This study was intended to provide basic information for nutrition education and meal planning by evaluating the nutritional status, food habits, and food preference of elementary school children with school lunch program and without school lunch program(lunch box). The subjects of this study consisted of 266 elementary school children aged from 10 to 12(136 male, 130 female) in Ulsan the area. The survey was conducted by questionnaires and data were analyzed by SPSS program. The average body weight was $38.4{\pm}6.9kg$ for boys and $36.8{\pm}7.4kg$ for girls and the average heights was $141.3{\pm}5.6cm$ for boys and $141.2{\pm}5.7cm$ for girls. These values were lower than that of the Korean reference. 56.0% of the subjects skip breakfast 1 to 2 times a week, 58.2% of the subjects had prejudice for special food, such as bean, anchovy, and pork. The food habit scores of the subjects was divided into poor(11.7%), fair(63.5%), and good(24.8%). The average score of girl's was significantly(p<150) higher than that of the boy's. Compare to 1/3 of RDA for children, the average intake of nutrients provided lower amounts of all nutrients. Therefore Calcium and vitamin A intakes were especially lower than the others. Therefore the importance of milk and green vegetables must be emphsized to them through nutrition education. Children preferred ssalbab to jabkogbab and liked beef-based soup, and baechu kimchi. There were significant differences in food habit scores with gender, parent's education, and exercise. The results of this study indicate that nutrition education and menu planning program should be applied to elementary school children who are served by the school lunch program.
This study is intended to research workers' health, diet and the demand of nutrition education service in Seoul and Gyeonggi-do province. We implemented the survey from September 2012 through August 2013, and analyzed the data from 589 workers' questionnaires out of 890. For the analysis of the compiled data, we utilized the SPSS version 18.0 statistical package program. The study showed that majority of the workers participated in the survey consisted of 447 male (75.9%) and 142 female (24.1%). BMI showed that these men were overweight ($24.5{\pm}2.72$) and women were normal weight ($22.2{\pm}2.70$). Participants often diagnosed with hypertension or hyperlipidemia. In terms of health status, 34.5% answered satisfactory, the most concerned illness was high blood pressure, and the bad eating habits were often associated with general overeating and excessive intake of salt. 65.5% of participants had a meal three times per day. 49.4% of male participants had a meal less than 15 minutes and 66.2% of female participants had a meal between 15 and 30 minutes. The average of workers who needed to nutrition education is 3.74+0.85. The most desired way of learning was through counseling (36.7%), with overweight and weight management identified as the most interested topics. A relatively high portion (80%) passed the nutrition knowledge assessment test. According to the survey the highest rate of full-time employment is 85.2% which showed in small work places (the number of people on meal plan was 100~300), however the lowest rate of full-time employment showed 70.0% in large workplaces (the number of people on meal plan was within 1,000).
This study was intended to provide basic data of nutrition education to a prevention of obesity and living patterns of elementary school students. Through the measurment of the actual obesity rate of children for students who were in the fifth and sixth grades of elementary school as well as their mothers, and by analyzing obesity-related factors. Children have started to have the characteristics obesity and obesity problems. 1. There were total 234 children including 133 boys (56.8%) and 101 girls (43.2%) for the study. There were 80 children in the fifth grade (34.2%) and 154 children in the sixth grade (65.8%). 2. Among the subjects 20.1% were obese. By gender, the obesity rate of boys (27.1%) was higher than that of girls (l0.9%)(p<0.01). By grade, children in the fifth grade (26.3%) had higher obesity rate than children in the sixth grade (l6.9%)(p<0.05). 3. In terms of the educational level of parents, the obesity rate of children of parents who received university and/or higher education was 27.5% (p<0.05). 44.1% of parents answered ‘I almost never give snack’s’(p<0.01). 4. There was 32.8% for an irregular quantity of meal. There was no obese child who under-ate (p<0.05). In terms of impulse eating, ‘I eat.’ and ‘I don't eat.’ were 24.4% and 25.9% respectively. The obesity rate of the case of ‘I eat only food I like.’ was 10.6% (p<0.05). In terms of the obesity rate based on the daily average meal frequency, there was the highest rate of 26.1% for I average meal frequency per day, 13.0% for 2 daily average meal frequency, and 7.4% for over 3 average meal frequency per day (p<0.05). For a degree of a physical activity, the group of active physical activity (p<0.05) and the group which liked the physical exercise showed a lower obesity rate (p<0.001). The obesity rate of children who had regular exercise was 11.8%. It was lower than the obesity rate (24.8%) of children who didn't exercise (p<0.01). The higher exercise frequency per week was, the lower the obesity rate was(p<0.01). In terms of the exercise time, there was 8.3% for over 60 minutes and 28.9% for less 15 minutes. The group which had the long exercise time showed a lower obesity rate(p<0.05). As the result, the education for obesity must enable students to recognize the warning signs for obesity and control their own weight with proper living patterns, by modifying behaviors considering the degree of obesity. Obesity must be controlled by the prevention and education connected with the family for all students as one of the school health programs. There must be also the development of a program through individual consultation considering the degree of obesity.
This study on satisfaction with school food service (FS) programs was conducted with 485 middle school students and 515 high school students based on FS management type. There were four types of FS management: independent-conventional (IC), independent-commissary (ICM), contract-conventional (CC), and contract-delivery (CD). About seventy percent of the students expressed satisfaction with the food quantity of the school lunches. But one third of the students, who felt the quantity was insufficient, cited the small size of the rice serving. Many high school students cited the small size of the side dishes as well as the rice serving. It is suggested that the meal quantity should be determined in consideration of the students' physical development. The satisfaction with FS sanitation was lower than that with the meal quality, eating environment, and environment of dining room with respect to all four types of FS management, and was lowest in the CD. It is suggested that FS sanitation should be managed more thoroughly for the students' safety, and that the school FS Committee should carefully monitor the sanitary management of the contract FS companies by means of a well-designed and monitored management system. Most of middle and high school students expected good taste and a diversity of foods in their school lunches. Food taste should be improved, and various food materials and cooking methods should be used for balanced nutrition and greater student satisfaction, particularly in contract FS types (CC and CD).
Objectives: The purpose of the study was to investigate the correlation between health behaviors and experiences of oral diseases in Korean adolescents. Methods: This study used the results of the seventh, eighth, and ninth adolescent health behavior online survey which was completed by a self-administered questionnaire targeting 222,264 middle school and high school students in September, 2011, June, 2012, and from June to July, 2013. The questionnaire consisted of four questions of socio-economic characteristics of the subjects, three questions of health behaviors, and four questions of eating habits. Data were analyzed by SPSS 18.0 program. Results: Oral health knowledge and behaviors were closely correlated to smoking, alcohol drinking, and toothbrushing after meal. Liking for fruit, soda, snack, and vegetable had a significant influence on oral diseases. Smoking and alcohol drinking had a significant relation to oral disease prevalence rate. Conclusions: In Korea, the prevalence rate of oral diseases is still high in the adolescents. Therefore, continuous dental health education program is very important to decrease the oral disease morbidity. The incentive program for the adolescents will improve the concern for the oral health.
This study evaluated the quality of meals served by the elementary schools in Muan based on nutrient contents and food diversity. The contents, nutrient densities and nutrient adequacy ratios(NAR) of most nutrients were higher than those calculated from the Korean RDA. However, the content, nutrient density, and NAR of iron were lower than those calculated from the RDA for 10 to 12 year old girls. The content of sodium was somewhat high. The average number of different kinds of food and dishes per meal were 19.2 and 6.0, respectively. The more the number of dishes, the higher the NARs of calcium, calories, niacin, phosphorus and protein. However, the NAR of iron showed no correlation with the number of dishes. The meals belonging to the food group intake pattern containing fruits had more vitamin C and fiber, and less protein, lipid, and phosphorus than those belonging to the food group intake pattern not containing fruits. In conclusion, the quality of nutrition of meals served by school lunch program(SLP) was considered fairly good. However, the nutritionists should consider the iron for 10 to 12 year old girls and cut down the amount of sodium. In addition, unless the children prefer the foods served by SLP or adjust to the general aspects of SLP, SLP can't accomplish its purposes. Therefore, we suggest that nutritionists should survey children's food preference and satisfaction with the general aspects of SLP.
This study was conducted to investigate the influence of obesity stress on the eating behavior of elementary school students. Using a questionnaire, 300 students in the sixth grade from 2 schools in Kyunggi-do were surveyed (Boys: N=145, Girls: N=155). Data analysis was managed by SPSS software (version 13.0). The link between obesity stress and eating habits or behaviors was dependent on physical discomfort. There was also a large group of students experienced irregularity in their meal times during the day. Furthermore, there were significant differences in mealtime among boys under psychic stress caused by obesity. In the case of dairy intake during breakfast, the significant signs of obesity stress for were physical discomfort for boys and psychic stress for the girls. It was found for both boys and girls that more frequent midnight snacking decreased the efforts to overcome obesity stress. Therefore, a professional nutrition program that can educate school children must be implemented both in school and at home. In addition to overweight or obesity children, normal weight and underweight children can also benefit from this program that includes health counseling for weight and eating behaviors.
The effects of a nutritional education program for first grade middle school students were evaluated from August to December, 2006. The study subjects were 82 boys and 90 girls, residing in Gwangju, Korea. To assess the effects of the nutritional education program, pre- and post-questionnaires examining nutritional knowledge, dietary attitudes, and dietary habits were developed. Paired t-test and repeated measures ANOVA were used to evaluate the effects of the nutritional education program. In the general subject, the main after-school activities were studying, watching TV, and using computer (85.5%), and sports (9.3%), suggesting their low physical activity. Parents (46.5%) were indicated as the source of nutritional education rather than teachers (13.4%). Twenty-five percent of girl students had diet experience of skipping meals (54.6%), suggesting the need of proper nutritional education for adolescents' health care. In dietary attitudes, both genders showed some improvement of recognition after education. In the changes in dietary habits, both genders had a significant effect on 'three meals a day, eating breakfast, and regular meal' after education. After education, the rate of having breakfast everyday increased from 52.4% to 65.9% for boys and from 33.3%to 57.8% for girls. In the changes in nutritional knowledge, the appreciation of the importance of school meals increased in both genders from 50.6% to 80.8% after education. The nutritional knowledge, scores of regular eating and well-mannered eating increased in both genders regardless of the students' characteristics. The study results revealed that this education provided an important motivation to improve basic nutritional knowledge and dietary habit. It is recommended to develop systematic and various educational programs and learning materials tailored to subjects before nutritional education.
The purpose of This study is focused on the directions to improve the performance evaluation of cooks working in the primary school by searching for present job satisfaction and job description. Most of the employees' are women-cook and there were no man-cook in school feeding. This fact indicates that the foods which serving by school are not properly developed for the direction of taste and menu variations in the future. Most of married housewives were dissatisfied with long working hours, short break-time, dirty toilet, and other working conditions. And they were also complained of limited job performance in spite of their capacity and knowhow. In order to solve above-mentioned problems, School feeding is, needless to say, very important meal-program for the children and nations, therefore, The authorities concerned give much attention to solve their needs gradually. The nutrient intakes of elementary, middle and high school children whether participate the school milk program or not, were assessed by estimating meals provided for one month. The schools were selected at random all around the country, and were 52 and 32 schools which were participating and non-participating in the school milk supplying program, respectively. Overall, the students, were enrolled schools with participating in milk program, intake higher energy, protein (p<0.01), lipid, sugar, Ca(p<0.001), P (p<0.001), Fe, K, Vit A and cholesterol compared to those of students were enrolled schools of non-participating, statistical significantly. The calcium intake of students participating in school milk program (PMP) about 1.5 times higher than those of students in the schools of non-participating milk program (NPMP), especially. The calcium intake of student were $24{\sim}28%$ and $43%{\sim}51%$ of RDA in PNP and NPNP students, respectively. Therefore, the calcium intake quantities of students, were provided with the school lunch without milk, were low-end limit of RDA. Considering the school lunch with the Koreanstyle foods mostly, the milk supplying were solved this problem. Especially, the difference of the nutrients intake which were followed in the case PMP which will consider an average 15-20% food left, magnification of milk supplying program in schools may help more growth of children, so the expansion of milk supplying programs in the schools were demanded, urgently.
