아침결식 예방을 위한 초등학교 영양교육 프로그램의 개발 및 평가 (Development and Evaluation of an Elementary School Nutrition Education Program to Prevent Breakfast Skipping)

  • The purpose of this study was to develop and evaluate a nutrition education program to prevent breakfast skipping for elementary school children. Subjects were 102 5th grade students (51 boys, 51 girls) as the "education group" and 200 5th grade students (102 boys, 98 girls) as the "non-education group." The nutrition education program consisted of 4 lessons over an 8-week period. Teaching materials, including flash animation, panel, PowerPoint, and a bingo game, were developed for this education program. After education, there was significant increase in the percentage of students who had eaten breakfast every day, understood that breakfast has a great effect on health, and will eat breakfast every day in the education group compared to non-education group. Parents' positive behavior toward daily breakfast preparation and the percentage of parents who had their children eat breakfast every day increased significantly. The students of the education group responded positively to the questions of the benefit and importance of nutrition education. The flash animation received high marks, especially in terms of understanding of contents, content clarity, emphasis of the core content, delivery of necessary knowledge, and applicability of breakfast. This study shows the effectiveness of a 4-lesson nutrition education taught during an 8-week time period to induce changes in recognizing the importance of breakfast and in behavior toward breakfast consumption.

교사들의 아침식사행동 및 이상적 아침식사 유형을 위한 연구 (A Study of Teachers' Breakfast and Ideal Breakfast Types)

  • We studied teachers' breakfast habits and their preferences on various breakfast types so that we will furnish data to nutrition education including ideal breakfast habit and development of various menus. The meal considered as most importantly were dinner (66.2%), fellowed by lunch(21.6%), all three meals(6.4%) and breakfast(5.8%). Men considered breakfast more importantly than women. On the contrary, women considered dinner more significantly compared to men. The group aged 45 and over emphasized breakfast and all three meal. 78.1% of subjects answered that breakfast is necessary and 61.5% of subjects ate breakfast regularly. Those who have breakfast regularly was lower in women(50.0%) than in men(71.3%). Instead, those who eat breakfast irregularly or skipping it was higher among women(50.0%) than among men(29.7%). The percentages of having breakfast regularly was higher in older groups. For breakfast, 82.1% of subjects had conventional meal which included rice, soup and Kimch. On the other hand, 13.9% of subjects had Western style breakfast such as bread, cornflakes and milk. The major reason for eating breakfast regularly was answered as 'maintain health(71.8%)'. The major reason for eating breakfast irregularly or skipping was 'don't have enough time to eat(48.0%)', 'poor appetite(28.6%)'. The major physical discomfort after skipping breakfast was 'experience brash(35.6%)', 'lack of physical strength(35.1%)'. Subjects answered that breakfast served as 'source of physical strength(64.9%)', 'provides nutritional balance for a day(21.1%)' and 15.0% of subjects ate out breakfast. Therefore, it is suggested that teachers as well as school children be provided breakfast and snack in school. The preference and opinion regarding breakfast types wer conventional food including rice, soup and Kimch(67.0%). There was a little preference in Western style food such as bread, milk and coffee(14.3%), cereals mixture and porridge(10.7%). It was noticeable that 49.1% of females and those who reside in Seoul(42.2%) selected various breakfast types excluding conventional food. Therefore it will be accepted to working women as breakfast if it is nutritionally balanced and cook well in short time.

경기지역 일부 초등학교 고학년의 아침결식에 따른 식행동에 관한 연구 (A Study on Breakfast Skipping and Dietary Behavior of Elementary School Children in Gyeonggi Area)

  • The purpose of this study was to investigate the relations of breakfast skipping and dietary habits according to breakfast intake frequency. Subjects were 5th and 6th graders of elementary school(n=423) in Gyeonggi area. As a result of analyzing the breakfast intake frequency, 'Having everyday' showed the highest 63.4%, followed by '4~6 times' 16.5%, '2~3 times' 13.5% and '0~1 times' 6.6%. As a result of analyzing the relations between mother and child in the breakfast intake frequency, it showed that the more mothers skipped breakfast, the more their children skipped it. For the reason of skipping breakfast, 'To be in time for school' showed the highest percentage. As a result of analyzing the perception of awareness for the importance of nutrition and dietary habit according to the breakfast intake frequency, there was a statistically significant difference in breakfast intake, dietary habits, selection and intake of proper food, disease and health problem according to the breakfast intake frequency. As a result of study, it is necessary that nutrition education should not be limited to children but expanded to their parents in order to increase the efficiency and effectiveness of nutrition education between school and home.

Breakfast skipping and breakfast type are associated with daily nutrient intakes and metabolic syndrome in Korean adults

  • BACKGROUND/OBJECTIVES: Emerging evidence shows that eating breakfast and breakfast types may be associated with health outcomes and dietary intakes in various populations. The aim of this study was to investigate the association between breakfast types in Korean adults with their daily nutrient intakes and health outcomes. SUBJECTS/METHODS: A total of 11,801 20- to 64-year-old adults (age $42.9{\pm}11.8$ yrs [$mean{\pm}standard$ error of the mean]; male 41.1%, female 58.9%) in 2007-2009 Korean National Health and Nutrition Survey data were divided into 5 groups based on breakfast types in a 24-hr dietary recall: rice with 3 or more side dishes (Rice3+, 35.3%), rice with 0-2 side dishes (Rice0-2, 34.73%), noodles (1.56%), bread and cereal (6.56%), and breakfast skipping (21.63%). Daily nutrient intakes and the risk of metabolic syndrome were compared among five groups. RESULTS: Compared with Korean Recommended Nutrient Intake levels, the breakfast-skipping group showed the lowest intake level in most nutrients, whereas the Rice3+ group showed the highest. Fat intake was higher in the bread and noodle groups than in the other groups. When compared with the Rice3+ group, the odds ratios for the risk of obesity and metabolic syndrome were increased in the breakfast skipping, Rice0-2, and noodle groups after controlling for confounding variables. CONCLUSIONS: The rice-based breakfast group showed better nutritional status and health outcomes when eating with 3 or more side dishes. Nutrition education is needed to emphasize both the potential advantage of the rice-based, traditional Korean diet in terms of nutritional content and the importance of food diversity.

대전지역 초등학교 6학년생의 성별과 아침 결식에 따른 영양지식 및 식행동 (Nutritional Knowledge and Dietary Behavior of the 6th Grade Elementary School Students in Daejeon Area by Gender and Skipping Breakfast)

  • 초등학생의 아침식사 실태를 살펴보고 아침결식 여부에 따른 아침식사 관련 영양지식과 식행동, 수면 및 운동시간, 스트레스, 학업성적, 교우, 체형인식의 차이를 알아보고자 2007년 12월에 대전지역 초등학교 6학년생 237명 (남자 119명, 여자 118명)의 설문조사를 통해 조사한 결과는 다음과 같다. 아침식사를 일주일에 6${\sim}$7회하는 아침식사군은 58.6%, 0${\sim}$5 회 하는 아침결식군은 41.4%로 조사되어 다른 연구들 보다 높은 결식 실태를 보여주었다. 가족형태는 핵가족이 84.4%로 가장 많았고, 출생 순위는 첫째와 둘째라고 대답한 경우가 46% 정도로 비슷한 비율을 보였다. 직업을 가지고 있는 어머니의 비율이 63.8% 이었고 가족의 월수입은 200${\sim}$400 만원에 해당하는 경우가 51.1%로 가장 많았는데 아침결식에 따른 차이가 있었다. 조사대상 아동의 79.8%가 밥을 포함한 한식의 형태로 아침식사를 하고 있었고 아침식사군에서 한식 형태로 식사하는 비율이 높았다. 아침결식을 하는 이유로 '입맛이 없어서'와 '시간이 없어서'의 대답이 가장 많았으며 아침식사군에서 가족 모두 아침을 먹는 비율이 아침결식군보다 유의적으로 높았다. 아침식사 관련 영양지식의 점수는 여학생의 영양지식 총점이 유의적으로 높았고, 남학생에서 아침식사군의 영양지식 총점이 아침결식군보다 높았다. 남학생의 경우 아침식사와 체중조절과의 관계 1문항, 아침식사의 중요성과 역할에 관한 3문항의 점수가 아침결식군보다 아침식사군에서 유의적으로 높았으며 아침결식의 위해성과 아침식사 내용에서 한식의 영양적 우수성에 대한 항목은 점수가 0.5정도로 낮았다. 식행동 점수는 여학생이 남학생보다 유의적으로 높은 점수를 보였고 아침식사군이 아침결식군보다더 높은 식행동 점수를 보여 일반적인 식행동도 아침식사군이 바람직한 것으로 나타났다. 남학생의 경우 아침결식군에서 6시간 이하로 수면을 취하는 아동의 비율은 아침식사군보다 높았다. 여학생의 경우 아침결식군에서 스트레스를 많이 받는 비율이 높았고, 학업이 낮다고 대답한 비율이 높았으며, 친구가 많다고 대답한 비율이 아침식사군보다 낮았다. 그러므로, 학동기 아동의 아침결식은 육체적 문제뿐 아니라 정신적인 문제에도 영향을 미치므로 아침결식을 줄이기 위한 다각적인 노력이 필요하다. 일찍 자고 일찍 일어나는 올바른 생활습관을 통하여 아침식사 시간을 확보해야 하며, 가족모두 아침을 먹을 수 있는 환경을 마련하고, 아침에 입맛이 없는 어린이의 식욕을 돋우어 줄 수 있는, 한식 형태의 영양적이고 간편한 아침식단의 개발과 보급이 시급할 것으로 보인다. 또한 영양교육 시 가족이 함께 하는 식사의 중요성을 강조하고 아침결식을 하는 아동들은 다른 식행동도 바람직하지 못한 경향이므로 아침식사의 중요성과 아침결식의 위해성을 강조하는 체계적이고 효과적인 프로그램의 개발이 이루어져야 할 것이다.

가족 동반 아침식사에 따른 아동의 식사 다양성 평가 : 2013~2015 국민건강영양조사 자료를 이용하여 (Evaluation of the meal variety with eating breakfast together as a family in Korean children: based on 2013~2015 Korean National Health and Nutrition Examination Survey)

  • 본 연구는 2013 ~ 2015년 국민건강영양조사 원시자료를 활용하여, 6 ~ 11세 아동을 대상으로 성별에 따라 아침식사 가족 동반 여부 및 아침결식에 따른 영양소 및 식품군별 섭취 상태, 식사의 다양성 등을 평가하였으며, 그 결과는 다음과 같다. 연령, 체질량지수, 가구소득, 가구 세대구성 등의 일반사항은 아침식사 가족 동반 여부 및 아침결식에 따른 군간 유의한 차이를 보이지 않았고, 1일 총 열량 섭취량 역시 아침식사 가족 동반 여부 및 아침결식에 따른 군간 유의한 차이는 보이지 않았다. 그러나 남학생의 탄수화물과 비타민 C 섭취 밀도의 경우 가족 동반 아침식사군과 혼자 아침식사군이 아침결식군에 비해 유의적으로 높은 것으로 나타난 반면, 지방 섭취 밀도는 아침결식군에서 유의적으로 가장 높게 나타났다. 1일 총 식품 섭취량과 섭취한 식품의 총 가짓수 역시 남학생과 여학생 모두에서 아침식사 가족 동반 여부 및 아침결식에 따른 군간 유의한 차이는 보이지 않았다. 또한 끼니별 식품 섭취량, 음식 및 식품의 가짓수를 분석한 결과 남학생과 여학생 모두에서 가족 동반 아침식사군과 혼자 아침식사군의 아침식사로 섭취하는 음식의 가짓수가 아침결식군에 비해 유의적으로 높았으며, 남학생에서 아침식사로 섭취한 식품 가짓수의 경우 가족 동반 아침식사군이 혼자 아침식사군과 아침결식군에 비해 유의적으로 높은 결과를 보여 아침식사를 가족과 함께 하는 아동의 경우 혼자 아침식사를 하는 아동이나 아침결식을 하는 아동에 비해 섭취하는 식품이 좀 더 다양할 수 있다는 의미있는 결과를 도출하였다. 이와 같은 결과는 바람직한 영양섭취를 위한 가족 동반 아침식사의 중요성을 제안할 수 있는 근거자료가 될 수 있을 것으로 생각된다.

Rice-based breakfast improves fasting glucose and HOMA-IR in Korean adolescents who skip breakfast, but breakfast skipping increases aromatic amino acids associated with diabetes prediction in Korean adolescents who skip breakfast: a randomized, parallel-group, controlled trial

  • BACKGROUND/OBJECTIVES: Adolescents who skip breakfast have an increased prevalence of chronic diseases. Thus, we aimed to evaluate whether the intake of rice-based breakfast had positive effects on blood glucose indices and to determine the possibility of diabetes prevalence in Korean youths who habitually skip breakfast. SUBJECTS/METHODS: In this randomized parallel-group controlled trial, 81 subjects who were suitable for compliance among 105 middle-and high-school students aged 12-18 years who usually skipped breakfast were included in this study (rice-meal group [RMG], n = 26; wheat-meal group [WMG], n = 29; general-meal group [GMG], n = 26). The RMG and WMG received a rice-based breakfast and a wheat-based breakfast for 12 weeks, respectively. The anthropometric indices, blood glucose indices, and metabolites were measured at baseline and the endpoint, respectively. RESULTS: The mean body weights in the RMG, WMG, and GMG groups at the endpoint were 62.44 kg, 61.80 kg, and 60.28 kg, respectively, and the mean body weights of the WMG and GMG groups at the endpoint were significantly higher than that at baseline (P < 0.05). The levels of fasting insulin and homeostasis model assessment of insulin resistance (HOMA-IR) values were significantly decreased in the RMG group at the endpoint compared to baseline (P < 0.05, P < 0.05, respectively). The levels of tryptophan and tyrosine in the WMG group at the endpoint were significantly higher than that those at baseline (P < 0.01, P < 0.05, respectively). CONCLUSIONS: Rice-based breakfast has positive effects on fasting insulin levels and HOMA-IR in Korean adolescents who skip breakfast. Additionally, it was found that a skipping breakfast could increase the prevalence of diabetes in adolescents who skip breakfast. Therefore, in addition to reducing breakfast skipping, it is vital to develop a rice-based menu that fits teenage preferences to prevent chronic diseases such as diabetes.

혼자 또는 온 가족이 함께 하는 식사형태가 아동의 정신적.신체적 건강에 관한 자각증상에 미치는 영향 - 대전지역 일부 초등학생을 중심으로 - (Effect of Eating with Family or Alone on the Self-rated Mental or Physical Health - The Elementary School Children in Daejeon Area -)

  • The purpose of this study was to examine the effect of eating with family or alone on the self-rated mental or physical health and then work out strategies of making people recognize the importance of eating with family and its practice. Study subjects were 610 primary school 5th- and 6th-grade students in Daejeon Area. A questionnaire survey was carried out. 57.9% of students had working mothers. The frequency of meal in a day was $2.90{\pm}0.42$ and this frequency was lower in students who had working mothers (p < 0.05). The frequency of skipping breakfast (times/week) was $1.02{\pm}1.77$. The frequencies of eating alone (times/week) were $1.04{\pm}1.65$ for breakfast and $0.97{\pm}1.52$ for dinner. Also, the frequency of eating alone for dinner was higher in students who had working mothers (p < 0.001). When the frequency of eating alone for breakfast or dinner was higher, the frequencies of skipping breakfast and dinner were also higher (for all, p <0.01). When the frequency of eating alone for breakfast or dinner was higher, the self-rated positive mental health were lower (p < 0.05 and p < 0.01 respectively) and the self-rated negative mental health (for dinner, p < 0.05) and the self-rated negative physical health was higher (p < 0.05 and p < 0.01 respectively), thus presenting negative health. The frequencies of eating with family (times/week) were $3.37{\pm}2.50$ for breakfast and $4.14{\pm}2.19$ for dinner. Also, the frequency of eating with family for dinner was lower in students who had working mothers (p < 0.01). When the frequency of eating with family for breakfast was higher, the frequency of skipping breakfast was lower (p < 0.01). When the frequency of eating with family for dinner was higher, the frequency of skipping dinner was lower (p <0.01). In addition, when the frequency of eating with family for breakfast or dinner was higher, the self-rated positive mental health were higher (for both, p <0.01) and the self-rated negative mental health was lower (for breakfast, p < 0.01) and self-rated negative physical health were lower (for both, p <0.01), thus presenting positive health. Therefore, in order to maintain positive health, it is necessary to recognize the importance of eating with family at home and educate people to carry out a systematic and continuous dietary life, thus increasing eating with family and reducing eating alone and skipping a meal.

초.중.고 학생의 식생활 실태 및 인식 비교 연구 (A Comparative Study on Dietary Life and Recognition of Diet Related Factors in Elementary, Middle and High School Students)

  • This Study was carried out to investigate dietary life and recognition of diet related factors in elemantary, middle and high school students. This study was surveyed by questionnaires and data were analyzed by SPSS program. Comparative analysis was conducted according to three school student groups(elementary childrens, middle school students, high school students). The subjects were 1,886 school students(female 893, male 959) of 51 schools in nationalwide region. The Distribution of subjects was elementary school childrens 544, middle school students 661 and high school students 681. The results are summarized as follows. Only Sixty percent of the subjects had breakfast regularly. About one forth of the subjects had the habit of skipping breakfast or eating 2-3 times per week. Pricipal reasons of skipping breakfast were 'busy'(50.7%) and 'not delicious or poor appetite'(31.0%). Regularity of having breakfast and reasions of skipping breakfast were significant differences according to school student groups(p<0.001 respectively). About half of the subjects didn't have sufficient amounts in breakfast. Most subjects(92.1%) had lunch regularly by virtue of school lunch service. One forth of the subjects had dinner irregularly. Pricipal reasons of skipping dinner were 'not delicious'(41.7%), 'busy'(15.1%) and 'weight loss'(14.3%). Regularity of having dinner and reasons of skipping dinner were significant differences according to school student groups(p<0.01, p<0.001 respectively). The most delicious meal was dinner in 56.7% of the subjects and lunch in 37.1% of the subjects. There was significant difference in recognition of most delicious meal according to school student groups(p<0.001). Only ten percent of the subjects thought that nutrition education was not needed. Diettitian was recognized as nutrition educator in sixty percent of the subjects. Only 5 percent of the subject recognized teacher as nutrition educator. There were not significant differences in most delicious meal and nutrition educator according to operation type of school lunch service. The findings suggested continuous attention and guidance for healthy dietary life and necessity of nutrition education for both school students and their parents.

중부 지역 여자 대학생 중 아침결식군과 아침식사군의 식행동, 가공식품 선호도 및 영양표시에 대한 인식 (Dietary Behaviors, Processed Food Preferences and Awareness Levels of Nutrition Labels among Female University Students Living in Middle Region by Breakfast Eating)

  • The purpose of this study was to examine the dietary behaviors, processed food preferences, and awareness levels of nutrition labels among female university students living in middle region by breakfast eating. A total of 243 students (breakfast eating group: 153, breakfast skipping group: 90) were surveyed from April to May of 2011. The results are summarized as follows: Skipping breakfast (SB) group had a significantly higher frequency of skipping lunch and dinner compared with the eating breakfast (EB) group (P<0.05, P<0.01, respectively). In the EB group, food labels were identified sometimes (31.8%), frequently (29.1%), and rarely (28.5%). In the SB group, food labels were identified rarely (33.3%), sometimes (27.8%), and frequently (26.7%). The EB group used food labels for comparing price and weight of products more frequently than the SB group (P<0.05). In the EB group, nutrition labels were identified sometimes (38.0%), frequently (28.1%), and rarely (24.8%). In the SB group, nutrition labels were identified rarely (32.6%), sometimes (30.3%), and frequently (21.4%). The EB group used food labels for identifying nutrient contents more often and for weight control more less than the SB group (P<0.05, P<0.05, respectively). The main reason for not identifying nutrition label of the processed foods was 'not being interested (55.5%)' in the SB group (P<0.05). Therefore, education programs that emphasize the importance of eating breakfast, and reading food and nutrition labels need to be developed for university students.
