Effect of Modified Starch on the Frozen Storage Stability of Fish Cake Eomuk (어묵의 동결안정성에 변성전분이 미치는 영향)

  • We investigated the effect of the modified starch [physical treatment, acetate (SA-1, SA-2, and SA-3), hydroxypropyl (HS), and acetylated distarch adipate] content on the physicochemical properties of fish cakes, called Eomuk in Korea, during storage at -20℃. When wheat flour (native starch, NS) was used, the moisture content decreased during frozen storage, resulting in a lower water-holding capacity and higher expressible drip. Compared with NS, adding modified starch had a lower effect on the moisture content during frozen storage. The water-holding capacity and expressible drip differed with the type of modified starch added. The expressible drip was lowest with HS; the SA-3 and HS modified starch were whiter than NS. Therefore, HS and SA-1 are suitable additives to improve the quality of frozen fish cakes.

  • Objective: To review the clinical basis of the Sa-Ahm 5 Element acupuncture originated about 360 years ago, papers and books were researched. Methods: Total of 58 books and papers ranging from ancient Huang Di nei jing to modern Bio Medical Acupuncture for Pain Management were investigated to study the clinical practice of it. Results: It could be practiced differently depending upon the viewpoints of diagnosis. They are ranging from theories of the greater-less of Yin and Yang, 7 emotions, organs- visceras, 8 diagnostic criteria, and pulse diagnosis to meridian circulation. Conclusions: It needs to be set clinical guidelines by which to practice Sa-Ahm acupuncture though it is nowadays mostly-used method in accordance with practitioner's viewpoints.

Analysis of Factors Related to Quality of Life in Elderly Cancer Survivors : Using KLoSA 2006-2016 (노인암 생존자의 삶의 질 관련요인 분석 : 2006-2016 고령화패널 조사 자료 활용)

  • Objectives : The purpose of this study was to explore factors related quality of life among cancer survivor in order to identify strategies for cancer survivors to go back to normal life and carry on stable and high quality life. Methods : This study used the $1^{st}$ to $6^{th}$ data of Korean Longitudinal Study of Aging(KLoSA). The sample of this study consisted of 118 cancer survivors, all of whom were diagnosed with cancer for more than 10 years later in 2016. Results : Regression analysis of major factors related to the quality of life of elderly cancer survivors showed that the results of 2006 and 2016 were different. In 2006, factors related to cancer were highly correlated with quality of life, but in 2016, it was associated with pain and depression. Conclusions : The results of this study confirm that the factors related to quality of life in cancer survivors change with survival period. Therefore, this study suggests comprehensive care strategies based on the stage of survivorship.

Taiwanese Science Curriculum Reform and Earth System Education

  • Curriculum reform has been a significant emphasis for most of countries all over the world for the past few years. It was the first time for Taiwan to develop a new Science and Life Technology curriculum Standards (SaLTS) for grades 1 through 9 compulsory educations. The SaLTS features integrated science content with the aim at motivating students to learn science and encouraging students to apply science to their everyday life, which is practically well aligned with the philosophical essence and foundations of Earth Systems Education (ESE). This paper calls attention to the importance of the inclusion of ESE into the forthcoming science curricula of Taiwan and worldwide and provides some exemplary ESE-inspired curriculum and instructional modules that have been successfully implemented in the secondary schools of Taiwan. Hopefully, this paper can shed some lights on the future development of the ESE-based science curricula, instructional modules, and teacher preparation programs.

Effects of Salicylic Acid and 1-Methylcyclopropene on Physiological Disorders and Berry Quality in 'Campbell Early' Table Grapes (Salicylic acid 및 1-MCP 처리가 '캠벨얼리' 포도의 생리장해 및 품질에 미치는 영향)

  • This study was conducted to compare the effect of salicylic acid (SA), an ethylene biosynthesis inhibitor, and the 1-methylcyclopropene (1-MCP) fumigation, to prevent fruit quality deterioration and physiological disorders during the shelf-life of Korea's leading export grape variety 'Campbell Early'. The berries treated with SA after 1-MCP fumigation (1-MCP+SA) showed a higher firmness value and titratable acidity than single treatment of SA or 1-MCP. The rate of shattered berry was high as 41.7% for 100ppm ethephon spray, 40.8% for $25{\mu}M$ SA, and 38.2% for 1,000ppb 1-MCP, but showing only 18.7% when the SA was applied after 1-MCP fumigation. The ratio of short brushes less than 1mm was largest at 74.3% for ethephon treatment, while 1-MCP+SA treatment was found to have the longest brush length among all treatments, with a 2-4mm ratio of 22.8% and a 4-6mm ratio of 27.9%. The weight of rachis was found to be the lowest at 2.3g in the ethephon treatment, and the reduction of rachis weight loss per cluster by 1-MCP+SA treatment was evident. In addition, 1-MCP+SA treatment were effective in mitigating stem browning and berry decay during the 16-day storage period at $19^{\circ}C$ in this cultivar, so it is believed that they can be used as a practical post-harvest treatment in grape exportation.

Multidrug Resistance Reversal Activity of Methanol Extracts from Basidiomycete Mushrooms in Cancer Cells

  • Mushrooms have a long history of use in traditional medicine, and hundreds of novel constituents in mushrooms with miraculous biological properties have been identified recently. Although diverse effects for medicinal use of mushrooms such as anticancer activity are proven, their reversal activities of drug resistance in cancer cells was rarely reported so far. In the search for novel medicinal use of mushrooms, we tested the multidrug resistance (MDR) reversal activities of diverse mushrooms collected from Korea. Among, the mushroom extracts tested, Cantharellus cibarius (M02) and Russula emetica (M12) revealed MDR reversal activities of paclitaxel in the P-glycoprotein (Pgp)-positive HCT15 and MES-SA/dX5 cancer cells, but not in the Pgp-negative A549 and MES-SA cancer cells. In addition, these mushrooms also enhanced the cytotoxicity of doxorubicin, another well-kwown Pgp-associated anticancer drug against MES-SA/DX5 cells, but not against MES-SA cells. Meanwhile, the cytotoxicity of cisplatin, a well-known Pgp-non-associated anticancer drug, was not affected by the mushrooms all the cells tested. From these results, we suspected that some ingredients of M02 and M12 have Pgp-associated MDR reversal activities.

  • Sounding rockets are cost-effective and rapidly deployable tools for directly exploring the ionosphere and microgravity environments. These rockets achieve their target altitudes quickly and are equipped with various scientific instruments to collect real-time data. Perigee Aerospace plans its inaugural test launch in the first half of 2024, followed by a second performance test launch in January 2025. The second launch, scheduled off the coast of Jeju Island, aims to reach an altitude of approximately 150 km with a payload of 30 kg, conducting various experiments in the suborbital region. Particularly in mid-latitude regions, the ionosphere sporadically exhibits increased electron densities in the sporadic E layers and magnetic fluctuations caused by the equatorial electrojet. To measure these phenomena, the sounding rocket version of ionospheric anomaly monitoring by magnetometer and plasma-probe (IAMMAP), currently under development at the KAIST Satellite Research Center, will be onboard. This study focuses on enhancing our understanding of the mid-latitude ionosphere and designing observable missions for the forthcoming performance tests.
