A Comparative Study of Sacrificial Wild Game and Domestic Livestock As Considered from an Folklore Viewpoint (비교민속학적 시점에서 가축화와 동물공희)

  • The purpose of this research paper is to examine, from an ethnological viewpoint, the traditional practice of using sacrificial game and domestic livestock as is often seen at communal rites in Korea. This paper also examine how the more convenient use of livestock sacrifice developed from that in which wild game were once offered, and how this change in the type of animals used affected the significance of the sacrifice. It also looks at how the use of animal sacrifice for ceremonies eventually influenced the practice of meat consumption on the part of the participants in their daily life, and how it contributed to the eventual establishment and development of livestock breeding for the purpose of meat consumption. The practice of catching wild game in the mountains for sacrificial purposes eventually gave way to the use of pasturage cattle, but it should be understood that these domesticated livestock were raised primarily for ceremonial rather than meat consumption purpose. When used for sacrifice, these cattle were not castrated, as is normally done when they are slaughtered for meat consumption, but it should not be assumed that this was done for purposes of simplification. In addition, not only rice farmers but also when enterpreneurs set up a new enterprise, animal sacrifice was viewed not only as a form of on-site purification of evil, but also served the dual purpose of enhancing their business through the traditional custom of serving meat to those invited guests in attendance. In the large-scale village communal rite of Hwaghae Province located in the northwestern part of Korea, animal sacrifice was carried out in the ritual for the Mountain God in a highly dramatic style, and suggests that it originated with the agrarian rites of the "fire-field" farmers of East Asia, which were utilized to foretell whether the coming year would be one of abundance or famine, and to the royal ceremony held on the 3rd day of the 3rd month of the lunar calendar, as well as that held for the God of the Mountains and Streams. The dramatic-style hunting rite, included in the large-scale communal ritual of Hwanghae Province mentioned previously, as well as in the Ritual of the Cow from Pyungsan, also located in Hwanghae Province, in which wild game were used as sacrifice, is significant in that it points up the changes that have occurred in ceremonial animal sacrifice. However, more research on ritualistic animal sacrifice is still called for in rites for good farming, fishing, and the variety of others that are held throughout Korea.

Preliminary Evaluation of Slaughter Value and Carcass Composition of Indigenous Sheep and Goats from Traditional Production System in Tanzania

  • The aim of the pilot study was to evaluate slaughter characteristics and carcass composition of indigenous long fat tailed sheep and Small East African goats purchased from the auction markets slaughtered at 1.5 to 2 yrs of age and 20 kg to 25 kg live weight. The animals were slaughtered according to halal standard procedures. The left half carcasses were jointed into eight wholesale joints, and dissected into muscles, fat and bone, which were weighed separately. Sheep had greater (p<0.05) slaughter BW (22.29 kg vs 20.50 kg) and empty BW (20.17 kg vs 18.67 kg) than goats (p<0.05). Dressing percentages were lower (p<0.001) in sheep than goats when carcass weight was expressed as percentage of slaughter BW (42.31% and 47.15%) and empty BW (46.75% and 51.79%). Sheep carcasses had lower (p<0.001) proportion (66.18% vs 71.64%) of muscles and higher (p<0.001) proportion of fat (7.41% vs 3.44%) than goat carcasses. Sheep had proportionally lighter (p<0.001) shoulder (18.89% vs 22.68%) and heavier (p<0.05) proportion of chump (7.916% vs 6.76%) and main rib (8.12% vs 7.07%). Sheep had more (p<0.001) muscles in the leg (28.83% vs 27.08%) and main rib (7.62% vs 6.36%) than goats. Sheep had less (p<0.001) muscles (20.28% vs 23.56%) in shoulder joints when expressed as percentage of total muscle of carcasses. It is concluded that there are differences in sheep and goat both in terms of carcass and joint yields and composition. The present study also implies that there is need to consider setting different meat cuts and prices for these cuts when one takes into account the differences in muscle distribution within joints in sheep and goats.

Effects of Feeding Method of Compound Feed on the Development of the Digestive Organs and Other Internal Organs of Hanwoo Steers

  • A study was conducted to investigate the development of the digestive organs (rumen, reticulum, abomasums, small intestine, large intestine and rectum) and other internal organs (liver, spleen, lungs and heart) of Hanwoo (Korean cattle) steers fed diets of compound feed and rice straw by the age from 6 to 30 months old. In the experiment, Two hundreds of Hanwoo steers were allocated in one of two compound feed feeding treatments. The treatment groups were 1) feeding level 1 group fed 1.2 to 1.5% compound feed per kg body weight (BW) in the growing period, 1.7 to 1.8% compound feed per kg BW in the early fattening period, and compound feed ad libitum in the late fattening period and 2) feeding level 2 group fed compound feed ad libitum through the whole period. In every two months, eight steers in each group were slaughtered and the length and weight of the organs of the animals were measured. The weight of the reticulo-rumen was higher (p<0.05) in the group 2 at the age of 14 months. The abomasum weight of group 2 was higher than that of group 1 at the ages of 12 (p<0.01) and 20 months (p<0.05). The weights of the liver, lung and heart of steers in the group 2 were higher (p<0.05) than those in group 1 before 18 months old. At the ages of 8 (p<0.1), 10 (p<0.001), 12 (p<0.01), 16 (p<0.01) and 24 months (p<0.05), the abomasum of steers in the group 1 was longer than that in the group 2. The length of liver in both groups was sharply increased from 6 to 8 months old and then the increase was steady, while the length in the group 2 at the age of 12 months was significantly longer (p<0.01) than that in the group 1. The results indicate that the most organs examined showed the higher development in the feeding level 2 than in the feeding level 1 until the age before 18 months when the steers in the feeding level group 1 were given the compound feed ad libitum.

FEEDLOT PERFORMANCE AND CARCASS CHARACTERISTICS OF LOCAL (DHOFARI) AND EXOTIC (CASHMERE) GOATS FED ON A HIGH-FIBER BY-PRODUCTS DIET SUPPLEMENTED WITH FISH SARDINE

  • In the first of two experiments, liveweight gain responses and carcass characteristics were investigated using two breeds of growing male goats, local (Dhofari) and exotic (Cashmere), fed on a whole pelleted-high fiber date by-products' based diet at 32.5% level (As-fed) supplemented with 12% fish (sardine), (HF-Fish) and a commercial concentrate diet (conc.). The (HF-Fish) diet was formulated to be iso-nitrogenous to the (conc.) diet, supplying 14% CP (DM-basis). Both diets together with Rhodes grass hay (Chloris Guyana) were fed ad libitum. The experimental design was a complete random arranged in a $2{\times}2$ factorial with breeds and diets as the main factors, using six animals per treatment. The experiment lasted for 84 days and goats were penned individually. At the end of the feeding trial, three animals from each treatment group were slaughtered for carcass evaluation. In experiment 2, diets' digestibility and N-balance were determined using 3 sheep per diet. The (HF-Fish) diet significantly(p < 0.05) improved liveweight gain. There was also a significant difference(p < 0.01) between breeds, with Cashmere gaining more than local goats. Feed conversion efficiency, dressing percent and longissimus dorsi area were not significantly affected by diet or breed(p > 0.05). Digestibility of the proximate components and N-balance for both diets were similar and not significantly different(p > 0.05). Fish supplementation greatly improved the digestibility of CF, ADF, NDF, cellulose and hemicellulose. Meat production ost was decreased by 31% due to feeding of the (HF-Fish) diet.

Genetic Diversity of Echinococcus granulosus in Center of Iran

  • Hydatid cyst caused by Echinococcus granulosus is one of the most important parasitic diseases around the world and many countries in Asia, including Iran, are involved with this infection. This disease can cause high mortality in humans as well as economic losses in livestock. To date, several molecular methods have been used to determine the genetic diversity of E. granulosus. So far, identification of E. granulosus using real-time PCR fluorescence-based quantitative assays has not been studied worldwide, also in Iran. Therefore, the aim of this study was to investigate the genetic diversity of E. granulosus from center of Iran using real-time PCR method. A total of 71 hydatid cysts were collected from infected sheep, goat, and cattle slaughtered in Isfahan, Iran during 2013. DNA was extracted from protoscolices and/or germinal layers from each individual cyst and used as template to amplify the mitochondrial cytochrome c oxidase subunit 1 gene (cox1) (420 bp). Five cattle isolates out of 71 isolates were sterile and excluded from further investigation. Overall, of 66 isolates, partial sequences of the cox1 gene of E. granulosus indicated the presence of genotypes G1 in 49 isolates (74.2%), G3 in 15 isolates (22.7%), and G6 in 2 isolates (3.0%) in infected intermediate hosts. Sixteen sequences of G1 genotype had microgenetic variants, and they were compared to the original sequence of cox1. However, isolates identified as G3 and G6 genotypes were completely consistent with original sequences. G1 genotype in livestock was the dominant genotype in Isfahan region, Iran.

Relationship between the abdominal sagging index and the reproductive performance of the Roman goose

  • Objective: This research aimed to explore the changes in the observed abdominal sagging index (ASI) and reproductive performance of Roman male and female geese during the breeding period. Methods: The 339 six-month-old breeding geese (109 male; 230 female) were used in this study, in which five male and five female geese were slaughtered on a monthly basis to record the ASI. Results: The short diameter of the testes of the male goose when the female goose lays eggs and in the second, third, and fourth months was significantly wider than in the fifth months (19.0, 20.8, 21.4, and 19.6 vs 12.7 and 14.0 mm/bird; p = 0.0105). On the other hand, the testicular weight of the male goose in the second and third months after the female goose lays eggs was significantly higher than that in the second and fifth months after laying (0.33% and 0.37% vs 0.11% and 0.19%; p = 0.0212). During the exploring period, the length and weight of the fallopian tube, the weight of the ovary, the number of follicles in 2 to 3 cm, the number of follicles in 3 to 4 cm, the fallopian tube weight in the carcass weight percentage, and the ovary weight in the carcass weight percentage all demonstrated a significant curve response. Further, female ASI was positively correlated with reproductive tract length (r = 0.815; p<0.05) and egg production per female (r = 0.790; p<0.05). Conclusion: The ASI classification method is more objective and easy to distinguish. This scoring method has a high correlation with the number of eggs laid by each goose and the length of the reproductive tract, inferring that the goose observation could take advantage of ASI during egg-laying and can predict the reproductive system development during the laying period and determine when the breeding goose begins to lay eggs.

Effects of Cytochalasin B on Parthenogenetic Development of Porcine Follicular Oocytes (돼지 난포란의 단위발생에서 Cytochalasin B의 영향)

  • The effects of cytochalasin B was studied for the cleavage and development of in vitro matured porcine follicular oocytes. The follicular oocytes were collected from slaughtered pig ovaries and matured for 65 hours. The matured oocytes were activated by 7% ethanol(v/v) in DPBS and the activated oocytes were subjected to cytochalasin B concentrations of 2.5, 5.0 and $7.5\;{\mu}g/mL$ for 3, 5 and 7 hours, and then the treated oocytes were cultured in NCSU23 with 0.4% BSA for 7 days. The cleavage rates were not different significantly in each treatment. However, the oocytes treated with $5.0\;{\mu}g/mL$ for 5 hours yielded a significantly higher morula rate(19.7%) than oocytes treated with $2.5\;{\mu}g/mL$ for 3 and 5 hours(9.4%). The sum rate of $2.5\;{\mu}g/mL$ concentration(10.5%) by hour was also significantly lower than those of 5.0(18.0%) and $7.5\;{\mu}g/mL$ concentration(14.6%). The blastocyst rate in oocytes treated with $5.0\;{\mu}g/mL$ for 3(9.4%) and 5 hours(9.0%) was significantly higher than the rate in oocytes treated with $2.5\;{\mu}g/mL$ for 3 hours(0%). The sum rate of $5.0\;{\mu}g/mL$ concentration also significantly higher than those of 2.5 and $7.5\;{\mu}g/mL$ concentration. The results demonstrated that the treatment of oocytes with cytochalasin B of $5.0\;{\mu}g/mL$ for $3{\sim}5$ hours was the optimal concentration and duration for parthenogenetic activation and blastocyst formation of in vitro matured porcine oocytes.

Relationship of Slaughter Age and Carcass Traits of Hanwoo Cattle

  • Two experiments were carried out to investigate the relationship of slaughter age and carcass traits of Hanwoo cattle. A total number of 11,284 heads of cattle (4,624 bulls, 6,120 steers, and 540 females) were used in the experiment (Exp.) 1. In the Exp. 2, 3,887 heads of steers slaughtered at age of 24-36 mon were used. After 24 h post-slaughter chilling, the carcasses were weighed and evaluated by an official grader of carcass traits according to the Korean carcass grading standard. Backfat thickness was the main variable in yield index and grade whereas marbling score was the main variable in carcass quality grade. Meat color was an important factor affecting carcass quality grade of bulls; fat color was an important factor affecting those of steers and females; and maturity was an important factor affecting that of females. After 24-mon-old, extension of slaughter age did not automatically increase the quantity and quality of meat. However, 29 mon of age can be regarded as the optimum time to slaughter steers to attain the highest take home money for farmers.

Comparison of the Quality of the Chicken Breasts from Organically and Conventionally Reared Chickens

  • In this study, the quality of chicken breasts from organically reared chickens was compared with that of chicken breasts from conventionally reared chickens. Broilers were raised in an indoor pen with conventional and organic production system, respectively. The diet formulation for the organically reared chickens and the production density were in accordance with the guidelines for organic chicken products. Twenty birds from each group were slaughtered and their breasts were obtained for analysis. The organic chicken breasts had a higher cooking loss, and waterholding capacity, and a lower shear force (p<0.05) compared to the conventional chicken breasts. The organic chicken breasts also showed higher $a^{\ast}$ and $b^{\ast}$ values and myoglobin contents compared with the conventional chicken breasts (p<0.05). In the fatty-acid analysis, the organic chicken breasts resulted in higher polyunsaturated fatty acid (PUFA) and unsaturated fatty acid contents, and a higher PUFA-saturated fatty acid ratio.

Abattoir survey of bladders lesions in Korean cattle (도축 한우의 방광에 대한 병리학적 연구)

  • To examine the prevalence and type of lesions in urinary bladder of Korean cattle, a random sampling survey was performed at a Jeonju abattoir in September 2000 and January 2001. Collected urinary bladder were examined grossly and histopathologically and the patterns of disease were investigated with season and sex. Of 735 cattle(99 bulls and 246 cows in September and 141 bulls, 3 steers, and 246 cows in January) surveyed, $26.3\%$ cattle with evident lesions were found. The most common gross finding was urolithiasis of urinary bladder($23.8\%$). Other lesions included hemorrhage($5.9\%$), congestion($4.1\%$), hematuria($2.7\%$), pyuria($0.7\%$), hyperplasia($0.5\%$). Urinary calculi collected in this study contained 80 to $90\%$ of calcium oxalate and 10 to $20\%$ of struvite, with or without $20\%$ of cystine and $10\%$ of uric acid. This study on urolithiasis and pathology of urinary bladder of slaughtered Korean cattle revealed subclinical aspects and management problem in Korean beef product.
