국내산 감자 품종별 영양 성분 비교 (Nutrient Composition of Domestic Potato Cultivars)

  • The proximates, vitamin C, minerals, and fatty acids of five potato cultivars were evaluated by AOAC methods, the hydrazine method, ICP-AES, and gas chromatography, respectively. The proximate analyses; vitamin C, reducing sugar, and soluble solid contents; and mineral and fatty acid compositions were significantly different among the five cultivars. The Superior cultivar contained a higher carbohydrate content and higher Ca/P ratio and lower levels of crude protein and Na. The Atlantic cultivar contained significantly higher amount of energy, carbohydrate, reducing sugar, vitamin C, SEA, and MUFA, and significantly lower amount of minerals and PUFA. The Shepody cultivar contained significantly higher amount of carbohydrate and MUFA, and significantly lower amount of soluble solid, vitamin C, and SFA. In addition, the P, Fe, Mg, Cu, and Al levels were significantly higher in Shepody, and Zn content was significantly lower. The Jopung cultivar contained significantly higher levels of moisture and Na, and significantly lower levels of soluble content, reducing sugar, carbohydrate, crude protein, and fat. Finally, the Namsuh cultivar contained significantly higher amount of soluble solid, crude protein, K, Mg, and Al, and significantly lower amount of reducing sugar.

  • 콩의 생식생장기인 착협시(R3)에 상부40%와 하부 60%로 구분하여 엽제거와 협제거처리에 의한 엽과 종실의 건물중, 가용성 당, 전분, 단백질 및 기름함량에 미치는 영향을 구명하기 위하여 1992년 고려대학교 자연자원대학 덕소농장에 황금콩을 공시하여 실시한 시험결과를 요약하면 다음과 같다. 1. 상엽하협제거처리의 하부 엽 건물중이 가장 높았고 상부 종실 건물중은 가장 낮았다. 2. 가용성 당합량은 처리간 엽과 종실에서 차이가 없었다. 3. 전분함량은 상엽하협제거의 하부 여에서 가장 높았다. 4. 단백질함량은 하부 엽이 상부 엽보다 높았는데 종실에서는 하엽상협제거의 하부에서 가장 낮았다. 5. 기름합량은 하엽상협제거의 상부 엽과 하부 종실에서 가장 높았다. 6. 콩 생식생장기의 장거리 전류에 있어서 동화물질은 상부에서 하부로 이루어지며, 단백질원은 하부에서 상부로 일어나지만 엽에서의 재이동은 약했다.

근적외선을 이용한 사과의 당도예측 (I) - 다중회귀모델 - (Predicting the Soluble Solids of Apples by Near Infrared Spectroscopy (I) - Multiple Linear Regression Models -)

  • The MLR(Multiple Linear Regression) models to estimate soluble solids content non-destructively were presented to make a selection of optimal photosensor utilized to measure the soluble solids content of apples. Visible and NIR absorbance in the 400 to 2498 nanometer(nm) wavelength region, soluble solids content(sugar content), hardness, and weight were measured for 400 apples(gala). Spectrophotometer with fiber optic probe was utilized for spectrum measurement and digital refractometer was used for soluble solids content. Correlation between absorbance spectrum and soluble solids content was analyzed to pick out the optimal wavelengths and to develop corresponding prediction model by means of MLR. For the coefficient of determination($R^2$) to be over 0.92, the MLR models out of the original absorbance were built based on 7 wavelengths of 992, 904, 1096, 1032, 880, 824, 1048nm, and the ones of the second derivative absorbance based on 5 wavelengths of 784, 1056, 992, 808, 872nm. The best model of the second derivative absorbance spectrum had $R^2$=0.91, bias= -0.02bx, SEP=0.28bx for unknown samples.

매실 첨가물에 따른 동치미의 발효 특성 (Fermentation Properties of Dongchimi added Maesil(Prunus mume))

  • The purpose of this study was to investigate the effect of maesil(Prunus mume) on Dongchimi fermentation. Dongchimi with 0, 2, 4 and 6%(w/v) maesil was fermented at 10℃ for 45 days. The pH of Dongchimi decreased slowly in all samples during fermentation. Total acidity of Dongchimi increased gradually during fermentation and total acidity of Dongchimi with maesil was higher than that of control. Redox potentials decreased until 30 days of fermentation but increased thereafter. Reducing sugar content increased in the initial stage of the fermentation periods, and then it decreased gradually, the reducing sugar content of Dongchimi with maesil was higher than that of control. The content of total vitamin C was much higher in Dongchimi with maesil. In color measurement, lightness value decreased gradually, redness and yellowness values increased gradually during fermentation but decreased thereafter. The content of hot water soluble pectin(HWSP) decreased as the fermentation proceeded but the content of hydrochloric acid soluble pectin(HCISP) and sodium hexametaphosphate soluble pectin(NaSP) increased.

감귤 품종별 이화학적 성분 비교 (Comparison of physico-chemical components on citrus varieties)

  • Physico-chemical components which are closely related to processed products were investigated on 10 varieties of Cheju citrus fruits. Juice ratio of Hungjin was the highest, 49.2%, while Sankyool was the lowest, 4.2%, which showed great differences among varieties. Peel ratio of Dangyooja was the highest, 46.1%, while both Navel orange and Hungjin were relatively low. Soluble solid($^{\circ}$Brix) was relatively high In Sankyool, Meiwa Kumquat, Sambokam and Iyo. Acid content was the highest, 4.86% in sudachi and relatively high in Sankyool, Natsudaidai and Dangyooja. The $^{\circ}$Brix to acid content ratio was 13.9 in Meiwa Kumquat and more than 10 in Navel orange and Hungjin. Total sugar contents of Juice were 2.78∼10.94%, while reduced sugar contents were 1.63∼6.38% which showed higher in Meiwa Kumquat, Iyo and Navel Orange. Hesperidin and naringin, the sources of biiter taste and cloudness were low in Hungjin and Iyo. Soluble solid($^{\circ}$Brix) of citrus juice showed highest statistical relationship(r=0.907) with total sugar, and was highly significant at 1% level.

Post-Infectional Biochemical Changes in Mulberry Due to Xanthomonas campestris pv. mori Induced Bacterial Leaf Spot

  • Post-infectional biochemical changes due to Xanthomonas campestris pv. mori (Xcm) infection in five elite mulberry varieties viz., $S_1$, $S_{1635}$, $V_1$, RF $S_{175}$ and JRH was studied under inoculated condition. It was revealed that total soluble sugar and protein content was significantly declined in all the varieties due to X. campestris infection. Total phenol content was at par prior to inoculation in all varieties, but it was significantly increased in $S_1$, RF $S_{175}$, $S_{1635}$ and JRH 7 days after inoculation. The correlation coefficient (r) between total soluble sugar and total phenol content was found positive (r = 0.825) and statistically significant. Similarly, correlation coefficient (r) between total soluble protein and phenol content was found positive (r = 0.897) and statistically significant. The present study indicates that X. campestris infected leaves are nutritionally inferior in quality and the duration of phenol production in a mulberry variety play decisive role on disease resistance.nce.

반응표면 분석을 이용한 사과.당근 혼합주스의 청징공정 최적화 (Use of Response Surface Methodology for Optimization of Clarified Mixed Apple and Carrot Juice Production)

  • 온도와 ATP 증가에 따라 사과.당근 배합비율과 상관없이 혼합주스의 투과플럭스가 비례적으로 증가했으며, 특히 온도변화에 따른 투과플럭스의 증가가 뚜렷했다. 사과와 당근비가 3:1인 실험구에서 가용성 고형분과 총당의 함량이 높게 측정되었고, 가용성 고형분의 경우 시료배합비율의 영향이, 총당의 경우 온도의 영향이 큰 것으로 나타났다. 시료배합비율에 따른 비타민 C 함량차이는 크지 않았으나 당근의 함량이 많을수록 비타민 C의 함량이 높게 측정되었고, 압력증가에 따른 비타민 C 함량 증가가 뚜렷했다. 사과의 함량이 높을수록 산도도 높았고, 온도증가에 따른 산도의 증가도 뚜렷했다. 한외여과 결과, 전 시료에 걸쳐 우수한 청징효과를 나타내었고, 사과와 당근비가 3:1인 실험구에서 그 청징효과가 두드러졌으며, 또한 점도변화도 가장 컸다. 또한 공정최적화 결과 공정온도 및 ATP가 각각 $44.97^{\circ}C$, 113.57 kPa이고 사과의 혼합비율이 28.50%인 경우 $flux=0.216\;L/m^2.h$, soluble $solids=10.39^{\circ}Brix$, total sugar=71.32 mg/mL, vitamin C=315.18 mg%, acidity=7.78 mL, turbidity=0.017, viscosity=1.44 cp인 사과.당근 혼합과채주스를 제조할 수 있는 것으로 나타났다.

Relationship of Nitrate Reductase Activity to Leaf Yield, Protein, Sugar and Physiological Attributes in Mulberry (Morus alba L.)

  • Ten improved mulberry varieties (Vl, C1730, C2016, C2017, Anantha, RFS-175, Thallaghatapura, Vishala, S1 and S1635) were evaluated through enzyme assay and estimation of soluble protein content followed by regression analysis, grown under irrigated conditions in the alluvial soils of Gangetic plains of West Bengal in India for five successive crops in a year, The nitrate reductase (EC No. 1.6.6.1) activity (NRA, $\mu$mol N $O_2$- $h^{-1}$ $g^{-1}$ fr, wt.), total soluble protein (mg $g^{-1}$ fr, wt.) was estimated which showed to vary significantly in the tested varieties. In addition to these, the other parameters like unit leaf fresh and dry weight (g), moisture %, unit leaf area ($\textrm{cm}^2$), specific leaf weight (g c $m^{-2}$ ), total soluble sugar (mg $g^{-1}$ fr, wt.), leaf yield/plant (kg), shoot yield/plant (kg) and net photosynthetic rate (NPR, $\mu$$m^{2}$ $s^{-1}$ ) were also studied which showed to vary significantly in tested varieties. Among them, S1635, haying higher NRA (13.25 $\mu$㏖ N $O_2$- $h^{-l}$ $g^{-1}$ fr, wt.), total soluble protein (39.63mg $g^{-1}$ fr, wt.), NPR(16.66 $\mu$$m^{-2}$ $s^{-1}$ ), total soluble sugar (48.44 mg $g^{-1}$ fr. wt.), leaf yield/plant (0.689 kg) and shoot yield/plant (1.135 kg) showed its superiority over other tested varieties. Regression and correlation coefficients were analysed, and a strong positive correlation was found between NRA & total soluble protein, NRA & NPR, NRA & total soluble sugar, NRA af unit leaf weight, NRA & specific leaf weight, NRA & leaf yield/plant, NRA & shoot yield/plant, NPR & leaf yield and NPR & specific leaf weight.t.

  • The caterpillar-shaped Chinese medicinal mushroom (DongChongXiaCao) looks like a worm in the winter and like a grass in the summer. The fruiting body has been regarded as popular folk or effective medicines used to treat human diseases such as asthma, bronchial and lung inflammation, and kidney disease. The fruiting bodies of Cordyceps militaris, C. pruinosa and Paecilomyces tenuipes that formed on the living silkworm (Bombyx mori) host were used in this examination. This study was carried out to investigate the soluble sugar, amino acid and fatty acid profiles in the fruiting-bodies. Soluble sugars such as glycerol, glucose, mannitol and sucrose were mainly found in the fruiting bodies of C. militaris, C. pruinosa and P. tenuipes. Total soluble sugar content was 29.23 mg/g in C. militaris, 8.61 mg/g in C. pruinosa and 24.00 mg/g 1in P. tenuipes on dry weight basis. Total free amino acid content was 14.09 mg/g 1in C. militaris, 34.60 mg/g in C. pruinosa and 17.09 mg/g in P. tenuipes. The content of oleic acid in fatty acids was above high more than 30% regardless of species.

복숭아 '장호원황도' 과실의 부위별 유리당 함량 및 관련 효소활성 비교 (Comparison of Free Sugar Content and Related Enzyme Activities on Different Parts of 'Changhowon Hwangdo' Peach Fruit)

  • 복숭아 과실 부위별 유리당 축적와 효소와의 관계를 살펴보고자 2006년 8월에서 9월까지 '장호원황도' 복숭아의 과경부, 과정부, 과피부, 핵주위의 유리당 함량과 당 관련 효소활성 변화를 살펴보았다. 당도는 만개 후 150일까지 증가하는 경향을 나타냈고 과정부에서 가장 높은 당도를 보였으며, 모든 부위에서 총 유리당 함량은 당도 변화와 매우 유사하게 나타났다. 비교적 전분의 함량이 높았던 만개 후 120일에 과정부에서 높은 전분 함량을 보였으나 만개 후 150일에는 부위별로 함량 차이가 작게 나타났다. 부위별 유리당 조성의 변화는 시기에 따라서 차이를 보였으며 자당 함량은 만개 후 150일까지 점차 증가하였으나 솔비톨은 만개 후 130일 이후에 점차 감소하였다. 만개 후 150일까지 모든 부위에서 자당은 증가하고 반대로 포도당, 과당, 솔비톨은 감소하는 경향을 보였다. 또한, 과실 발육 동안 자당 함량의 증가는 sucrose phosphate synthase(SPS) 활성보다는 sucrose synthase(SS)활성에 의하여 더 많은 영향을 받는 것으로 나타났다. SS효소활성은 만개 후 120일에는 낮게 나타났으나 acid invertase(AI) 활성은 높았으며, 만개 후 150일에는 반대의 경향을 나타냈다. 따라서 유리당을 합성하거나 분해하는 효소의 활성에 따라서 복숭아 과실 생육시기별 축적되는 유리당 함량이 영향을 받았으나, 과실의 각 부위에 따라서 모든 유리당 함량을 관련 효소활성으로만 설명하기는 어려웠다.
