새싹인삼 추출물의 항산화 활성 및 MMP-1 저해 활성 (Antioxidant activity and MMP-1 inhibitory activity of Panax Ginseng Sprout Extracts)

  • Objectives : As a substitute for high-price ginseng, this study attempted to examine a possibility of the ferment extract of Panax ginseng sprout whether leaves and roots can be used together as a cosmetic ingredient with anti-oxidative and wrinkle-care effects. Methods : In terms of a test method, antioxidant activities were confirmed through total polyphenol contents, total flavonoid contents, DPPH radical scavenging activity and ABTS radical scavenging activity using the Panax ginseng sprout. In addition, to assess wrinkle-care effectiveness, the cytotoxicity of the extract was analyzed through MTT assay, and inhibition of collagenase activity in the cells was tested using the Panax ginseng sprout fermented by Saccharomyces cerevisiae. Resuits : The content of polyphenols and flavonoids in natural plants was highest in Panax Ginseng Sprout Extract at 100℃, which also demonstrated high DPPH, ABTS radical scavenging activity. MTT assay demonstrated that the Panax Ginseng Sprout Ferment Extract did not have a cytotoxic effect in CCD-986SK cell. Also, Panax Ginseng Sprout Ferment Extract was found to inhibit MMP-1 expression by 51.85±6.09% at a concentration of 10%. Conclusions : Therefore, this study has confirmed a possibility of Panax ginseng sprout ferment extract as a cosmetic ingredient with MMP-1-inhibitory effects.

새싹인삼을 첨가한 카스텔라의 품질 특성 (Quality Characteristics of Castella with Panax ginseng Sprout Powder)

  • 기능성 소재로써 새싹인삼을 첨가한 카스텔라 제조 시 최적 첨가 비율을 결정하기 위하여 새싹인삼을 밀가루 대신 0%, 5%, 10%, 15%의 비율로 첨가하여 새싹인삼이 카스텔라의 품질에 미치는 영향을 검토하였다. 새싹인삼을 첨가한 반죽의 비중은 첨가량이 증가할수록 증가하여 새싹인삼이 첨가된 15% 카스텔라가 가장 높게 나타났으며, 카스텔라의 굽기 손실률도 새싹인삼 첨가량이 증가할수록 점차 증가하는 경향을 나타내었다. 반면, 카스텔라의 중량과 높이는 새싹인삼 첨가량이 증가할수록 유의적으로 감소하는 경향을 나타내었다. 카스텔라의 pH는 새싹인삼 첨가량이 증가할수록 감소하였으나, 당도는 새싹인삼 첨가량이 증가할수록 대조군과의 유의차가 없었다. 카스텔라 crust의 L, a, b 값은 새싹인삼 첨가량이 증가할수록 감소하였고, crumb의 L값과 a값도 첨가량이 증가할수록 감소하였지만, b값은 새싹인삼 첨가량이 증가할수록 증가하였다. 카스텔라의 검성과 씹힘성은 대조군보다 증가하여 15% 첨가군에서 가장 높은 값을 나타냈고, 응집성은 첨가량이 증가할수록 낮은 값을 나타내었다. 반면 경도와 탄력성에서는 유의적인 차이를 나타내지 않았다. 관능검사 결과는 카스텔라의 crust, crumb 색, 촉촉함과 향에서는 대조군과 새싹인삼의 첨가군 간에 유의적인 차이는 없었다. 단맛 및 씹힘성은 새싹인삼의 첨가량이 증가할수록 유의적인 차이는 없었다. 전반적인 기호도는 새싹인삼이 5% 첨가된 카스텔라에서 5.30으로 가장 높게 나타났으며 15% 첨가군이 4.33으로 가장 낮게 나타났다. 이상의 연구결과에서 새싹인삼 첨가에 대한 기능적인 측면과 비용을 고려해볼 때 새싹인삼 5%를 첨가한 카스텔라가 가장 좋은 것으로 나타났다.

인삼 사포닌 분획이 콩 발아시의 당 신생반응에 미치는 영향 (The Effect of Ginseng on Gluconeogenesis at the Early Phase of Germination Soy-bean Sprout)

  • The effect of ginseng saponin on the activities of isocitrate lyase, palate synthase, succinate dehydrogenase, malate dehydrogenase and lipase have been investigated at the early phase of germinating soy-bean sprout and found that all the above enzymes were stimulated when the bean was rinsed for 24 hours with 10-4% saponin solution. The length of the saponin treated group was not longer than that of control group but the weight of the former was heavier (15%) than the latter. Total sugar content of test group was always much higher than that of control. From the above results, it was concluded that ginseng saponin might stimulate several enzymes of Soybean sprout during germination resulting in rapid growth of the Soybean sprout.

굴과 새우를 이용한 새싹삼 페이스트의 품질특성 (Quality Characteristics of Sprout Ginseng Paste added Dry Oyster and Dry Shrimp)

  • Sprout ginseng paste were prepared with pine nut, dry oyster and dry shrimp to examine the antioxidant properties(total polyphenols, total flavonoids, and electron donating ability) and sensory test(attribute difference and acceptance). Sprout ginseng paste were measured based on color value, pH, viscosity, total bacteria cell numbers for 0 and 20 days at $4^{\circ}C$. The higher total polyphenol and total flavonoid content of sprout ginseng paste added with pine nuts, dry oyster, and dry shrimp were higher antioxidant capacity. DPPH radical scavenging activity was increased from 52.2% (SGP0) to 79.5.0 % with SGP5. The attribute test results reveal that the color intensity, bitter taste, and oily taste were decreased in SGP3 to SGP6. Taste, flavor, and coarseness did not show significant difference in SGP0 to SGP6. Thickness and After taste were increased in SGP4 to SGP6. The preference test results reveal that the appearance, flavor, and texture level did not show significant difference in SGP0 to SGP6. Taste and overall preference were increased in SGP4 to SGP6. L value, pH, decrease while a value and b value show no change in sprout ginseng paste with pine nut, dry oyster and dry shrimp. Total cell number was not detected during storage.

새싹인삼 분말 열수추출물의 유식품 적용 연구 (Suitability of Hot Water Extract from Panax ginseng Sprout Powder as a Dairy Additive)

  • This study aimed to determine the effect of extraction temperature and time on the antioxidant activity of hot water extract from Panax ginseng sprout powder and to evaluate the suitability of this extract for use in dairy products. Water-soluble fractions of commercial Panax ginseng sprout powder were obtained by hot water extraction at 25, 60, or 80℃ for 0.5, 2, 12, or 24 h. The antioxidant activity of each extract was evaluated by measuring its free radical scavenging activity against 2,2-diphenyl-1-picrylhydrazyl (DPPH) and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonic acid (ABTS). DPPH and ABTS free radical scavenging activity increased with extraction temperature from 25 to 80℃. At 80℃, increasing the extraction time from 0.5 to 2 h led to increases in DPPH and ABTS free radical scavenging activity. Thus, the extract obtained under 2 h at 80℃ was selected for addition to milk and yogurt. After 16 days of storage, there were no significant changes in the pH of the milk or the antioxidant activity of the extract. With regard to yogurt fermentation, adding the extract did not affect the pH or the number of viable lactic acid bacteria. In conclusion, hot water extract from Panax ginseng sprout powder can be added to dairy products to enhance antioxidant activity.

국산 한약재 추출물로 재배한 콩나물의 생육특성 (Growth Characteristics of Soybean Sprouts Cultivated with Extract of Korean Herb Medicines)

  • 한약재 추출물로 재배한 콩나물의 무게와 길이변화 및 조단백질 함량을 조사한 결과, 한약재중에서 콩나물 무게와 길이의 증가는 대조구에 비하여 인삼 추출물이 가장 효과적이었고, 다음으로 감초가 효과적이었다. 당귀와 천궁 추출물 은 대조구와 비슷하였고, 황련 추출물은 오히려 억제되었다. 인삼과 감초의 추출물 농도는 각각 200 ppm 및 100 ppm에서 콩나물 무게와 길이의 증가에 효과적이었다. 인삼 추출물에서 콩나물의 무게는 대조구에 비하여 재배일수별로는 균 7.2%로 증가하였고, 길이는 200 ppm에서 평균 32% 신장 증가를 촉진시켰으며, 3일째에 길이가 50%로 가장 빨리 성장됨을 알 수 있었다. 조단백질 함량은 당귀 및 인삼 처리구의 경우, 재배기간에 따른 그 함량이 약간 증가하는 경향이었으며, 천궁 처리구는 고농도(300∼400 ppm)에서 4일째가 대조구에 비하여 많은 함량을 나타내었다.

하우스에서 재배된 새싹인삼의 재배시기별 생육, 유효성분 및 물성의 변화 (Changes in Growth, Active Ingredients, and Rheological Properties of Greenhouse-cultivated Ginseng Sprout during its Growth Period)

  • Background: The ginseng ginsenosides, which have various physiological activities, are known to be more abundant in the leaves than in the roots, and the consumers' interest in ginseng sprout as a functional vegetable has been increasing. Methods and Results: The aim of this study was to investigate the effects of growth period on growth properties, active ingredients and rheology of ginseng sprouts cultivated in a non-heated greenhouse equipped with a shade net for 60 days, starting from the end of May to the middle of July. The chlorophyll content of the leaves decreased, but their length and width increased with increasing cultivation days. In particular, growth increased significantly until 40 days, but only slightly after 50 days. The stem length did not increase greatly from the 20 th to the 30 th day of cultivation, but increased significantly from the 30 th to the 40 th day, and then further increased gradually. The weight of the leaves, stems, and roots increased slightly, but not change significantly. After 40 days of cultivation, the total ginsenoside content increased by 1.07 times in the leaves and decreased by 0.80 times in the roots with increasing cultivation days. The leaf contents of ginsenosides $Rg_1$, Re, $Rb_1$, Rc, $F_3$ and $F_4$ increased with increasing cultivation days. The rheological properties of ginseng sprout showed the greatest influence on stem hardening with increasing cultivation days. Conclusions: Therefore, based on the growth characteristics, active ingredients and physical properties, 40 days after sowing was considered to be an appropriate harvesting time for ginseng sprouts.

스마트팜 생산 새싹인삼의 유기산 처리 및 포장 용기에 따른 품질 평가에 대한 융합연구 (Convergence study on the quality evaluation of ginseng sprout produced smart farm according to organic acid treatment and packing containers during storage)

  • 본 연구에서는 스마트팜에서 생산된 새싹인삼의 저장성을 향상시키기 위해 전처리과정과 포장 용기에 따른 새싹인삼의 물리적 품질 및 미생물 변화를 10일 간 저장하면서 평가하였다. 전처리 방법(ascorbic acid, citric acid, peroxyacetic acid) 및 포장용기(expanded polystyrene (EP), polypropylene (PP), polyethylene (PE), polypropylene + polyethylene + cast polypropylene(PP+PE+CPP))에 따른 품질 변화를 물성(texture)검사, 일반세균수검사, 수분함량 및 색도 측정으로 평가하였다. 전처리 종류에 따라 비교한 결과, citric acid처리군에서 가장 낮은 텍스쳐 변화 및 세균 증식 억제에 효과를 확인하였다. 전처리 중 가장 효과가 높은 citric acid 처리군을 용기별로 저장 후 품질을 평가한 결과, PP용기에 10일 저장한 경우, 유의적인 텍스쳐 감소 및 색변화가 나타나지 않았고, 저장기간 증가에 따라 일반세균수가 가장 낮게 증가하였다. 따라서 본 연구는 citric acid 전처리군 및 PP용기에서 저장했을 때 새싹인삼의 품질 손상이 가장 적게 나타나 새싹인삼의 저장성 개선에 도움을 줄 수 있을 것으로 판단된다.

  • To create an environment for growing ginseng sprouts, we developed a solar module that partially transmits and disperses light. A G to G type light transmission and dispersion solar module was developed using glass with a mist pattern applied, and the light dispersion effect of the developed module was confirmed through illuminance measurement. The output of one module is approximately 260 W, and the configuration consists of 48 cells in series in 4 strings. The cultivation system where the developed module will be installed was developed in the form of a container, and three units of 2.6 kW (260 W x 10 EA). The inside of the cultivation system consists of a shading screen, air conditioner, ventilator, plastic pot, etc. to create an environment for cultivating sprout ginseng. As a result of actually planting sprout ginseng, it was confirmed through verification that the plants were grown without any problems.

새싹삼의 곰팡이 발생과 독소생성능 (Occurrence of Fungal Contamination in Ginseng Sprout and Mycotoxigenic Potential)

  • 새싹삼의 곰팡이 발생을 조사하기 위해 18점의 유통중인 새싹삼을 수집하여 곰팡이 발생빈도를 분석하였다. 전체 시료의 총 곰팡이 발생빈도는 평균 113.3-174.1%였고 Penicillium spp.의 발생빈도가 가장 높았다. 곰팡이 발생빈도는 이끼가 잎, 줄기, 뿌리보다 유의하게 높았다. 잎과 줄기에서는 Penicillium spp.이, 뿌리에서는 Fusarium spp.의 발생이 높았으며 각각의 우점종은 P. olsonii와 F. oxysporum으로 동정되었다. 계통발생학적 분석을 통해 Fusarium spp.은 총 9개 종, Aspergillus spp.은 A. westerdijkiae와 A. favus, Penicillium spp.은 총 11개 종이 동정되었다. 곰팡이독소 생성 종으로 알려진 25균주의 독소형을 PCR로 검정한 결과 19점의 균주에서 각 독소형이 확인되었다. 이 중 A. flavus 2점과 A. westerdijkiae 11점이 aflatoxin과 ochratoxin A을 각각 생성하였고 일부 균주는 높은 독소생성능을 보였다. 이 결과는 새싹삼 생산에 있어 곰팡이 발생에 대한 지속적인 모니터링 및 관리방안이 필요함을 시사하였다.
