Physicochemical Components and Antioxidant Activities of Daebong Persimmon (Diospyros kaki cv. Hachiya) Peel Vinegars

  • To evaluate utilization of persimmon peels as novel bio-materials, the general composition and antioxidant activities of Daebong persimmon vinegar (DPV), Daebong persimmon peel vinegar (DPPV) and commercial persimmon vinegar (CPV) were investigated. The pH of DPPV had slightly higher than that of other vinegars. The titratable acidities of vinegars were 3.24% (DPV), 2.77% (DPPV) and 7.78% (CPV), respectively. The reducing sugar contents showed that DPV had slightly higher than that of other vinegars. The browning degree of DPV was lower than CPV in contrast to the turbidity. The results of Hunter's color value have showed that overall values of CPV had significantly higher than DPPV and DPV. The total phenolic contents of DPV and CPV were 19.49 and 17.13 mg/100g GAE, respectively. The total flavonoid contents of DPPV (8.04 mg/100g CE) were two fold higher than that of DPV (3.85 mg/100g CE). The antioxidant activities, by DPPH and FRAP assays, of DPV showed stronger than those of other vinegars. Free sugars were mainly composed of fructose and glucose. Organic acids were presented in the order acetic acid, succinic acid, malic acid, tartaric acid, citric acid and oxalic acid. These results suggest that the Daebong persimmon peels could be utilized for vinegar production as a health-benefit material.

  • Effect of glucose addition to xylose medium on xylitol production was investigated by using Candida parapsilosis ATCC 21019 mutant. With increasing the ratio of glucose to xylose in total amount of 50 g/l as glucose and/or xylose, xylitol production was decreased but ethanol and glycerol production were increased. Ethanol and glycerol concentration were maxmum in 10 g/l of xylose and 40 g/l of glucose medium as 21.5 g/l and 3.6 g/l, respecti- vely. No xylitol was formed in glucose medium without xylose because xylitol could be not produced from glucose. With increasing the ratio of glucose to xylose, the activity of xylose reductase which converted xylose to xylitol were decreased. The activities of xylitol dehydrogeiiase which converted xylitol to xylulose and then cell materials were found to be constant regardless of the ratio of glucose to xylose. This results indicated that glucose addition to xylose medium on cell growth was not affected. In order to prevent the inhibitory effect of glucose on xylitol production, glucose in a fermentor was fed with low concentration and then ethanol and glycerol was critically decreased and the xylitol yield from xylose of the culture with glucose feeding was recovered the almost same as that with only 50 g/l of xylose. However, the xylitol yield from total sugars (xylose and glucose) was decreased and glucose was not contributed to xylitol production. Therefore, the fermentation at high concentration of xylose without glucose was carried out. A final xylitol concentration of 242 g/l which corresponding 80.7% of xylitol yield was obtained from 300 g/l of xylose for 273 hours.

원지(遠志) Saponin의 이뇨효과(利尿效果) 및 중추억제작용(中樞抑制作用)에 관한 연구(硏究) (Effects of the Saponin of Polygalae Radix on the Renal Function and CNS-Depression)

  • Polygalae Radix was used as diuretics, analgesics and expertorants in oriental medicine. The root of Polygala tenuifolia Willd. (Polygalaceae) is comprised saponin (Onjisaponin A,B,C,D,E,F and G) polygalitol, onsitin and sugars. The pharmacological action of crude Polygala-saponin (PS) obtained from the roots are studied. The following results were obtained; 1) The median lethal dose $(LD_{50})$ of PS in mice is presented 71.1mg/kg s.c. and 694. 5mg/kg p.o.. 2) PS demonstrated diuretic action of relatively long acting duration in mice. 3) The diuretic mechanism of PS was found due to inhibitory effect of renal tubular reabsorption of electrolytes and glomerular vascular dilatation. 4) The group, administered simultaneously PS and cefadroxil monobydrate was significantly increased with PS alone group on diuretic action. Synergistic effect cefadroxil monohydrate on the diuretic action of PS seems due to competitive inhibition of plasma protein binding with PS. 5) PS demonstrated analgesic action by the acetic acid stimulating method and Randall-Selitto test in mice. 6) PS presented antipyretic action against febrile treated with the typhoid vaccine. 7) PS was significantly prolonged against the hypnotic duration of pentobarbital in mice. 8) Onset time convulsion and death induced by picrotoxin and strychnine in mice were not delayed. According to the above results, the PS was identified as a pharmacological active component obtained from roots of Polygala tenuifolia Willd.

  • 황산칼리와 인산암모니아를 주축으로 한 경기화학공업주식회사인 시제 딸기복비의 비효를 염화칼리, 황산칼리, 질산암모니아에 대비하여 비닐하우스에서 딸기, 보교조생 (Fragaria Grand EHRD)으로 시험한 결과를 요약하였다. 가수분해당을 포함하는 전당의 함량은 높였다. 일반적으로 염화칼리보다 황산칼리가 딸기즙의 딸기의 생육, 화방수.,수량에 미친 시제 딸기복비의 효과는 염화칼리, 황산칼리, 질산암모니아와 통계적인 차이가 없으나 딸기즙의 환원당, 묽은 산당분함량을 높였으며 딸기복비가 딸기즙의 당 함량을 높인것도 황산칼리 때문인 것으로 생각되었다.

Sensory and Chemical Characteristics of Worts Fermented by Leuconostoc citreum and Saccharomyces cerevisiae and Consumer Acceptability with Added Flavorings

  • This study was conducted to examine the chemical and sensory characteristics of fermented worts and consumer acceptability according to added flavorings. The worts were fermented by yeast (Saccharomyces cerevisiae) following fermentation by lactic acid bacteria (Leuconostoc citreum) at different aeration conditions. Chemical and sensory descriptive analyses were conducted to examine the effects of the fermentation conditions. The consumer acceptability of the worts with added flavorings was also examined. Organic acids, functional sugars, and ethanol were produced by L. citreum and S. cerevisiae, respectively. Ethanol concentrations ranged from 10 to 25 g/L depending on the fermentation conditions. The sensory characteristics of the fermented worts were clearly differentiated by the fermentation conditions. Yeast fermentation resulted in high intensities for certain sensory attributes such as 'alcohol', 'fermented barley', 'fermented white grape', and 'grassy'. Consumer acceptability changed with different levels of sugar and lemon flavoring, and the optimum levels were determined as 14.08% sugar and 0.98% lemon flavoring. Under these conditions, it was shown that a relatively acceptable fermented wort beverage containing functional materials can be produced.

Isolation and Characterization of Intestinal Immune System Modulating and Anticancer Active Fractions from the Herbal Prescriptions

  • The prescriptions (DB-1-DB-5) were prepared with the active herbal medicines, Acanthopanax senticosus, Glycyrrhiza uralensis, Polygonatum odoratum, and Cichorium intybus. The most active crude polysaccharide fraction (DB-2-3), which was isolated through the fractionation of hot-water extract from DB-2, was significantly reduced by periodate oxidation (52.7 and 63.7%) on intestinal immune system modulating and anticancer activity. When DB-2-3 was further fractionated by column chromatographies, DB-2-3IIc-2 showed the most potent activities. In addition, DB-2-3IIc stimulated the proliferation of bone marrow cells via Peyer's patch in dose-dependent pattern by oral administration. The metastasis of colon 26-M3.1 lung carcinoma had significantly inhibited in mice fed DB-2-3IIc at 1 mg/mouse (43.8%). DB-2-3IIc-2 mainly contained uronic acid (46.1%) and 42.5% of neutral sugar with a small amount of protein (7.6%), and component sugar analysis also showed that DB-2-3IIc-2 was composed Ara, Gal, and GalA (molar ratio; 0.50:0.63:1.00). It may be suggested that activities of DB-2-3IIc-2 are resulted from pectic polysaccharides containing a polygalacturonan moiety with side chain of neutral sugars, such as Ara and Gal.

  • Phaleria macrocarpa (Scheff.) Boerl. is a dense evergreen tree of the family Thymelaeceae. This plant is popular with the name of Mahkota dewa, which is literally translated as God's Crown. All parts of this plant including fruits, seeds, stem, and leaves have well known therapeutic properties and have been extensively used in traditional medicine for the treatment of various diseases such as cancer, diabetes mellitus, allergies, kidney disorders, blood diseases, stroke, and acne with satisfactory results. Scientific findings on bioactivities of P. macrocarpa also demonstrated different pharmacological properties of various parts of this plant including cytotoxic, antidiabetic, antioxidant, anti-inflammatory, antibacterial, and antihypertensive activities. Phytochemicals studies of P. macrocarpa revealed the presence of several classes of compounds such as benzophenones, terpenoids, xanthones, lignans, acids, and sugars. This review aims to provide a critical overview on botanical description, traditional usage, phytochemicals, and pharmacological activities of P. macrocarpa.

한외여과에 의한 온주 밀감주스의 성분 변화 (Changes in the Constituents of Citrus Juice by Ultrafiltration)

  • 제주산 온주 밀감 주스의 제품화 기술개발에 필요한 기초자료를 얻기 위하여 공극의 크기가 서로 다른 네종류의 한외여과 막을 사용하여 잔류액과 투과액의 성분 변화를 조사하였다. 공극의 크기에 따른 감소율은 총산, citric acid, ascorbic acid 유리당, neohesperidin은 10K에서 100K daltons 사이에서는 막의 공극 크기가 커짐에 따라서 증가하다가 500K daltons에서 감소하였다. 색도, 당도, 총 질소, 아미노태 질소, naringin, hesperidin의 함량은 막 공극의 크기에 따른 차이가 적거나 일정한 경향을 나타내지 않았다. 한외여과 처리를 한 결과 구연산이 감소하여, 당산비가 증가하였다. 연구된 한외여과 막 중 flux가 가장 높고, 성분들의 감소율이 가장 적은 500K daltons 막이 온주 밀감 주스 제조시 가장 적합할 것으로 생각된다.

  • The purpose of this study was to analyze the anthocyanin content of black rice crude extract according to different extraction methods, as well as to compare the effects of stabilizers(${\beta}$-cyclodextrin, maltodextrin) and sugars(sucrose, maltose) on anthocyanin color deterioration, which was examined at $100^{\circ}C$ for $120{\sim}180$ min. In the water extract, C3G (cyanidin-3-glucoside) was detected, 3.22 ppm and 3.29 ppm of C3G respectively. In the $60^{\circ}C$ water extract, anthocyanin color deterioration was retarded by 10% sucrose and 1% maltose and the thermal color deterioration was retarded by the additions of 1% maltodextrin and 1% ${\beta}$-cyclodextrin.

  • This study was conducted to investigate distribution of free sugas in the ginseng plant and change of free sugar content in dried ginseng with various drying conditions. The results obtained are as follows: 1. The total free sugar content is about 1% in the root and about 2% in the upland portions. Sucrose which accounts 80% in those free sugars, is 0.91% in main body 0.90% in raw ginseng, 0.74% in latheral root, 0.67% in head, 0.57% in skin, 0.64% in leaves, and 0.35% in steins. 2. Sucrose content is 3.3~4.6% in the ginseng root dried at temperature of 3$0^{\circ}C$ and 0.5 ~ 1% in the root dried it at temperature of 50-9$0^{\circ}C$. 3. Maltose was not present in fresh ginseng or dried ginseng which was dried under the t, but it was produced dried at the temperature above 5$0^{\circ}C$, it was 0.5% at 5$0^{\circ}C$, 1.49 %. at 7$0^{\circ}C$, and 4.03% at 9$0^{\circ}C$, respectively. This sugar Height be produced by endogenous saccharifying enzymes.
