호텔 이용 고객의 Italian Food에 대한 메뉴선택 속성에 관한 연구 - 서울 시내 특 1급 호텔 Italian Restaurant을 대상으로 - (A Study on the Menu-Selection Behavior in Hotel Italian Restaurant)

  • As the life style of modern people is gradually being more scientific, up-to-date and specialized, food habit and food culture are a measure of cultural level of a country. Studies on consumer behavioral model show that food habit is closely related to consumer preference, changing life pattern and increasing family income. The purpose of this study was, accordingly, to define the impact of menu characteristics on customer menu selection. For that purpose, some attempts were made: First, discuss the theories on Italian food and customer purchasing behavior as a standard of analysis. Second, find out if there are any differences in customer menu-selection factors in hotel Italian restaurant. Third, make an empirical analysis of menu-selection factors in hotel Italian restaurant to suggest in which direction it should move forward. Fourth, analyze the relationship of demographic characteristics to menu-selection factors.

고급 레스토랑 선택에 있어서 브랜드 연상 속성의 우선순위 연구 (The Prioritized Traits of Brand Association Initiating Consumers' Preference on Fine Dining selection)

  • 소비자들은 레스토랑 선택에 있어서 선호되는 속성을 기억 속에서 연결함으로 해서 다양한 니즈를 만족시키고 자아를 표현할 수 있는 이미지의 브랜드에 충실하게 된다. 소비자가 레스토랑을 선택하는 과정은 사회적, 문화적 가치, 개인 성향 등을 포함하는 복잡한 심리적 과정이다. 따라서, 본 연구는 고급 레스토랑 중심으로, 레스토랑 음식 속성 이외의 레스토랑 선택 속성들을 알아보고 그들의 우선순위를 조사하고자 시행하였다. 연구방법으로 포커스 그룹 세션을 통해 브랜드 연상의 변수를 파악하고, 이를 통해 실증적 연구를 컨조인트 분석을 통해 실시하였다. 결과로서, 시스템 편리성, 분위기, 가격, 서비스 측면(고객과의 관계형성, 직원의 능력)이 주요 속성으로 인지되었다. 아울러 그러한 속성의 중요도 순서는 분위기가 첫 번째 순위로 나타났으며, 가격, 관계 형성, 직원의 능력, 시스템 편리성 순으로 나타났다. 본 연구는 브랜드 연상과 레스토랑 선호의 관련성을 설명하고 있으며, 브랜드 선호 속성에 관한 향후 연구의 발판이 된다.

소고기 전문식당 선택속성에 대한 소비자 선호도 연구 (An Analysis on the Preference of Consumers to the Choice Attributes of Beef Restaurant)

  • Purpose: This study investigated beef restaurant's selection attributes using conjoint analysis in order to provide useful information to marketers and managers. Methods: A total of 320 questionnaires were distributed to consumers who visited a beef restaurant in August 2016, and 284 were completed (96.90%). Statistical analyses of data were performed using SPSS/Windows 22.0 for descriptive statistics and conjoint analysis. Results: The results of this study demonstrate the relative importance and level of each attribute for selecting beef restaurants. Price showed the greatest importance (34.86%), followed by origin of beef (27.52%), level of support services (25.72%), and variety of side dishes (11.90%). The optimum attribute combination was various side dishes (0.059), Korean beef (0.385), Very high service level (-0.291), and price of 8,000 won (-0.782). The most preferred beef restaurant gained 37.60% potential market share from choice simulation. There were significant differences in importance of attributes related to age of respondents. For respondents in their 20s and older than 50s, the first consideration was price. Respondents in their 30s considered the level of support services first while those in their 40s considered origin of beef first. Importance of attributes based on companion of respondents revealed that all respondents considered price first. Conclusion: This study contributes to development of marketing plans based on a customer's involvement level focusing on their primary selection criteria when choosing a beef restaurant. Additionally, marketers who manage beef restaurants can estimate the market share of imaginary beef restaurants from these results.

외식 소비동기가 레스토랑 선택속성 중요도에 미치는 영향: 패션 프리미엄 아울렛을 중심으로 (Motivations of Selecting Restaurants for Eating-out: Focus on Fashion Premium Outlets)

  • Purpose - This research examined the effect of hedonic and utilitarian eating-out motivations on the evaluation of restaurant selection attributes in a fashion premium outlet. Additionally, the influence of experimental and functional attributes on customers' preference for hedonic eating-out motives and utilitarian eating-out motives, and variation of moderating effects through the gender was examined. Research design, data, and methodology - A survey was conducted to verify the established research hypothesis. The questionnaire items for the research were modified to fit the situation of the present study. In order to elaborate the questionnaire, the literature of the previous researchers was reviewed and supplemented. The survey conducted 207 online questionnaires for consumers who have visited domestic fashion premium outlets from July 4, 2017 to July 27, 2017. A total of 207 questionnaires were collected, and a total of 206 questionnaires were used for the empirical analysis after excluding one inappropriate response. In order to verify the reliability and validity of the measured variables, exploratory factor analysis and reliability analysis were performed using SPSS 20.0. Next, the structural equation model (SEM) statistical method was used to test the hypotheses of the study. Results - Hedonic motivation had more influence on experimental attribute importance than the functional attribute importance of the restaurant. However, this result was different depending on the gender. The effects of hedonic motives on empirical attributes were more influenced by female groups, and when influencing functional attributes, male groups were more influenced. However, it was statistically significant (p <0.05) in the female group only when the hedonic eating out motives influenced empirical attributes. Conclusions - This study analyzed the effect of eating-out motivation on the restaurant preference attributes and suggested practical implications. First, customers with hedonic eating-out motivations were evaluating experiential attributes to be more important than functional attributes. Second, for customers who are motivated to use practical eating-out habits, companies should provide services that meet practical and economic needs. In particular, female customers visiting restaurants need differentiated marketing strategies that make them feel new experiences rather than practical ones. In addition, it is necessary to study more complex and integrated studies which will influence restaurant selection attributes of premium outlets customers by adding various eating out motives and selection attributes.

A Study on the Customers' Eating Out Behaviors in Food Consumption Patterns

  • This study aims to empirically analyze the differences between groups of customers who prefer delivery food, which is rapidly growing amid the COVID-19 pandemic, and those who prefer the traditional practice of visiting offline restaurants. Based on the eating out lifestyle, participants were divided into three groups: participants who prefer food delivery, those who prefer to visit restaurants, and those who favor both. The comparison of differences between the groups was analyzed. A total of 215 questionnaires were distributed, and reliability and validity were verified with a sample of 201 copies, excluding 14 unreliable respondents. Then, a multivariate analysis of variance was used to compare the groups. The results showed that regarding offline restaurants, the group of customers who prefer to visit restaurants valued their atmosphere, while the customers who prefer delivery food valued the reputation of the restaurant. Regarding delivery-specialized restaurants, the group of customers who prefer delivery placed greater value on coupon events and payment convenience than other groups. The results revealed that the difference between the customers who prefer to visit restaurants and those who prefer delivery food was identified through empirical analysis, which provides strategic implications for catering companies and restaurant industries during COVID-19 in Korea.

패밀리 레스토랑의 서비스 스케이프 및 이미지 포지셔닝 맵에 관한 연구 (A Study on the Servicescape and Image Positioning Map in the Family Restaurant Industry)

  • The growth of foodservice industry has caused keen competition in the family restaurant industry. For a differentiation strategy to be competitive, on the preferential basis, it is necessary for each family restaurant business to analyze its position in the market. Therefore, this study is to certify customers' perceived servicescape and image similarity and analyzes positioning of seven family restaurants. For this research, multidimensional scaling(MDS) is performed to determine how they are positioned relative to competitors. According to the result of the positioning map(ALSCAL and PROFIT map), it is found that Outback steakhouse, T.G.I. Friday's, Bennigans' have more strong competitiveness than VIPS, Marche and Sizzler in servicescape factors and restaurant selection attribute except menu diversity. But the preference order does not follow the order of competitiveness. This result from the positioning map means that each business needs various marketing strategies that cannot be copied easily.

김치 제품 선택 속성이 고객 만족과 재구매 의도에 미치는 영향 (The Effects of Kimchi Product Selection Attribute on Customer Satisfaction and Repurchase Intent)

  • The purpose of this study is to investigate the preference of Korean traditional food and kimchi among different age groups in order to find a way to increase kimchi consumption. For this study, data from 15 male respondents(5.2%) and 271 female respondents(94.8%) was used. Age distribution of total respondents were in their 20's(21.8%), 30's(32.7%), 40's(32.7%) and 50's(11.6%), which showed the rate of 40's was very high. Most of the groups showed similar rates over the question on "have to eat kimchi" and "don't need to eat kimchi", but the elders' preference was high while the youngers' was relatively low. Therefore, the preference of kimchi has a small gap between the age groups, but all of them like kimchi in general.

Second, find out if there are any differences in customer menu-selection factors for Korean restaurantin in a hotel. Third, make an empirical analysis of menu-selection factors for Korean in a hotel to suggest which direction it should go forward. Fourth, analyze the relationship between demographic characteristics and menu-selection factors.

서울.경기지역 일식 체인전문점에 대한 인지도와 선호도 (Customer's perception and preference for Japanese Chain Restaurants in Seoul & Kyunggi Province)

  • The objectives of this study were, 1) to investigate the perception and preference for Japanese chain restaurants due to demographics and consumption behaviors, and 2) to research improvements for Japanese chain restaurants according to the customers' dissatisfaction. Frequency analysis and one-way ANOVA were used to analyze the data. Three hundred questionnaires were distributed and 254 were returned(84.66%). The customers' perception and preference about Japanese chain restaurants were significantly related with each other. The differences of perception and preference due to demographics and consumption behaviors were significant. The most dissatisfied selection attributes were price, number of Korean dishes, number of branch offices, and advertisements, in order. From examining the progressive circmnstances of Korean food-service industry and the social trends toward a preference for healthy, special ethnic food and dishes for diet control and high protein-low fat, it is apparent that food-service businesses related to Japanese food have the potential for success. The results of this study should provide valuable information for administrators and managers in the hospitality industry.
