  • BACKGROUND: To evaluate the impact of rapid temperature change at spring and the early summer seasons in climate change, we have investigated the physiological response and yield of onion in a greenhouse with thermostat control system. METHODS AND RESULTS: Seedlings of onion(cv. Sunshine) were planted on October 30, 2012 and harvested on May 30, 2013. The used treatments(March-April-May) for a rapid temperature change were T0(control): $6.0-10.4-17.2^{\circ}C$, T1: $6.0-5.4(-5)-17.2^{\circ}C$, T2: $6.0-10.4-22.2(+5)^{\circ}C$ and T3: $6.0-5.4(-5)-22.2(+5)^{\circ}C$. Total yields of bulb within the temperature change as high temperature treatment T2 and control treatment T0 were increased significantly(p<0.05), as compared to the low temperature treatment T1. Low temperature conditions significantly (p<0.05) reduced plant height, SPAD reading, crude protein and fiber etc., as compared to the TO and T2. CONCLUSION: The rapid temperature changes were highly affected by low temperature than high temperature. These results suggest that rapid climate change of future could need systematic standard model for physiological characteristics and yields of onion.

  • This study investigated the effect of allium vegetable intake on the storage and utilization of energy substrates before, during, and after exercise in tissues of rats. Ninety rats were fed either a control diet or a diet with added Allium sativum (AS, garlic), Allium cepa (AC, onion), Allium fistulosum (AF, spring onion), or Allium tuberosum (AT, Chinese chives) for 4 weeks and were then subdivided into 3 groups: before-exercise (BE); during-exercise (DE); after-exercise (AE). The DE group was exercised on treadmill for 1 hour just before being sacrificed at the end of 4th week of the dietary treatment rats in the AE group were allowed to recuperate for 2 hours after being exercised like the DE group. The levels of glycogen (GLY), triglyceride (TG) and protein (PRO) were compared in liver and skeletal muscle. In the AS diet animals, the level of liver GLY was significantly higher than those of control animals in the BE, DE and AE groups. The level of muscle TG also tended to be higher in BE, but lower in AE than in control animals. In AC animals, the level of muscle GLY was significantly lower than those of control animals in BE, DE and AE. The level of muscle TG also tended to be higher than those of control animals in BE and DE but tended to be lower in AE. In AF animals, the level of muscle GLY was significantly lower than those of control animals in BE, DE and AE. The level of muscle TG was also significantly lower than those of control animals in BE, DE and AE groups. In AT animals, the level of muscle GLY was significantly lower than those of control animals in BE, DE and AE. These results suggest that Allium sativum diets enhance the capacity to store fuel before as well as during exercise and increases the potential to utilize the stored fuel during exercise.

  • Red pepper is one of the most important spices popularly utilized in Korea. Because of the differences in tariff rates between red pepper powder and seasoned red-pepper sauce, seasoned red-pepper sauce is often therefore imported by consumers, then dried, ground, and added to red pepper powder for cost effective purposed to use the product the most effectively. In this study, we combined species-specific polymerase chain reaction (PCR) assays (for red pepper, garlic, onion, spring onion, and ginger) with whole-genome amplification (WGA). Thirty-nine red pepper powders were well in accordance with their labels. However, six red pepper powder and five seasoned red-pepper sauce products failed to meet their compliance requirements. As a consequence, our monitoring results revealed that the overall mislabeling rate detected in this study was identified at 22%. Thus, our findings showed that the species-specific PCR in conjunction with WGA was an ideal method to identify raw materials that are used in the manufacturing of red pepper powder and seasoned red-pepper sauce.

  • This study was conducted to evaluate the effect of crop rotation cultivation on the suppression of garlic white rot caused by Sclerotium cepivorum in the mini plot ($2^*1^*$ 0.5 m). Six crops, soybean, sesame, mung bean, squash, crotalaria and spring onion, were previously transplanted in the mini-plots infested with S. cepivorum before garlics were planted. After cultivation of the previous crops, garlic was sown in the mini-plot. Non-cultivation plots and non-infested plots with white rot pathogen were used as control. The effect of crop rotation cultivation on the suppression of garlic white rot was evaluated by investigating comparatively the disease incidence (the percentage of infected plants) and yields. As a results, infection rate of garlic white rot was recorded lower in the non-infested plot, crotalaria and soybean cultivation than in the plot of the other crop cultivation. Especially when squash was previously cultivated and garlics were planted in 2013, infection rate of garlic white was recorded the highest score. In 2014, the infection rate of garlic white were low in the garlic on soybean, crotalaria and spring onion treatment whereas it was high in squash treatment, as well. In 2013, garlic yield was the highest in no inoculation plot, followed by crotalaria, soybean, no crop cultivation, sesami, mungbean, squash cultivation plot. In 2014, the yield in the plot of crotalaria and soybean was much higher than that in no inoculation plot. Based on above-described results, it is considered that soybean-garlic and crotalaria-garlic cultivation system can be good crop rotation systems to control garlic white rot.

  • The possibility of DNA comet assay as a rapid method for screening the irradiated vegetables and grains was evaluated. Vegetables (spring onion, garlic, and tomato) irradiated at $0{\sim}3$ kGy and grains (rice flour and black soybean) irradiated at $0{\sim}9$ kGy were used as samples. Optimum DNA comet assay conditions, such as elution, sedimentation of suspension, and lysis time of cell, were established. The optimum conditions for vegetables were 10 min for the elution time, 0 min for the sedimentation time, and 5 min for the lysis time. The optimum conditions for grains were 15 min for the elution time, 60 min for the sedimentation time, and 30 min for the lysis time. For the food application of DNA comet assay, it was possible to screen various food samples irradiated at the following doses: spring onion at 2 kGy, garlic at 3 kGy, tomato at 1 kGy, rice flour at 9 kGy, and black soybean at 3 kGy. Each sample showed different forms and sizes in DNA comet. Therefore, further studies on various methods using comet shape, concentration, or area in DNA comet assay are necessary.

  • This study aims to examine the contents of "Juchochimjeobang", a cookbook about Jeotgal kimchi, and review its value in the history. This cookbook was published between about 1500s and early 1600s, and its book title is unknown because both the front and the back covers thereof are missing. However, the cookbook contains many wine and kimchi recipes, accounting for 66%, and "Juchochimjeobang" was thus named after the recipes. "Juchochimjeobang" has 126 recipes in 120 categories, and this study examines 20 kimchi recipes and 7 recipes for preserving vegetables. "Juchochimjeobang" has a specific recipe for making Jahajeot and Baekajeot kimchi which are described in literature published between 1400s and 1500s. Although the recipes for making the aforementioned two types of Jeotgal kimchi are simple because jeotgal is just mixed with main materials, they are different from the recipe for Seokbakji described in Gyuhapchongseo, a cookbook written in the 19th-century Joseon Dynasty. Seokbakji described in Gyuhapchongseo is made by mixing spices of ginger, spring onion, chili powder with other materials. This implies changes of making Seokbakji over time. Moreover, "Juchochimjeobang" is a very valuable historical cookbook because it has unique recipes, for example, adding sesame liquid, chinese pepper, willow and the like.
