집단급식소의 위생관리에 대한 실태 조사 (A Survey on the Sanitary Management in Food Service Institutions)

  • 전라북도내 사업체, 병원, 학교, 사회복지시설 등 집단급식소 설치 신고를 한 집단급식소 98개 업소를 대상으로 설문조사를 실시하여 집단급식소의 위생관리 실태에 대하여 조사하였다. 식기 기구 및 용품의 소독 방법은 식기, 수저, 행주의 경우 열탕 소독이, 주방기기, 냉장고, 냉동고, 도마, 칼의 경우 소독제 방법이 많이 사용되었다. 위생복(34.4%), 위생모(34.4%), 냉장고(32.6%), 냉동고(31.8%)의 순으로 소독을 하지 않는 경우가 많았다. 위생교육 횟수는 월 1회가 56.1%로 가장 많았고, 월 2-3회 12.2%, 주 1회 11.3%순 이었다. 집단급식소의 일지 작성율은 해동일지(73.8%), 창고 및 화장실 점검일지(60.5%), 기구 등의 세척 및 살균 일지(54.5%),등의 순으로 많이 작성되었고, 조리장 위생관리 점검표(9.5%), 조리 종사자 위생점검 일지(10.8%), 위생교육 일지(8.4%) 등은 작성율이 낮았다. HACCP 제조 도입시 급식시설과 설비의 부족(54.1%)과 HACCP 제도에 대한 이해 부족(17.3%)이 주요 장애 요인이었다. 주방기기 및 기구 취급, 개인위생, 급 배수 시설 및 쓰레기 처리, 건물의 구조, 배치 및 시설관리에 대한 위생관리는 잘 이루어지고 있지 않았다. 집단급식소의 영양사들은 종사자의 개인위생과 급 배수 시설 및 쓰레기 처리에 대한 위생관리에 대해서는 잘 인식하고 있었으나 주방기기 및 기구 취급과 건물의 배치 및 시설의 위생 관리에 대해서는 인식이 부족하였다. 따라서 발생률이 계속 증가하는 식중독의 발생을 감소시키기 위해서는 위생관리 체계의 도입과 위생관리에 대한 영양사 인식의 전환이 필요하였다.

  • The purpose of the present study is to identify potentially hazardous factors which can contribute to the outbreak of foodborne disease and to represent more practical management methods in terms of environmental sanitation and facilities for the kitchen. 230 Korean-style restaurants in Seoul were assessed and analyzed by the restaurant total area. Facilities and sanitary check-lists were developed to evaluate the facilities and sanitary conditions of sampled restaurants. The sanitary condition of kitchen, guest room and other area were assessed by the sanitary score. The basic cooking machinery and utensil were properly facilitated but automation machinery were equiped below 10% sampled restaurants. The kitchen area were not properly sufficient to total area. Sanitary condition of kitchen, guest room, cooking appliance and stored foods were evaluated as the unsatisfactory state with potentially hazardous. Concrete guidelines should be made in terms of following item; establishment for the kitchen space expansion, facilities for the improvement of the working environment and sanitary condition of foods cooked. Additionaly, it need to practice the effective education and training program for the foodservice manager and employees.

입원 영유아 부모의 손 위생 수행 영향요인 (Factors Affecting Performance of Hand Hygiene by Parents of Hospitalized Infants)

  • Purpose: Purpose of this study was to identify factors affecting the performance of hand hygiene by parents of hospitalized infants. Methods: The study was conducted with 209 parents of hospitalized infants from one hospital in Changwon. Data were collected from June through August, 2014 and analyzed using SPSS Win 18.0 program. Results: There were positive correlations between performance of hand hygiene and perceptions of sanitary formula bottle (r=.586, p<.001), attitude to hand hygiene (r=.438, p<.001), and knowledge of hand hygiene (r=.405, p<.001) and between parent efficacy and perceptions of sanitary formula bottle (r=.572, p<.001). Awareness of perceptions of sanitary formula bottle (${\beta}$=.308, p<.001), parent efficacy (${\beta}$=.281, p<.001) and hand hygiene attitude (${\beta}$=.207, p<.001) were significant predictors of hand hygiene performance and explained 46.1% of the variance. Conclusion: To increase infection control medical institutions should provide education on hand hygiene and training for parents of hospitalized infants. In order to enhance the performance of hand hygiene, it is necessary to develop and apply nursing programs for hospitalized infants that include hand hygiene attitude, maintenance of the sanitary formula bottle and parent efficacy.

단체급식소 조리종사자를 위한 위생교육매체(CD-ROM) 개발 및 평가 (Development and Evaluation of Food Safety Training Program for Employees in Foodservice Operations)

  • This study was conducted to develop and evaluate food safety training program for employees in foodservice operations. The developed CD-ROM was consisted of 5 parts: foodbome illness, personal hygiene, food handling in food production steps, HACCP system, and sanitary facilities. It has made slides for all contents, the animation and movie to raise interests and concentrations, and illustrations and pictures to understand. The evaluation checklists were developed 15 questionnaires including understanding(5), information(3), concentration(4), recommendation(2), and the most important factor(1) and measured by Likert 5-point scale. Fifty-four dietitians in Daegu and Gyeongbuk schools, hospitals, and industries foodservice operations responded to the surveys. The results are as follows; The most important part in the CD-ROM was personal hygiene(33.3%). The total mean was $3.95{\pm}0.41,\;3.91{\pm}0.46$ on understanding, $3.89{\pm}0.50$ on information, $3.87{\pm}0.55$ on concentration and $4.29{\pm}0.49$ on recommendation. The score was significantly higher in the recommendation part than others. Overall, as the developed CD-ROM has achieved fine score, a study on the effect of education needs to be followed. Moreover, consistent and organized education by developing a variety of sanitation education methods should be conducted.

소규모 사업장 보건관리 모델개발에 관한 연구 (Occupational Health Care Management Model in Small Scale Enterprises)

  • Forming health care management model in small-scale enterprises was the purpose of this study. For the purpose, we tried to investigate the characteristics of small-scale enterprises and analyzed the pattern of their health care management. The results are as follow: 1. The strength of health managing agency and technical supporting program lies in team approach by specialized manpower. However, if the liaison between each part of the organization is not smooth, the overall management will be very difficult. 2. Small scale enterprises are characterized by their short life after the establishment, use of rental building, lack of welfare facilities, weakness in sanitary management and aggregation of factories of similar type of industry. Because of these characteristics, it is very difficult to solve problem basically, such as improvement of working environment. Therefore, it is important to focus on health education and community based approach. 3. Many workers in small-scale factories are in middle and old age. They have health problems mainly related to personal habits. Implementation of an appropriate health promotion program is needed. 4. The number of workplaces, which should be managed by health managing agent. is increasing rapidly. But the number of health managing agent is limited. In the aspect of the requirement of manpower and equipment, training personal agent is more urgent than founding institutional agent. 5. The uniform method of health management hampers the choice of employer and workers. The types of provision of health management should be diversified. 6. For an efficient management, a frequent visit of personal agent and the following referral to a specialist should be done. The specialists in charge of secondary management are from the field of occupational medicine, occupational hygiene, ergonomics, etc. 7. The health management of small-scale facilities should have six components. They are community-based approach, multi-disciplinary cooperative system, program based on the need of recipient, forming partnership of employer and worker, change of lifestyle, and evidence-based program.

양호겸직교사 연수과정에 관한 연구 -경상남도를 중심으로- (A Study on the Training Course for Teachers Holding Additional Job of School Health Nursing in Kyeong Nam Province)

  • The purpose of this paper is to provide the basic information concerning school health nursing activities in schools lacking in a school nurse, and the degree of satisfaction of trainess to the training course of school health nursing. The data for this study were collected by means of questionnaire from 150 teachers(100 of primary school and 50 of middle school)who attended the training course superintended by the Board of Education of Kyeong Nam Province from July 27 to August 6 in 1987. The main results of this study can be summarized as following; 1. General characteristics of the trainees: The majority of the trainees (71.3%) were in the age of twenties, 86.5% graduated from four-year teachers' college, 63.5% had less than five-year experience as a teacher. 2. 60.5% of the trainees were actually offering school health nursing services. 67.8% decided voluntarily to participate in the training course, and 62.7% attended the course for the purpose of obtaining health knowledge. 3. Only 4.2% of schools established appropriate health organization, and 34.5% were equipped with nursing clinic. But the main reason school health nursing activities were not performed very well was the insufficient supply of needed medicines and related materials. 4. School health nursing services in schools lacking in a school nurse were offered mainly by the teacher holding additional job of school health. class teacher and atheletic teacher. But the sanitary management for school meal services and community health activities were not carried out at all in many schools. 5. As a whole, trainees were satisfied with training program. But some subjects of the course did not satisfy them because those ones were so theoretical without any practice. 6. Many trainees wished the training course to be more concentrated on case studies which are helpful to solve actual problems. 7. 75% of trainees answered to have decided to perform school health nursing activities more actively than before. 8. Any significant relationship can not be found between trainees' general characteristics and their attitude to school health nursing activities after the training course. Only one factor-motivation to attend the training course-had the statistical significance of 8.7%.

학교급식효과(學校給食效果)와 제도개선(制度改善)에 관(關)한 연구(硏究) (A Study on Improvement of School Lunch Programs and Its Health and Education Effect in Korea)

  • The purpose of school lunch service programs (SLPs) is to provide school children with nutritious meals each day, to assist them in improving their mental and physical development, to make them understand the basic knowledge needed for healthy daily living throughout their lives with sound nutritional habits, and further, to enhance the national health status as well as the individual. The major purpose of this study is to describe the history and current status and promotional plans in Korea's SLSPs to improve the nation's health status. The major findings of this study are as follow: 1) The progression of the SLSPs can be devided into four major periods: Relief (1953-1972), Self-supportive (1973-1977), System-establishment (1973-1983), System-development(1984- ). 2) As result of the implementation of SLSPs in Korea, many positive effects have been found in school education, notably in the field of physical growth, social development and personality cultivation. 3) This study deals with a more detailed assessment with regard to the effects of the program on school education activities and the improvement of nutritional habits in the family. Although it is limited and not yet complete, the program implementation has contributed to the improvement in children's food-intake habits, understanding of food, and manners, and increased sanitary consciousness. It has also affected of parent's concerns and attitudes towards the improvement of daily meals as well as national eating patterns, and eventually provided motivation for increased farm production of nutritious food stuffs and reasonable food consumption. 4) The SLSPs does have its stare of problem such as an unsatisfactory budget, lack of understanding of the program by school personnel and parents. However, there is no doubt that the SLSPs should be carried out effectively for better health, and especially for the growth and development of the children. Finally, the problems and promotive Plans of the SLSPs can be approached by aspects of the administrative, financial and operational systems. These system have to coordinate with relevant authorities to expand participation in the program for the successful implementation of the SLSPs. The eventual objective this study is to propose ways and means for mobilizing every available element in the effort to attain the goals of educating and training healthy and competent personnel manpower, stabilizing the demand and supply of food and the ensuring adequate coordination of national food production and consumption.

제주지역 학교급식 조리종사자의 HACCP 관련 지식 및 수행도 분석 (The Analysis of the School Foodservice Employees' Knowledge and Performance Degree of HACCP System in Jeju)

  • 본 연구는 학교급식 조리종사자들의 HACCP 관련 지식과 수행도에 대한 분석을 통하여 현재 학교급식에서 HACCP의 적용 실태를 파악하고, 조리종사자에게 필요한 교육 내용 및 방법을 규명하여 향후 학교급식에서 보다 체계적인 HACCP 시스템이 실행될 수 있는 방안을 모색하기 위한 기초 자료를 제공하고자 시도되었다. 영양사의 연령은 30대가 60.8%로 절반 이상을 차지하였고, 경력은 10${\sim}$15년 미만이 31.9%, 학력에 있어서는 4년제 대학 졸업자가 60.4%로 나타났는데, 이는 영양교사화로 인하여 전문학사 자격소지 영양사들이 방송통신대학 및 4년제 대학교의 편입을 통하여 학사자격을 취득하였기 때문인 것으로 분석된다. 고용상태는 정규직영양사가 62.6%로 나타났고 근무학교는 초등학교가 50.5%로 절반을 차지하였으며, 급식유형은 도시형이 59.3%이고, 급식관리 방식은 단독관리가 80.2%로 나타났다. 조리종사자의 연령은 만 41${\sim}$50세가 60.7%, 근무기간은 5${\sim}$10년 미만 (34.2%), 학력은 고졸 (77.2%), 고용상태는 비정규직 조리사 (42.2%)가 가장 많았고, 조리종사자의 53.3%가 자격증을 소지하고 있었다. 위생교육 실시횟수는 주 1회 이상 (48.4%)이, 교육방법은 구두교육 (40.7%)의 비율이 가장 높았고, 위생교육에서 HACCP이 차지하는 비중은‘많이 포함된다’가 53.8%로 나타났다. 조리종사자의 대부분 (98.1%)이‘위생교육 경험이 있다’고 응답하였고 HACCP 이해정도에 있어서는‘잘 이해한다’가 47.0%로 나타났으며 HACCP 관련 교육현황에서 모든 항목에 대하여 92% 이상의 높은 교육 실시율을 보였다. 조리종사자의 HACCP 지식수준은 평균 84.2점 (100점 만점)으로 나타나 보통 이상의 수준인 것으로 나타났으며 급식유형 (p < .001), 근무기간 (p < .05), 학력 (p < .01), 고용상태 (p < .001), 자격증 유무 (p < .001), 학교별 (p < .01)에 따라 유의한 차이를 보였다. 또한 영양사의 교육 실시 횟수가 많을수록 (p < .01), 조리종사자가 교육 경험이 있고 (p < .01), 교육 경험횟수가 많을 경우 (p < .05), HACCP에 대하여‘매우 잘 이해한다’고 응답한 경우 (p < .05)에 지식 수준이 유의적으로 높았다. 조리종사자의 HACCP 수행도는 평균 4.40점 (5점 만점)으로 잘하고 있는 것으로 나타났고, 영양사의 조리종사자의 HACCP 수행도에 대한 인지도 평균은 4.13점으로‘잘한다(4점)’에 근접한 것으로 조사되어, 영양사의 인지도가 유의적으로 낮았다 (p < .001). 조사대상자의 수행도는 급식유형 (p < .05), 고용상태 (p < .05), 자격증유무 (p < .01), 학교별 (p < .01)에 따라 유의한 차이를 보였다. 위생교육 실시횟수가 증가할수록 (p < .01), 교육방법에서 실연교육인 경우 (p < .05)에 수행도가 유의적으로 높았고, 조리종사자가 교육 경험이 있고 (p < .01), HACCP에 대하여‘매우 잘 이해한다’고 응답한 경우(p < .001) 유의적으로 높은 수행도를 보여주었다. 이러한 결과를 토대로 살펴볼 때, 학교급식에서 위생교육을 실시하는 영양사의 인지도와 교육받은 내용을 실천에 옮겨야 하는 조리종사자의 실제 수행도간의 차이를 올바르게 인식하여 효과적인 HACCP 교육매체 개발 및 교육방법의 활용, 조리종사자의 수준 등을 고려한 체계적인 교육실시를 통한 위생관리가 이루어져야 할 것으로 사료된다.

근로자의 건강증진 생활양식 실천에 관한 연구 (Health Promoting Lifestyles of Korean Employees)

  • Introduction : In Korea, national attention to the workplace health promotion programs (HPP) for employees began in early 1990s. Governmental supports for the HPP and education programs have given to the employees. The purpose of this study is to find the performance degree of employees' health promoting lifestyle(HPL). Subjects and Methods : For this study, 615 employees who attended governmental educations were selected as research samples. The tool for measuring HPL used in this study was developed for Korean by In-Sook Park in 1995. It is composed of 4-point scaled 60 items and divided into 11 subcategories. The data were collected by self reporting questionnaires from June to December in 1997. Those data were analyzed percentile, mean, standard deviation, ANOVA, t-test with SAS program. Major findings are as follows; 1. The total mean score of the employees' HPL performance was 2.66. The average scores of 'harmonious relationships' category were the highest as 3.11, whereas the one of 'professional health maintenance' were the lowest as 2.02. The remains were 'sanitary life'(2.90), 'emotional support(2.85), 'regular diet'(2.84), 'self achievement'(2.78), 'healthy diet'(2.56), 'rest and sleep'(2.56), 'exercise and activity'(2.54), 'diet control'(2.53), 'self-control'(2.52). 2. The factors affecting HLP were category of industries and sex, age, marital status, education level, major, educational experience of health promotion, among personal characteristics. The employees of service industries, female, older age, married, nurse, educated for health promotion, graduated from junior college performed HLP more than the others. 3. The participation rates of employees for HPP were 12.4%, because of limited time and facilities and equipments. Recommendations; 1. The regulation for performing the health promotion programs in the industries is essential for activating industrial health promoting movement. 2. More governmental supports for educations and services for health promotion programs in the industries are needed. 3. For behavioral changes of the employees, the contents of educations have to consist of exercise and activity, rest and sleep, diet and smoking habits. 4. The evaluating studies for ready made health promotion programs in the industries are expected.

전주지역 학교급식 조리종사자의 위생지식 및 위생관리 수행에 관한 연구 (A Study on the Investigation of Sanitary Knowledge and Practice Level of School Foodservice Employees in Jeonju)

  • 본 연구는 전주시 학교급식 조리종사자에 대한 위생교육 현황 및 실태를 파악하고자 시도되었다. 이를 위해 전주시 초$\cdot$$\cdot$고 급식학교 88개교의 조리종사자 508명을 대상으로 2002년 11월 13일부터 11월 28일까지 설문조사를 실시하였으며, 수집된 자료는 SPSS 10.0을 이용하여 통계 처리하였다. 분석결과는 다음과 같다. 조리종사자의 연령층은 41세 $\∼$50세가 62.2$\%$로 많았고, 84.4$\%$가 임시직으로 근무하고 있었으며 학교급식 경력은 10년 미만이 33.7$\%$로 가장 높게 나타났다. 학력은 고등학교 졸업이 52.4$\%$로 가장 높았고 54.1$\%$가 조리사 자격증을 소지하고 있었다. 위생교육 경험은 84.0$\%$가 월1회 이상 교육을 받고 있었으며 82.8$\%$가 교육받은 내용을 작업 시 적용하는 것으로 조사되었다. 조리종사자의 위생지식평가 결과는 개인위생관리영역에서 정답율(91.1$\%$)이 가장 높았으나 생산단계별영역은 75.3%으로 가장 낮았다 조리종사자의 인적특성이 위생지식에 미치는 영향을 분석한 결과, 연령과 학력은 위생지식 전체영역에서 유의적인 차이가 있었으며(p<0.01),특히 생산단계별 위생영역에서 높은 점수를 나타내었다. 경력은 기기설비위생영역에서 유의적인 차이를 나타내었고(p<0.05), 5년 미만의 그룹이 높은 점수를 나타내었다. 또한 자격증 소지여부도 위생지식 전체영역에 유의적인 영향을 주었으며(p<0.05), 생산단계별위생영역에서 자격증을 소지한 집단이 유의적으로(p<0.01) 높은 점수를 나타내었다. 조리종사자 위생관리수행수준 평가결과 기기설비위생(4.90/5점 ), 식중독 및 미생물(4.86/5점), 개인위생(4.79/5점), 생산단계별위생(4.70/5점) 순으로 높게 평가되었다. 조리종사자의 인적특성이 위생관리 수행수준에 미치는 영향을 분석한 결과, 고용상태는 개인위생(p<0.05)에서 유의적인 차이를 나타냈으며 경력은 기기설비위생(p<0.05)에서 유의적인 차이를 보였다. 학력은 위생관리 수행수준의 생산단계별위생(p<0.05), 기기설비위생(p<0.01)등 위생관리 수행수준 전체영역에서 유의적인 차이를 나타냈다. 위생교육 횟수는 위생관리 수행수준의 생산단계별위생(P<0.01), 식중독 및 미생물(P<0.05) 및 위생관리 수행수준 전체영역(p<0.01)에서 유의적인 차이를 보였다. 근무학교별로 조리종사자의 위생지식과 위생관리 수행수준을 조사한 결과, 위생지식에 있어서는 중학교에 근무하는 조리 종사자가 개인위생에서 유의적으로 낮은 점수를 나타내었고(p<0.01), 생산단계별위생에서는 초등학교 조리종사자가 유의적으로 높은 점수를 나타내었다(p<0.01). 위생관리수행수준에 있어서는 개인위생(p<0.01)과 기기설비위생(p<0.01)에서 유의적인 차이가 있었으며, 초등학교 조리종사자의 기기설비위생 점수가 유의적으로 높은 점수를 나타내었다. 조리종사자의 위생지식 점수와 위생관리 수행수준의 상관관계를 조사한 결과, 위생지식의 기기설비위생은 위생관리 수행수준의 합계(p<0.01)에서 유의적인 상관관계(p<0.01)를 나타내었으며, 위생지식의 식중독 및 미생물은 위생관리 수행수준의 개인위생(p<0.01)과 유의적인 상관관계가 있는 것으로 나타났다 위생지식의 점수합계는 개인위생(p<0.05)과 식중독 및 미생물(p<0.05)과 유의적인 상관관계가 있는 것으로 조사되었다. 조리종사자의 위생지식이 위생관리 수행수준간에 미치는 영향을 분석한 결과, 위생관리 수행수준의 합계가 위생지식의 기기설비위생과 유의적인 상관관계를 나타내었지만(p<0.001), 설명율은 2.4$\%$로 매우 낮아 거의 영향력이 없는 것으로 조사되었다. 이상의 연구결과에서 학교급식 조리종사자의 위생관리 수행수준을 향상시키기 위해서는 시행되고 있는 위생교육이 전체적인 위생습관의 변화를 수반하지 않고 지식의 전달에만 그치고 있으며 내용면에 있어서도 편중된 교육이 행해지고 있는 것으로 조사되었다. 따라서 조리종사자의 연령 및 교육수준, 근무경력 등을 고려한 실제적인 위생교육 내용을 구성할 필요성이 매우 높은 것으로 보인다. 특히 조리종사자의 위생지식 평가결과, 식중독 및 미생물 영역의 점수가 매우 낮아 위생지식 개념부족으로 인한 식중독 발생의 우려가 높으므로 이 부분에 대한 집중적인 교육 및 훈련이 지속적으로 필요하리라 생각된다.
