  • Dietary counseling is undoubtedly important for prevention and treatment of chronic diseases. Several dietary counseling methods have been developed and used in Japan to promote healthier diets. However, in Japan, few studies have established effective counseling methods. We developed a computer-assisted tailored dietary counseling system with self-administered diet history questionnaire (DHQ) to assess nutrient intakes and the feedbacks for counseling. We examined the effectiveness of the system in three studies , two among mildly-hypercholesterolemic and one among healthy subjects. We observed significant changes in intakes of targeted nutrients in all three studies. We also observed favorable changes in the corresponding serum and urinary biomarkers in two studies, i.e., non-significant change in serum cholesterol, serum carotene and vitamin C, and a significant change in 24-hour urinary excretion of sodium. In addition, one of the studies observed a significant modified dietary habit for one-year after the intervention was completed. No unfavorable change was observed for non-targeted nutrients in all three studies. The dietary counseling system with DHQ was concluded to be effective among motivated high-risk and healthy subjects. The system's application to other diseases and populations such as children, adolescents, and elderly, should be examined further. (J Community Nutrition 5(2) : 112-119, 2003)

  • This study is to verify the effects of sensory education based on classroom activities for $2^{nd}$ and $3^{rd}$ grade children. The hypothesis is that children who participated in sensory education would demonstrate positive changes in eating behaviors through sensory experiences. The sensory education program consists of 12 lessons. Twenty-six children were being recruited from one school in Changwon, Korea. Two control groups, one of which was the same age as the educated group and the other group of sixth graders, were selected by random sampling from the same school. Children answered a self-administered questionnaire. The parents (n = 20) of the children who participated in the program, took part in evaluating the program through self-administered questionnaires after the program ended. The questionnaire contained variables of general characteristics, education satisfaction, nutrition knowledge, eating attitude and behavior concerning unfamiliar foods. The score of nutrition knowledge was improved in educated children (P < 0.05). Food neophobia score towards unfamiliar foods (P < 0.05) was increased in educated children, but there are no changes in eating behaviors in all groups towards unfamiliar foods. In conclusion, sensory education is useful for having a positive eating attitude among children. Its consistent implementation could lead to healthier and well-balanced eating behaviors for children.

  • Types of motivation for self-determination studied in the current research included intrinsic motivation (IM) to know, IM to accomplish, IM to experience stimulation; external, introjected, identified regulation; and amotivation as related to children's self-regulated learning strategies (use of cognitive strategy and self-regulation). The Motivated Strategies for Learning Questionnaire (Pintrich & DeGroot, 1990) and the Academic Motivation Scale (Vallerand et al., 1992, 1993) were administered to 123 $5^{th}$ graders (63 girls, 60 boys). Data were analyzed by Pearson's correlation, multiple regression, and canonical correlation analysis. Results indicated that IM to accomplish, IM to know, and identified regulation positively and amotivation negatively affected self-regulated learning strategies. IM to accomplish and IM to know positively and amotivation negatively contributed to use of cognitive strategy and self-regulation.

  • Objective: This study aimed to investigate the factors associated with masticatory performance, as measured with a chewing gum containing spherical resinous microparticles, and to evaluate the method by examining the relationship with self-reported masticatory status. Methods: The participants in this study comprised 903 industrial workers (mean age, $42.2{\pm}11.6years$). A questionnaire was administered to assess self-reported masticatory status. The masticatory performance score was calculated by counting the number of particles in the chewing gum. Clinical oral examinations were administered. Multiple linear regression analysis was conducted on the masticatory performance scores to examine the related factors. Analysis of covariance was conducted to investigate the association between the masticatory performance score and the self-reported masticatory status. Results: Significant predictors of the masticatory performance score were sex (p<0.001), age (p<0.001), decayed teeth (p=0.009), total-functional tooth units (p<0.001), periodontitis (p=0.003), and malocclusion (p=0.011). The relationship between the masticatory performance score and the self-reported masticatory status was attenuated after controlling for confounding factors. Conclusion: The masticatory performance increased with age and decreased as the oral health status worsened. Using this chewing gum method partly, but not comprehensively, reflects masticatory performance. Therefore, various masticatory performance-related indexes should be employed to measure masticatory performance accurately.

  • Objectives: A web-based survey has been administered annually since 2005 throughout Korea to assess the prevalence of adolescent health risk behaviors among middle and high school students. The aim of this study was to evaluate the test-retest reliability of the Korea Youth Risk Behavior Web-based Survey (KYRBWS) questionnaire. Methods: A convenience sample of 2298 middle and high school students participated in self-administered questionnaire surveys twice, approximately two weeks apart, in 2008. The percent agreement, kappa statistics, and prevalence rates at the first and second surveys were computed for the core subset of 39 self-reported health risk behavior indices of the KYRBWS. Results: Among 39 indices, seven indices had kappas $\geq$ 0.81 and all of the indices had kappas $\geq$ 0.41. Based on nonoverlapping 95% confidence intervals, three indices had significantly different prevalence rates between the first and second surveys. In the subgroup analyses by school grade and gender, two indices had significantly different reliability estimates between middle and high school students. There were no significantly different reliability estimates between male and female students, except for one index. Conclusions: This study demonstrated that the reliability estimates for the KYRBWS questionnaire are varied, but generally reliable over time. The indices with low reliability estimates need to be evaluated further in order to determine whether the indices should be modified or deleted from future versions of the KYRBWS.

  • A 15-minute questionnaire on breast-feeding was administered to the obstetric and pediatric residents and nurses in metropolitan academic training programs in Korea to assess their attitudes to and knowledge about breast-feeding and their confidence in managing breast-feeding problems. The questionnaires were self-administered and confidential and the participants was 279. Overall, the study participants indicated a supportive attitude toward breast-feeding. Nurses had a highest supportive attitude than obstetric and pediatric residents. Their self-confidence in this area was inappropriately high with 48% of total, 49% of obstetric, 42% of pediatric and 58% of nurses describing themselves as "confident" or "very confident" to manage common breast-feeding problems to compare their knowledge level answering only 46% of the questions correctly. However, nurses who did have continuing education about breast-feeding had significantly high in knowledge level. These health care professionals have extremely limited knowledge of breast-feeding management compared to their reported confidence. To be truly supportive of breast-feeding, health care professionals should receive didactic and clinical training to breast-feeding management.
