This study was performed to compare dietary behaviors based on residence types of female college students. Self reports on dietary behavior and one-day dietary records were obtained from 227 female college students using anonymous questionnaires. The mean age of the subjects was $20.4{\pm}1.43$, and the height and weight were $162.5{\pm}4.8cm$ and $52.3{\pm}7.9kg$, respectively, The dietary behavior of female college students was inadequate, showing indifference to dietary balance, irregularity of meals, skipping breakfast, and high experience of drinking. One-day dietary records were obtained from 24k recall methods also showed a high number registering skipped meal status ($55.3\%$) and less diverse food intake (DVS, 12.5; DDS, 3.93). The students in self boarding residence were especially more likely not to eat properly and their dietary behaviors were found to be significantly poor. In the case of home residence, food intake frequency scores for milk and dairy products, fruits, and fishes were significantly higher, however the students in self boarding residences showed high food intake frequency scores in salted food, retort food, canned food, and especially instant ramyun. Therefore, more attention needs to be given to them to recognize the problems in their own dietary behaviors and more practical nutritional supports, like developing a menu for breakfast in college cafeterias, would be helpful to improve their dietary choices.
Nutrition fortification of processed foods with microelements is a popular practice in many countries to improve nutritional status of target population. In this study the current food fortification in Korea was evaluated and the regulations and guidelines for food fortification in other countries were presented. Most commonly added nutrients were calcium, vit.C, fiber, vit.Bs and iron. The level of fortified nutrients and the vehicle foods were variable. vit.C and fiber appeared to be overfortified in some foods and the necessity of fortification of these nutrients needs to be examined since the intakes of these elements appears to meet the RDA. Most of other nutrients such as vit.A, vit. $B_1$, vit. $B_2$, and iron were added at the level of 10~25% RDA per serving size. The vehicle foods for fortification were snacks, milk, ramyun, breakfast cereal, juices, candies and ready-to-eat retort pouch foods but not rice which is a staple food in Korea. The guideline and regulation for food fortification is required to ensure safe and proper supplementation of needed nutrients in processed foods.
This study was conducted to investigate the dietary behavior and health-related lifestyles of university students in Incheon arear Self administered questionnaires were collected ken 179 food and nutrition major and non-major students. Statistical data analysis was completed using a SPSS v.10.0 program. The results are summarized as follows: The average weight, height, BMI and PIBW of the major and non-major male and female students were 69.89kg, 172.89cm, 23.4 and 106.49 ; 67.27kg, 173.98cm, 22.2 and 101.35 ; 50.61kg, 161.20cm, 19.53 and 92.25 ; 53.77kg, 161.53cm, 20.56 and 97.18, respectively. The breakfast skipping ratio of the subjects were very high, which was mainly due to the reason“lack of time”More than 75% of male students and 61% of female students responded to have lunch at university canteens or restaurants around campus regularly. About 56% of male students and 68% of female students responded to have dinner irregularly, which mainly caused by the reasons“irregularity of lecture”and “appointment with friends”. The ratio of snacks intake of the subjects were high; Ramyun was the snack item taken the most by the male students and fruits and cookies by the female ones. More than 50% male students and 2% of female students were smokers. A half of students dunk alcohol once or twice a week. The dietary behaviors and health-related lifestyles between major and non-major male students tended to be very similar. The major female students showed more health-oriented dietary behaviors in comparison with the non-major ones. Therefore, they should have a major-oriented and practically organized nutritional education program to correct their dietary behaviors and health-related lifestyles fur health.
This study was performed to investigate the dietary habit based on residence types of male college students who registered nutrition course for nonmajor. Self reports on dietary habit and one-day dietary records were obtained from 158 male college students in Chungbuk area. The distribution of residence type of male college student was as follows; self-boarding(43.0%), home(41.1%), boarding with meal(12.7%), and others(3.2%). The mean age of subjects were $22.6{\pm}2.5$, and the mean height and weight were $175.0{\pm}5.6cm\;and\;69.1{\pm}9.3kg$, respectively. The dietary habit of male college students considered to be taken more care of, showing indifference to dietary balance, irregularity of meal, and skipping breakfast. One-day dietary records by 24hr recall methods also showed less diverse food intake(mean DVS, 12.7; mean DDS, 3.92). Especially, the students with self boarding residence were more likely not to eat properly, including indifference to dietary balance, irregularity of meal, skipping breakfast, frequent dining-out, high experience of smoking and drinking, and low DVS and DDS. Also the students with self boarding residence seemed not to make a good choice for food, showing high food intake frequency score in canned food, fast food and instant ramyun, while low score in fruit and fishes. More attention should be taken for self-boarding students to recognize the problems in their own dietary behavior, and more practical suggestion to improve their dietary status would be necessary.
The purpose of this study was to evaluate the dietary attitude and food behavior of elementary, middle and high school students in Korea. The subjects in this study were 7,698 boys and girls in large cities in Korea. The questionnaire was made and distributed to the students to answer the questions. Followings are the results of this study : 1) Father and mother's average ages were 45 and 41 years old, respectively. 2) Most students thought dietary life was more important than clothing or residentary life. Dietary habits such as irregularity of meal, frequencies of skipping meal and of eating out increased in higher grade than in lower grade, and in girls than in boys. 3) Most students, especially in elementary school, recognized that their own bad dietary habbit was unbalanced diet. Irregular meal time and eating too much were also pointed out as problems by middle and high school students. 4) Most students thought that the most effective meal for health was breakfast, but they replied the tartest meal as dinner. 5) Students tended to prefer Korean style food. Cooked rice and kimchi, ramyun, and pizza were ranked the most preferred food when they were hungry. 6) Elementary school students ate meals more regularly than higher grade students, and girls ate meals more regularly than boys. 7) Skipping rate of breakfast was higher than that of lunch or dinner, and the percentage of meal skipping students was increasing with grade elevation. No time to eat or eating between meals was the reasons of irregular meal time. 8) Frequency of dining with family was decreased, but frequency of eating out with friends was increased with increasing grade. The gravity of dining out is increasing rapidly in Korean adolescents. Therefore, nationwide nutrition education policy is necessary to constitute a right dietary environment and a desirable dietary altitude.
Current status of nutrient fortification in processed food in Korea were presented by analyzing the information shown on food labels. The obtained information was assessed by the regulations on food fortification in both Korea and other countries including Codex. The most current regulations were gathered from internet. The results are summarized as follows. 1. Major nutrients fortified were calcium, Vit C, Vit B complex, iron and fiber. The forfified foods were not limitted to certain food group with more frequent fortification in snackfoods, cereal, ramyun, retort pouch foods, milk, and youguart. The descriptive terms of nutrition label for the fortification were various including high, supplemented, added, source, fortified, and abundance though the difference among these terms were not distinct. 2. Current regulation on nutrition label requires to give the content of the fortified nutrient and % RDA. However not all of food items carry above information. Also some ingredients such as chitosan, DHA, taurine, $\omega$-3 fatty acid, chondrichin, bifidus were supplemented mainly to the snack foods which FDA(USA) does not allow to be fortified. 3. The nutrient most frequently fortified was calcium and general practice of fortification appears to follow the regulation in Korea. Presently the regulation itself is not well described, this nutient fortification can cause toxic effect. Since calcium was supplemented to wide range of food group consumers who are not conscious of the safe upper limit may intake the fortified food up to the level of 2g/day. 4. For the effective fortification in Korea, the regulation on fortification should be reformed in accordance with the international guideline Codex and the regulations in other countries especially in America and Japan.

This study was conducted to find the differences in food consumption frequency of the middle aged(male 20, female 50) and the elderly(male 15, female 15) living in Chonju in December, 1998 according to food habits, smoking, alcohol drinking and exercising habit, health status, and the levels of nutrition knowledge and attitude store. The foods frequently consumed among the subjects were kimchi(15.4/week), mixed rice(11.5/week), rice(7.6/week), vegetables in soup, jjigae and jorim(5.0/week), mandarins and oranges(5.e/week), and seasoned laver(4.3/week). There were several factors influencing food consumption patterns. These were age, regularity of meal times, the status of smoking, alcohol drinking and exercising, and the level of nutrition attitude. The elderly ate cooked rice more frequently, while the middle aged ate fish, especially blue fishes more frequently. The middle aged who had breakfast regularly ate milk and milk products, legumes and fruits frequently. Those who smoked seemed to eat less cereals and starches and fats, while those who didn't smoke ate more sugars. In order to investigate food purchase frequency of elementary school children and its related ecological factors, 431 4th, 5th and 6th grade elementary school children and their mothers, living in Seoul and Daejon, small city and rural area of Chungnam Province, were participated in this study. The subjects and their parents were surveyed by a self-recording questionnaire about food purchase frequency and some ecological factors. Average height and weight of the subjects by gender and grade were similar to or a little bit more than the 1998 Korean Growth Standard. According to relative body weight, 30.6% and 10.8% of the subjects belonged to under-weight and obesity categories, respectively. Of the subjects, 46.9% used PC telecommunication or internet, 53.8% of them used it for less than an hour per day, and 46.4% watched TV for 2 to 4 hours a day. About 42% of the subjects spent 500 Won or less daily to buy snacks. A half of the subjects took snacks once a day because of hunger. Mothers' nutrition knowledge score was averagely 8.16 out of 13 full score and the average attitude score was 43.22 out of 50 full score. Foods purchased more than once a week were milk and yoghurt, cookies, ice-cream, ramyun, and gum in order. Family income, parents' education level, mothers' nutrition knowledge and food attitude score, students' snacking frequency and TV watching time showed significant correlations with purchase frequencies of some individual food items. In conclusion, the elementary school children considered taste most important rather than nutrition in buying snacks and most frequently bought carbohydrate foods and concentrated sugars except milk. Ecological factors such as mothers' nutritional knowledge and food attitude, TV watching time and snacking frequency had influenced the children's food purchase frequency. Accordingly, it is necessary to educate both children and their mothers about good food purchase and the importance of snacking.
