칼슘의 첨가에 따른 라면의 조직감과 관능적 특성 (Effects of Calcium on Textural and Sensory Properties of Ramyon)

  • In an attempt to evaluate the effects of calcium on paste or gelatinization properties by amylograph and mixing properties by farinograph of wheat flour and on viscosity property cooking quality textural and sensory properties of Ramyon were examined. The contents of calcium used were from 1.0% to 3.0% based on flour weight. The viscosity property of wheat flour with calcium was increased the initial past-ing temperature but the amylograph peak viscosity were decreased in vice versa. The farinograph absorp-tion stability and breakdown were increased by calcium. The shear extrusion force and hardness of Ram-yon manufactured with calcium were shown much higher value than those of control. At cooking quality examination of Ramyon manufactured with calcium weight of cooked Ramyon was increased by volume was decreased. Extraction amounts of Ramyon manufactured with calcium during cooking were much smaller than those of control. These changes will provided many advantages in the preparation of Ram-yon. The I2 reaction value of Ramyon manufactured with calcium and control were shown to almost same values. Sensory properties of cooked Ramyon which was manufactured with calcium showed quite acceptable. Based on the cooking and sensory evaluation test addition of 0.3% calcim to wheat flour may be suitable for processing Ramyon.

발효숙성마늘 추출물 첨가 초콜릿 제조 조건의 최적화 (Processing Optimization of Chocolate with Fermented and Aged Garlic Extract)

  • This study was conducted to aid in the development of the optimal recipe for chocolate with fermented and aged garlic extract (Allium sativum var. pekinense). We added garlic extract in order to increase the nutritional value of the chocolate. The optimal sensory composite recipe was determined, following Central Composites for chocolate with different levels of fermented and aged garlic extract (A) and cream (B), while analysis was performed by Response Surface Methodology, from the date that the sensory evaluation was performed. Ten experimental recipes, including 2 reference points in the composition, were selected. The compositional and functional properties were measured, and physical and sensory values were applied to the mathematical models. Perturbation plots showed the influence of each ingredient on the final product. Measurements showed significant values in lightness, sweetness, pH, hardness and cohesiveness, while sensory measurements showed significant values in color, texture, sourness, bitterness and overall quality. The optimum formulations were calculated by numerical and graphical methods, as being 34.61g fermented and aged garlic extract and 72.68g cream for each 200g chocolate. As well it was revealed that the aptitude of chocolate was more influenced by fermented garlic extract than it was by cream.

  • Restructured meat (RM) products are gaining importance as an essential component of the meat industry due to consumers' interest in health benefits. RM products imply the binding or holding of meat, meat by-products, and vegetable proteins together to form a meat product with meat's sensory and textural properties. RM products provide consumers with diversified preferences like the intake of low salt, low fat, antioxidants, and high dietary fiber in meat products. From the point of environmental sustainability, RM may aid in combining underutilized products and low-valued meat by adequately utilizing them instead of dumping them as waste material. RM processing technique might also help develop diversified and new hybrid meat products. It is crucial to have more knowledge on the quality issues, selection of binding agents, their optimum proportion, and finally, the ideal processing techniques. It is observed in this study that the most crucial feature of RM could be its healthy products with reduced fat content, which aligns with the preferences of health-conscious consumers who seek low-fat, low-salt, high-fiber options with minimal synthetic additives. This review briefly overviews RM and the factors affecting the quality and shelf life. Moreover, it discusses the recent studies on binding agents in processing RM products. Nonetheless, the recent advancements in processing and market scenarios have been summarized to better understand future research needs. The purpose of this review was to bring light to the ways of sustainable and economical food production.

  • It is definitely an interesting job to work with V4 to create various contents emphasizing different interfaces like 3D graphics, and multimedia such as video, audio, and camera. Moreover, beyond the other interface, as it could be used in the many aspects of the sensory sign such as visual effects, auditory effects, and touchable effects, it feels free to make a better developed model. We intended the users to feel some kind of pleasure and interactions rather than just using in aspect of Media art.

정보처리접근에서의 율동적 개시 (Rhythmic Initiation in the respect of Information Processing approach)

  • Purpose : This study was to investigate the application of Rhythmic Initiation(RI) in the respect of information processing in motor learning. Methods : A computer-aided literature search was performed in PubMed and adapted to the other databases and the others were in published books. The following keywords were used: Rhythmic Initiation, attention, memory, motor accuracy, feedback, motor learning, motor control, PNF, cognition. Results : The characterization of RI is rhythmic motion of limb or body through the desired range, starting with passive motion and progressing to active resisted movement. This study suggested that the relationship between of RI and motor learning through the respect of information processing, memory, attention and motor accuracy. Conclusion : Only Rhythmic Initiation, specifically focused on the effects of information processing approach, suggesting that RI can be positively influeced on sensory-perception, attention, memory, motor accuracy. however, it is unclear whether positive effects in the laboratory and field can be generalized to improve. In addition, sustainability of motor learning with RI remains uncertain.

Replacement of Pork Meat with Pork Head Meat for Frankfurters

  • The effect of reducing pork meat concentrations from 50% to 30% and replacing it with up to 20% pork head meat on chemical composition, cooking characteristics, physicochemical and textural properties, apparent viscosity, and sensory characteristics of frankfurters was determined. The highest moisture content in frankfurters was found in the control and T1 (frankfurter with 45% pork meat + 5% pork head). Protein and fat contents in frankfurters with pork head meat added were significantly (p<0.05) higher than those in the control. When the concentration of pork head meat was increased from 0% to 20%, cooking loss, total expressible fluid separation, fat separation, and pH of frankfurters were increased, while the lightness, redness, yellowness, and apparent viscosity of frankfurters were decreased. Ash contents, cohesiveness, color, and tenderness of sensory characteristics of frankfurters added with different amounts of pork meat or pork head meat were not significantly (p>0.05) different from those of the control or there treatments. Frankfurters in T4 (frankfurter with 30% pork meat + 20% pork head) had the lowest (p<0.05) hardness and gumminess. The hardness and gumminess of frankfurters in other treatments were not significantly different (p>0.05) from that in the control. Frankfurters with higher pork head meat concentrations had lower flavor, juiciness, and overall acceptability scores. Therefore, replacing pork meat with pork head meat in the formulation could successfully produce results similar to those of control frankfurters. The best results were obtained when 10% pork head meat was used to replace pork meat.

Effects of Various Thawing Methods on the Quality Characteristics of Frozen Beef

  • In this study, the quality characteristics due to the influence of various thawing methods on electro-magnetic and air blast frozen beef were examined. The loin and round of second grade Hanwoo were sliced into 5-7 cm thickness and packed with aerobic packaging. The packaged beef samples, which were frozen by air blast freezing at $-45^{\circ}C$ and electro-magnetic freezing at $-55^{\circ}C$, were thawed by 4 thawing methods with refrigeration ($4{\pm}1^{\circ}C$), room temperature (RT, $25^{\circ}C$), cold water ($15^{\circ}C$), and microwave (2450 MHz). These samples were thawed to the point, which were core temperature reached $0^{\circ}C$. Analyses were carried out to determine drip and cooking loss, water holding capacity (WHC), moisture contents and sensory evaluation. Frozen beef thawed by microwave indicated a lower drip loss (0.66-2.01%) than the other thawing methods (0.80-2.50%). Cooking loss after electro-magnetic freezing indicated 52.0% by microwave thawing for round compared with 41.8% by refrigeration, 50.1% by RT, and 50.8% by cold water. WHC thawing by microwave with electro-magnetic freezing didn't showed any difference depending on the thawing methods, while moisture contents was higher thawing by microwave with electro-magnetic freezing than refrigeration (71.9%), RT (75.0%), and cold water (74.9%) for round. The texture of sensory evaluation for round thawed by microwave result was the highest than refrigeration (4.7 point), RT (6.4 point) and cold water (6.6 point), while sensory evaluation was no significant difference. Therefore, it was shown that microwave thawing is an appropriate way to reduce the deterioration of meat quality due to freezing.

감마선 이용 저염 오징어젓갈 제조시 미생물적, 관능적 품질변화 (Effects of Gamma Irradiation on Microbiological and Sensory Qualities in Processing of Low Salted and Fermented Squid)

  • 식품첨가제의 사용없이도 저장성과 향미특성이 우수한 저염 오징어젓갈을 개발하기 위한 방법으로 감마선 조사기술을 이용하였다. 식염농도를 각각 5%, 10%, 20%로 조절한 오징어젓에 감마선을 조사한 후 $15^{\circ}C$$25^{\circ}C$에서 발효시키면서 일반성분, 식염함량, 수분활성도, pH, 총균수 및 관능적 품질 변화를 조사하였다. 감마선 조사직후 또는 발효기간 중 일반성분과 식염함량 및 수분활성은 감마선 조사에 의해 영향을 받지 않았다. 오징어젓갈의 총균수와 pH는 식염농도와 감마선 조사선량 및 발효온도에 따라 영향을 받았으며, 10%의 식염 첨가와 10 kGy의 감마선 조사를 병용처리한 오징어젓을 $15^{\circ}C$에서 발효시킨 경우 비조사구에 비해 적절한 미생물의 생육 저해로 저장기간 연장 효과를 보였고, 30일까지 관능적 품질이 적합하게 유지되는 것으로 나타났다.

착유방식이 목장형 유가공으로 제조된 고다치즈의 품질 특성에 미치는 영향 (Effects of Miling System on Gouda Cheese Characteristics made from Farmstead Milk-processing Plant)

  • 최근 보급이 증가되고 있는 AMS가 목장형 유가공장에서 생산되는 치즈의 특성에 미치는 영향을 알아보기 위한 연구를 실시하였다. 첫 번째 연구에서는 AMS 및 CMS 농장에서 원유를 채취하여 동일한 조건에서 각각 고다치즈를 제조하여 6개월 숙성시킨 다음 일반 성분 및 유리지방산 분석과 관능평가를 실시하였고, 두 번째 연구에서는 목장형 유가공장 7곳에서 제조한 고다치즈 시료를 채취하여 일반성분과 조직 특성을 비교하였다. 본 연구 결과, 고다치즈의 일반성분은 조회분을 제외하고는 착유 방식이나 목장에 따른 유의적인 차이가 나타나지 않았고, 유리지방산은 각 목장에 따른 차이를 보여주었으나 관능평가에 영향을 미치지 않았으며, 착유 방식에 의한 유리지방산 및 관능평가 결과에서도 유의적인 차이도 발견할 수 없었다. 조직 특성 역시 목장 간에 유의적 차이가 컸던 관계로 착유방식에 따른 차이는 나타나지 않았다. 결론적으로 착유방식은 목장형 유가공장에서 제조한 고다치즈의 특성에는 영향을 미치지 않을 것으로 판단되며, 향후 같은 고다치즈라 하더라도 각 목장별로 차별화하여 전통과 개성이 있는 목장형 유가공 제품으로 발전할 가능성을 보인 것으로 사료된다.

감마선 이용 미생물학적 및 관능적 품질이 우수한 아이스크림의 개발 (Development of Ice Cream with Improved Microbiological Safety and Acceptable Organoleptic Quality Using Irradiation)

  • 감마선을 이용하여 미생물학적으로 안전하면서 관능적 품질이 우수한 아이스크림을 개발하기 위해 감마선에 안정적인 spearmint, mint 및 citrus향을 선발하고 이를 이용하여 감마선 조사에 의한 특유의 냄새변화가 없는 아이스크림을 제조한 후 품질을 비교하였다. 일반적인 조성은 향 무첨가 대조구와 처리구 사이에 차이가 없었으며, 총균수는 향 무첨가 대조구, spearmint, mint 및 citrus향 첨가구가 각각 2.38, 1.23, 1.38 및 1.15 log CFU/g 수준에서 검출되었다. 그러나 대조구는 3 kGy, 그 외 처리구는 1 kGy 선량에서 균이 검출되지 않았다. 관능검사 결과 mint향을 첨가하고 1 kGy 감마선 처리한 아이스크림과 citrus향을 첨가하고 3 kGy에서 감마선 처리한 아이스크림이 유의적으로 높은 기호도를 보였다. 따라서 3 kGy 이하의 감마선 조사와 mint 또는 citrus향의 선택적 첨가는 관능적으로 문제가 없으면서 유아, 노약자, 환자 등 민감한 소비자들에 대한 미생물학적 안전성을 확보하는 기술로 사용될 수 있을 것으로 판단된다.
