Effect of Potash Feldspar on the Growth of Organic Radish and Beet (카리장석의 유기농 무와 비트 생육촉진효과)

  • Potassium (K) is an element essential for plant growth. This study was aimed to examine the effects of three formulations of potash feldspar, powder, sand, and granule type on the growth of radish and beet in organic farming. 0.1% three formulations of potash feldspar were treated on the soil before transplanting 15 days-old seedlings of radish and beet in greenhouse. The results showed that all kinds of potash feldspar significantly increased shoot and root growth, and soluble solid contents excepted for root hardness in radish and beet. Among them, the powder type of potash feldspar was the most effective on foliage and root growth of radish and beet. Based on the results, it was confirmed that 0.1% potash feldspar treated in the rhizosphere of radish and beet can promote the growth of them.

Antihypertensive Properties of Dried Radish Leaves Powder in Spontaneously Hypertensive Rats (자연발증적 고혈압 흰쥐에서 무청 건조분말의 항고혈압 효과)

  • The study aim was to investigate the antihypertensive effect after oral supplementation of dried radish leaves powder (DRLP). Angiotensin-converting enzyme (ACE) activity was measured by spectrophotometric assay. The systolic blood pressure (SBP) was measured in spontaneously hypertensive (SHR) and normotensive rats (Wistar) by the tail cuff method after a 4-week diet with DRLP at the level of 2.5% or 5%. The supplementation of DRLP decreased SBP of SHR although the 5% supplementation level did not show any more pronounced effect than the 2.5% level did. The decrease in the SBP observed for both 2.5% and 5% DRLP was accompanied by significant increases of the urinary Na and K excretion. The DRLP supplementation showed a potent ACE-inhibitory activity in pulmonary tissue from both hypertensive and normotensive rats. However, the DRLP supplementation did not affect the SBP in normotensive rats. These results indicated that DRLP exerted an antihypertensive effect in SHR due to the decreased ACE activity and increased urinary Na excretion.

Standardization of Manufacturing Method of Young Radish Kimchi (Yulmoo Kimchi) and Young Radish Watery Kimchi (Yulmoo Mool-Kimchi) in Literatures (문헌에 나타난 열무김치 및 열무물김치 제조 방법의 표준화)

  • Manufacturing method and ingredient ratio for young radish kimchi (yulmoo kimchi) and young radish watery kimchi (yulmoo mool-kimchi) were standardized from literatures. Ingredients having frequency of use greater than 50% were only used in the standardization process. Green onion, red pepper, red pepper powder, garlic, ginger, and anchovy juice were included in young radish kimchi. Green pepper, red pepper, garlic, ginger, and starch were included in young radish watery kimchi. The standardized ingredients ratio of young radish kimchi (yulmoo kimchi) on young radish 100 g was as follows: green onion 8.0$\pm$3.8, crushed garlic 2.9$\pm$1.3, crushed ginger 1.6$\pm$0.7, red pepper 7.0$\pm$1.7, red pepper powder 4.2$\pm$1.2, and anchovy juice 3.7$\pm$0.5. The standardized ingredients ratio of young radish watery kimchi (yulmoo mool-kimchi) on added water 100 mL was as follows: young radish 50.6:$\pm$10.8, crushed garlic 3.0$\pm$0.7, crushed ginger $1.5\pm$0, green onion 3.3$\pm$1.3, green pepper 3.3$\pm$1.9, red pepper 2.4$\pm$1.3, and starch $1.5\pm$0.6.

The Fibrinolytic Activity of Kimchi and its Ingredients in vivo and in vitro (In vivo와 in vitro에서 김치 및 김치재료의 피브린 분해활성)

  • Fibrionolytic activity(FA) of kimchi in rat and FAs of water and methanol extracts of kimchi ingredient were determined using fibrin plate method to see where the active principles for FA are present in kimchi. Nine Sprague-Dawley per each group were fed diet containing 3, 5 or 10% of freeze dried kimchi for 6 weeks. The FA of plasma obtained from 10% kimchi group showed stronger FA than that of control. FAs of 3 and 5% kimchi group were not noticeable. FA from methanol extract of kimchi was approximately 6 times higher than that from water extract assuming that the active material may be present in a fat soluble fraction. From water extract of kimchi ingredients, dropwort, green onion, radish and baechu showed FA in descending order. And from methanol extracts, red pepper powder, radish, green onion and baechu showed FA in decending order. The Fa of methanol extract of red pepper powder was the most noticeable among samples.

Antimicrobial Action of Raphanus raphanistrum subsp. sativus (radish) Extracts against Foodborne Bacteria Present in Various Milk Products: A Preliminary Study

  • Seeds and leaves of Raphanus raphanistrum subsp. sativus (radish) are known to contain "raphanin," which has the potential to inhibit pathogenesis associated with foodborne pathogenic bacteria and fungi. In this study, ethanol extracts from R. raphanistrum subsp. sativus (radish) powder was evaluated for antimicrobial action against 6 different foodborne pathogenic bacteria. The current study demonstrated the potential of R. raphanistrum subsp. sativus (radish) in inhibiting the growth of Salmonella enteritidis 110, Cronobacter sakazakii KCTC 2949, Bacillus cereus ATCC 10876, and Staphylococcus aureus ATCC 6538. However, these antimicrobial action were not observed against Listeria monocytogenes ATCC 51776 and Escherichia coli 23716. Hence, this study indicates that R. raphanistrum subsp. sativus (radish) could be used as a natural biopreservative with antimicrobial effects for improving food safety, and as a functional food in the commercial food industry.

Effect of Gamma-Irradiated Red Pepper Powder on Physicochemical Properties of Kakdugi, a Korean Traditional Radish Kimchi

  • Physicochemical properties and sensory characteristics of kakdugi prepared with red pepper powder gamma-irradiated up to 7 kGy were determined during fermentation at 5℃. The overall fermentation patterns between kakdugies with irradiated and nonirradiated red pepper powder were similar. Kakdugi prepared with irradiated red pepper powder required one week longer time for optimal ripening compared to the kakdugi control. Irradiated red pepper powder did not affect the hardness and fracturability of kakdugi during fermentation. Kakdugi prepared with irradiated red pepper powder maintained a redder color than the kakdugi control. No significant differences were observed in taste, odor, texture, and overall acceptability (p<0.05) except for color. It can be concluded that irradiation of red pepper powder, up to 7 kGy, did not affect the quality of kakdugi with regard to physicochemical and sensory characteristics during fermentation. Moreover, irradiated red pepper powder was better for maintaining the red color and delaying optimum ripening time of kakdugi fermentation.

  • Microbiological and sensory qualities of Musaengchae prepared with gamma-irradiated red pepper powder were investigated during storage at $4^{\circ}C$. Total aerobic bacteria in non-irradiated raw materials prior to Musangchae preparation were 6.71 log CFU/g in red pepper powder, 3.39 log CFU/g in radish, 2.21 log CFU/g in scallion, and 2.10 log CFU/g in garlic, respectively. Coliforms(2.15 log CFU/g) were detected only in red pepper powder, and not in Musangchae to which gamma-irradiated red pepper powder. None of pH, Hunter's color value, or sensory properties were significantly affected by addition of irradiated red pepper powder. These results suggest that addition of such powder, after irradiation with less then 10 kGy, could improve Musangchae microbiological safety without changing the sensory or physical qualities.

  • 제품간장에 산막효모가 번식하여 제품의 품질을 제하시키는것을 방지하기 위하여 기존의 합성보존료를 대체할 수 있는 천연물질로서 allyl isothiocyanat (AITC)와 가수분해 되었을때 AITC를 생성하는 sinigrin울 주요 성분으로 함유하고 있는 고추냉이 분말의 효과를 실험하였다.AITC와 고추냉이 분말을 가열처리와 조미를 하지 않은 발표직후의 제균 생간장에 첨가하여 3$0^{\circ}C$에서 30일간 배양하면서 산막효모의 생육저해효과를 실험한 결과 AITC 20ppm과 고추냉이 분말(몇%)를 첨가한 시험구에서 산막효모의 생 이 저해되어 시험기간동안 막이 나타나지 않았다. 고추냉이 분말을 그대로 첨가하거나 간장을 반응액으로 사용한 시험군은ㄹ 고추냉이 분말을 물에 분산시켜 37$^{\circ}C$에서 반응시킨 뒤 간장에 첨가한 때보다 산막효모 저해 효과가 낮았다. 고추냉이를 물과 함께 활성화시켰을때에 비해 훨씬 많은 양의 AITC가 생성되었다. 산막 생성 저해효과 면에서 보았을때, 물로 활성화시켰을때는 간장액에서 활성화시켰을때보다 3배이상의 AITC가 생성된것으로 나타났다.로 나타났다.

Effects of Foliar Treatment of Underground Water, Chitosan Solution, and Wood Vinegar Solution on Residual Procymidone Removal in Altari Radish (지하수, 키토산 및 목초액의 엽면살포에 의한 알타리무 체내의 잔류 Procymidone 제거효과)

  • For this study, Smilex powder, a pesticide, was sprayed on the Altari radish, and then underground water, Chitosan solution (${\times}$500), and wood vinegar solution (${\times}$1000) were evenly sprayed on the Altari radish respectively. Samples of Altari radishs for residual pesticide analysis were taken two hours, 1 day, 7 days, and 15 days after treatments, and the detectable concentration and degradability of procymidone, the pesticide residue, were measured. The results obtained are as follows: 1. When detectable concentration of procymidone within the altari radish was measured, treatment plots sprayed with underground water, Chitosan solution (${\times}$500), and wood vinegar solution (${\times}$1000) were found to show lower detectable concentration than the non-treatment plot which was sprayed with pesticide only. Especially, the treatment plots sprayed with Chitosan solution (${\times}$500), and with wood vinegar solution (${\times}$1,000) showed lower values than the average. 2. When the degradability of procymidone within the Altari radish was measured, the plot treated with Chitosan solution (${\times}$500) and the plot treated with wood vinegar solution (${\times}$1,000) were found to have relatively higher degradability of procymidone. There were not much differences among testing materials in the degradability of residual pesticides. However, the plot treated with Chitosan solution (${\times}$500) showed higher degradability. In terms of average degradability with time, degradability increased sharply 7 days after the foliar application of testing materials. 3. When the daily far-sighted view survey was conducted in order to find out growth disorder and damage on the Altari radish plants by the treatment of un-derground water, Chitosan solution (${\times}$500), and wood vinegar solution (${\times}$1,000), no symptomatic physiological disorders was observed on all the plants tested during the whole growing season at the tested concentration level.

Evaluation of the Biocontrol Potential of Some Medicinal Plant Materials Alone and in Combination with Trichoderma harzianum Against Rhizoctonia solani AG 2-1

  • Fifty five species of medicinal plant materials were tested for their antifungal activity in vitro against Rhizoctonia solani AG 2-1 and Trichoderma harzianum to select plant species that can be used to improve the biocontrol efficacy of T. harzianum. Six species were effective against R. solani AG 2-1 but were also antagonistic to T. harzianum, except for Cinnamomum loureirii stem bark (CSB). CSB inhibited mycelial growth of R. solani AG 2-1 by 73.7% but showed an inhibitory effect on mycelial growth of T. harzianum by only 2.2%. Scanning electron microscophs showed that the CSB treatment resulted in deformed R. solani AG 2-1 hyphal cells, and transmission electron microscophs revealed degenerated cell structures such as degenerated cytoplasm and disentangled cell wall and the accumulation of electron-dense inclusions (asterisks) in the CSB treatment. The biocontrol efficacy of radish damping-off increased greatly following the combined treatments of T. harzianum and CSB and the combined treatment increased efficacy from 6.4-23.1% to 37.1-87.3% compared with either treatment alone. CSB did not affect T. harzianum population growth, as it was almost the same in rice-bran peat medium (culture) amended with 0.1% and 1.0% CSB powder as in non-amended medium. The formulation of T. harzianum in rice-bran peat medium amended with CSB powder reduced the severity of radish damping-off by 80.6%, suggesting that T. harzianum and CSB can be formulated as a biocontrol product for the control of R. solani AG 2-1.
