Objective: The objective of this study was to compare growth performance, carcass traits and meat quality in young bulls, steers and heifers produced by crossing Limousin bulls with Holstein-Friesian cows, fattened semi-intensively and slaughtered at 18 months of age. Methods: Thirty-one young calves were reared in a conventional production system, and were fed milk replacer, hay and concentrate. At 6 months of age, the animals were divided into groups based on gender, and were fed a total mixed ration composed of grass silage, concentrates I and II in a semi-intensive production system. At the end of the fattening period (18 months), the animals were slaughtered, carcass quality was evaluated, and samples of musculus longissimus thoracis were collected to determine the proximate composition and quality of meat. Results: Bulls were characterized by the highest percentage share of the most valuable cuts in the carcass, and three-rib sections from bull carcasses had the highest lean meat content with low intramuscular fat content (0.93%). No significant differences in carcass conformation, dressing percentage or the percentage share of round in the right half-carcass were found between bulls vs. steers and heifers. Heifers and steers had higher carcass fat content than bulls, which had a positive influence on the sensory properties of beef. In comparison with the meat of bulls, the meat of steers and heifers was characterized by more desirable physical properties and sensory attributes (water-holding capacity, shear force, color lightness, aroma, juiciness, tenderness, flavor). Conclusion: Under the semi-intensive production system, heifers and steers had higher carcass fat content than bulls, which had a positive effect on the sensory properties of beef. Bulls are better suited for intensive systems, which contribute to improving the quality of their meat. The results of this study may encourage producers to breed steers and heifers for beef.
Uremia was diagnosed in a slaughtered 20-month old bull. It had no special clinical signs, but many lesions associated with uremia were observed at postmortem inspection. It had a lot of ascites. Kidney, urinary bladder and ureter were enlarged, congested and hemorrhagic, and the incised section of those slightly smelled nasty. However, the precise cause of uremia in this case could not be completely identified.
As a series of systematic classification of paramphistomes, in the first step, paramphistomes in the lumen and reticulum were collected on 170 Korean catties (2∼3 years age, male) slaughtered at Jeonju abattoir from July, 1984 to September, 1985 and were classified by means of morphology of the worms. Afterwards, the karyotype of Paramphistomum explanatum (Creplin, 1849) which is the common in Korean cattle was detected by means of modified air-drying method from testis cells of the worm. The following is a brief summary of the leading facts gained through the experiment. 1. Most of the cattle slaughtered at the abattoir were infected with paramphistomes. The 5 species of the worms were detected on 170 Korean cattle and the worm burden per head was from 2 to 784(on the average 170) worms, 120(70.59%) heads out of them involving 2∼100 worms. In 28,900 individuals of paramphistomes obtained on 170 Korean cattle, appearance rates of various worms were as follows : 49.74% in P. explanatum, 48.08% in P. cervi, 0.98% in Orthocoelium orthocoelium, 0.89% in Fischoederius cobboldi and 0.14% in Cotylophoron cotylcphorum. 2. The chromosome number of 620 P. explanatum in the haploid and diploid cells was n=9 and 2n=18, and abundant cells in meiotic division were observed; 1,420 haploid and 38 diploid cells were reliable. Nine pairs of mitotic chromosomes were homologous and the chromosomes were composed of aye medium-sized metacentrics(m), subtelocentrics(st) or submetacentrics(sm) and four smallsized subtelocentrics(st) or submetacentrics(am), while meiotic metaphase chromosomes were composed of five medium and four small-sized. 3. The haploid of the testis cells showed C-band in the centromeric region from 8 of them, whereas the remaining chromosome No. 5 included heterochromatin on the tip region, and chromosomes No. 3 and No. 7 showed a remarkable C-band distinguished from other chromosomes.
The bacteria on the surface of slaughtered meat was monitored to investigate the relationships between microbiological quality and sanitation management in slaughter process of cattle and pig. It was conducted to evaluate the microbiological quality on the surface of slaughtered beef and pork in Seoul from January to December 2004. Two hundred and thirty three beef and 233 pork carcasses were surveyed on generic E coli counts and standard plate count for microbiological quality and Salmonella spp, Listeria monocytogenes, Staphylococcus aureus, Clostridium perfringens and E coli O157: H7 as pathogenic microorganisms. The prevalence of the excellent or good grade $(10^4\;CFU/cm^2)$ in beef and pork carcasses were $100\%\; and\;99.2\%$, respectively. The frequency of beef carcasses with less than $10^2\;CFU/cm^2$ of generic I coli counts was $100\%$, while that of pork carcasses was $99.6\%$. Of 233 beef carcasses, $1(0.42\%)$ was contaminated with L monocytogenes and $6(2.58\%)$ with C perfringens. Of 233 pork carcasses, $11(4.72\%),\;2(0.86\%),\;and\;2(0.86\%)$ were contaminated with L monocytogenes, C perfringens, and S aureus, respectively, Salmonella spp and E coli O157:H7 were not detected with all of the beef and pork carcasses. In conclusion, this study emphasized the Importance of relationship between microbiological quality and sanitation management in slaughter process of cattle and pig, in abattoirs.
This study was carried out to investigate isolation of Pasteurella multocida from pneumonic lungs of slaughtered animals in Kyungsan abattoir to examine the antimicrobial susceptibility and biochemical properties. The results were summarized as follows ; P multocida was isolated from 50(29.2% ) of the 171 pneumonic lungs collected individually from cattle(3/40), goats(0131) and pigs(47/100), All of the isolated P multocida showed biocemical and cultural properties similiar to reference strains. All isolates were very susceptible to AK, AM, ENR, CF, GM,07, whereas resistant to SDM.
A total of 1,024 sera were collected from cattle(227), pigs(465), chickens(257) and dogs(75) raised or slaughtered in Daejeon metropolitan city from April to September 2002. Japanses encephalitis virus(JEV) antibodies in sera were detected by the haemagglutination inhibition test. The prevalence rates of JEV antibodies were 99.1 %, 54.0 %, 63.0 % and 98.7 % in cattle, pigs, chickens and dogs, respectively. In case of cattle and dogs, the monthly antibody-positive rates were as high as 85.7∼100.0 % and there were no differences among six months. In case of pigs, the monthly antibody-positive rate showed the lowest in April(6.4 %) and the highest in July(100.0 %) and it remained above 50 % during the summer-time. In case of chickens, the monthly antibody-positive rate was 100.0 % in July & August, 80.5 % in June, 40.0 % in May, 7.5 % in September and 5.0 % in April in order and there were distinct differences in seasons.
From April to May 1967 3,275 Korean native cattle slaughtered at Taegu public slaughter house were investigated for infection rate of faciola and 222 adult fasciola species taken from the bile duct, of the patients were examined for morphological study. The results were as follows: 1. Among 3,275 Cattle 1,099 Cattle (32.5%) were infected with fasciola species. 2. Seasonal changes of infection rate were 34.7%(Winter). 33.2%(Spring), 30.9%(fall) and 29.1%(Summer). 3. Three different species(large, small and intermediate type) of fasciola were detected from the patients. These large, small and intermediate types were identified morphologically with fasciola gigantica, fasciola hepatica and fasciold indica respectivelly. Distribution of these three kind, were 52.4%(intermediate type), 28.4%(Small type) and 19.0%(large type).
To examine the prevalence and type of lesions in urinary bladder of Korean cattle, a random sampling survey was performed at a Jeonju abattoir in September 2000 and January 2001. Collected urinary bladder were examined grossly and histopathologically and the patterns of disease were investigated with season and sex. Of 735 cattle(99 bulls and 246 cows in September and 141 bulls, 3 steers, and 246 cows in January) surveyed, $26.3\%$ cattle with evident lesions were found. The most common gross finding was urolithiasis of urinary bladder($23.8\%$). Other lesions included hemorrhage($5.9\%$), congestion($4.1\%$), hematuria($2.7\%$), pyuria($0.7\%$), hyperplasia($0.5\%$). Urinary calculi collected in this study contained 80 to $90\%$ of calcium oxalate and 10 to $20\%$ of struvite, with or without $20\%$ of cystine and $10\%$ of uric acid. This study on urolithiasis and pathology of urinary bladder of slaughtered Korean cattle revealed subclinical aspects and management problem in Korean beef product.
330 Samples of the slaughtered cattle heart muscle were collected from the abattoirs of five regions in Kangwon - do to reveal the frequency of sarcocystis infections during January through December in 1991. The samples were inspected for bradyzoites by the trypsin digestion technique and the possitive samples were fed to dogs and cats for the detection of sporocysts shed in the feces. The results obtained were summarized as follows : 1. The infection rate of bovine Sarcocystis investigated from 330 samples was 43.6%. 2. It revealed that the infection rate of Sarrocystis increased gradully with the advance in the age, 14.5% in below two years, 26.1% in the three years, 30% in four years, 54.7% in five years, 74.4% in six years, 90% in seven years and 100% in older than eight years. 3. The cyst walls detected out from the heart muscles were less than l${\mu}{\textrm}{m}$ in thickness and the size of bradyzoites were $11.8{\times}2.8{\mu}m$ in average. 4. The size of sporocysts shed in the feces of dogs were $15.8{\times}9.8{\mu}m$ in average and the prepatent periods ranged from 12 to 16days. 5. Sarcorystis found in the bovine heart muscles were identified as Sascocystis cruzi ( Hasselman, 1923) , wenyon, 1926.
A total of 333 calves were evaluated for carcass quality traits including: dressing percentage (DP), yield grade (YG), marbling score (MS), fat thickness (FT) and percent body fat (PF). Mating types included straightbred Angus (A) and Santa Gertrudis (S), the reciprocal crosses of these two breeds and Gelbvieh (G) ${\times}$ Angus. The year of birth, slaughter group and dam breed were found to have greatly influenced DP. Mating types had no effect on DP. For YG, sire breed, sire within sire breed and slaughter group were important. Crossbreds of A ${\times}$ S had the highest YG followed by A purebreds. Crossbreds of G ${\times}$ A had the lowest YG. Sire breed, dam breed and the slaughter group has significantly affected the MS. Sire breed, sire nested within sire breed and slaughter group were found to have greatly influenced the FT. Sires and dams of A produced the greatest FT while sires of G produced the lowest. Slaughter group 2 (slaughtered at 433 days of age) had a greater FT than group 1 (slaughtered at 393 days of age). For PF, sire breed, sire within sire breed, dam breed and slaughter group had significant effects. A purebreds had the largest PF while S purebreds and G ${\times}$ A crosses had the least.
