  • The common recognition which the organic baby foods is compared as safe to baby does not mean there is especially plentiful nutrition in organic product. Because the mineral content of agricultural products is partly influenced by the soil quality, chemical fertilizer may change the mineral contents of the products. In that case, it may result in the possibility of the change of the contents of the agricultural vegetable products. However, the contents and the compositions of vitamin, carbohydrate, protein and fatty acids does not change largely from their original nutrition facts of the organic foods. The most advantage of organic baby foods seems to protect the agricultural products from the possibility of chemical contamination. It must be the most strong desire of all the consumers to provide and to nurse their babies with the high quality of baby foods made from organic food materials which are safe, reliable and healthier. That would also be a sincerely good way for the environment and ecosystem of the world.

Textural, Isotopic, and Chemical Investigation of Cultured Pearls (양식진주의 조직적, 동위원소적 및 화학적 연구)

  • Cultivated pearls, composed of aragonite crystals, show two distinctive layers: nacreous and conchiolin organic layers. Each aragonite crystal is surrounded by organic matrix, which probably consists of amino acids. Nucleus, surrounded by pearl layer, also consists of nacreous crystals, suggesting that there is a close mineralogical and ultrasturctural relationship between pearl and nucleus. Carbon isotopic values of cultivated pearls are within the range of marine carbonate carbon. Oxygen isotopic composition indicates that the temperature for the growth of pearl and pearl oyster ranges from 16.4 to $21.4^{\circ}C$ and from 15.5 to $24.8^{\circ}C$, corresponding to the summer temperature range of the cultivating area. Elemental composition of pearl, pearl oyster, and nucleus shows that there is a difference in chemical composition depending upon the original mineralogy and the chemical composition of water in which shells grow. Especially, a strong relationship exists between pearl and the inner layer of pearl oyster because both are composed of nacreous aragonite and formed in a shallow marine environment.

Organic Compounds in the Nak Dong River and Its Toxicity (낙동강 수질중 유기물질과 독성)

  • This study aims to investigate organic compounds and its toxicity by Ames test and chromosomal aberration in the water of the Nak Dong River. Six sampling sites such as Goryung, Hagueun, Maelie, Duksan, Haedong and Myungiang were selected for these pur15oses. 200 l water samples were absorbed on XAD-2 resin columns (2.5X30cm), eluted with organic solvents mixture of acetone: cyclohexane and then dried under vacuum condition. The extracts from the XAD-2 resin was injected into GC/MS and 184 organic compounds were identified such as aldehydes, aromatic compounds, ketones, phenols, hydrocarbons, alcohols, carboxylic acids, alkanes and some unknowns. The US EPA priority pollutants such as naphthlene, bis(2-ethylhexyl)phthalate and other pollutants, 1,2-diethyl benzene, 1,2,3,4-tetrahydronaphthalene and cyclohexanol were detected in these samples. The concentration of chemical pollutants such as 1,2-diethyl benzene, nephthalene, 1,2,3,4-tetrahydronaphthalene, bis(2-ethylhexyl)phthalate and cyclohexanol were ranged into 1.228 $\mu$g/l, 298 $\mu$g/l, 30.191 $\mu$g/l, 1.147 $\mu$g/l and 2.839 $\mu$g/l, respectively. The mutagenic activity of XAD-2 extracts were tested on Salmonella typhimurium TA 98, TA 100, TA 1535 and TA 1537 and then exhibited strong mutagenic activity against S. typhimurium TA 98 and TA 100 in the presence of S$_9$. Amon them, bis(2-ethylhexyl)phtalate and 1,2-diethyl benzene showed the most strongest mutagenic activity against S. typhimurium TA 98 and TA 100 in the presence of S$_9$. On the other hands, chromosomal aberration of XAD-2 extracts in the human blood cells were not occurred by the sampling water at Goryung, Hagueun, Maelie and Duksan, Chromosomal aberration were also not occurred by the each concentration of 0.05, 0.1 amd 0.3 mg/l of each 1,2-diethyl benzol, bis(2-ethylhexyl)phthalate, naphthalene, phenol, cyclohexanol and benzothiazol test solution.

Assessment of Semi-Quantitative Health Risks of Exposure to Harmful Chemical Agents in the Context of Carcinogenesis in the Latex Glove Manufacturing Industry

  • Excessive exposure to chemicals in the workplace can cause poisoning and various diseases. Thus, for the protection of labor, it is necessary to examine the exposure of people to chemicals and risks from these materials. The purpose of this study is to evaluate semi-quantitative health risks of exposure to harmful chemical agents in the context of carcinogenesis in a latex glove manufacturing industry. In this cross-sectional study, semi-quantitative risk assessment methods provided by the Department of Occupational Health of Singapore were used and index of LD50, carcinogenesis (ACGIH and IARC) and corrosion capacity were applied to calculate the hazard rate and the biggest index was placed as the basis of risk. To calculate the exposure rate, two exposure index methods and the actual level of exposure were employed. After identifying risks, group H (high) and E (very high) classified as high-risk were considered. Of the total of 271 only 39 (15%) were at a high risk level and 3% were very high (E). These risks only was relevant to 7 materials with only sulfuric acid placed in group E and 6 other materials in group H, including nitric acid (48.3%), chromic acid (6.9%), hydrochloric acid (10.3%), ammonia (3.4%), potassium hydroxide (20.7%) and chlorine (10.3%). Overall, the average hazard rate level was estimated to be 4 and average exposure rate to be 3.5. Health risks identified in this study showed that the manufacturing industry for latex gloves has a high level of risk because of carcinogens, acids and strong alkalisand dangerous drugs. Also according to the average level of risk impact, it is better that the safety design strategy for latex gloves production industry be placed on the agenda.

Identification and Antimicrobial Activity Detection of Lactic Acid Bacteria Isolated from Corn Stover Silage

  • A total of 59 lactic acid bacteria (LAB) strains were isolated from corn stover silage. According to phenotypic and chemotaxonomic characteristics, 16S ribosomal DNA (rDNA) sequences and recA gene polymerase chain reaction amplification, these LAB isolates were identified as five species: Lactobacillus (L.) plantarum subsp. plantarum, Pediococcus pentosaceus, Enterococcus mundtii, Weissella cibaria and Leuconostoc pseudomesenteroides, respectively. Those strains were also screened for antimicrobial activity using a dual-culture agar plate assay. Based on excluding the effects of organic acids and hydrogen peroxide, two L. plantarum subsp. plantarum strains ZZU 203 and 204, which strongly inhibited Salmonella enterica ATCC $43971^T$, Micrococcus luteus ATCC $4698^T$ and Escherichia coli ATCC $11775^T$ were selected for further research on sensitivity of the antimicrobial substance to heat, pH and protease. Cell-free culture supernatants of the two strains exhibited strong heat stability (60 min at $100^{\circ}C$), but the antimicrobial activity was eliminated after treatment at $121^{\circ}C$ for 15 min. The antimicrobial substance remained active under acidic condition (pH 2.0 to 6.0), but became inactive under neutral and alkaline condition (pH 7.0 to 9.0). In addition, the antimicrobial activities of these two strains decreased remarkably after digestion by protease K. These results preliminarily suggest that the desirable antimicrobial activity of strains ZZU 203 and 204 is the result of the production of a bacteriocin-like substance, and these two strains with antimicrobial activity could be used as silage additives to inhibit proliferation of unwanted microorganism during ensiling and preserve nutrients of silage. The nature of the antimicrobial substances is being investigated in our laboratory.

Characteristics of Aminopeptidase Retentate Fraction from the Common Squid Todarodes pacificus Hepatopancreas Obtained by Ultrafiltration, and Its Lowering the Bitterness (살 오징어(Todarodes pacificus) 간췌장 유래 한외여과 Aminopeptidase Retentate Fraction의 특성과 쓴맛 개선효과)

  • This study investigated some enzymatic properties and bitterness improvement of an aminopeptidase retentate fraction (ARF) from common squid Todarodes pacificus hepatopancreas extract (HPE), obtained by ultrafiltration with a 10 kDa molecular weight cut off membrane. Endoprotease and aminopeptidase (AP) activity, and the purity of the ARF (>10 kDa) increased by 6.69-18.11 U/mg and 1.5-2.6 fold, respectively, compared to HPE (2.63-9.37 U/mg). The AP activity toward LeuPNA was stable at 20-55℃ and pH 5-9, but decreased slightly with increasing concentration of NaCl in the reaction mixture. The ARF was the most active MetPNA and preferentially hydrolyzed Glu, Leu and AlaPNA. The bitterness tryptic casein hydrolysates (BTCHs) were treated with ARF, and the bitterness of ARF-BTCHs significantly decreased with increasing amounts of released amino acids Ala, Val, Met, Ile and Leu, which show strong correlations with bitterness. Therefore, the ARF of T. pacificus HPE obtained by ultrafiltration may have a considerable potential for application in protein hydrolysis and appears to be ideally suited to the purpose of lowing bitterness in protein hydrolysates.

Water-repellency and Bonding Characteristics of the Cement Hydrate-Organic Acid Compound (시멘트 수화물-유기산의 결합특성과 그 Compound의 발수성)

  • For recycling cement hydrate(CH) as waterproofers for mortar and concrete or a filler for rubber & plastics, the cement hydrates were treated with stearic acid(SA). And the bonding characteristics and the water repellency of the CH-SA compounds were investigated by using FT-IR, TGA, SEM, XRD, and contact angle measuring apparatus. Water tightness of the remitars used CH-SA compounds was also tested. The results are summarized as follows : 1) If the cement hydrates are treated with over 2.0% of stearic acid, the CH-SA compounds show very strong water repellency. 2) The stearic acids are solidified on the surfaces of cement hydrate in calcium stearate and aluminium stearate. 3) If CH-SA compounds which is cement hydrate treated with 5~10% of stearic acid are used 3%~6% in remitar, water absorption ratio and water permeatility ratio of remitar are decreased in below 30% of those of the ordinary remitar.

Characteristics of Bitter Peptides from a Cheese and a Soybean Paste (치즈 및 된장에서의 쓴 맛 펩타이드 특성)

  • To characterize bitter peptides in fermented protein foods, peptides were extracted with 2:1 (v/v) chloroform-methand from various samples and separated into fractions I, II, and III by Sephadex G-25 gel chromatography. Amino acid compositions of Mozzarella cheese, soybean paste, and each fraction from the two samples were analyzed to calculate the average hydrophobicity. All the solvent extracts of the food samples had strong bitter taste, although the original samples did not taste bitter. The yield of solvent extraction ranged from 0.08 to 62.50% of total nigrogen of food samples. The average hydrophobicity calculated from the amino acid composition of Mozzarella cheese was 1376 cal/mole, solvent extract 1,623 cal/mole, gel chromatography traction I, 1,797 cal/mole, fraction II, 2,454 cal/mole, and fraction III, 1,559 cal/mole. In the case of soybean paste, the average hydrophobicity of original sample, solvent extract, gel chromatography fraction I, II, and III wre 1,229, 1,654, 1,900,998 cal/mole, respectively. The important amino acids in bitter peptides were leucine, 2016, phenylalanine, proline, and voline.

  • Recently, graphene and graphene-based materials such as graphene oxide (GO) or reduced graphene oxide (R-GO) draws a great attention for electronic devices due to their structures of one atomic layer of carbon hexagon that have excellent mechanical, electrical, thermal, optical properties and very high specific surface area that can be high potential for chemical functionalization. R-GO is a promising candidate because it can be prepared with low-cost from solution process by chemical oxidation and exfoliation using strong acids and oxidants to produce graphene oxide (GO) and its subsequent reduction. R-GO has been used as semiconductor or conductor materials as well as sensing layer for bio-molecules or ions. In this work, reduced graphene oxide field-effect transistor (R-GO FET) has been fabricated with ITO extended gate structure that has sensing area on ITO extended gate part. R-GO FET device was encapsulated by tetratetracontane (TTC) layer using thermal evaporation. A thermal annealing process was carried out at $140^{\circ}C$ for 4 hours in the same thermal vacuum chamber to remove defects in R-GO film before deposition of TTC at $50^{\circ}C$ with thickness of 200 nm. As a result of this process, R-GO FET device has a very high stability and durability for months to serve as a transducer for sensing applications.

Effect of Storage Conditions on the Oxidative Stability of Lipid in Roasted and Roasted-Seasoned Laver(Porphyra tenera) (배소김과 조미김의 지방질 산화 안정성에 대한 저장 조건의 영향)

  • Oxidative factors of lipid in the roasted laver Porphyra tenera(RL) and roasted-seasoned laver(R-SL) depending on various light sources, water activities, packaging materials and storage temperatures were investigated by peroxide value and color. Major fatty acids of RL were 46.4% eicosapentaenoic acid and 14.9% palmitic acid. Lipid oxidation was decreased in order of darkness, incandescent and fluorescent, decreased sharply with the decrease of water activity and temperature, and also reduced by the packaging material with strong barriers of water vapor, oxygen and light. From kinetics of lipid oxidation, it was supposed that oxidation of R-SL was three times faster than RL. On the other hand, reduction of the total chlorophyll content in RL was stronger than R-SL.
