This study was carried out to investigate the effects of freeze-dried garlic powder (FDGP) on the lipid metabolism in rats fed a high fat-cholesterol (HFC) diet for 4 weeks to induce hyperlipidemia. The rats were divided into the following four experimental groups: normal diet group (NC), HFC diet group (HFC), HFC+FDGP 5 mg/100 g body weight (BW) group (FGT-1), and HFC+FDGP 15 mg/100 g BW group (FGT-2). Body weight gains and food efficiency ratios were significantly lower in the FGT groups compared to the HFC group, and the food intake was not significantly different in all experimental groups. Serum total lipid, triglyceride, and total cholesterol levels were significantly lower in the FGT groups compared to the HFC group. Total lipid content of the FGT-2 group was reduced by about 9% and 12% compared to the FGT-1 group and HFC group, respectively. The FGT groups also showed about 10% reductions low density lipoprotein (LDL)-cholesterol, atherogenic index (AI), and cardiac risk factor (CRF) compared to the HFC group. Liver function index (alkaline phosphatase, aspartate aminotransferase, and alanine aminotransferase) and lipid components were significantly lower in the FGT groups compared to the HFC group. Thiobarbituric acid reactive substances content of serum and liver tissue was reduced in the FGT groups compared to the HFC group, and was lower in the FGT-2 group compared to the FGT-1 group in serum. Antioxidant activities in serum and liver tissue were in the order of FGT-2> FGT-1> HFC group, significantly. In conclusion, FDGP effectively reduced the lipid components of serum and liver tissue. Feeding FDGP did not increase high density lipoprotein-cholesterol, but reduced LDL-cholesterol content, AI and CRF, especially. This shows that FDGP, will be effective in preventing and improving cardiovascular diseases such as arteriosclerosis and hyperlipidemia.
This experiment was conducted to find the day and night temperature combination and the light-emitting diodes (LEDs) on the most effective globe coloration and growth of Chamecereus silvestrii f. variegata 'Hee-Mang'. The $L^*$value, $a^*$value and $b^*$value were all significant difference in the yellow globe color expression in the day and night temperature combination. Especially, the bright yellow color and visual value were the highest in the temperature combination, the day temperature of $20^{\circ}C$ and night temperature of $20^{\circ}C$. Globe color quality was lowered from the day temperature of $25^{\circ}C$ and night temperatures of $5^{\circ}C$ and $10^{\circ}C$ combination. In light-emitting diodes (LEDs) treatments, $a^*$value and $b^*$value are significant difference. A unique beautiful yellow coloration and globe quality were maintained the $a^*$value of +5.23, $b^*$value of +39.9 in a red LED. The optimum temperature range and light-emitting diodes (LEDs) on the globe color expression were the most effective the day temperature of 200e and night temperature of $20^{\circ}C$ and a red LED. In addition, the outer globe color quality of Chamecereus silvestrii f. variegata cultivation, rather than the light environment improvement is better in a proper temperature environment to keep. Especially, a unique globe color expression of yellow lines was most effective in a red LED.
The seasonal variation of catch and the fishing ground formation of anchovy caught by gill net are studied by using the data for 14 years, 1969 to 1982, published by the Fisheries Research and Development Agency of Korea. The main fishing season of anchovy by gill net can be devised into two seasons: spring and autumn. The former begins early in spring, marks peak in May with the monthly mean catch of 3,000 $\frac{M}{T}$ and ends in summer. The latter begins early in autumn, marks peak in October with the monthly mean catch of 1,500$\frac{M}{T}$ and ends in winter. The fishing ground begins to be formed in the southern waters of Korea with the begining of spring fishing season, and it is extended all over the south-eastern waters from spring to summer and it is converged to the coastal areas from autumn to winter. From the calculation of correlationship between adjacent fishing sections, the fishing ground can be devided into three areas; the northern area of $37^{\circ}N$, the southern area of $35^{\circ}N$ and the area between $35^{\circ}N\;and\;37^{\circ}N$. In the northern area of $37^{\circ}N$, monthly centers of the fishing ground are located in the adjacent aea area of Sockcho-Jumunjin district in the whole year, and its annual mean variance shows about 8 miles in the latitudinal direction and 10 miles in the longitudinal direction. In the area between $35^{\circ}N\;and\;37^{\circ}N$, monthly centers are located in the adjacent sea area of Kijang-Kuryongpo district, and the variance shows about 10 miles in the longitudinal direction and 20 miles in the latitudinal direction. In the southern area of $35^{\circ}N$, monthly centers are located in the open sea in spring and summer, and are conversed to the coastal area in autumn and winter, and the variance shows 8 miles in the latitudinal direction and 35 miles in the longitudinal direction. Water temperature and salinity at the fishing ground where the anchovy gill net was effectively operated are estimated from 14 to $20^{\circ}C$ and from 33.0 to $34.0\%0$ respectively.

Food waste in school foodservices is an important factor in managing expense or evaluating the acceptance of served meals and a serious environmental hazard factor in all countries. In this study, the perception and attitude towards food waste reduction and the recognition of environmental pollution of students from elementary school foodservices in Busan, Korea were investigated. The questionnaire was responded by 519 students (boy: 255, girl: 264) in the third and sixth grades. School lunch programs were proved to contribute to the improvement of students' food intake habits. The perception and attitude towards food waste reduction of the third grade students (3.61/3.73) were significantly higher than those of the sixth grade students (3.46/3.59) (P<0.01). Food waste education made a significant impact on the perception and attitude on food waste (p<0.01). When dislike food was supplied the students having the higher perception and attitude towards food waste reduction ate it more than those having the lower perception and attitude. The major reason for plate waste was shown to be influenced by the taste and amount of foods supplied in school lunch programs. Most of students recognized that food waste pollution (4.22) was one of the severest problems among the environmental pollutions, followed by air (4.13), tap water (4.09) soil (3.78), noise (3.55) pollution. The students separated the garbage in the house (72.6%) better than in school and the outside (55.2%). The perception of food waste was positively correlated with the attitude toward reduction of food waste and the recognition of environmental pollution (p<0.01). The attitude toward reduction of food waste was also positively correlated with meal quantity taken (p<0.01).
Artificial acid rain(pH2.0, 3.0, 4.0 and 5.0) was treated on the seeded pots of 4 species to examine its effects on germination, leaf injury and seedling growth. Aluminum ammonium sulfate solution (0.5, 1.0 and 2.5mM) and artificial acid rain (pH3.0, 4.0 and 5.0) were treated on the seeded germinators of 3 species to examine its effects on germination and radicle growth. Artificial acid rain was prepared by diluting sulfuric acid with ground water and ground water(pH6.5) was used as control. Artificial acid rain was sprayed to seeded pots three times per week. About 5mm of artificial acid rain was treated each time from early April to early October, 1991. Germination, seedling establishment, radicle growth, leaf injury and seedling growth were measured and compared among the treatments. The results were summarized as follows 1. Germination, seedling establishment rate of Pinus densiflora were highest on the pH5.0 pot whereas those of Ailanthus altissima was highest on the control pot, and those of Magnolia sieboldii showed the highest value on the pH3.0 pot. 2. The differences in seedling height of Pinus densiflora and Pinus rigida were significant among the treatment levels of acid rain, whereas those of Magnolia sieboldii and Ailanthus altissima were not significant. Seedling heights of Pinus densiflora and Pinus rigida were highest on the pH3.0 pot, and that of Magnolia sieboldii was highest on the pH4.0 pot, and that of Ailanthus altissima was highest on the control pot. 3. Seedling dry weights of Pinus densiflora. Pinus rigida, and Ailanthus altissima differed significantly among the treatments, but that of Magnolia sieboldii did not differ. Highest seedling dry weights of Magnolia sieboldii and Ailanthus altissima were observed on the pH4.0 pot, and that of Pinus densiflora was observed on the pH3.0 pot, and that of Pinus rigida was observed on the pH5.0 pot. 4. With decrease of pH value of artificial acid rain, the number of injured needle and injured individual tended to be increased. 5. The differences in effects of soil acidity were highly significant among the treatments for all species. 6. Radicle growth of Pinus densiflora differed significantly among pH levels and aluminum concentrations.

Shiitake mushroom (SM; Lentinus edodes) are cultivated and consumed in many Asian countries including Vietnam, China, Japan, Korea, and Thailand. In Asia, SM are mainly dried and used as flavoring. The aim of this study was to compare the effects of SM created with different drying processes, such as oven-dried and sun-dried, on the antioxidative and antigenotoxic effects. Raw and dried SM were extracted with acetone, ethanol, methanol, and hot water. The antioxidant effects of SM were evaluated by determining total phenolic content, DPPH radical scavenging activity (RSA), an ORAC assay, and a cellular antioxidant capacity (CAC) assay. The inhibitory effect of SM on oxidative stress-induced DNA damage in human leukocytes was evaluated by a Comet assay. The total phenolic content of raw SM extracted with methanol and of that extracted with water were significantly higher than the dried SM. Among the water extracts, the $IC_{50}$ for DPPH RSA of raw and sun-dried SM were significantly higher than that of oven-dried SM. Sun-dried SM showed the most potent ORAC value at 50 g/mL. The CAC against $AAPH^-$ induced oxidative stress in HepG2 cells, and $H_2O_2$ induced DNA damage were effectively protected against by all SM extracts. These results suggest that unprocessed SM are the best antioxidants, and that the sun-dried method would be the best option to use in terms of antioxidant activity and the antigenotoxic effect.

This study was performed to develop menu satisfaction index in Business & Industry (B&I) food service and to survey customer's menu satisfaction using the index. The menu satisfaction index included 16 items with Likert 5 point. Cronbach's alpha to assess the internal reliability of the developed scales was 0.8917, which indicated highly reliable. Construct validity was assessed by principal components analysis and then four factors explaining 65.964% of the total variance were found. Among the 15 items of menu satisfaction, the average scores of all items were above 3.0 out of 5. As a result of analysis on menu satisfaction factors, 'propriety of food temperature' (3.52 out of 5) was the highest consideration followed by 'sufficiency of format' (3.46), 'excellence in food' (3.35) and 'well-being orientation' (3.31). It could be said that customer's perception on the menu quality was very positive. Four factors were correlated with overall menu satisfaction positively. Especially, 'excellence in food', and 'well-being orientation' and 'sufficiency of format' affected significantly on overall menu satisfaction. It concluded that customers were satisfied with portion size, temperature, price but their needs for taste and health/nutrition-related service would be increased. The menu satisfaction developed in this study should be applied to other B & I food service operation by type.
This investigation was carried out to evaluate the effect of Transcutaneous Electric Nerve Stimulation (TENS) to experimentally induced masticatory muscle pain and muscular fatigue. Twenty-nine healthy volunteers (18 men and 11 women, aged $26.1{\pm}4.7$ years) without past history or present symptoms of temporomandibular disorders were participated in this study. All of the subjects were randomly assigned to experimental group and control group, after at least 3 days interval, two groups were reassigned conversely. Subjects assigned to experimental group were received TENS and others assigned to control group were received sham-TENS therapy for 45 minutes, respectively. The changes of Visual Analogue Scale (VAS), Pressure Pain Threshold (PPT), and EMG power spectrum were measured on the masseter muscle both before and after sustained fatiguing contraction in each group. The major findings of this study are as follows : 1. PPTs and median frequencies of masseter muscles were significantly decreased after sustained isometric contraction resulting in muscular fatigue. 2. In experimental group received TENS therapy, PPTs measured both before and after occurrence of experimentally induced muscular fatigue were significantly increased. 3. In experimental group received TENS therapy, the changes of PPTs during sustained isometric contraction resulting in muscular fatigue were significantly decreased. 4. In experimental group received TENS therapy, VAS measured after occurrence of experimentally induced muscular fatigue was significantly decreased. 5. Although there were not statistical significances, endurance time was increased in experimental group received TENS therapy and decreased in control group received sham-TENS therapy. 6. In experimental group received TENS therapy, the changes of median frequencies were the less decreased and the slope of median frequency shift was the more increased during endurance time than in control group, however, there were not statistical significances.

The protective effects of ethanol extracts from 5 seaweeds on the mutagenic and cytotoxic damage were evaluated. They were separately extracted using ethanol from dried samples at room temperature, and freeze-dried. The inhibition effects on the mutagenicity in Salmonella assay by Ames test and cancer cell inhibitory effect in HeLa cell, MCF-7 cell and SNU -638 cell by MTT assay were assayed. Seaweed fusiforme, sea tangle and green laver showed strong inhibitory effect against 2-nitrofluorene, sodium azide- or 2-anthramine-induced mutagenicities in Salmonella Typhimurium TA 98 and TA 100 at the level of 2.5 mg ethanol extract per plate. Cancer cell inhibitory effect was shown with all of the seaweed extracts. Green laver, sea mustard, sea tangle and seaweed fusiforme showed strong cytotoxicity against HeLa and MCF-7 cells, with inhibiting by $92\~93\%$ and $89\~92\%$, respectively. These data show that 5 seaweeds tested in this study might be potent functional foods for cancer prevention, and consumption of these seaweeds in adequate amount is recommended.

Sanguisorba officinalis L. has been used as a traditional remedy for arthritis, neuralgia, diarrhea, vomiting, gastric ulcer and gastro-intestinal disorders. This study was performed to investigate the protective effects of ethylacetate fraction of Sanguisorba officinalis L. ethanol extract (SOE) on the gastric mucosal damage and gastric ulcer induced by HCI-ethanol, indomethacin, Shay-ligation method, restraint and water-immersion stress, and cysteamine in rats. The experiment animals were divided into four groups: a negative control group (CON), positive control group (cimetidine 100 mg/kg-CMT or omeprazol 100 mg/kg administrated group-OMT), SOE 200 mg/kg administrated group (SOL) and SOE 400 mg/kg administrated group (SOH), respectively. Rats were given an oral or intraduodenal administration of SOE, and all SOE treatment groups compared with the CON significantly inhibited HCI-ethanol-induced acute gastritis and indomethacin-induced gastric ulcers in dose-dependent manner, of which effects were lower in a positive control drug (CMT). The inhibition rates ($\%$) on the acute gastritis induced by HCI-ethanol and the gastric ulcers induced by indomethacin in rats, 17.66$\%$ and 48.28$\%$ in SOL, 21.71$\%$, and 51.08$\%$ in SOH, and 47.26$\%$ and 58.26$\%$ in CMT compared with CON, respectively, In pylorus ligated rats, the groups of SOE showed decreases in the volume of gastric secretion and acid output. However, no significant differences were observed in the pepsin activity between treated groups . In addition, SOH also depressed gastric ulcers induced by restraint and water-immersion stress and duodenal ulcers induced by cysteamine. These results suggest that Sanguisorba officinalis L. has remarkable antigastric ulcer effects and could be developed as a new antigastric ulcer agents.
