Heavy Metal Contents and Food Safety Assessment of Processed Seaweeds and Cultured Lavers (국내 가공 해조류와 미가공 김의 중금속 함량 및 식품 안전성평가)

  • In this study, nine heavy metals were analyzed in seaweeds collected from market and laver culture farm of Korea and a food safety assessment were also carried out for these heavy metals. The level of heavy metal concentrations in seaweeds was in the following order: Fe>As>Zn>Cu>Cd>Pb>Cr>Ni>Hg. Except for zinc and cadmium, seven heavy metals were significantly higher in cultured laver than in processed laver. Significant correlation was observed Cr-Fe in cultured laver and Cu-Zn, Cd-Cu, Cd-Zn and Pb-Ni in processed laver and Cu-Cr, Cu-Zn, Cd-Cr and Ni-Fe in sea tangle and Zn-Fe, Cr-Fe, Cr-Zn, Cd-Ni, Cu-Cd and Cu-Pb in processed sea mustard. Considering differences in heavy metal concentration between processed laver and cultured laver and in correlation among heavy metals, removal efficiency of heavy metals may be attributed to seaweed treatment process. The average weekly intakes of Cu, Cd, Zn, Fe and Hg via seaweeds consumption were about 0.1~7.6% of PTWI (Provisional Tolerable Weekly Intakes). Therefore, it was found that heavy metals in the seaweeds were very safe for consumption.

BACTERIOLOGICAL STUDIES ON MARKET SEA FOODS 1. Sanitary Indicative Bacteria in Sundried Sea Foods. (시판 수산식품에 대한 세균학적 연구 1. 건제품의 위생지표 세균에 관하여)

  • This study was conducted to evaluate the sanitary quality of sun dried sea foods being distributed in the markets located in Busan city. Twenty one kinds of sun dried sea foods, 9 kinds of fish and shellfish, 5 kinds of mollusca and 7 kinds of seaweed were examined during the Period from September to December in 1970. For the evaluation of sanitary contents of sanitary indicative bacteria such as coliform group, fecal coliform, fecal streptococci and enterococci, and plate counts were determined. The results obtained were as follows: 1. Through out all the samples examined, the numbers of fecal streptococci and enterocccci were much greater than those of coliform group and fecal coliform. 2. Generally, the contents of enterococci exceeded MPN of 1,000 per 100 grams through all samples examined, while fecal coliform MPN'S were less than 18. 3. The median value of coliform group MPN was 78 and those of fecal streptococci MPN was 3,300 per 100 grams, The median value of the plate counts was $9.9\times10^4$ per gram, 4. Bacterial densities of the foods which had many chances to come into contact with hands were much higher than those of other foods which had not. 5. The bacterial contamination rate of seaweed was much lower than those of fish and shellfish. 6. No correlation between the numbers of sanitary indicative bacteria and plate counts was observed.

  • The cultural grounds of laver has been surveyed using SPOT-5 satellite images to calculate the facilities of laver cultivation area in the coastal waters of Korea 10m resolution multispectral images of SPOT-5 are adopted for the south area of Daebu Island, Hwaseong city to develop an automatic detection approach of laver nets that consists of the following: band difference technique, canny edge detector and morphological analysis. The satellite-based facilities number was relatively high as compared with the licensed number in 2005, 676,749 chaek and 572,745 chaek(柵, unit of measure for laver farm), respectively. The data could be applied to achieve a good harvest for laver seaweed growers and to control its national production keeping a stable market price for the government body.

A Study on the Consumption Patterns of Soybean curd and Processed Soybean Products of Residents in the Kwangwon Area of Korea (강원지역 주민들의 두부 및 대두가공품 이용실태)

  • This study was carried out to investigate the frequency of use, knowledge, purchasing, and degree of perception of processed soybean by residents in the Kwangwon area of Korea. The frequency of use of soybean curd was once per 4∼6 days(37.9%), once per 2∼3 days(31.9%), once per ten days(25.3%) and everyday(4.9%). The degrees of knowledge about soybean curd were a little(56.0%), interest(16.5%), much(14.8%) and no interest(12.7%). 73.9% of respondents had no experience of preparation soybean curd. The frequency of places for the intake of soybean curd were home(83.5%), restaurant(8.8%), tofu restaurant(5.6%) and the others(2.1%). The frequency of places for purchasing of soybean curd were supermarket(59.5%), market(25.0%), the others(9.9%) and department store(5.6%). The degrees of perception of soybean curd types were soybean curd(100%), uncurdled soybean curd(93.7%), soft soybean curd(64.7%), bun soybean curd(15.7%) and seaweed soybean curd(5.2%). The experience on the use of processed soybean of the respondents was highest for soybean curd(98.6%), followed by bean sprouts, soybean paste, soy sauce, soybean oil, soy flour, residue of soybean curd, soy milk, in that order. The most frequent intake experiences of soybean processed products of the subjects were beanpaste pot stew(96.8%), followed by tofu pot stew, tofu and kimchi pot stew, uncurdled bean curd pot stew, bean mixed rice, grilled tofu, in that order.

A Study on the Model for Determining Cultivation Quantities of the Abalone (전복 양성물량 결정모형에 관한 연구)

  • Abalone aquacultural industry has been growing rapidly in a short period of time, however, there has been just a few researches related to the forecast of the supply, demand and price. Even the models developed by these researches have problems of low compatibility and reliability. To resolve these problem, a biological supply model needs to be developed that maintains time difference and linkage among the quantity of juvenile abalone into the plots, quantity of cultivation, quantity of shipment, and at the same time juvenile abalone is transplanted into the plot, matured and shipped by the expected market price. This study focus on the development of the model for determining quantity of the abalone cultivation, which is the core part of the entire abalone demand and supply model. Key factors that affect cultivation quantity were identified and verified the causal relationship among these variables and cultivation quantity. It turned out that the quantity of juvenile abalone transplanted and the relative price(the abalone price of the place of produce divided by the brown seaweed price) have a great influence on the cultivation quantity. Also, the similarity of the variation for the cultivation quantity of the observed value and the forecasted value implies that the model developed in this study has a high compatibility.

Prevalence and Frequency of Food-borne Pathogens on Unprocessed Agricultural and Marine Products (비가공 농수산 식품소재의 미생물 오염분석)

  • The aim of this study was to investigate the prevalence and frequency of food-borne pathogens in unprocessed Products such as grains, tubers, vegetables, and seaweeds. Three hundred and twenty seven samples were purchased from the retail market and the supermarket in the Kyonggi-do and Seoul areas, and washed with running tap water for 4 minutes. The total aerobic bacteria count was approximately 2 to 6 log CFU/g and the highest counts were 6 log CFU/g far lettuce and sesame leaf. The coliform count showed 1-5 log CFU/g and the highest counts were 4 log CFU/g for lettuce and carrot. Escherichia coli was detected in seven samples of white rice, sweet potato, lettuce, sesame leaf, and cabbage. Clostridium perfringens was detected in six samples of brown seaweed, laver, lettuce, and sweet potato. However, Bacillus cereus contamination was found in more than 30% of brown rice, carrot, sweet potato, lettuce and sesame leaf samples, and some of these showed contamination of more than 2.0 log CFU/g. Therefore, these results suggest that pretreatment with sanitizer to remove Bacillus cereus in such products is necessary.
