoleate, which were fundamentally attributable to origin liquor, were highest among the 12 esters. (E)-cinnamaldehyde, which was the most abundant among 7 hydrocarbons, and (E)-cinnamyl acetate contents were attributed to the presence of cinnamon, a common supplement in the processing of Moju.

  • A study was conducted to examine the physical and chemical changes of wines fermented from three different varieties by three different methods. The products were evaluated by twenty subjects on color, aroma, and taste. The results were as follows; 1) The moisture contents of those varieties were ranged from 90. 70 to 90.82% The Brix sugar and sugar contents were in order of Muscat Bailey A>Alden>Cambell Early. The titratable acidity was higher in Muscat Bailey A and Alden than in Cambell Early while PH of Cambell Early was higher than those of the two others. 2) The specific gravities of the products were slightly decreased as the fermentation progressed. 3) The yeast-fermentation showed the higher degree of alcoholic contents compared to the natural fermentations. of the natural fermentations, the washed-natural fermentation resulted in the lower alcoholic contents than unwashed one. 4) The PH's were also higher in the yeast-fermentation products than in the natural fermentation groups. The difference, however, was smaller as the fermentation progressed further. 5) The total ester coutents of the yeast fermentation group were slightly higher at the beginning of the fermentation than those of the natural fermentation products and the contents were increased during the fermentation in overall. 6) Twenty panel mentors judged the ripe wine products and the order of preference was Alden>Muscat Baliey A>Cabell Early. They preferred the yeast-fermentation wine to the natural fermentation products.

  • Different amounts of the Opuntia ficus-indica var. saboten fruit were soaked in different alcohol concentrations of a Korean rice wine distillate for 4 months. Changes in pH, brix degree, contents of reducing sugar and polyphenol compound, alcohol concentration, turbidity, and color were analyzed during the soaking period. Quality of the final product was determined through the analysis of the volatile flavor compounds and sensory evaluation. During the soaking periods, pH, alcohol concentration, and contents of polyphenol compound decreased, whereas the content of reducing sugar increased. These changes were affected more by the content of the fruit than the alcohol concentration of the soaking media. Turbidity of the wine increased with higher fruit contents, while the increase of alcohol concentration resulted in the turbidity decrease. As the soaking period increased, lightness and yellowness increased but redness decreased. Acetaldehyde, acetyl acetone, ethyl alcohol, guaiacol, thymol, and acetic acid phenyl ester were detected in all liquors. Significant differences in all sensory attributes test were shown by six experimental groups (p<0.05), and the best overall acceptability was obtained from the liquor made of 67% fruits and 30% alcohol concentration.

Optimization of O/W Emulsion with Natural Surfactant Extracted from Medicago sativa L. using CCD-RSM (CCD-RSM을 이용한 알팔파 추출물인 천연계면활성제가 포함된 O/W 유화액의 최적화)

  • In this study, natural surfactants were extracted from Medicago sativa L. The O/W emulsification processes with the extracted natural surfactants were optimized using central composite design model-response surface methodology (CCD-RSM) and a 95% confidence interval was used to confirm the reasonableness of the optimization. Herein, independent parameters were the ratio of saponins to total surfactant (P), amount of surfactant (W), and emulsification speed (R), whereas the reaction parameters were the emulsion stability index (ESI), mean droplet size (MDS), and viscosity (V). Using the multiple reaction, the optimal conditions for the ratio of saponins to total surfactant, amount of surfactant, and emulsification speed for O/W emulsification were 49.5%, 9.1 wt%, and 6559.5 rpm, respectively. Under these optimal conditions, the expected values of ESI, MDS, and V as the reaction parameters were 89.9%, 1058.4 nm, and 1522.5 cP, respectively. The values of ESI, MDS, and V from these expected values were 88.7%, 1026.4 nm, and 1486.5 cP, respectively, and the average experimental error for validating the accuracy was about 2.3 (± 0.4)%. Therefore, it was possible to design an optimization process for evaluating the O/W emulsion process with Medicago sativa L. using CCD-RSM.

  • To elucidate the relationship of the Quality of aromatic tobacco to their chemical constituents, certain chemical components and leaf Quality by price were compared among leaves produced, 1) under 4 different light intensities during maturing stage in field, 2) under 4 different temperature of 20$^{\circ}C$. 25$^{\circ}C$. 30$^{\circ}C$ and control of l8-22-28$^{\circ}C$ in phytotron. As the light intensity decreased chlorophyll content of harvested leaves increased, but specific leaf weight and Quality of cured leaves lowered. The content of sugar. pet. ether exts. and volatile organic acids decreased, but total nitrogen, nicotine, ash and pH increased as the .light intensity decreased. As the growth temperature increased days to flower was shortened and the growth was decreased without significant difference in leaf Quality. With higher growth temperature the content of nitrogen, ash and pH increased, but sugar decreased with no difference in pet. ether exts., volatile organic acids and volatile neutral content. Several Quality indices were disscussed for the Quality evaluation of aromatic leaves for two groups, respectively.

Evaluation of the Natural Antimicrobials against Yeasts in Functional Beverages to Control Quality loss (효모에 의한 기능성 음료 변질 제어를 위한 천연항균물질 항균력 평가)

  • We investigated eight active natural antimicrobials for preservation of functional beverages that are usually degraded by yeasts rather than by bacteria due to a high sugar content and a low pH. Five strains of yeasts (S. cerevisiae, Z. bailii, P. membranaefaciens, C. albicans, and P Anomala) were tested with eight natural antimicrobial agents ($\varepsilon$-polylysine, yucca extract, vitamin $B_1$ derivative, scutellaria baicalensis extract, chitooligosaccharid, allyl isothiocyanate, sucrose-fatty acid ester, and oligosaccharide). The lowest minimal inhibitory concentrations (MIC) were 10 ppm for oligosaccharide and sucrose-fatty acid ester against S. cerevisiae and Z. bailii, 10 ppm for allyl isothiocynate against P. membranaefaciens and C. albican, and 10 ppm for allyl isothiocynate and oligosaccharide against P. anomala. No growth were observed for five kinds of yeasts in functional beverages containing sodium benzonate at concentration of 0.015% or higher. The resistance of S. cerevisiae, Z. bailii, and P. Anomala against natural antimicrobial agents was lower than those of P. membranaefaciens and C. albican. Allyl isothiocyanate, oligosaccharide, and sucrose-fatty acid ester showed the highest antimicrobial activities among the eight tested antimicrobials. These results can be applied to develop new natural antimicrobial agents to improve microbial quality of functional beverages.

  • Enzymatic synthesis and purification of sugar esters using supercritical $CO_2$ were investigated. The observed yield of suagr ester produced by transesterification of methyl glucoside and oleic acid using a lipase(Novozym 435) was 67% at 24 hours of reaction in the supercritical $CO_2$. The solubility of the fatty acids in the supercritical $CO_2$ was measured to find the conditions of supercritical separation of the fatty acids from the reaction mixture. The solubility of capric and oleic acid was 5 ${\times}$ $10^{-4}$, 1.7 ${\times}$ $10^{-4}$ mol/mol $CO_2$, respectively, varying at $35{\sim}50^{\circ}C$ and 80${\sim}$120 atm.
