가구소득수준에 따른 남녀 노인의 건강 및 영양섭취 실태 비교: 2018년 국민건강영양조사 자료를 이용하여 (Comparison of the health and nutritional status of Korean elderly considering the household income level, using the 2018 Korea National Health and Nutrition Examination Survey)

  • 본 연구에서는 제7기 (2018년) 국민건강영양조사 자료를 이용하여 65세 이상 노인의 가구소득수준에 따른 식생활, 건강생활특성 및 영양섭취실태를 비교 분석하였다. 본 연구의 주요 결과를 요약하면 다음과 같다. 연구 대상자 수는 전체 1,355명이었으며, 남자 노인 41.5% (558명), 여자 노인 58.5% (797명)로 소득수준별로 저소득군 48.3%, 중소득군 40.9%, 고소득군이 10.5%로 나타났다. 연령, 거주지역, 교육수준, 가구 유형에서 남녀 노인 모두 소득수준별로 유의적인 차이가 있는 것으로 나타났으며 경제활동여부는 남자 노인에서만 소득수준의 차이가 있었다. 식생활 실태에서는 남녀 노인 모두 소득수준이 높을수록 외식 횟수가 많았으며 점심, 저녁 식사의 동반자가 있는 비율이 높게 나타났다. 소득수준과 주관적 건강상태를 살펴보면 남자 노인의 경우 소득이 높을수록 건강이 좋다고 느끼는 비율이 유의하게 높았으며, 저작 불편 여부에서도 소득이 낮을수록 불편을 느끼는 노인의 비율이 높았다. 비만, 당뇨병, 고콜레스테롤혈증 및 고중성지방혈증 유병률은 노인의 가구소득수준별로 차이가 없었으며 여자 노인의 경우 고소득군보다 저소득군에서 고혈압 유병률이 높게 나타났다. 영양소 섭취량은 남녀 모두 소득이 높아질수록 에너지섭취량이 증가하였으며 탄수화물의 섭취량은 남녀 모두 소득수준별로 차이가 없었다. 그러나, 단백질과 지질의 섭취량은 소득수준별 차이가 유의하게 나타나 남녀 노인 모두 소득수준이 높을수록 단백질, 지질 섭취량이 증가하였다. 남자 노인의 경우 인, 칼륨, 리보플라빈, 니아신, 비타민 C의 섭취량이 유의하게 차이를 보여 소득수준이 높을수록 섭취량이 많은 것으로 나타났다. 여자 노인은 칼슘, 인, 철, 비타민 A, 리보플라빈, 니아신의 섭취량에서 소득수준별 유의한 차이가 나타났으며 리보플라빈의 경우 남녀 노인 모두에서 소득수준별로 매우 유의한 차이를 보였다. 남녀 노인의 총 식품섭취량은 소득이 높아질수록 비례해서 섭취량도 많아지는 것으로 나타났다. 남자 노인의 경우 과일류 (p < 0.001), 해조류 (p < 0.05), 계란류 (p < 0.05)에서 유의적인 차이를 보이며 소득이 높아질수록 많이 섭취하고 있는 것으로 나타났다. 여자 노인의 경우에는 당류 (p < 0.001), 계란류 (p < 0.001), 음료류 (p < 0.001)에서 유의적인 차이가 나타났으며 소득이 높아질수록 섭취량이 증가하는 것으로 파악되었다. 전체적으로 우리나라 남녀 노인의 소득수준에 따른 영양 및 식품섭취량에 차이가 있으며 소득수준이 높을수록 에너지섭취량, 특히 단백질과 지질 섭취량이 많았고 미량영양소에서도 남자와 여자노인에 따라 섭취량에 차이가 있었다. 따라서, 남녀 노인의 소득수준에 따른 사회경제적 요인과 가구 유형, 사회환경 등이 식생활 및 영양섭취에 영향을 미치는 것을 알 수 있었다. 향후 노인 대상 영양지원 또는 교육 프로그램 설계 시 노인의 성별, 소득수준별로 세분화된 내용구성이 필요하며, 건강한 식생활과 생활습관으로 변화시킬 수 있는 다양하고 체계적인 영양교육 및 영양지원 프로그램이 설계되어 제공되어야 하겠다.

우리나라 청소년의 탄산음료 섭취와 주관적 구강증상과의 관련성 (The correlation between soft drink consumption and subjective oral symptoms in Korean adolescents)

  • Objectives: The purpose of this study was to investigate the correlation between soft drink consumption and subjective oral symptoms in Korean adolescents. Methods: Data of 65,528 adolescents were derived from the twelfth Korea youth risk behavior web-based survey, which was conducted from 1st June 2016 to 30th June 2016. Sociodemographic factors, dietary habit, and oral health behavior were collected as independent variables. The subjective oral symptoms were used as a dependent variable. The chi-square test and logistic regression analysis were performed to identify the correlation between dental caries and the other variables. Results: A multiple logistic regression analysis revealed that subjective oral symptoms were correlated with sex, age, subjective economic status, soft drink consumption, sweet drink consumption, tooth brushing frequency and dental sealant experience. Conclusions: Since the intake of soft drink adversely effects subjectively perceived oral symptoms in Korean adolescents, oral health education should include information on the pH levels of food and beverages including carbonated drinks, the effects of sugar on the teeth, and precautions to preventing tooth damage.

청소년의 식행동과 심리적 요인이 피곤 자각도에 미치는 영향 (Contribution of Food Behavior an Psychological Factor to Perceived Tiredness in Adolescens)

  • The relationship among food behavior, psychological factor(life strees) and perceive tiredness was investigated in 514 adolescents. Tiredness was measured in four cases: in lessons, before school, in the early evening and at weekends. Adolescents felt most tired in lessons and before school, and leat at weekends. Irregularity of meal times and skipping breakfast were positively correlated with tiredness in lessons and befor school. Consumption of some foods was related to perceived tiredness. High sugar or fat containing ice-cream, hamburger of fizzy drinks in boys, and crisps and cookies in girls were positively associated with tiredness. Whereas beans and mushrooms were negatively associated with tiredness in girls. Life stress(by scholastic problem and personal problem) of adolescents was positively related to tiredness. The contribution of stress to tiredness was much greater than of food behavior according to multiple linear regression .There was no relationship between nutrients intake and tiredness in lessons and before school which were more strongly influenced by stress, whereas the relationship was found at weekend without influences of stress. The more tired, the lower NARs(nutrient adequacy ratio) of energy, phosphorus, vitamin A, vitamin B$_2$, and niacin were. In conclusion, some eating behavior and psychological factor can cause tiredness in adolescents, but tiredness in school and before school had more of a psychological cause than at weekend. 영양표시에 나타난 각종 시판음료의 영양 및 건강${\cdot}$기능성 성분평가 (The Evaluation of Nutrients and Health${\cdot}$Functional Elements Presented at Nutrition Labels of Various Beverages in the Market)

  • On the basis of the increasing interest for the selection of beverages, this study aimed to evaluate the contents of nutrients and health ${\cdot}$ functional elements in the beverages. Total 161 beverages that bear nutrition lable (NL) as nutrition table and health ${\cdot}$ functional elements information were collected and classified to 8 groups. The evaluated nutrients that are obligatory for NL in Korea were total calorie, carbohydrate, protein, fat, and sodium. Presented values showed that milk & yogurt and soy milk are the most wholesome beverages while the total caloric contents also were higher among 8 groups. Sodium contents in soy milk were higher than any other groups. The caloric contents of other beverage groups come mainly from carbohydrate presumably simple sugar. The caloric content of sports drinks is the lowest but the sodium content is variable among products showing the range of 0 - 100 mg/100 ml. Nonobligatory nutrients for NL frequently expressed are Ca, Fe, vitamin C, folate, and dietary fiber. Their content per serving size does not exceed the tolerable upper intake level, however, habitual multiple intakes of certain product require attention for the prevention of overintakes. Many health ${\cdot}$ functional elements as catechin, carnitine, polyphenol, and nucleic acids etc were listed in NL without presenting the content and their functions appear to be exaggerated compared to the known scientific evidence.

한약재 부산물 첨가가 육계의 성장과 생리적 변화에 미치는 영향 (Effects of Supplemention of Chinese Medicine Refuse on Performance and Physiology in Broiler Chicks)

  • The present study was conducted to investigate the effects of dietary supplemental dry powder of chinese medicine refuse (CMR) on the growth performance and physiological status of broiler chicks. The treatments consisted of corn-soybean meal control diet, CMR 4 and 8% diets. A total of 120 Arbor Acre broiler chicks were randomly allotted to 12 pens ; four pens per treatment and 10 birds per pen. The body weight gain and feed intake did not show ant differences among the treatment groups, but feed conversion was significantly higher (P〈0.05) in CMR 8% group than that of the control group. Hunt L and b did not show ant differences among the treatment groups, but hunt a was darker (P〈0.05) in CMR 4 and 8% group than that of the control group. The blood concentrations of total protein, sugar, glutamic-oxaloacetic-transaminase (GOT), glutamic-pyruvic-transaminase (GPT) Hemogloben were not different among the treatment groups. The pH of thigh muscle were lower in CMR 4 and 8% groups than that of the control group, but crude fat, crude ash of thigh muscle and bone hardness in brolier chicks did not show ant differences among the treatment groups. The saturated fatty acid content of the thigh muscle tende to decrease dietary CMR increased.

Using Sustainable Agriculture to Improve Human Nutrition and Health

  • The purpose of this article is twofold: 1) to provide nutrition professionals with the history of how the concept of sustainable diets was introduced to the nutrition profession and 2) to describe how different sustainable agricultural practices offer potential for improving human nutrition and health. The idea of connecting sustainable agriculture With the promotion of human nutrition and health is not new. It is a concept that was introduced to the nutrition profession more than 20 years ago. To foster healthful, sustainable diets, consumers need to choose more whole foods. From the standpoint of nutrition and health, whole foods are naturally higher in fiber and lower in fat, sodium, sugar and additives compared to highly processed foods. From the standpoint of agricultural sustainability, whole foods bypass the high-energy costs of food processing and transportation. Organic farming systems offer potential benefits to human health through reducing farmers' exposure to pesticides and by increasing the total phenolic content in selected food crops. Participation in farmers' market nutrition programs and gardening has been associated with increased fruit and vegetable intake. Gardening may also be a way to increase access to fresh produce in low-income populations that do not have access to nutritious food outlets and to increase physical activity. Further research is needed to assess the human nutrition and health benefits of other types of sustainable agriculture strategies and to investigate the links among different agricultural practices with nutrient and total phenolic content in a wider variety of important food crops.

D은행(D銀行) 직원(職員)의 건강유지(健康維持)를 위한 식이(食餌)와 운동실천양상(運動實踐樣相) (The Diet and Physical Exercise Patterns of Bank Personnel for the Health Maintenance)

  • To characterize the diet and physical exercise patterns of bank personnel for the health maintenance, a questionnaire was administered to all the employess (1,249) of Daegu Bank in June 1983 among whick 78.1% (976) responded. Three quarters of the respondents were between 20 and 34 years old. About 30% of 20-24 years old group were male compared with 73.1% of 25-39 years old group. Major findings of the survey are as follows: 1) The most concerned chronic disease of the respondents were in the order of cancer (27.4%), psychiatric disease (15.1%), hypertension (14.1%), heart disease (13.7%) and tuberculosis (7.9%). 2) For the prevention of adulthood disease and obesity, 53.4% of the respondents were restricting sugar intake; 40.9%, salt: and 35.1%, fat-rich food. 3) Among all the respondents 36.9% were making effort to reduce body weight and 17.7% were trying to gain body weight. 4) The proportion of respondents who practice physical exercise for the health maintenance was 82.9% in male and 62.5% in female.

치주질환 유무에 따른 건강행태와 영양상태 (Health behavior and nutritional status according to the presence or absence of periodontal disease)

  • Objectives: This study investigated health behavior and nutritional status according to the presence or absence of periodontal disease using data from the Sixth National Health Nutrition Survey. Methods: Data from the 2013-2015 National Health Nutrition Survey were analyzed by frequency analysis, chi-square test, and Pearson's correlation analysis using SPSS 21.0. Results: Periodontal disease was more frequent in the group of patients who perceived that their subjective health status was "very bad" or were underweight according to the BMI classification. In men, periodontal disease occurred more frequently in those who were taking calcium (p<0.05), and periodontal disease occurred more frequently in the age group of 20-39, regardless of sex (p<0.05). In women, periodontal disease was less frequent in the group taking vitamin A. In both men and women, the presence of periodontal disease correlated with high fasting blood sugar and glycated hemoglobin levels. Conclusions: A customized program should be developed for each patient to identify factors that affect the relationship among periodontal disease, nutrient intake, and blood parameters. Such information will help improve the oral health of the population.

Construction of a Bile-responsive Expression System in Lactobacillus plantarum

  • This study aimed to develop a bile-responsive expression system for lactobacilli. The promoters of four genes, encoding phosphoenolpyruvate-dependent sugar phosphotransferase (mannose-specific), L-lactate dehydrogenase (LDH), HPr kinase, and D-alanine-D-alanine ligase, respectively, which were highly expressed by bile addition in Lactobacillus johnsonii PF01, were chosen. Each promoter was amplified by polymerase chain reaction and fused upstream of the ${\beta}$-glucuronidase gene as a reporter, respectively. Then, these constructs were cloned into E. coli-Lactobacillus shuttle vector pULP2, which was generated by the fusion of pUC19 with the L. plantarum plasmid pLP27. Finally, the constructed vectors were introduced into L. plantarum for a promoter activity assay. The LDH promoter showed the highest activity and its activity increased 1.8-fold by bile addition. The constructed vector maintained in L. plantarum until 80 generations without selection pressure. A bile-responsive expression vector, $pULP3-P_{LDH}$, for Lactobacillus spp. can be an effective tool for the bile-inducible expression of bioactive proteins in intestine after intake in the form of fermented dairy foods.

코로나19에 따른 초등학교 급식 메뉴 제공 빈도의 변화 (Changes in Serving Frequency of Elementary School Meal due to COVID-19 Pandemic in Korea)

  • The purpose of this study was to examine changes in serving frequency of elementary school meal before and after the COVID-19 pandemic. Number of menus provided in June and July of 2019 and 2020 were compared for 300 elementary schools in Korea. As a result, the serving frequency of la carte and dessert was increased after COVID-19. In addition, frequencies of main dishes such as pork cutlet, chicken, sweet and sour pork, hamburger steak, and so on using processed food were increased after COVID-19. Because of the longer serving time due to staggered serving, cook's working time for serving meals became longer. Therefore, it was judged that the number of servings of processed food was increased rather than the menu with a large amount of preprocessing work. Moreover, among desserts, fruits showed increased serving frequency. Serving frequencies for juice and dairy products were also increased. However, increased servings of juice and dairy products could increase sugar intake. Thus, a careful plan for menu composition is needed to provide balanced nutrients to students under emergency situations such as an infectious disease.
