볶음온도와 시간을 달리하여 얻은 참깨박의 이화학적인 특성의 변화 (Changes in the Physico-Chemical Properties of the Meals from the Defatted Sesame Seeds at Various Roasting Temperature and Time)

  • 참깨를 여러 가지 조건에서 유은 다음 참기름을 채취하고 남은 참깨박의 이화학적인 특성의 변화를 펄사하였다. $210^{\circ}C$에서 10분간 처리한 경우 참깨약과 참기름의 최고수율은 각각 50.1%및 46.9%이었고 참깨박에 잔류되는 시름은 8.4%로 가장 낮았다. 참깨박중의 단백질 함량은 볶음온도가 높아지고 볶음시간이 길어짐에 따라 점차 감소하였다. 참깨박의 아미노산함량은 볶음조건에 따라 점차 감소하였으며 가장 크게 감소한 아미노산은 serine, cystine, Iysine이었다. 유리당을 분석 한 결과 sucrose, glucose, fructose가 각각 162.6mg%, 37.7mg%, 18.7mg% 함유되었고 유음온도가 높아지고 볶음시간이 길어짐에 따라 그 함량은 현저히 감소하였다. 수용성 갈색색소는 볶음온도가 $190^{\circ}C$인 경우는 3개의 분획(분획 I, II, III)으로 뚜렷하게 나누어졌으나 볶음온도가 높아지고 유음시간이 길어짐에 따라 분획 II는 점차 불분명해졌다.

약용 식물을 첨가한 머루주의 이화학적 특성과 발효 품질 평가 (Evaluation of Physicochemical and Fermentation Qualities of Moru Wines Supplemented with Pine Needles or Medicinal Herbs)

  • For the development of Moru wine with enhanced sensory qualities, Moru (Vitis amurensis) wines were fermented with pine needles from Pinus densiflora Siebold et Zuccarini to make Moru-pine wine or medicinal herbs from Astragali Radix and Viscum album to make Moru-herb wine. Moru without pine needles or medicinal herbs was included as a control. Pine needles and Astragali Radix/Viscum album delayed the fermentation of Moru wine, but after 40 days of fermentation and aging, final ethanol contents, pH, acidity, and the sugar/organic acid content in these kinds of Moru wines had no differences. The final ethanol level and acidity of Moru wines were 11.5~12.9% and 1.1~1.2%, respectively, but any sugars (glucose, fructose and sucrose) were not detected in all Moru wines. These results are consistent with the general characteristics of Moru wines, which have a high acidity and low sugar contents. Relatively low browness and antocyanins were detected in Moru-herb wine decreasing its chromaticity in a sensory test. Overall, the supplements of Astragali Radix/Viscum album reduced the color of normal Moru wine, which might be applied toward the development of conventional Moru wines.

초등학생의 간식 구매실태 및 관련 생태학적 요인분석 (A Study of the Frequency of Food Purchase for Snacking and Its Related Ecological Factors on Elementary School Children)

  • In order to investigate food purchase frequency of elementary school children and its related ecological factors, 431 4th, 5th and 6th grade elementary school children and their mothers, living in Seoul and Daejon, small city and rural area of Chungnam Province, were participated in this study. The subjects and their parents were surveyed by a self-recording questionnaire about food purchase frequency and some ecological factors. Average height and weight of the subjects by gender and grade were similar to or a little bit more than the 1998 Korean Growth Standard. According to relative body weight, 30.6% and 10.8% of the subjects belonged to under-weight and obesity categories, respectively. Of the subjects, 46.9% used PC telecommunication or internet, 53.8% of them used it for less than an hour per day, and 46.4% watched TV for 2 to 4 hours a day. About 42% of the subjects spent 500 Won or less daily to buy snacks. A half of the subjects took snacks once a day because of hunger. Mothers' nutrition knowledge score was averagely 8.16 out of 13 full score and the average attitude score was 43.22 out of 50 full score. Foods purchased more than once a week were milk and yoghurt, cookies, ice-cream, ramyun, and gum in order. Family income, parents' education level, mothers' nutrition knowledge and food attitude score, students' snacking frequency and TV watching time showed significant correlations with purchase frequencies of some individual food items. In conclusion, the elementary school children considered taste most important rather than nutrition in buying snacks and most frequently bought carbohydrate foods and concentrated sugars except milk. Ecological factors such as mothers' nutritional knowledge and food attitude, TV watching time and snacking frequency had influenced the children's food purchase frequency. Accordingly, it is necessary to educate both children and their mothers about good food purchase and the importance of snacking.

들깨엽(葉) 단백질(蛋白質)의 소화(消化)에 있어서 glucose의 영향(影響)에 관(關)한 연구(硏究) (Study on the effect of glucose upon the digestibility in the perilla frutescens leave)

  • The testing materials which kept perilla frutescens' leaves frezen are divided into four parts, 1. freezing green leaves, 2. glucose added to the leaves dried in the sun, 3. glucose unadded to the leaves dried in the sun and 4. the leaves dried in the immediately after collecting sample. The perilla frutescens' leaves are treated with the artificial digestion test to investigate the effects of the digestibility of ingredients and of protein. The results obtained were as follows ; 1. The digestibility of crude protein of sample using the common leaves dried in the sun immediately after collecting sample was presented highest at 83.15%, the freezing green leaves at 68.35%, glucose added to the leaves dried in the sun at 64.25% and glucose unadded to the leaves dried in the sun at 62.12%. The digestibility of perilla frutescens' by freezing green leaves, glucose added or glucose unadded to the leaves dried in the sun is on the decrease without difference. 2. It was suggested that glucose and reductive sugars to perilla frutescens' leaves is not affected by the decreased digestibility of protein, dince the digestibility of glucose added to the leaves dried in the sun and glucose unadded to the leaves dried in the sun almost never makes a difference. 3. The digestibility of freezing the green leaves for six months was quite different from the leaves that were dried in the sun immediately after collecting sample, in that the leaves that were frozen for six months were decreased 1/5 quantity of the shole crude protein.

구기자의 당, 아미노산, 지방산, 무기물 조성 (On the composition of free sugars, fatty acids, free amino acids and minerals in Lycium fructus)

  • 주로 생약식물로서 야용되어온 구기자의 당, 아미노산, 지방산, 무기물 함량을 각각 분석한 결과는 다음과 같다. 구기자에는 3종의 당이 있었으며, 당 조성으로서는 건조 구기자(품종, 청양) 100g당 glucose, 5.36%:fructose, 5.81%:sucrose, 4.39이였다. 총 단백질은 일본 I이 11.3894%로서 가장 높았으며, Asp/Asn, Glu/Gln은 다른 아미노산보다 높은 함량을 나타냈다. 구기자의 주요 지방산은 linoleic, oleic, palmitic acids이었으며, 이들은 총 지방산의 82.98~89.64%를 차지하였다. 구기자의 무기물 함량은 다른 가지과 식물과 비교할 때 $Ca^{{+}{+}}$량이 약간 적었다. 중국 II는 다른 품종에 비하여 $Ca^{{+}{+}}$, $Fe^{{+}{+}}$함량이 높았다.

개인화 영양정보 제공을 위한 소셜 네트워크 서비스 활용방안 (Implementation of Social Network Services for Providing Personalized Nutritious Information on Facebook)

  • 소셜 네트워크 서비스 사용자의 개인 데이터를 활용하는 것은 개인화된 영양정보의 제공을 위한 새로운 자원으로서 활용 가능하다. 기존 영양정보 제공 방식과 비교하여 사용자가 입력한 소셜 네트워크 서비스의 기록을 바탕으로 맞춤화된 정보를 제공하는 방법 및 개인화된 영양정보를 어떻게 제공할 것인지에 대한 연구는 매우 부족한 실정이다. 본 연구는 대표적인 소셜 네트워크 서비스인 페이스북의 사용자들이 입력한 텍스트 데이터를 바탕으로 개인화된 영양정보를 제공하기 위한 방안을 확인하고자 하였다. 이를 위하여 사용자의 페이스북 게시정보를 분석하여 개인별 영양정보를 효과적으로 제공하는 방식을 제시하였다. 연구의 목적에 따라, 본 연구는 수집된 데이터를 이용하여 데이터마이닝 기법 중 군집화를 수행하였다. 사용자 데이터에 대한 군집분석 결과, 나트륨과 당류가 사용자의 식단에서 중요한 변수로 추출되었다. 추가적으로 판매원/제조원에 따라 사용자의 식단과 관련하여 변수의 중요도에 차이가 있음을 확인하였다.

김치의 저장성에 미치는 발효성당의 영향과 Shelf-Life예측 모델 (Effects of Fermentable sugar on Storage Stability and Modeling Prediction of Shelf-Life in Kimchi)

  • 배추에서 발효성당을 0%, 30%, 58% 그리고 74% 제거한 후 김치를 제조하여, 초기당함량에 따른 산생성량을 알아보았으며 유통기간을 예측할 수 있는 식을 유도하였다. 김치의 적숙기에서의 산도인 0.75%를 김치에서 생성되는 데 소요되는 기간(T)을 보면 초기당함량(So)이 2.30%, 0.97%, 0.60%인 김치에서 각각 2일, 7일, 12일이었다. 이 관계를 T=-16.82 LogSo +7.66으로 표현하였다. 또한 배추에서 80%까지 발효성당을 제거할 경우 김치에서 최대 0.8% 정도의 산을 생성하므로써 본 연구에서의 유통기간 설정기준인 총산도 생성량으로 $25^{\circ}C$에서 30일 이상 보존 가능하였으나 관능적으로는 다소 우수하지 못하였다.

박피가 인삼의 색택 및 주요 성분 함량에 미치는 영향 (Changes of Surface Color Formation and Constituents of White Ginseng Preparer with Peeling by Using Barker)

  • 본 연구는 박피시간에 따른 백삼의 색택과 일반성분 및 사포닌 함량의 변화에 미치는 영향을 조사하였다. 백삼 표피의 색택은 박피시간이 길어질수록 양호하였다. 일반성분인 조지방, 조단백질, 지방산 및 아미노산은 박피에 따라 약간 증가하였으나 탄수화물 및 유리당은 감소하였다. 조사포닌과 ginsenosides 함량은 박피에 따라 크게 감소하였다. 박피 인삼의 ginsenosides는 무박피에 비하여 약 20-30% 감소 하였다. 이러한 결과는 백삼의 박피가 색택을 좋게 하지만 인삼의 주요 유효성분인 사포닌 함량의 현저한 감소를 초래하였다.

Molecular characterization of Japanese indigenous grape cultivar 'Koshu' (Vitis vinifera) leaf and berry skin during grape development

  • We investigated the transcriptional profiles of Japanese indigenous grape cultivar 'Koshu' (Vitis vinifera) leaf and berry skin during ripening. In leaf, 64 genes were abundantly transcribed at the end of $v{\acute{e}}raison$ (14 weeks post-flowering), whereas the expression of 61 genes was upregulated at the end of ripening (20 weeks post-flowering). In berry skin, 67 genes were abundantly transcribed at the end of $v{\acute{e}}raison$, whereas the expression of 86 genes was upregulated at the end of ripening. Gene expression associated with biological processes was activated in both tissues at the end of ripening. The expression of genes associated with photosynthesis, sugar synthesis, anthocyanin synthesis, cinnamic acid synthesis, and amino acid metabolism was observed in leaf and berry skin during ripening, together with the accumulation of sugars, anthocyanins, cinnamic acids, and amino acids. Transcripts of AUX/IAA family proteins that repress the activities of auxin-induced proteins were expressed in berry skin at the end of $v{\acute{e}}raison$. Transcripts of genes related to the ubiquitin-proteasome system that degrades AUX/IAA family proteins were abundantly expressed in berry skin at the end of ripening, suggesting that the expansion of skin cells at $v{\acute{e}}raison$ is suppressed by AUX/IAA family proteins, and that the ubiquitin-proteasome system induces the expansion of skin cells during ripening by degrading AUX/IAA family proteins. These transcriptional profiles, which provide new information on the characteristics of 'Koshu' grapevine during ripening, may explain the unique characteristics of 'Koshu' grape in comparison with those of European grapes used for winemaking, and may contribute to the improvement of 'Koshu' grape quality.

당뇨환자와 보호자의 당뇨식사요법 실천과 요구도 조사 (Compliance and Need Assessment for Diet Therapy among Diabetics and Their Caregivers)

  • The purpose of this study was to investigate the compliance and need for diet therapy among diabetics and their caregivers. A total of 625 respondents participated in this survey. Appropriate management for long-term blood glucose control and difficult-to-manage cases appeared to be diet therapy, physical activity, medical treatment and folk remedies, in that order. The most important educational avenues for diet therapy were books, magazines and TV, Most respondents were educated in diet therapy within a year after diagnosis and had practiced diet therapy for over four years. The most common diet therapy Practices were food selection and Quantity control. Of the specific problems in practicing diet therapy, time and labor, taste, and meal planning appeared to be equally difficult factors. The prevailing diet therapy skills were controlling food amounts at breakfast and supper, and selecting food for lunch and refreshments. Respondents practicing both skills were about 20% of the participants; this shows the need to improve the current situation. The nutrients most frequently considered in diet therapy practice were simple sugars (sugar and sweet goods) , total fats and cholesterol. Since the perception of the role of dietary fiber among respondents was very low, nutrition education about the importance of dietary fiber and food sources of dietary fiber was needed. Diabetics seemed to be concerned about diabetic menus. Three difficult problems in planning diabetic menus were daily menu planning, patient's preferences, and the calculation of calories. As a means of nutrition counseling, they preferred interviews. The higher the educational status and the lower the age, the higher the preference was for internet or PC counseling. Therefore, it is necessary to develop nutrition educational programs so that diabetics can obtain practical knowledge of diet therapy. Furthermore, it is also necessary to develop additional means of informing diabetics about menu planning, while still considering Korean dietary behavior.
