Sensory and Mechanical Characteristics of Ssuck-injulmi Supplemented by Mugworts (쑥인절미의 제조방법에 따른 텍스쳐 특성)

  • "Suck-injulmi" is one of the Korean traditional rice cake made from glutinous rice and mugworts. The optimun conditions for the preparation of "Ssuck-injulmi" were investigated. The best recipe of "Ssuck-injulmi" was 1) adding 240 g (80%) glutinous rice flour and 60 g (20%) raw or boiled mugworts by hand milling, or boiled mugworts after steaming glutinous rice by hand milling. 2) adding 210 g (70%) glutinous rice and 90 g (30%) boiled mugworts by mechanical method. The Moisture of "Ssuck-injulmi" was 43.39%-51.33%. The Hardness of "Ssuck-injulmi" was high in the order of 54,53, 52, 51 and The Cohesiveness was 53, 54,51,52 and The Elasticity was 51,53,54,52 and The Gumminess and The Chewiness were 54, 53, 51, 52 and The Adhesiveness was 52, 53, 51, 54. The value of ′L′ was high in the 52, the value of ′a′ was 54 and the value of ′b′ was 53.

The Content Analysis of the Korean Food Menu Naming Standard (한식 메뉴 명명 기준에 대한 내용분석)

  • This research analyzed the naming standard of Korea menu names divided into two groups, main dish and side dish. The research was conducted by contents analysis of selected literature articles and multiple-response cross tabulation analysis. The result demonstrated that the naming standard of Korea food consisted of the main ingredient name - sub ingredient name - main condiment name and main recipe. On the other hand, the menu name that is in native language or has a historical origin is exempt from this classification. Therefore, this study proposes a new standard, 'Hansik Menu Naming', to assist the food service industry and correct the names of unknown foreign dishes.

Rheological Properties of Dried Noodles with Added Enteromorpha intenstinalis Powder (파래 분말을 이용한 국수의 이화학적 물성에 관한 연구)

  • This study was performed to evaluate the physicochemical and quality characteristics of dried noodles when different concentrations of Enteromorpha intenstinalis powder (EIP) were added to the wheat flour, thereby determining which noodle recipe was preferred. The cooking quality, mechanical texture properties, and viscosity of the prepared with noodles were measured, and then a sensory evaluation was conducted on them. The gelatinization points of the composite Enteromorpha intenstinalis powder-wheat flour were shown to have an increased viscosity at $95^{\circ}C$ after 15 minutes. As measured via amylograph, the maximum viscosity values of those samples decreased with increasing EIP content. Also, when increased amounts of EIP were added, both the L and b values were reduced, whereas the a value was increased. The color values, weight and volume of the cooked noodles increased, as did the turbidity of the soup. With regard to the textural characteristics, the EIP additive increased hardness and reduced adhesiveness, cohesiveness and springiness. Overall, according to the results of our sensory evaluations, the noodles prepared with 5% EIP were preferred over other noodles.

Structure Optimization of ESD Diodes for Input Protection of CMOS RF ICs

  • In this work, we show that the excessive lattice heating problem due to parasitic pnp transistor action in the diode electrostatic discharge (ESD) protection device in the diode input protection circuit, which is favorably used in CMOS RF ICs, can be solved by adopting a symmetrical cathode structure. To explain how the recipe works, we construct an equivalent circuit for input human-body model (HBM) test environment of a CMOS chip equipped with the diode protection circuit, and execute mixed-mode transient simulations utilizing a 2-dimensional device simulator. We attempt an in-depth comparison study by varying device structures to suggest valuable design guidelines in designing the protection diodes connected to the $V_{DD}$ and $V_{SS}$ buses. Even though this work is based on mixed-mode simulations utilizing device and circuit simulators, the analysis given in this work clearly explain the mechanism involved, which cannot be done by measurements.

A Study on Efficient Integrated Kitchen Management of Restaurant (외식업체 통합주방의 효율적인 운영관리에 관한 연구 -통합주방의 중앙공급에 따른 효율화 사례중심으로-)

  • This study aims at efficiency of kitchen management by adoption of a systematic central kitchen and conversion of conventional kitchen to convenience kitchen at ' H ' restaurant. First, integrated menu control of banquet buffet functions became more competitive with quality menu and eventually brought about guests satisfaction. Second, systematic central kitchen made possible standardization and mass production through simplified production line. Efficiency through quick service and shortened preparation time was realized, and food materials were recycled effectively at the same time. Integrated ordering lowered purchasing price and built an efficient cost control system. Third, conversion of conventional kitchen to convenience kitchen and strengthened central kitchen system facilitated agreeable work conditions and optimal work flow with butcher's and even sauce making utensils. Fourth, integrated supply system of buffet menu and sauce from western restaurants saved about 520 million won of labor costs. Last, one integrated kitchen out of two was easier in sanitation control with pleasant restaurant space. Sharing kitchen facilities and equipments also saved about 30% of maintenance fee. Power, water, and gas were also saved and eventually curtailed overall expenses.

Effects of bamboo salt on dental caries prevention (임상가를 위한 특집 2 - 죽염을 이용한 우식예방)

  • Bamboo salt is a special processed salt by Korean traditional recipe. Recent study results showed that bamboo salt or bamboo salt with some other materials like herbal extracts have the anti-microbial activity, inhibition effects of dental plaque and gingival inflammation. Bamboo salt also showed anti-cariogenic effects; remineralization and acid resistance. Compare to fluoride toothpaste, bomboo salt toothpaste with fluoride showed the more effective remineralization on inner part of the early dental caries lesion. It increased the surface hardness and decreased lesion depth of early dental caries lesion. Thus, it is suggested thai bamboo salt could be used as a anti-microbial, anti-plaque, anti-inflammatory and anti-cariogenic material for oral disease prevention. Especially, bamboo salt dentifrice with fluoride can be recommanded as a useful remineralizing agent.

Digital Ink-jet Printing for Chitosan-treated Cotton Fabric

  • In this paper, chitosan was suggested for using as a replacement for sodium alginate in the pretreatment print paste for digital ink-jet printing for cotton fabric. Pretreatment print pastes prepared from the mixture of chitosan and acetic acid with the appropriate viscosity gave satisfactory prints on the cotton fabric. Chitosan-treated cotton fabrics were digitally ink-jet printed with four different colors and the color fastness rating of the printed fabrics was satisfactory. Experimental results revealed the possibility of pre-treating the cotton with chitosan to replace the sodium alginate normally present in the pretreatment print paste recipe.

  • The tea culture is one of East Asia's traditional drink cultures and its variety, recipe, and effects are specifically recorded in East Asian documents. But the variety and applications of teas that are different from food and not entirely included in the medicine family has not been studied thoroughly yet. This study, through extracting and organizing the variety of teas and their recipes, aims to revive the methods of improving health by using ancient tea.

미국의 식품과학 연구동향

  • 1. 1900년대 초기에는 조리 과학의 기초 개념으로 표준 recipe의 작성이 시도되었다. 2. 비타민과 무기질이 필수 영양소로 밝혀지면서 각종 식품 내의 영양가 분석이 광범위하게 이루어졌으며 과학 기술이 발달함에 따라 새로운 분석 기기의 도입으로 미량 원소의 분석도 가능하게 되었다. 3. 1950년대 후반부터 식품의 관능적 품질 요소를 평가하는대 Panel들의 오관을 이용한 관능 검사법이 이용되어 왔으며, 평가 방법이 점차 발달되어 IFT에서 1981년에 실험 목적에 따라 표준화된 관능조사 방법을 발표한 바 있다. 4. 식품의 품질 평가시 기계적 측정을 실시함으로써 객관적인 결과를 얻게 되었으며, 현재는 이를 관능 검사 결과와 관련시키고 있다. 5. 1970년대 이후 조리 과학적 측면에서의 식품 연구 경향을 J. Food Sci.와 Home Economics Research J.을 통하여 검토한 결과, 육류에 대한 연구가 가장 많았고, 영양가, 맛, tenderness가 주요 관점이었다. 그 다음으로는 두류와 곡류에 대한 연구가 많았으며 기타 식품에 대한 연구는 미흡한 실정이었다. 6. 미국에서 대두에 관한 연구는 동양에서의 이용방법을 직수입하지 않고 서구식 식생활에 맞게 발전시켰다. 이에는 textured vegetable protein등과 같이 육류 대체 식품으로서의 이용 가능성과 두류 단백질의 식품학적 기능성을 이용하여 첨가시 식품의 품질을 향상시키고자 하는 관점에서 연구가 진행되고 있으며 앞으로도 많은 관심을 받게 될 것으로 전망된다.

Quality Characteristics of Daechupyun by the Addition of Jujube Paste (대추고 첨가량을 달리한 대추편의 품질특성)

  • This study was aimed to find an optimum amount of jujube paste to ice flour for the preparation of Daechupyun(jujube rice cake). The moisture content of Daechupyun added with jujube paste was 40∼42%. The more jujube paste was added, the L-value and b-value were decreased, and a-value of Daechupyun was increased. In the mechanical evaluation of Dachupyun, the hardness was the lowest in the samples with 12% jujube paste after 12-hour storage. The adhesiveness and springiness were not significantly different by adding jujube paste after 24-hour storage. The cohesiveness was increased with the increase of added jujube paste at 12, 36 and 48 hours of storage. The gumminess was the lowest in the samples with 12% jujube paste during storage. In the sensory evaluation of Daechupyun, the acceptance for the softness and chewiness war the best in the samples with 12% jujube paste. Daechupyun with 12-16% of jujube paste to rice flour was found to be the best recipe based on the sensory qualities of softness, chewiness and overall acceptability.
