  • Background: Red ginseng marc, the residue of red ginseng left after water extraction, is rich in dietary fiber. Dietary fiber derived from fruits or vegetables can promote the proliferation of probiotics, and it is a key technology in the food industry to increase the productivity of probiotics by adding growth-enhancing substances such as dietary fiber. In this study, the effect of red ginseng dietary fiber (RGDF) on the growth of probiotic bacterial strains was investigated at the phenotypic and genetic levels. Methods: We performed transcriptome profiling of Lactiplantibacillus plantarum IDCC3501 in two phases of culture (logarithmic (L)-phase and stationary (S)-phase) in two culture conditions (with or without RGDF) using RNA-seq. Differentially expressed genes (DEGs) were identified and classified according to Gene Ontology terms. Results: The growth of L.plantarum IDCC3501 was enhanced in medium supplemented with RGDF up to 2%. As a result of DEG analysis, 29 genes were upregulated and 30 were downregulated in the RGDF-treated group in the L-phase. In the S-phase, 57 genes were upregulated and 126 were downregulated in the RGDF-treated group. Among the upregulated genes, 5 were upregulated only in the L-phase, 10 were upregulated only in the S-phase, and 3 were upregulated in both the L- and S-phases. Conclusions: Transcriptome analysis could be a valuable tool for elucidating the molecular mechanisms by which RGDF promotes the proliferation of L.plantarum IDCC3501. This growth-promoting effect of RGDF is important, since RGDF could be used as a prebiotic source without additional chemical or enzymatic processing.

  • Purpose: The study sought to provide basic information for North Korean defectors (Sae-Tu-Min) by studying the quality of life(QoL) based on their general characteristics and health problems. Methods: The targeted subjects were 1400 North Korean settlers who were receiving settlement service by Korean National Red Cross after finishing their training at Hanawon in 2005. The data was collected from August to October in 2007. The QoL was assessed by Medical Outcomes Study Short Form-36. Collected data were analyzed by ANOVA and t-test with SPSS win 15.0 program. Result: The majority of the 466 subjects were female(77.9%). The average age was 36.8 years, 52.8% lived alone, and 64.0% were unemployed. The average QoL score of the group was $62.4{\pm}18.4$, which was markedly lower in terms of social, physical and mental health compared to the scores of immigrants to South Korea from other countries. The score was the highest for physical ability and the lowest for general health. Influential socio-demographic factors to QoL were gender, age, education, religion, annual salary, occupation, and life insurance. Employed in the subject group showed higher level of QoL on eight categories than unemployed. Concerning health problems that detracted from QoL, 18.5% of the subjects were aware they suffered from anemia and 8.8% of them recognized they suffered from attention deficits. Conclusion: The health conditions of the North Korean settlers had improved since they settled in South Korea, but their QoL was lower than other immigrants. Various programs to maintain and promote the health of North Korean settlers would be useful.

  • Blood plasma proteins dissolved in isotonic phosphate-buffered saline were found to be adsorbed to red blood cell ghosts suspended in the solution. This was evidenced by concentration reduction of the plasma proteins in the bulk solution. For initial concentration of 0.1mg/mL immuno globulin, concentration reduction increased from 14% to 45% as the volume fraction of red blood cell ghosts in the solution increased from 5% to 45%. For initial concentration of 0.075mg/mL albumin, the concentration reduction increased from 12% to 47% as the volume fraction of red blood cell ghosts in the solution increased from 5% to 70%. The concentration reduction of plasma proteins in hardened red blood cell ghosts was higher than that in red blood cell ghosts. The number of adsorbed protein molecules per a red blood cell ghost were reduced as volume fraction of the ghosts in the solution increased.

  • Field investigations were initiated to determine possible new 'ssam' vegetable that could be grown during the summer season in highland. Korean 'ssam' means cooked rice in vegetables. The 'ssam' vegetable is called that those leaves has been used for wrapping at meal. Seventeen leafy vegetables were studied, including chard (Beta vulgaris L. var. flavescens DC.), leaf broccoli (Brassica oleracea L. var. italica), Chinese leek (Allium tuberosum Rottl.), Japanese hornwort (Cryptotaenia japonica Hassk), red leaf mustard (Brassica juncea L.), green leaf mustard (Brassica juncea L.), leaf parsley (Petroselinum crispum Nijim), pakchoi (Brassica campestris L. ssp. chinensis Jusl.) tatsoi (Brassica campestris var. narisoma), kale (Brassica oleracea var. acephala), collard (Brassica oleracea var. acephala), Korean mint (Agastache rugosa O. Kuntze), romaine lettuce (Lactuca sativa L. var. longifolia Lam.), red leaf chicory (Cichorium intybus L. var. folisum), red chicory (Cichorium intybus L. var. folisum), green leaf chicory (Cichorium intybus L. var. folisum), and sprouting broccoli (Brassica oleracea L. var. italica). Date of the first harvest in 1999 was July 10th in chard, leaf broccoli, red mustard, mustard, leaf parsley, pakchoi, tatsoi, kale, collard, Korean mint, red leaf chicory, red chicory, green leaf chicory, and sprouting broccoli. Date of the first harvest for Chinese leek, Japanese hornwort, and romaine lettuce was from the middle of June to the late of August. Based on ratings on marketable yield, we found good leaf shape, taste and yield in chard, red leaf mustard, green leaf mustard, pakchoi, tatsoi, romaine lettuce, red leaf chicory, red chicory, and green leaf chicory. Even though the most of all these vegetables were obtained high scores by test panels in shape, taste and quality, but some of them revealed inadequate leaf size as a 'ssam' vegetable. That problem will be solved by control of harvesting time. On the basis of this observation, chard, red leaf mustard, green leaf mustard, pakchoi, tatsoi, romaine lettuce, red leaf chicory, red chicory, and green leaf chicory were rated as promising 'ssam' vegetable by analysis of profits, adaptation, and quality.

  • Relationship between the causative organi는 of red-tide and environmental factors had been ecologically dealt wtih. The surveys were conducted at seven station in Jinhae Bay from July to September 1981. The water temperature and salinity had wide range, i.e. 23.3~29.3$^{\circ}C$ and 19G.78~31.29$\textperthousand$, but several chemical factors remarkably fluctuated; dissolved oxygen 102.9~210.4%, COD 2.10~8.96mg$O_2$/l, pH 8.1~9.4, $NO_3$-N trace~1, 052$\mu$g/l, $PO_4$-P 0.6~58.9$\mu$g/l and chlorophyll-a 2.18~290.5mg/$m^3$ in the observed area. The red-tide was mainly caused by two dinoflagellata taxa throughout major outbreaks occurred in July through September. Leading species of red-tide were Gymnodinium nagasakiense belong to the ajor species. During the surveyed period, cell nubers of the causative organisms of the red-tide extensively varied from 3${\times} /10^4$ cells/l to $1.5\times10^7 $cells/l with moths and stations; Prorocentrum spp. 0.3~12.5$\times\10^5$ cells/l in July; Gymnodinium nagasakiense 0.2~5.9$\times10^6 cells/l, 1.1~4.7$\times10^6$ cells/l, and 0.2~15.1$\times10^6$ cells/l in July, August, and September, respectively. Gymnodinium nagasakiense red-tide seemed to be caused by the high water temperature in summer, unusually low salinity due to heavy rains, and the concentrated nutrients for phytoplankton supplied with the municipal sewages from the urban areas and the wastewaters from the industrial complexes.

  • We prepared a functional red soybean curd (RS) from Ang-Khak according to various concentration (RS1 : red rice powder 0.1 g/10 mL, RS2: 0.2 g/10 mL, RS3: 0.3 g/10 mL, RS4: 0.4 g/10 mL, RS5: 0.5 g/10 mL, CS: control soybean curd). During the storage period of red soybean curd, pH, acidity, and microbial counts showed a minimum change in RS5. And in the case of color, all groups have slightly increased in yellowness except RS1. In the case of texture, hardness, gumminess, and springiness appeared to be increased for a few days and then fell down. As water drained out of soybean curd during storage at 1$0^{\circ}C$, it became so stiff and then rotten that the hardness of soybean curd increased in the early stage and then decreased after all. After a week, we could find a better preservative effect of RS than CS. Resultly, we need more efforts to prolong the shelf-life of soybean curd with applying the functionality of Ang-Khak.

  • This experiment was carried out to investigate the effect of red ginseng extract on the growth of Lactobacillus sp. (L acidophilus, L casei, L salivarius), Escherichia coli and Listeria monocytogenes in pH controled medium by $\beta-Glycerol\;PO_4$ buffer. The growth of Lactobacillus sp. was show a similar pattern in control and MRS broth with red ginseng extract $1.0\%$ but was remarkably show inhibiting in MRS broth with over $2.0\%$ red ginseng extracts. The growth of E coli was inhibited in Trypticase soy broth with $1.0\%$ red ginseng extracts. Also the growth of L monocytogenes was inhibited in Trypticase soy broth with $5.0\%$ red ginseng extract The growth of L acidophilus KCTC3150, L casei KCTC3189, L salivarius ssp. salivarius CNU27, and E coli KCTC1039, L monocytogenes KCTC3443 were remarkably inhibited in pH non-control medium and pH control medium with $10\%$ red ginseng extract These results was suggested to effect of inhibition of microorganisms growth not pH decrease by organic acid but another components in red ginseng extract.

  • The general properties(size, shape, fruit constituents) of ten different varieties of dried red pepper and the proximate chemical composition, carotenoids content and Hunter color values of their powders were examined in order to establish an objective instrumental method to evaluate the consumer acceptability of red pepper powder. The results of instrumentally measured color values were compared with the sensory acceptability data obtained from 100 housewives in Korea. Red carotenoid consisted of 68-85% of total carotenoids, while ${\beta}-carotene$ content showed close relationship with the sensory color preference. The values of Hunter color system, L,a,b and axL, showed significant relationships with the sensory color preference. Especially, axL value had close relationship with both color preference and pungency intensity of red pepper. Therefore, we suggest the consumer acceptability of red pepper powder can be determined instrumentally by axL value of colorimeter. Sensory acceptability=0.02001(axL)-12.5774
