A Qualitative Study on the Use of Fallacies in the 2022 Korean Presidential Debates (20대 대선 후보 TV토론에서의 오류 사용에 관한 질적 연구)

  • The present study aims to explore how fallacies, arguments that seem valid but are not, appear in 2022 South Korean presidential debates. It qualitatively analyzes the candidates' remarks in the first and last presidential debates (240 minutes) using 20 formal and informal fallacy concepts as a theoretical framework. Results show that the three candidates used 23 informal fallacies from 15 categories, including the straw man, red herring, begging the question, complex question, hasty generalization, appeal to the masses, and you too. The candidates relied on fallacies to defend their image and electoral agenda from adversary attacks and to contaminate their opponent's image and agenda. The arguers, who struggled with tough questions, frequently made fallacies as pseudo-arguments to avoid the situation without lying and violating election laws. This study indicates that the fallacy system can be a framework for analyzing crucial political content. Moreover, it warns against the abuse of fallacies in TV debates.

  • Regional foods is influenced by weather, local and social environment etc. The purpose of this study was to understand that regional foods in the middle of Chosun Dynasty through Domundaejac. Some of representative dishes of the Hansung and Kyonggi-do Area is duck(rice cake) of seasonally celebrated days, hangua(korea confectionary) and rice wine. Typical foods in Chungchong-do Area is included persimmon, jujube, watermelon and wax gourd. Some of the well-known food in Kangwon-do Area is pear, bangpungchuk(gruel), sukebyung(rice cake), woongjijunggua(korea confectionary) and sanat-kimchi(picked mustard leaves and stem) that is seemed characteristics of mountainous section. Some of the famous dishes in Cholla-do Area is backsanja(korea confectionary), tea, chuksun kimchi(bamboo shoot pickle), citrus fruits and ear shell. Kyongsan-do Area ia famous persimmon, bamboo fruit, dasik(korea confectionary) and yakban(glutinous rice cake). Hwanghae-do Area is famed pear and choshi as assumed the eatly form of gochujang(thick soypaste mixed with red pepper). Representative dishes are deljjuk(blue berry), herring, sangat-kimchi(picked mustard leaves and sterm) in Hamgyong-do Area and daemandu(big dumpling) in Pyongan-do Area. The coast area is famous for using lots of sea food. Fresh seafood is consumed raw, and clams, fish and seaweed are liberally added to soups and other dishes. The East coast is catched salmon, flatfish, codfish, sandfish and mackerel The West coast is catched yellow corvenia, lobster, tiny shrimp and large-eyed herring. The South coast is catched sea mussel, codfish and laver.

Antibacterial effects of Chitosanon-ascorbate Treated Kwamaegi Prepared on Microorganism Contamination (Chitosan-ascorbate 처리 과메기에 있어서 오염미생물에 대한 저해효과)

  • We examined saury, herring, gizzard shad kwamaegi to measure of microbic contamination rate of kwamegi that are sold in the market now. In the total bacteria, staphylococcus, peroxide value, and microorganisms is inhibited that from sample that we treated a substance with chitosan-ascorbate (CA) and other orders deep water (DW), ginseng steamed red and wine (GRW), NT (not treated). When we compared between SGRW and SNT, SCA show us more inhibition effect 0.22-0.49 log cycle in the total aerobacter. When we compared between HDW and HNT, HCA restraint 0.05-0.45log cycle, and when we compared between GDW and GNT, GCA inhibited 0.45 log cycle. In the coliform and E. coli, growths of microorganisms were inhibited followed order by treatment of CA, NT, and DW. GDW, HCA and HNT checked enough amount of water from the moisture measurement; but SGW, GCA, HEW and SCA showed 7-15% lack of moisture, and SNT and GNT have 10% more moisture. Peroxide value is changed to 41-51meq/kg when we did treat CA in there and a side that didn't add antimicrobial expressed the result numerically that 56-58meq/kg. In the sensory evaluation, customer gave preference to followed by Saury kwamaegi, herring, and gizzard shad kwamaegi. We have a point of view when kwamaeki manufactured if we add natural antibiotic and it uses to vacuum drying, we would inhibited of multiplication of microorganism, and of peroxides.

  • In order to promote the consumption of small red muscle fish, such as saury, sardine, herring, etc., a new conditioning technique to soften backbone and small bones was investigated by using kimchi seasoning ingredients and organic acids. In the conditioning process, various chemical changes were examined during 60 days at 15 days intervals, The decrease of moisture content and the increase of salt concentration in seasoned fish meat were good correlated respectively. In the dry salt conditioning, the moisture content was more rapidly decreased than wet salt conditioning. The pH of fish meat during conditioning were more slowly decreased in dry salting than in wet salting. The VBN contents were suppressed under 30 mg/100 g in dry salt conditioning during 60 days at $5^{\circ}C$. The addition of rice bran in dry salting was effective on retarding lipid oxidation because the TBA value was most effectively retarded.

Mercury Contamination and Risk Evaluation in Commonly Consumed Fishes as Affected by Habitat (서식지에 따른 다소비 어류의 총수은 오염 및 위해 평가)

  • This study investigated the concentration of total mercury in 17 species of commonly consumed fishes and assessed the risk to human health from provisional tolerable weekly intakes PTWI% as affected by migratory characterization, such as migration and vagility. The measured mean concentrations of total mercury in these 17 species of commonly consumed fishes suggest that mean concentrations of total mercury in 10 species of migratory fishes (largehead hairtail, chub mackerel, Pacific saury, skipjack tuna, Pacific cod, anchovy, Alaska pollack, brown croaker, Japanese Spanish mackerel, yellow croaker and Pacific herring) were low compared to those in 7 species of demersal fishes (red stingray, brown sole, bastard halibut, conger eel, blackmouth angler, rockfish and filefish). Based on the mean concentrations, the PTWI% of total mercury among commonly consumed migratory fishes was 3.393%, which was higher than that of commonly consumed demersal fishes (2.710%).

Contamination and Risk Assessment of Lead and Cadmium in Commonly Consumed Fishes as Affected by Habitat (서식지에 따른 다소비 어류의 납과 카드뮴의 오염 및 위해 평가)

  • This study determined the concentrations of lead and cadmium in 18 species of commonly consumed fish and assessed the risk based on provisional tolerable weekly (monthly) intakes [PTW(M)I] % as affected by behavioral characteristics, such as migration and settlement. In the 18 species, the mean concentrations of lead and cadmium were higher in the 11 species of migratory fish (llargehead hairtail Trichiurus lepturus, chub mackerel Scomber japonicus, Pacific saury Cololabis saira, skipjack tuna Katsuwonus pelamis, Pacific cod Gadus macrocephalus, anchovy Engraulis japonicus, Alaska pollack Theragra chalcogramm, brown croaker Miichthys miiuy, Japanese Spanish mackerel Scomberomorus niphonius, yellow croaker Larimichthys polyactis, and Pacific herring Clupea pallasii) than in the seven demersal species (red stingray Dasyatis akajei, brown sole Pleuronectes herzensteini, bastard halibut Paralichthys olivaceus, conger eel Conger myriaster, blackmouth angler Lophiomus setigerus, rockfish Sebastes schlegelii, and filefish Stephanolepis cirrhifer). Based on the mean concentrations, the PTWI % of lead and cadmium in commonly consumed migratory fish were 1.900 and 2.986%, respectively, which were higher than the values for lead and cadmium in the commonly consumed demersal fishes (0.257 and 0.318%, respectively). The estimation of weekly (monthly) intakes and target hazard quotients for the toxic elements lead and cadmium revealed that the commonly consumed migratory and demersal fish do not pose any health risks for consumers.

  • In odor to improve preference to small red muscle fish such as saury, sardine, herring, etc., a new seasoning and conditioning process was experimented using kimchi seasoning ingredients and organic acids. The sensory profiles during 60 days of conditioning at $5^{\circ}C$ showed better results in dry salting than in wet salting. The additions of rice bran in dry salting gave advantageous effect on the sensory evaluation of conditioned saury with kimchi seasoning. The counts of remained fine bones and hardness of backbones after 60 days of conditioning were about $50\%\;and\;23\%$ in wet salted product, and $38\sim41\%$ and $11\sim14\%$ in dry salted product respectively, as compared to raw saury, The decomposition of protein to amino acids was more severe in wet salted product than in dry salted product. Histidine, leucine, glutamic acid, alanine, and valine in order were abundant in wet salted product, but histidine, glutamic acid, arginine, leucine, and alanine in order were contained plentifully in dry salted product.
