경북지역 대학생의 전통음식에 대한 태도(II) -전통음식에 대한 인지도, 세시풍습에 대한 태도 및 라이프스타일과의 관계- (A study on the attitudes of the university students in the Kyung-book area on the traditional foods(II) -the recognition, the seasonal customs and the life style-)

  • This paper is intended to find out how much the university students in the Kyung-book area recognize Korean traditional foods and what their attitudes toward the seasonal manners and customs are, and to analyze the differences according to their life styles. The average recognition of 27 kinds of Korean traditional foods is found to be 2.17 in general, 2.00 with male students and 2.34 with female students, which figures are thought to be low. The recognition of female students is significantly higher than that of male students. 94.4% of the subjects for this study wish traditional foods to be handed down. The reasons for handing them don are Korean unique culture, which is the highest (78.4%), good nutrition(7.2%) and good taste(14.5%). No student points to low price as a reason, which shows that university students think traditional foods more expensive than western foods. There is a positive correlation(p<0.05) between the evaluations and uses of traditional foods, so those with high evaluations of them use them more. The recognition of traditional foods is positively correlated to the attitudes toward the seasonal manners and customs, monthly family income(p<0.01) and mothers' educational levels(p<0.05). Based on life styles, the individuality-centered type shows the highest recognition of traditional foods(2.39), while the leisure-valuing type shows the lowest(2.03). There is a significant difference between the two.

자연산과 양식산 동자개(Pseudobagrus fulvidraco)의 시기에 따른 영양성분 변화 (Seasonal Variation in the Nutritional Composition of the Muscle of Wild and Cultured Korean Bullhead Pseudobagrus fulvidraco)

  • We evaluated seasonal variations in the proximate, fatty acid and total amino acid compositions and mineral content of the muscles of wild and cultured Korean bullhead Pseudobagrus fulvidraco. The wild and cultured samples showed a significantly higher proportion of crude lipids than other components. Crude lipid content was highest in May in wild fish but lowest in May in cultured fish. We found no significant difference between wild and cultured samples in terms of fatty acid and total amino acid compositions and mineral content. The levels of saturated fatty acids (SFA) and polyunsaturated fatty acids (PUFA) as well as n-6/n-3, were higher in the muscles of wild fish compared with those of cultured fish. However, monounsaturated fatty acids (MUFA) levels were higher in cultured fish. Both wild and cultured fish were good sources of eicosapentaenoic acid (EPA) and docosa hexaenoic acid (DHA). In wild fish, the Mg and Zn contents were highest in August, while the Ca, P, Na, K, Fe, and Cu contents were highest in May. However, the mineral content of the cultured fish did not exhibit significant seasonal variation.

온도 및 계절요인에 따른 포장 김치의 기체조성 변화 (Gas Composition within Kimchi Package as Influenced by Temperature and Seasonal Factor)

  • 김치발효중 기체조성변화가 숙성정도를 감지할 수 있는지 알아보기 위하여 배추김치를 플라스틱 용기에 일정량 충진하여 밀봉한 후 저장하면서 포장내 기체조성 변화를 조사한 결과, 김치발효중 포장내 기체조성은 $CO_2$ 발생으로 인하여 계속적으로 변화하였다. 김치 발효온도와는 무관하게 $O_2$ 농도는 지수적으로 감소하고 $CO_2$ 농도는 매우 특징적인 2단계 증가양상을 나타내었다. $CO_2$ 농도는 2차 단계에서 다시 증가함에 따라 김치의 pH는 비례적으로 감소하였다. 저장 온도와 계절별 원료 배추에 따라 김치 포장내 $CO_2$ 농도변화 속도가 다르며 최종 농도에 있어서도 상당한 차이를 나타내었다. 고온에서 발효된 김치일수록 포장내 $CO_2$ 농도가 더 높은 경향을 보였고 여름배추 보다 겨울이나 봄 배추로 제조한 김치에서 포장내 $CO_2$ 농도 및 발생속도가 더 높게 나타났다. 이러한 연구결과를 바탕으로 포장내 기체조성 변화를 이용한 김치의 숙성도 감지 가능성을 확인할 수 있었다.

Seasonal Variation of Edible Portion Yield and Coefficient of Fatness of Pacific Oyster (Crassostrea gigas) in Kamak Bay, Korea

  • In order to determined the appropriate processing season of Pacific oyster (Crassostrea gigas), 30 individuals cultured in Kamak Bay on the southern coast of Korea were taken bimonthly 7 times a year, and seasonal variation of edible portion weight, edible portion yield and coefficient of fatness were investigated. There were close relationships between edible portion weight (X) and total weight (Y) and between coefficient of fatness (X) and edible portion yield (Y), which were expressed in regression lines, i.e. Y=0.2709X-1.9094 (r=0.9254) and Y=44.0596X+ 15.1127 (r=0.8485), respectively. From the results of seasonal variation of edible portion weight, yield and coefficient of fatness, the appropriate processing season of raw Pacific oyster was between winter and spring, that is, between December and following April the next year.

Seasonal and diel abundance and feeding patterns of Chaoborus flavicans in Sang-Chun reservoir

  • To document the basic ecological aspects of Chaoborus species, which has never been reported in Korea, we attempted to identify the species, to monitor seasonal and vertical dynamics, and to elucidate trophic relations of the species in Sang-Chun reservoir. Using morphological characteristics, we identified the collected samples as C. flavicans. Also, we compared the distribution of C. flavicans, Daphnia rosea and chlorophyll a to observed seasonal dynamics. The increase of C. flavicans was observed 1-2 weeks after the increase of D. rosea. Survey of diel vertica migration patterns in the summer season showed that C. flavicans were in hypolimnion at daytime, but moved to the epilimnion at night. Finally, to determine trophic relationships in Sang-Chun reservoir, additional studies on the food web were undertaken by stable isotope analysis. Chaoborus flavicans I-II instars appear to be filter feeders based on carbon isotope values. Trophic levels of C. flavicans III-IV instars were shown to be higher than other zooplankto based on nitrogen isotope values.

도시지역 성인의 농촌치유관광 음식 특성 선호도 조사 (Survey on Food Characteristic Preferences for Rural Healing Tourism for Adults in Urban Areas)

  • This study was conducted to investigate food needs for dining out in the context of rural healing tourism by surveying food preference characteristics. A total of 600 adults in an urban area completed an online questionnaire on food characteristics for rural healing tourism. Regarding the purpose of rural healing tourism, 61.2% of respondents answered 'relaxation' while 6.3% answered 'promotion of health'. Exactly 66.3% of respondents selected Korean foods (rice) as the preferable food type for dining out in the context of rural healing tourism. Respondents considered 'regionality' and 'ingredient' as more important among food quality characteristics, whereas 'professionality' was less important. Females perceived 'nutrition' and 'cooking' as more important than males. Among food characteristics of professionality, regionality, and traditionality, respondents most preferred 'using regional specialty food'. Preference for 'using traditional food' significantly increased with subject's age. Respondents rated 'balanced nutrition' most highly among food characteristics of health and nutrition. 'Seasonal food' was the most preferred food characteristic among cooking and ingredients. Females showed higher interest in nutrition, cooking, and ingredients and higher preferences related to food characteristics of nutrition, cooking, and ingredients than males. In conclusion, Korean foods (rice) or Korean full course menu items using local specialty foods or seasonal foods with balanced nutrition are needed for dining out in the context of rural healing tourism.

Effect of seasonal changes on nutritional status and biochemical parameters in Turkish older adults

  • BACKGROUND/OBJECTIVES: Available data suggest that seasonal changes may influence the nutritional status and overall health of elderly individuals. Therefore, this study was conducted to investigate the effects of seasonal changes and related factors on energy and nutrient intake of older adults. SUBJECTS/METHODS: Individuals aged 65 years or over were prospectively enrolled in this single-center study (male: 11, female: 20). Data were collected between May 2013 and February 2014 during winter, spring, summer and autumn. Food consumption and biochemical parameters were taken during each season to assess the seasonal nutrition status of the elderly. Upon analysis of biochemical parameters (retinol, vitamin D and vitamin C), an high-performance liquid chromatography device was utilized whereas an Immulite 2000 device was utilized during analysis of serum folic acid and parathyroid hormone. RESULTS: Fruit, fat, egg and bread consumption varied seasonally in males and females (P < 0.05). During winter, daily energy intake was found to be greater than in other seasons in males (557 kcal) and females (330 kcal) (P < 0.05). Additionally, carbohydrates, vegetable protein, n-3 fatty acid and sodium intake increased in winter, while the n-6/n-3 ratio increased in summer among males (P < 0.05). Dietary fiber and sodium intake in winter, vitamin C, iron and zinc intake in spring, and cholesterol, retinol, vitamin D and niacin intake in autumn were found to be higher in females when compared to other seasons (P < 0.05). Serum parathyroid hormone level was higher in winter, and vitamin D level was higher in autumn in both genders (P < 0.05). In males, blood folic acid level was higher in winter, while vitamin C level was higher in females, and there was no seasonal variation in retinol concentration (P < 0.05). CONCLUSION: Food consumption and biochemical parameters showed significant seasonal variations in older adults. It is not clear if nutrition plans in older adults will benefit from consideration of seasonal changes in eating habits.

Consumption and Digestion of Forages by Male Rusa (Cervus timorensis russa) Deer-the Effects of Castration and Season

  • In a split-unit design, 12 Javan rusa (Cervus timorensis russa) stags (6 castrated and 6 entire) were used to investigate seasonal (winter, spring and summer) effects on intake, digestibility of food constituents, volatile fatty acid profile, and nitrogen retention, when given lucerne (Medicago sativa) or rhodes grass (Chloris guyana) hays. Entire stags ate 9% more dry matter (DM) than castrates (p<0.05). Both castrated and entire stags exhibited seasonal changes in DM intake, these being higher (p<0.05) in winter (62.3 g/kg $W^{0.75}$) than spring (56.9 g/kg $W^{0.75}$) or summer (55.3 g/kg $W^{0.75}$). Intakes of lucerne hay (211 g protein/kg DM) were significantly higher than of rhodes grass hay (49 g protein/kg DM) in all seasons (p<0.05). Digestibilities of DM (0.58), neutral detergent fibre (0.59) and acid detergent fibre (0.47) were similar between castrates and entires. DM digestibility was higher (p<0.0001) for lucerne (0.66) than rhodes grass (0.55), and was higher (p<0.05) in winter (0.60) than spring (0.58) or summer (0.57). The ruminal acetate concentrations were higher (p<0.001) in spring than summer (78 and 73 molar % respectively). Apparent digestibility of protein was significantly less (p<0.0001) for rhodes grass (0.37) than lucerne (0.75). N retention was positive for lucerne (15.2 g/d) but negative for rhodes grass (-2.8 g/d) (p<0.0001), and was higher (p<0.001) in summer (12.0 g/d) than spring (4.3 g/d) or winter (2.4 g/d). The tropical rusa deer exhibits seasonal variations in feed intake, food constituent digestibilities, VFA profile and N retention. Castration did not alter these traits. The results do not support the view that rusa deer can thrive on low-quality pastures. The productivity and commercial exploitation of rusa deer could be optimised if they are given high-protein feed during spring and summer.

  • A dietary survey of young childern from one to six-year old, was conducted in summer and in winter, in Yonggin-gun, Kyunggi-do, to survey the differences in food and nutrient intake between a one day and a three day term, and between the winter and the summer season, in an attempt to provide a basis for the development of adequate dietary survey methodology. A total of 65 children originally were surveyed from July 3 to 11, 1981. However, since 9 of the 65 subjects moved away from the original addresses, 54 subjects were available for the winter-term survey, which was conducted from January 15 to 23, 1982. Among a total of 13 foods, intake of cereals (p<0.001), vegetables (p<0.05), beverage and ice candies (p<0.05) were significant in affecting the daily difference : one day vs. three days. Intakes of energy (p<0.05) and carbohydrate (p<0.05) were also significant in affecting daily difference. Among a total of 13 foods, intake of eggs, milk and milk products, sea-weeds, vegetables, cereals, potatoes, fat and oils, were significant in affecting seasonal difference : summer vs. winter. Intake of fat and ascorbic acid were also significant in affceting seasonal difference.

심층면접을 통한 충북지역 종가(宗家) 음식문화 특성 연구 (Specialized Research on Food Culture of Main Family in Chung-Buk through In-Depth Interview)

  • This research's main objective was to analyze the special qualities of food culture of the Main Family in Chung-Buk through a case study on the diversified types of meals that the Main Family cooked, such as courtesy food, normal food, and seasonal food. The research identifies traditional ingredients of specialties from Chung-Buk through old literature. According to "Sejongsillokjiriji", there are a myriad of ingredients:, including jujube, ginseng, pine mushroom, manna lichen, persimmon, mandarin fish, crab, sweetfish, lacquer, honey, and terrapin, which represent Chung-Buk's unique ingredients. Another reliable source, "Banchandungsok", does not provide a detailed list of traditional foods, but rather a simple list. The majority of food from Chung-Buk, in "Banchandungsok", consist of side dishes like kimchi and salt greens. Eventually, salt greens became diversified. As Chung-Buk is a landlocked province, people often used dried pollack. Kimchi and raw coaker were frequently used as well, and rice cakes encompassed multiple ingredients such as: jujube, mushroom, pine nut, and, dried persimmon. There were distinct differences in the diversity of food and amount of dishes used by the Main Families of Chung-Buk dependent on the ingredients and wealth of each Main Family. Chung-Buk has a landscape full of mountains, so potatoes were abundant and used to make potato Dasik. When cooking process was completed, people placed kelp on to the finished product. Seasonal foods were considered very important, especially on special occasions such as Backjoong, which was a day dedicated to laborers. These foodsprovided a good opportunity for the community to build stronger bonds by sharing rice cake and Yukgaejang with other members of the community. It is apparent that "Jeobbingac" culture, or guest culture, flourished since people in Chung-Buk are traditionally taught to leave spare food for the guest at all times.
