  • Although adolescents' obesity prevalence increases recently in Korea due to Westernized dietary life, according to social and economic development, and physical activity decline, distorted body image and improper dietary habits are prevalent, because of excessive obsession with weight control, deriving from psychological impacts including appearance supremacy. This study conducted a survey on health oriented awareness and attitude related with dietary habits targeting adolescents, such as high school students and college students, younger than 24, from May 11 to May 29, 2015. In this study, 280 questionnaire copies were collected out of 300 distributed questionnaire copies, and used 269 copies as analysis data, except 11 copies of which responses were inadequate. The results of this study are as follows: First, the high school students showed higher dietary regularity than the college students. Especially, 95.5% of the college students showed very high irregularity of lunch, compared with just 4.5% of the high school students. Second, the adolescents showed distorted perceived body image in comparison with body mass index (BMI). As a result of examining BMI relationship, according to one's own perception on body type, 28.6% of the respondents perceived themselves fat, despite normal BMI, and 40.4% of the respondents perceived themselves normal, despite low BMI. Third, health behavior activities level was higher, as the regularity of breakfast (B=1.093), lunch, (B=0.650), and dinner (B=0.765) was higher. The variable affecting the most ( ${\beta}=0.372$) was the regularity of breakfast. As interest in weight control was higher, health behavior activities was lower. Because over-interest in weight control may be linked with improper dietary habits or weight control, a caution is needed. The results of this study are expected to be utilized as the basic data for the policy and health-oriented program development to improve adolescents' health behavior practice.

  • It is obvious that adequate nutrition is essential for growth and development of school children, and many elementary schools in this country have already practiced it. Therefore, it would seem apparent that the school feeding program would have a significant effect on the growth and development of school children. This paper presents a two-year experimental school-feeding program from 1973 to 1974, and attempts to evaluate its effects by before-and-after nutrition surveys conducted in two elementary schools, one experimental and the other as a control. The two schools are both located in the same county (Yongin-Kun, Kyunggi-Do), and the families of their students are presumed to share the same socio-economic level. To assess the effect of school-feeding, we measured height, weight, chest circumference and grasping power. Physical examination was done foresigns of nutritional deficiency. A stool examination for parasites and blood examinations for hemoglobin, hematocrit and serum protein were included. Analyses were done for 150 students selected randomly at the beginning of the program. These students attended the school throughout the program period. Results are as follows: 1. The amount of increase of height, weight, chest cirumference and grasping power were greater in the experimental school than in the control school, but the differences are not statistically significant. 2. Signs of vitamin deficiency decreased in both experimental and control schools during the two-year program period. 3. At the time of the 1974 post-survey, values of Hb. & Hct. revealed no significant differences between the two schools, but serum protein level was a little higher than that of general Korean rural children of the same age. 4. Infestation rate of parasites had increased in both schools during the two-year program period. 5. Each student of the two schools was classified into three major classes, according to the level of economic condition of his or her parents, namely higher, middle and lower. The results of each class of the experimental school was compared with that of the corresponding class of the control school, expecting the relative magnitude of change largest in the lower economic class of the experimental school. However, change was greatest in the middle class, still not being statistically significant. Finally, the authors concluded that the two-year period for such a program is not sufficiently long for its beneficial effects to be demonstrated and measured. As long as the growth and development of children are concerned, planning with a more distant perspective is required, as well as the development of new methods of evaluation.

  • As a result of analysis on situations of environment-friendly school meals, it was obtained that student's parents were interested in food safety and the importance of sanitary supervision. Many parents responded that environment-friendly school meals increased the health and eating habits of their children. The higher and higher educated parents responded that environment-friendly school meals effected on the children's health positively. Also, the higher educated parents responded that environment-friendly school meals effected on the children's eating habits positively. After the environment-friendly school meals, the item increase to purchase was vegetables by 25% of the consumers who purchase environment-friendly agri-products. The second and third increasing items were respectively fruits and rice. When environment-friendly agri-products were consumpted and influenced positively through school meals, the consumption of environment-friendly agricultural products will be increased. The expansion of environment-friendly school lunch program cannot bring the consumption expansion of environment-friendly agri-products immediately. However, when the persistent promotion and student's parents confidence on environment-friendly agri-products were accumulated and experienced positive effects through school meals, it will give a positive effect on the consumption of environment-friendly agr-products.

  • This study was conducted to investigate the acceptance of vegetable menus by high school students and the factors that influence the acceptability. Second-grade high school students (n=389) in Seoul were asked to assess their acceptability of vegetable menus and plate waste, and answered survey questions concerning their demographic characteristics, health-related attitudes, dietary attitudes, dietary habits, and nutritional knowledge. Overall, the menus containing items that were sweet or familiar to the subjects were preferred. Acceptability was significantly associated with the amount of consumption. The acceptability was correlated with dietary habits, dietary attitudes, nutritional knowledge, and several health-related variables. The vegetable-liking groups showed significantly higher scores concerning dietary habits, dietary attitudes, and nutritional knowledge, but did not exhibit a specific pattern of association with the health-related variables. This result implies that intervention strategies focusing on changes in cognitive and/or hedonic factors, such as nutritional education or flavor-flavor learning, would be beneficial for increasing students' acceptance of vegetable menus.

  • The purpose of this study is to observe students' eating habits and to evaluate the necessity of high school breakfast service by surveying concerned persons such as high school dietitians, parents, and students to find practical solutions to decrease the breakfast-skipping rate of the high school students in Chungcheong. The data were collected from 75 dietitians, 584 students, and 420 parents. Parents and students participated the survey more positively, and the more monthly income participants' families had, the probability of participation increased by 1.5 times (OR=1.452). Parents suggested that breakfast should be offered at a lower price (1,000~2,000 won) than school lunch, and for the school breakfast cost, they preferred to bear the expense together with schools. For the type of breakfast, the dietitians preferred convenient foodservice (40.0%), the students preferred simple meals such as bread, milk, fruit and salad (3.97), and Kimbap, Joomukbap et al (3.93) rather than Korean traditional foods (3.76) such as rice, soup and side dish. The dietitians answered 'needed' and 'very much needed' to the necessity of breakfast relatively low by 30.7%. As the result of the study, the researchers suggest the execution of school breakfast program should start first for the students who cannot have breakfast at home. Moreover, more studies should be conducted to reduce the constantly increasing rate of breakfast-skipping rate of high school students.

  • The purpose of this study was to study the relationship between the prevalence of constipation and beverage intake. Research data were collected from first and second grade female students at Hyehwa High School in Seoul by means of questionnaires. A total of 190 questionnaires were analyzed using the SPSS/WIN program. The results are summarized as follows: The average body mass index (BMI) was 20.7. Of the students, 38.4% had a BMI of less than 20(underweight), and 15.8% had a BMI of over 23 (overweight). However, 84.7% of the students wanted to lose weight. To estimate the prevalence of constipation, five factors were used: frequency and regularity of defecation, time spent defecating, defecation difficulty, and feeling of residue after defecation. The percentage of the students who emptied their bowels every day was 22.1%. About 2/5 of the students (42.1%) had irregular defecation, and 15.2% spent more than 10 minutes in the rest room when defecating. The students who did not have difficulty defecating and those who did not have feelings of residue after defecating were only 24.7% and 28.9%, respectively. The amount of beverage intake per day was 1,062$m\ell$ 674$m\ell$ of water, 128$m\ell$ of milk, 88$m\ell$ of soft drinks, and 53$m\ell$ of fruit juice. The amount of beverage intake before breakfast, during breakfast, before lunch and during lunch was about 100 $m\ell$, each; before dinner, during dinner, and after dinner it was about 200$m\ell$, each. The amount of beverage intake during the weekend was 120$m\ell$ greater than on weekdays. Students who drank more beverages, especially water, before breakfast, showed a higher defecation frequency, more regular defecation, spent less time defecating, had less difficulty defecating, and had less feeling of residue after defecation, so that they have a better defecation pattern. Based on these results, increasing the amount of beverage consumption, especially of water, and drinking greater quantities of beverage before breakfast are ways to reduce constipation.

  • A nutrition survey of 198 children, 6 to 12 years old, in the Song Myeon Elementary School and Sam Song Elementary School, located in remote villages of Gaesan county, Chung Buk province, was undertaken between July 11 and 16, 1988, to investigate dietary and nutritional status. Mean values of height, weight, sitting height, arm circumference, girths of chest, and weight for height were 98%, 96%, 101%, 94%, 103% and 98%, respectively, of Korean standards. Compared with the standards for Korean children and values for Yun Jung Elementary School children of Youido, Seoul, anthropometric data of subjects surveyed showed slightly lower results than the standards and further lower results than those of Yun Jung Elementary School children. mean hematocrit value was 39.8±3.1%. 15.3% of subjects were proven to be anemic according to the hematocrit criterion established by the WHO. Mean urinary urea nitrogen/creatinine ratio was 7.9±3.3. Energy and nutrient intake were 61.2 to 134.4% of the RDA's; except for intake of ascorbic acid, most nutrients were below the RDA's. Carbohydrate provided 72% of total energy intake; protein accounted for 11%; fat provided 17%. Family environment, anthropometric data and results of biochemical tests were positively correlated with nutrient intake. The survey emphasizes the need for a nation wide school lunch program.

  • The purpose of this study was to investigate the diet of children under the government-funded meal support program. The 143 children (67 boys and 76 girls) participated in this study among $4^{th}-6^{th}$ elementary school students receiving free lunches during the summer vacation of 2007 and living in Gwanak-gu, Seoul, Korea. The subjects consisted of four groups supported by Meal Box Delivery (n = 26), Institutional Foodservice (n = 53), Restaurant Foodservice (n = 27), or Food Delivery (n = 37). A three-day 24-hour dietary recall and a self-administered survey were conducted. In addition, the children's heights and weights were measured. The average energy intake of the children was 1,400 kcal per day, much lower than the Estimated Energy Requirements of the pertinent age groups. The results also showed inadequate intake of all examined nutrients; of particular concern was the extremely low intake of calcium. On average, the children consumed eight dishes and 25 food items per day. The children supported by Meal Box Delivery consumed more various dishes and food items than the other groups. The percentage of children preferring their current meal support method was the highest in those supported by Meal Box Delivery and the lowest in those supported by Food Delivery. We requested 15 children among the 143 children participating in the survey to draw the scene of their lunch time. The drawings of the children supported by Institutional Foodservice showed more positive scenes than the other groups, especially in terms of human aspects. In conclusion, the overall diet of children under the government-funded meal support program was nutritionally inadequate, although the magnitude of the problems tended to differ by the meal support method. The results could be utilized as basic data for policy and programs regarding the government-funded meal support program for children from low-income families.

  • This study aimed to identify the effect of brown rice-vegetable school meals program on the subjective health status, BMI and hematological parameters of high school students. This is a single group pre-post study design that includes 17 high school boys and 18 high school girls. Students were catered for lunch and dinner with brown rice and a vegetarian diet for 12 weeks at the school. The collected data on subjective health status, BMI levels and hematological parameters were measured in pre and post, and changes were compared by paired t-test. Subjective health status of the participants has improved and BMI was reduced. Blood Hct, Hb, Hct, total protein and albumin have also been reduced. Ca and triglyceride levels decreased in females. However, all levels were reduced within the normal range. These results show that brown rice-vegetable intake of high school students reduces weight and helps them prevent from acquiring cardiovascular diseases in adulthood through the reduction of serum triglyceride and in practicing healthy eating habits.
