Chemical and Volatile Characterization of Structured Lipid from Soybean Oil Containing Conjugated Linoleic Acid

  • Structured lipid (SL) produced from soybean oil was enriched with conjugated linoleic acid (CLA). The SL had 21.9 mol % CLA isomers incorporated into SL-soybean after the 24-h reaction. Removal of tocopherols (73~84% loss from original soybean oil) was observed in the SL. Electronic nose can discriminate the aroma of SL-soybean from that of soybean oil. Many oxidative volatiles including pentenal, octenal, 2,4-decandienal, and nonenal were found in SL-soybean. Electronic nose, which is valuable for composite aroma analysis, can provide flavor information together with GC-MS that is useful for qualitative or quantitative analysis of each odor compound in SL.

황기 추출액이 함유된 된장의 품질 특성 (Quality Characteristics of Doenjang containing Astragalus membranaceus water extracts)

  • The quality characteristics of doenjang which contained Astragalus membranaceus water extracts were investigated in this study. The contents of moisture, crude protein, and crude fat were not significantly different in the doenjang which contained Astragalus membranaceus water extracts. The crude ash content was significantly higher in the doenjang which contained Astragalus membranaceus water extracts. The doenjang which contained Astragalus membranaceus water extracts showed higher a-value. Antioxidative activity was evaluated by using the thiobarbituric acid reaction products assay and peroxide value. Antioxidative activity and hydrogen donating activity were increased in doenjang which contained Astragalus membranaceus water extracts. Doenjang which contained Astragalus membranaceus water extracts showed no differences with traditional doenjang in sensory profiles of taste, color, flavor, and overall quality. These result showed the applicability and higher quality of doenjang which contained Astragalus membranaceus water extracts.

효소 처리된 닭고기 부산물에서 헝성된 pyrazines의 비교 (Comparison of Pyrazines Formed in Chicken By-Products Hydrolyzed by Enzymes)

  • To investigate the formation of pyrazines, by-products of chicken were hydrolyzed by protease/peptidase for 4, 8 and 24 hours, after which the hydrolysates were heated with glucose, fructose and xylose, respectively, at l80$^{\circ}C$ for l00min. The formation of pyrazines showed a significant difference by quality and quantity according to the degree of protein hydrolysis. Especially, the formation of 2-methyl pyrazine and 2-ethyl-5-methyl pyrazine was considerably affected by, the degree of protein hydrolysis. Also, 3-ethyl-5-methyl pyrazine, 2-butyl-3-methyl pyrazine, 2-butyl-3,5-dimethyl pyrazine, methyl pyrazine, and 3-ethyl-5-methyl pyrazine were identified only in the hydrolysates for 24 hours.

Optimizing the Synthesis of Citronellyl Valerate Using Lipase from Rhizopus sp

  • Citronellyl valerate was synthesized by a lipase from a Rhizopus sp strain isolated and the lipase produced, at UNICAMP, Brazil. Direct esterification was performed in a solvent-free medium to produce the flavor ester. Response surface methodology was used to optimize the process with respect to the substrate molar ratio and lipase concentration. The results show that the synthesis of citronellyl valerate can be carried out in a solvent-free medium, the maximum ester conversion rate achieved being 91.5% after 48 hours of reaction time.

  • In this part of the studies on dielectric dehydration of foamed fish-starch paste, quality stability and shelflife of the product of which the preparation formula and processing conditions were described in the previous report (Lee et at., 1982) were determined by means of accelerated reaction test. The product was stored for 50 days under the conditions of temperatures at 35, 45, and 55$^{\circ}C$ in steady state and various water activities of 0.44, 0.52, 0.65, and 0.75, respectively. The loss of available lysine, the extent of TBA value, and the development of browning during the storage were measured and reaction kinetically analysed to assess quality stability and shelf-life of the product for the storage at room temperature of 25$^{\circ}C$. The extent of browning was accelerated with the increase of water activity and temperature marking the time to reach a limit of color and flavor deterioration, or to reach brown color density of 0.17 O.D./g at 420nm, 106 days at a$\_$w/=0.44, 35$^{\circ}C$, and 41 days at aw=0.65, 55$^{\circ}C$. These reaction rates resulted in a prediction of shelf-life, 130 to 110 days in the storage at au=0.44 to 0.75, 25$^{\circ}C$. The quality limit assessed by TBA values and sensory evaluation of rancidity was 87 days at a$\_$w/=0.44, 35$^{\circ}C$, and 30 days at aw=0.73, 55$^{\circ}C$ which gave a predicted shelf-life, 128 to 113 days at a$\_$w/=0.44 to 0.75, 25$^{\circ}C$ storage.

고구마 음료의 제조와 그 품질 특성 (Preparation of Sweet Potato Drinks and Its Quality Characteristics)

  • 고구마의 효율적 활용을 위하여 고구마가 지니 여러가지 가능성을 이용한 새로운 가공식품인 음료를 물 첨가량과 효소처리 유무에 따라 제조하고 그 음료의 품질특성을 조사하였다. 환원당은 효소처리를 하므로서 증가하였으며 pH 조절시에도 다소 증가하였으나 큰 차는 나타나지 않았다. 점도는 각 처리구 마다 효소처리되었을 때 낮아졌으며 효소처리(pH조절)에서는 더 낮아졌다. 또한 색도는 각 처리구에서 효소 무처리구 보다 효소처리구에서 색의 밝기와 황색도는 낮아졌으나 적색도는 고구마 1 : 물 1에서는 낮아졌고 고구마 1 : 물 2, 3에서는 증가하였다. 관능검사 결과는 색, 맛, 향기, 조직감 모두 고구마 1 : 물 1로 섞은 시료에 pH를 4.5로 조절하고 효소 처리하여 제조한 음료가 가장 좋은 것으로 나타났으며 고구마 1 : 물 3으로 하여 제조한 음료에서는 모두 가장 나쁜 것으로 나타났다. 이상의 결과는 고구마 1 : 물 1의 비율액을 pH 4.5로 조절하고 $60^{\circ}C$에서 복합효소로 처리하여 만든 음료가 품질면에서 우수한 것으로 나타났다.

청국장을 첨가한 카스테라의 품질 특성 (Quality Characteristics of Castella with Chungkukjang)

  • 밀가루의 10%, 20%, 30%를 청국장으로 대체한 카스테라를 제조하여 이화학적 특성, 텍스처 특성, 관능적 특성을 검토하였다. 청국장 첨가는 카스테라의 비용적과 팽화율을 감소시켰는데 청국장 사용량이 많아질수록 비용적과 팽화율은 더 낮아져 30% 청국장 사용 카스테라의 비용적과 팽화율이 가장 낮았다. 또한 청국장 사용 카스테라는 밀가루만 사용한 대조군 카스테라에 비해 수분함량은 낮아지고 단백질함량은 증가하였는데 30% 청국장 사용 카스테라는 가장 낮은 수분함량과 가장 높은 단백질 함량을 나타내었다. 카스테라의 내부 색도는 청국장 첨가시 명도가 낮아졌으며 청국장 첨가량이 많아질수록 더욱 낮아졌다. 카스테라의 견고성은 20%, 30% 청국장 사용 카스테라가 다른 카스테라에 비해 높았다. 관능검사 결과 청국장 사용 카스테라의 표면 및 내부의 색은 대조군 카스테라에 비해 진했다. 20%, 30% 청국장 사용 카스테라는 다른 카스테라에 비해 단 향미는 약하고 고소한 향미는 강했으며 더 무겁고 덜 부드럽게 느껴졌다. 카스테라의 전반적인 수용도는 청국장 첨가에 의해 감소되지 않아 전반적인 수용도를 고려할 때 밀가루의 30%를 청국장으로 대체 가능한 것으로 생각된다.

건조방법에 따른 브라운소스의 품질 특성 (Physicochemical Properties of Brown Sauce according to Drying Methods)

  • The aim of this study was to develop a convenient brown sauce product with long shelf life that has similar taste and quality characteristics with sauce used in restaurants. Response surface analysis was carried out to optimize brown sauce. Extracted brown sauce powder was subjected to hot air drying, infrared drying, freeze drying, and spray drying to determine the appropriate drying method for brown sauce manufacturing. The optimum extraction conditions were set by superimposing and reading each reaction surface that satisfied all of the sensory characteristics such as color, smell, taste, concentration, and overall preference level in order to set the optimum conditions for brown sauce production. The optimum extraction conditions for brown sauce were determined to be heating time 30 min, gelatin addition quantity 9.00%, and tomato paste addition quantity 11.25%. Reliability test showed a similar value to the predicted scope when compared to the experimental value obtained under the same conditions as the predicted value according to RSM (response surface methodology), enabling verification of the derived regression formula. Product powder of ideal brown sauce by heating, infrared radiation, freezing, and spray drying and investigate result for functional tests of color, flavor, taste, viscosity, overall acceptability and show highly acceptability on powder by infrared rays and freeze-drying methods. Especially, infrared radiation method resulted in favorable color and flavor values while freeze-drying method produced good taste and viscosity values and high overall acceptability. Therefore, infrared radiation drying method and freeze-drying method to product powder.

Effects of Outdoor Housing of Piglets on Behavior, Stress Reaction and Meat Characteristics

  • Well-designed housing systems are important from the viewpoint of animal welfare and improvement of meat production. In this study, we investigated the effects of outdoor housing of pigs on their behavior, cortisol levels, and meat characteristics. Two groups that were born and raised in a spacious outdoor pen ($4{\times}10$ m for every two sows) or a minimum-sized standard pen in a piggery ($1.9{\times}2.2$ m for every sow) were studied. When their behaviors at the age of 2 to 3 wk were observed, the number of rooting episodes tended to be larger (p = 0.0509) and the total time of rooting tended to be longer (p = 0.0640) in the outdoor-housed piglets although the difference was not significant. Basal salivary cortisol levels of the outdoor piglets at the age of 4 wk were significantly lower than those of the indoor piglets ($5.0{\pm}0.59$ ng/ml vs. $11.6{\pm}0.91$ ng/ml, 30 min after treatment), although their plasma cortisol levels were similar ($53.3{\pm}3.54$ ng/ml vs. $59.9{\pm}4.84$ ng/ml, 30 min after treatment). When the ears were pierced at weaning, plasma and salivary cortisol levels were increased in both groups, even at 15 min after piercing. However, the increase in the outdoor-housed group was significantly less than that in the indoor-housed group. Throughout their lives, body weight and daily gain of the pigs were not significantly different between the two groups. In a meat taste preference test taken by 20 panelists, saltiness, flavor, and color of the outdoor-housed pork were found to be more acceptable. Moreover, when an electronic taste-sensing device was utilized, the C00 and CPA-C00 outputs ($3.78{\pm}0.07$ and $-0.20{\pm}0.023$), which correspond to compounds of bitterness and smells, respectively, were significantly lower in the outdoor-housed pork ($5.03{\pm}0.16$ and $-0.13{\pm}0.009$). Our results demonstrate that the outdoor housing system for piglets induces natural behaviors such as rooting and suppresses the strongest stress reaction of piglets, which could be important for animal welfare. Moreover, the outdoor housing system might change muscle characteristics and improve pork bitterness, flavor, and color. These changes may be preferred by consumers, increasing the sale of these meats.

반응표면분석법을 이용한 세이지분말 첨가 된장의 관능적 특성 (Sensory Characteristics of Doenjang Supplemented with Sage Powder as Assessed by Response Surface Methodology)

  • 본 연구는 세이지의 다양한 생리적 기능성과 우리 전통된장을 접목하여 허브를 첨가한 된장을 개발하고자 된장의 염도와 세이지분말 첨가량을 달리한 후 반응표면분석법으로 최적조건을 얻고자 관능특성을 조사하였다. 그 결과, 색은 1.20~2.70, 냄새는 1.60~3.20, 맛은 1.40~3.50, 조직감은 1.60~3.50, 전반적인 기호도는 1.60~3.05의 값을 나타내어 실험구의 조건에 따라 차이를 보였다. 이차회귀식에 의하여 형성된 반응표면 분석 결과 색, 냄새, 맛, 조직감 및 전반적인 기호도의 $R^{2}$가 0.11~0.41로 낮은 편이었으며, 5% 이내에서 유의성이 인정되지 않았다. 관능검사에서 가장 높게 평가된 것은 색은 염도 21.50%, 세이지분말 첨가량 3.10%일 때 2.91, 냄새는 염도 22.52%, 세이지분말 첨가량 3.68%일 때 3.21로, 맛은 염도 8.62%, 세이지분말 첨가량 4.46%일 때 2.87으로, 조직감은 염도 8.00%, 세이지분말 첨가량 6.06%일 때 2.88로, 전반적인 선호도는 염도 20.40%, 세이지분말 첨가량 2.66%를 첨가하였을 때 2.74로 나타났다. 한국인에게 익숙하지 않은 허브이지만, 세이지를 첨가한 된장이 일반된장 보다는 높은 점수로 평가되어 기능성 된장으로의 가능성을 확인할 수 있었다.
