The waste rates of 98 food items after pre-preparation were surveyed to provide database for good menu planning. The waste rates turned out 0-64.27% in vegetables, 6.38-7.03% in potatoes, 6.25-68.75% in fishes and shellfishes, 16.61% in eggs, and 16.00-56.84% in fruits. Foods with high waste rates were vegetables, fishes and shellfishes. Survey results were compared with other food composition tables. Foods with 30% higher waste rate than other food composition tables were squash leaf, pacific ocean perch, sweet potato stalk, water cress, green peas, alaska pollack, bluefin tuna, beka squid, crown daisy, dodok, amaranth, beef ribs. Food which waste rates turned out to be decreased by about 30% in this study were corb shell, pomfret, sea mussel, warty sea squirt. For the menu planning, reasonaly exact waste rates for each food items are essential. Since survey results show significant deviations, there should be more studies for exact waste rates for each food.
Extrafloral nectaries have been shown in many studies to promote mutualistic interactions between plants and insects(usually ants) that visit the glands. The insects gain sugars, water and amino acids secreted by the extrafloral nectaries and benefit the plants by reducing the damage caused by plant's inseet herbivores. Little is known about the occurrence of extrafloral nectaries in plants growing in Asia. To learn about the occurrence of extrafloral nectary bearing plants in Korea, living plants and herbarium material were examined for the glands. In addition, the cover of plants with extrafloral nectaries and the proportion of woody plants with extrafloral nectaries were measured in three forest communities on Kangwha Island. 131 species of plants belonging to 53 genera and 30 families were found to have extrafloral nectaries. These 131 species comprise about 4.0% of Korea's flora, a highet percentage of extrafloral nectary bearing plants than occurs in the studied areas of North America. Extrafloral nectary bearing plants occupied 7, 23 and 55% of the covers and comprised 15, 21 and 15% of the woody plants in the three different forests, a significant level of occurrence. Many important Korean crop plants were found to have extrafloral nectaries including : sesame (Sesamum indicum L.), squash (Cucurbita moschata Duchesne), sweet potato (Ipomoea batatas Lam), persimmon (Diospyros kaki Thunb.) cotton (Gossypium indicum Lam.), mung bean (Phaseolus radiatus L.), red bean (Phaseolus angularis W.F.), peach (Prunus persica (L) Batsch.), plum (Prunus salicina Lindl.). Many of these cultivated and wild plants may receive protection by ants and other beneficial insects that visit their extrafloral nectaries.
The "Namul" is a Korean common vegetable food composed of edible young leaves and soft stalks of wild plants or cultivating vegetables and treated with traditional condiments. It has been widely used as not only a regular diet but seasonal foods or special ceremonial foods. In this thesis, the kinds of edible plants for namul were philologically approached by books published in Korea from Koryo to Chosun dynasty. The first historical record about cultivated vegetable as food in Korea was a garlic and a gourd in $\ulcorner$Samkuksaki$\lrcorner$. According to numerous records, edible wild plants might have played an important part as food resources, since they have variable edible portions as famine relief foods. Four kinds of namul were first introduced in Koryo age, but in Chosun dynasty over eighty kinds were recorded. The root of ballonflower and white radish were most commonly used for raw namul and bamboo shoot and squash for boils ones. Most kinds of namul were introduced in $\ulcorner$Zeungtosanrimkwungiae$\lrcorner$ and $\ulcorner$Limwonsiprwukji$\lrcorner$ influenced by pragmatism in later half period of Chosun. The chronic state of famine in later half period of Chosun caused to introduce various edible wild vegetables, and had greatly influenced on the Korean people to acquire vegetarian food habits and to favor salty taste. It seems to need a further study on recent nutritional problems including dietary fiber.ary fiber.
Selection of double-flowered plants at the seedling stage is one of the main purposes of stock breeding programs. Eight stock cultivars of Matthiola incana L. named 'Nobel', 'Cinderella', 'Pacific', 'Avalanche', 'Midblue', 'Lavender', 'Goddess' and 'Esfahan', with different percentage of double-flowered plants were used for examining the relationship with three morphological types of cotyledons. The results of a chi-square test indicated that in heart-shaped (HC) and cup-shaped cotyledon (CC) populations, the number of plants with double flowers was much more than that of single flowers and CC seedlings rarely produced single flowers. Therefore, increasing the number of CC seedlings can improve the percentage of double flowers. The highest and lowest numbers of CC seedling were observed in high double and single flower cultivars, respectively. Single flower cultivars showed the maximum count of dumbbell-shaped cotyledons. Chromosome pairing of these cultivars was evaluated using the squash technique. Aneuploid cells were found in 'Nobel' and 'Goddess' cultivars, which showed the highest percentage of CC seedling. Based on morphological measurements, the highest value of inflorescence size was observed in the seedlings with cup-shaped cotyledons.
Two strains of Cucumber mosaic virus (CMV) isolated in Kuwait were confirmed their infectivity based on symptomatology and host range on different cultivars of tomato (Lycopersicon esculentum), tobacco(Nicotiana tabacum L.) and squash (Cucurbita pepo). The pattern of symptoms differed for the two CMV strains in tomato and tobacco, showing severe stunting and mosaic symptoms with one strain designated KU2, and almost symptomless with the other strain designated KU1. A satellite RNA 5 (sat-RNA) was found to be associated with the KU1 strain and was characterized as a benign viral satellite RNA. Using reverse transcription and polymerase chain reaction (RT-PCR) with sat-RNA specific primers, an amplified PCR product of about 160bp was determined and analyzed by gel electrophoresis. This naturally occurring benign viral satellite RNA was successfully used as a biological control agent to protect tomato plants against the severe KU2 strain. Tomato plants grown in plant-growth chambers, were preinoculated with KU1 containing the benign viral satellite and then challenge inoculated with the severe KU2 strain at different time intervals. All plants challenged three weeks after preinoculation showed nearly complete protection from subsequent infection by the severe strain. This biological control technology using plant viruses was found protective and could be successfully established sooner after the preinoculation.

This study examined the existence of genetically diverse population of Cucumber mosaic virus (CMV), known as quasispecies, from lily, Nicotiana benthamiana and from purified virions. Based on the conserved sequences of CMV lily isolates in intergenic region (IR) on RNA3, the genetic variation of IR from three different sources was investigated by a specific restriction endonuclease hydrolysis of amplified reverse transcription-polymerase chain reaction (RT-PCR) products using virus-specific primers, and was compared with IR sequences. The IR nucleotide sequences of CMV lily isolates were highly conserved, however, quasispecies was detected from all three sources in low level, containing sub-populations of RNA3. These subpopulations of RNA3 were inoculated onto zucchini squash by in vitro transcripts from corresponding full-length cDNA clones together with Eny RNA1 and 2 transcripts. The systemic symptom of zucchini plants infected by these quasispecies was chlorotic spotting, which was milder than severe mosaic and stunt symptom caused by Eny-CMV. The severity of symptom was correlated with RNA accumulation of viruses. These results suggest that the genome of CMV lily isolates consists of quasispecies populations.

Multi-level (macro-level, meso-level, and micro-level) mechanism of prefinitely strained concrete materials os studied The multi-level analysis explains the additional quasibrittle concrete material ductility that comes from lateral confinement and their multi-level interaction mechanisms. The so-called "upgraded tube-squash test" is used to achieve 50% axial strain and over 70 degree of deviatoric strain of quasibrittle concrete materials under extremely high pressure without producing visible cracks. In the micro-level analysis, the variations of hydration rte, micropores, and hydrate phased are analyzed. In the meso-level analysis, mesocracks (the initial invisible cracks) at the interfaces between aggregates and cement paste matrices are studied. The high confining effect in the specimen on the meso-level cracks is also studied. In the macro-level analysis, the physical behavior of prefinitely strained concrete materials is studied. The co-relationships of the results from the three distinct levels of analyses based in various prestraining (0%, 15%, 35%, and 50%) are studied. For the extremely deformed or strained concrete problems, multi-level analysis will be used to explain the unclear and unstudied mechanism of concrete materials, The multi-level analysis can provide us with valuable insights that can explain the additional ductility and confining effect in concrete. concrete.
This study attempted to investigate the relationships between vegetable preference and physical status. The subjects were 127 kindergarten children living Kwang-ju. In this study, vegetable preference and health status of the children were investigated by response of thier mothers through questionnaires. Also, rate of dental caries and anthropometric measures were obtained by examination. The results are summarized as follows; 1) Anthropometric mesures of the subjects were higher than those of Korean standards for children. 2) The mean hedonic score for vegetable preference in subjects was 2.6. The difference in vegetable preference between male and femal was not significant except for a squash item. 3) Vegetable prefernce has a significant correlation with the def. tooth rate. Especially preference of spinach, wild sesame leaf, and cucumber were negatively related to the def. tooth rate. 4) Vegetable preference and anthropometric measures did not show any significant correlation. 5) Children who ate sweets for snacks frequently disliked vegetable and showed high rate of dental caries significantly(p<0.001). Children who had anorexia and constipation disliked vegetables significantly (p<0.01). Children who complained diarrhea symptom showed significant high rte of dental caries(p<0.01). From the results above, as the negative relationship between vegetable preference and def. tooth rate was found, many cooking methods of vegetables should be studied and nutrition education should be oriented to recommend an increased intake of vegetables by children.

Dietary fiber(DF) content and their properties were analyzed in some common vegetables such as Squash(leaf), Water cress, Garland chrysanthemum, Leek and sweet potato(stem). DF was analyzed by the method of detergent fractionation. Values for neutral detergent fiber(NDF), acid detergent fiber(ADF), lignin, hemicellulose were obtained. NDF for most samples was $13.83%{\sim}24.31%$, ADF was $11.99%{\sim}21.03%$, lignin was around $0.56%{\sim}3.00%$, hemicellulose was about $1.33%{\sim}3.88%$, cellulose was $9.08%{\sim}14.87%$ except sweet potato(leaf) (20.47%). This paper describes two properties of the fiber-of commonly eaten vegetables ; water-holding capacity(WHC) and metal binding. The capacity of the acetone dried powder (ADP) to hold water was estimated. The WHC measurements differed from 7.49 per 9 of ADP for Water cress to 11.09 per 9 of ADP for Leek. The binding of Fe, Zn in NDF. ADF obtained from five fiber sources was examined under two pH conditions ; 1) pH2.1, 2) pH6.1. Fe, Zn binding increased with higher pH and differed from DF sources.
Molecular characterization of Cucumber mosaic virus (CMV) was done by using samples from tomato and cucurbitaceous plants collected from different locations in the northwest region of Iran. After screening by enzyme-linked immunosorbent assay, 91 CMV-infected samples were identified. Biological properties of eight representative isolates were compared with each other revealing two distinct phenotypes on squash and tomato plants. Phylogenetic analyses based on nucleotide sequences of the coat protein (CP), movement protein (MP) and 2b of the new isolates, together with that of previously reported isolates, led to the placement of the Iranian isolates in subgroups IA and IB according to CP and MP genes, but in subgroup IA according to the 2b gene. These data suggest that reassortment may have been a major event in the evolution of CMV in Iran, and that the Iranian isolates are derived from a common recent ancestor that had passed through a bottleneck event.
