The Physicochemical Characteristics and Antioxidant Properties of Commercial Nurungji Products in Korea (국내 시판 누룽지의 물리화학적 특성 및 항산화 성질 연구)

  • Purpose: Nurungji is a traditional Korean food made by yellowish scorched rice. After getting gelatinization of rice, a thin crust of scorched rice will usually be left in the bottom of the traditional cooking pot. In this study, physicochemical characteristics and antioxidant properties of five commercial nurungji products (CNP1, CNP2, CNP3, CNP4, and CNP5) were evaluated. Methods: Physicochemical properties of the five commercial nurungji products were evaluated with AOAC method. The antioxidant activities were assessed using the 1,1-diphenyl-2-picryl hydrazyl (DPPH), 2,2-azinobis-(3-ethyl-benozothia zoline-6-sulfonic acid)(ABTS), ferric reducing antioxidant power (FRAP), and reducing power assays. Results: Water content was the highest in CNP3, followed by CNP1, CNP2, CNP5, and CNP4. Crude ash content of all nurungji was less than 1%. In Hunter color parameter, the significantly highest a value (redness) and b value (yellowness) were measured in the CNP4 product, meanwhile the lowest in CNP3 (p<0.05). The nurungji products of CNP4 and CNP5 had the significantly higher content in total polyphenols and total flavonoids, compared to those of other products. CNP3 and CNP2 had the lowest in total polyphenols and total flavonoids, respectively. CNP4 and CNP5 products showed the significantly higher values in antioxidant activities, whereas CNP3 had the lowest activity. Conclusion: The high value of antioxidant activities in CNP4 and CNP5 might have been affected primarily by the total polyphenols with increasing browning color during the heat treatment.

  • Rice cropping in Cambodia was commonly classified into 4 types: rainfed rice, irrigated rice, floating rice and recession rice. The cropping type has been selected by farmers depended on water condition in each locations. However, recent technological and social change enforce famers to adapt new management of rice cropping. This study aimed to clarify the change in rice cropping and problems for future. Interviews to farmers has been conducted several times in Pursat province, which is one of the major rice production provinces in Cambodia. The last interview was conducted in March 2017, and focused on change in rice cropping for 10 years. Statistical data was obtained from Provincial Ministry of Agriculture in Pursat. The satellite data (LAI products derived from MODIS) was used to quantify change in cropping pattern. The statistical data shows increase in production and yield of rice, dry season rice and so on.

Studies on Beha vior of Cellulolytic and Methanogenic Bacteria Participated in Anaerobic Decomposition of Rice Straw and its Decomposition Products (볏짚의 혐기분해(嫌氣分解)에 관여(關與)하는 섬유소분해균(分解菌)과 메탄생성균상(生成菌相) 및 그 분해(分解) 생성물(生成物)에 관(關)한 연구(硏究))

  • This study was conducted to find out the behavior of anaerobic microorganisms and anaerobic decomposition products of rice straw in the strict anaerobic condition. The number of methanogenic bacteria were more isolated than cellulolytic bacteria from the digester decaying rice straw during the entire incubation time. The activity of anaerobic microorganisms, such as methanogens and cellulolytics, were high the early incubation time in the treatment of rice straw with urea, but without urea was low at that time and increased moderately after 10 days incubation. Volatile fatty acid as intermediate anaerobic decomposition products had a longer retention time and higher accumulation rate in the treatment of rice straw without urea than with urea, and predominant fatty acid was propionic acid. Gas generation rate as final products were very intimate relationship with the activity of methanogenic bacteria. Average Eh value was -250mV during the incubation time and $CH_4$ : $CO_2$ percent ratio was about 60~65 : 35~40 in this Eh value. Decomposition rate of rice straw calculated from $CH_4$ and $CO_2$ gas wars 45.6% for 50 days in the treatment of rice straw with urea, and 36.8% without urea.

Effect of Ge(Germanium) Treatment on Rice Quality (게르마늄 처리가 쌀 품질에 미치는 영향)

  • This study was conducted to investigate the effects of Ge(germanium) treatment on rice quality. Rice samples were divided into the following treatment groups: control(CON: cultivated without Ge), Ge-1(cultivated with 200 kg of rough stone powder containing 1.6 mg/kg germanium per 10 ha), and Ge-2(cultivated with 500 kg of rough stone powder containing 1.6 mg/kg germanium per 10 ha). The mean total Ge level in the Ge-2 sample was 20.47 ppb. The levels of Ca and Na in the Ge-2 rice increased by 65.12 and 110.28%, respectively, when compared to the control, whereas the Zn, Mn, Fe, Mg and K content decreased by 11.44~30.50%. No significant difference in the percentage weight of C and O was observed among samples. The order of the percentage weight of P, S, and Cl was Ge-2>Ge-1>CON. The free amino acids were higher in samples from the Ge-1 and Ge-2 groups than in samples from the control. The GABA($\gamma$-aminobutyric acid) amount in the Ge-2 products was significantly high compared to other groups. The micro structure of Ge-2 showed a firmer network than the control and had a macroporous structure. Conversely, the Ge-2 products had higher scores for stickiness, hardness and overall taste when compared to the other groups. These results suggest that rice treated with rough stone powder containing germanium can be used in the production of commercially-desired functional rice.

  • 1. In the milling process of Tongil rice (brown rice), the milling rate was remarkable at 960 rpm. (rotation per minute), roller mesh of 36 and opening rate of 90%, but the milling ability was found to be best at 1050 rpm., roller mesh of 40 and at opening rate of 100%. 2. The protein content of Tongil rice was 1% higher than the other existing variety. 3. The contents of protein, ash, fiber, vitamin $B_1$ and vitamin $B_2$ varied significantly according to the milling degrees. As an example, at the milling degree of 70%, it was possible to reduce the losses of more than 10% in protein, of more than 30% in vitamin $B_1$, of more than 20% in vitamin $B_2$, as compared to the percentage losses obtained at the milling degree of 100%.

Effect of γ-Irradiation on the Antioxidant Activity of Rice Hull, Rice Bran and Barley Bran (감마선 조사에 의한 왕겨, 미강, 맥강의 항산화능의 변화)

  • Effect of ${\gamma}$-irradiation to cereal processed by-products was examined for antioxidative ability. Rice hull (RH), rice bran (RB) and barley bran (BB) were irradiated with 5, 10, 15 and 20 kGy of ${\gamma}$-ray at 4.2 kGy/h. The amount of total phenol compounds of unirradiated RH, RB, and BB were 0.873 mM, 0.643 mM, and 0.377 mM, respectively. Irradiation up to 20 kGy did not show noticeable effect to the amount of total phenol compounds in RH, RB and BB. Electron donating abilities of RH, RB and BB were very similar, and they were not affected by irradiation. According to TBARS analyses, the inhibition abilities of lipid peroxidation of RH and RB were not affected by ${\gamma}$-irradiation, while those of BB were decreased with irradiation. These results indicate that BB is more sensitive to ${\gamma}$-irradiation than other rice processed by-products.

Energy and nutrition evaluation per single serving package for each type of home meal replacement rice (가정간편식 밥류의 유형별 1회 제공 포장량 당 에너지 및 영양성분 함량 평가)

  • Purpose: The purpose of this study was to evaluate the energy and nutrient contents of home meal replacement (HMR) rice products per single serving package based on nutrition labels. Methods: The market research was conducted from February to July 2021 on products sold on the internet, at convenience stores, etc. A total of 406 products were investigated. The products were divided into the following 6 classifications: instant rice (n = 45), cup rice (n = 64), frozen rice (n = 188), rice bowls with toppings (n = 32), gimbap (n = 38), and triangular gimbap (n = 39). Results: The mean packaging weight per serving was the highest in the rice bowl with toppings at 297.1 g, followed by cup rice (264.0 g), frozen rice (239.5 g), gimbap (230.2 g), instant rice (193.4 g), and triangular gimbap (121.6 g) (p < 0.001). The energy per serving package for the rice bowl with toppings was significantly the highest at 496.0 kcal (p < 0.001). The sodium content per serving package of gimbap was the highest at 1,021.8 mg and that of the instant rice was lowest at 37.4 mg (p < 0.001). The price per serving package of the rice bowl with toppings at 4,333.8 won was the highest. The contribution to the daily nutritional value per serving package of all types of HMR rice products surveyed showed an average range of 10-25% for energy, 11-22% for carbohydrates, and 2-51% for sodium. Conclusion: These results indicate the energy and nutrient contents of HMR rice products, vary by type. Therefore, consumers should review the nutrition labeling to select an appropriate HMR rice product based on their intended consumption.

Determination of C3G Content in Blackish Purple Rice using HPLC and UV-Vis Spectrophotometer

  • Cyanidin 3-glucoside (C3G) content contained in the grains of blackish purple rice varieties, Heugjinjubyeo, Kilimheugmi, Heugnambyeo, Sanghaehy-anghyeolla, and the progenies derived from their crosses was evaluated by HPLC and UV-Vis spectroscopy. C3G content was higher in the range of 10-30% by using UV-Vis method compared to HPLC method. A significant linear relationship was, however, observed between two analytical methods. The correlation coefficient was 0.98. Thus, this results suggested that it would be able to use UV-Vis spectroscopy to determine C3G content which does not demanded precise value like selection.

Nitrogen Sources Inhibit Biofilm Formation by Xanthomonas oryzae pv. oryzae

  • Xanthomonas oryzae pv. oryzae (Xoo) causes bacterial blight, which results in severe economic damage to rice farms. Xoo produces biofilms for pathogenesis and survival both inside and outside the host. Biofilms, which are important virulence factors, play a key role in causing the symptoms of Xoo infection. In the present study, we investigated the nutritional conditions for biofilm formation by Xoo. Although Xoo biofilm formation may be initiated by interactions with the host, Xoo biofilm cannot mature without the support of favorable nutritional conditions. Nitrogen sources inhibited Xoo biofilm formation by overwhelming the positive effect that cell growth has on it. However, limited nutrients with low amino acid concentration supported biofilm formation by Xoo in the xylem sap rather than in the phloem sap of rice.

  • The induction of enzymes and the accumulation of their end products associated with self-defense mechanism in rice were investigated. When rice leaves were irradiated with UV light, activities of diterpene cyclase, phenylalanine ammonia-lyase (PAL), and cinnamic acid 4-hydroxylase (CA4H) were induced and rice phytoalexin, momilactone A was accumulated. The content of p-coumaric acid in rice leaves was closely correlated with self-defense or allelopathic potential against barnyardgrass. UV-challenged rice leaves gave rise to the inhibition of barnyardgrass growth.
